Wished to consider effect entertainment's application possibility and alternative presentation that food court and eatertainment introduction in hotel restaurant which improve administration and sales extension. This research is questioned between 30 from September 1, 2004 by population total 426 collected, man and woman who more than 18 years olds takes in Seoul expert restaurant(south and north of river).

Ethnophytotherapies for Treatment of and Prevention against Cancer

  • This paper examinies various traditional and alternative practices utilised by Malaysians for the treatment of and preventino against cancer. A list of plants used for treating cancer is given. Care for cancer patients includes food reputed to be good in promoting recovery and preventingrecurrence as well as food taboos-various food to be avoided in the belief that these types of food can induce development or recurrence of cancer.

식물성 대체육의 안전성 검증을 위한 위해요소 모니터링 (Monitoring Hazards to Verify the Safety of Plant-Based Meat Alternatives)

  • 국내에서 제조되어 유통되는 식물성 대체육을 대상으로 일반성분(수분, 단백질, 지방), 지방의 산패도, 지방산의 조성, 아플라톡신, 중금속 함량을 분석하였다. 그 결과 한번 익힌 후 건조된 형태의 식물성 대체육보다 익히지 않고 수분이나 지방에 의해 성형과정을 거친 냉동제품에서 상대적으로 많은 양의 지방을 함유하고 있음을 확인할 수 있었다. 조지방 함량이 1 g을 넘는 시료를 대상으로 지방의 산패도(산가, 과산화물가)를 측정했다. 그 결과 일부 시료에서 높은 산가 및 과산화물가가 측정되었으나 식품공전상에 대체육에 대한 정확한 분류가 되어있지 않아 산패도에 대한 안전성을 판단하기 위한 규격이 필요해 보인다. 가스크로마토그래피를 사용하여 지방산 조성을 분석한 결과 대부분은 불포화지방산이 차지하고 있지만, 일부 포화지방산의 함량이 높은 시료가 있었다. 포화지방산 및 불포화지방산의 함량이 높은 식물성 대체육을 식물성 유지를 사용하여 가열조리를 거쳐 섭취하게 된다면, 많은 양의 지방을 섭취하게 될 수 있음을 예측할 수 있다. 또 가스크로마토그래피를 사용한 지방산 분석법을 통해 식물성대체육에 동물 유래 지질이 함유되어있지 않음을 확인할 수 있었다. 이는 이후에 식물성 대체육에 대한 영양표시성분 및 실제성분의 대조 시에 활용될 수 있음을 시사한다. 식물성 대체육에 대하여 아플라톡신을 분석한 결과 현재 식품공전에 제시된 농산물 중 아플라톡신 기준규격에 대하여 적합인 수준이나 미량 검출되는 것을 확인하였다. 중금속의 분석 결과 모두 불검출이었으나 환경요인 및 원재료에 따라 중금속의 오염이 의심될 시에 중금속 분석을 진행할 수 있을 것으로 판단된다. 이러한 실험결과를 통해 국내에 유통되고 있는 일부 식물성 대체육에 대한 안전성을 확인하였으나 산가, 과산화물가, 아플라톡신, 중금속은 대체육에 대하여 구체적인 분류 및 적합 규격이 마련되어 있지 않아 적합 판정시에 비슷한 성향을 가진 식품군에 대조하여 판단해야 하는 어려움이 있었다. 따라서 기존의 기준에 대하여 검토 또는 변경을 거쳐 식물성대체육에 대한 관리기준이 설정한다면 유사한 식품군의 건전성 및 적합성을 유지하는 것에 도움이 될 것으로 판단된다.

식품조사(食品照射) 실용화(實用化)에 대한 배경(背景)과 전망(展望) (Background and Prospect for the Commercialization of Food Irradiation)

  • Food irradiation is increasingly recognized as the sole viable alternative to traditional method of food preservation in terms of reducing the overall quantity of spoiled food, reducing energy used in food storage, and reducing reliance on chemicals known to be hazardous but currently required for disinfestation. Irradiation with ionizing radiation can be applied in the fields of sprout inhibition, disinfestation of insects, sterilization, delay of ripening, and improvement of organoleptic properties in food. In order to back up the commercialization of food irradiation in Korea, this review not only dealt with the international background for food irradiation and wholesomeness of irradiated food, but also evaluated economic feasibility of irradiated food, irradiation facilities, and domestic status of food irradiation studies.

Characterization of Yeast Protein Hydrolysate for Potential Application as a Feed Additive

  • Yeast protein can be a nutritionally suitable auxiliary protein source in livestock food. The breakdown of proteins and thereby generating high-quality peptide, typically provides nutritional benefits. Enzyme hydrolysis has been effectively uesed to generate peptides; however, studies on the potential applications of different types of enzymes to produce yeast protein hydrolysates remain limited. This study investigated the effects of endo- (alcalase and neutrase) and exotype (flavourzyme and prozyme 2000P) enzyme treatments on yeast protein. Endotype enzymes facilitate a higher hydrolysis efficiency in yeast proteins than exotype enzymes. The highest degree of hydrolysis was observed for the protein treated with neutrase, which was followed by alcalase, prozyme 2000P, and flavourzyme. Furthermore, endotype enzyme treated proteins exhibited higher solubility than their exotype counterparts. Notably, the more uniform particle size distribution was observed in endotype treated yeast protein. Moreover, compared with the original yeast protein, the enzymatic protein hydrolysates possessed a higher content of β-sheets structures, indicating their higher structural stability. Regardless of enzyme type, enzyme treated protein possessed a higher total free amino acid content including essential amino acids. Therefore, this study provides significant insights into the production of protein hydrolysates as an alternative protein material.

대구 지역 고등학생의 아침식사 이용실태 및 아침식사 대용식 인식조사 (Study on Breakfast Status and Perception of Substitution Foods for Breakfast in High School Students in Daegu Area)

  • This study investigated eating behaviors of high school students (209 males and 230 females) in Daegu region by gender. As a result of analyzing breakfast intake frequency, 'Not rarely eat' showed the highest (25.1%), followed by '5 times a week' (24.4%), '2 times a week' (17.3%), '3 times a week' (15.0%), '1 time a week' (11.6%), and '4 times a week' (6.6%). Regarding reasons for skipping breakfast, 'lack of time' showed the highest percentages. For their breakfast, 53.5% of students ate boiled rice with side dishes. Regarding reasons for skipping breakfast, 'buy and eat snack' showed the highest percentages. Regarding favorite breakfast menu, 'rice roll, rice ball, rice burger' showed the highest percentage (55.4%), followed by 'bread & cereal' (28.7%) and 'fruits & vegetable' (7.7%). Regarding purchase of breakfast alternatives, 'Yes' was highest. Considering actors for choosing a breakfast alternative, there is a need for 'convenience of food consumption', 'spending less time', 'easy cooking', 'favorite menu' and 'taste' of the breakfast alternative. When asked how much they like breakfast alternative menus, they responded that they liked 'rice roll, rice ball, rice burger' (3.91), 'bread & cereal' (3.67), 'fruit & vegetable' (3.66), 'noodle' (3.39), 'porridge' (3.18) and 'rice cake' (3.07). This result shows that breakfast menus should be developed according to high school students preferences.

Rheological Properties of Concentrated Dandelion Leaf Extracts by Hot Water or Ethanol

  • Basic rheological data of dandelion leaf concentrates were determined to predict processing aptitude and usefulness of dandelion leaf concentrates as functional food materials. Hot water and 70% ethanol extracts of dandelion leaves were concentrated at 5, 20, and 50 Brix, and their static and dynamic viscosities, and Arrhenius plots were investigated. Most concentrated dandelion leaves extracted with hot water and 70% ethanol showed flow behaviors close to Newtonian fluid based on power law model evaluation. Apparent viscosity of concentrated dandelion leaves extracted with hot water and 70% ethanol decreased with increasing temperature. Yield stresses of concentrated dandelion leaves extracted with hot water and 70% ethanol by Herschel-Bulkley model application were 0.020-0.641 and 0.017-0.079 Pa, respectively. Activation energies of concentrated dandelion leaves extracted with hot water and 70% ethanol were $2.102-32.669{\times}10^3$ and $1.657-5.382{\times}10^3\;J/mol{\cdot}kg$ with increasing concentration, respectively. Loss modulus (G") predominated over storage modulus (G') at all applied frequencies, showing typical flow behavior of low molecular solution. G' and G" of concentrated dandelion leaves extracted with hot water slowly increased with increasing frequency compared to those of concentrated dandelion leaves extracted with 70% ethanol.

  • As the population of the elderly grows, the prevalence of osteoporosis and its related fractures will increase in both men and women. The etiology, preventive and curative strategies of male osteoporosis are relatively unknown and understudied in comparison with those of female osteoporosis. Even currently approved therapies, e.g. bisphophonates, parathyroid hormone, and testosterone for male osteoporosis are in need of further investigation to test their safety and efficacy. Isoflavones which are found in soy have been shown to positively affect bone by stimulating bone formation while concurrently slowing down bone resorption. These observations mainly come from studies that have employed women or female animal models of osteoporosis. Therefore, there is a need to explore the role of soy and its isoflavones in preventing bone loss or rebuilding bone utilizing men or animal models of .male osteoporosis. From the review of existing literature it is too early to state the extent to which men with osteoporosis can benefit from consumption of soy or its isoflavones. In this review, the efficacy of soy and its isoflavones as alternative and/or adjunctive treatment for male osteoporosis will be discussed.
