Observation for drying non-uniformity of allium vegetables using NIR spectroscopy (근적외 분광법을 이용한 양념 야채의 건조 불균일성 관찰)

  • In this study, near-infrared spectroscopy was used to observe the drying non-uniformity of vegetables such as spring onions, onions, and garlic, which are commonly used for seasoning. For the warm-air convection drying method, the vegetables showed drying non-uniformity, which is due to the unevenness of the wind temperature and humidity depending on the height and position of the drying tray. The second derivative spectra between the vegetable samples with different drying degrees were compared. The peak at around 1,390~1,400 nm, which is assigned to weak hydrogen bonds of water, was changed during drying whereas the peak near 1,420 nm, which represents strong hydrogen (H-) bonds of water, was not changed, indicating that water with weak H-bonds evaporates first during drying, and that water with strong H-bonds remains after drying. The hyperspectral NIR imaging technique combined with principal-component analysis made it possible to discriminate the dried vegetables according to their drying degree.

Effects of Allium Vegetable Intake on Levels of Plasma Glucose, Lipid and Minerals in Streptozotocin Induced Diabetic Rats (Allium속 식용식물의 섭취가 Streptozotocin 유발 당뇨 흰쥐의 혈당, 지질 및 무기질 수준에 미치는 영향)

  • The effects of Allium vegetables on blood glucose levels and lipid metabolism in streptozotocin (S12) induced diabetic rats were investigated. Diabetes mellitus was induced by S1'2 injection (45 mg/kg 5.w.) into the tail vein. Sprague-Dawley rats weighing $220\;{\pm}\;10\;g$ were randomly assigned to 7 groups: normal, S1'2-control and five Allium groups (Allium cepa, Allium fistulosum, Allium sativum, Allium tuberosum and Allium victorialisL Normal and S12control groups were fed an AIN-93 diet and five Allium groups were fed a modified diet containing. 10% Allium powder each for 4 weeks. Body weight, diet intake, food efficiency ratio (FER) and organ weights- were monitored. Activities of aspartate aminotransferase (AST) & alanine aminotransferase (ALT) were observed: Plasma lev~ls of glucose, free fatty acid, triglyceride and HDL-cholesterol were analyzed. Levels of glycogen, cholesterol and triglyceride in liver were determined. Levels of malondialdehyde (MDA) in liver, lung, kidney, and pancreas were assayed. The hepatic contents of chromium (Cr) , iron (Fe), zinc (Zn) and manganese (Mu) were measured. The Allium sativum group had weight gain and suppressed a hypertrophy of the kidney significantly. The activity of ALT was significantly lowered in the diabetic groups except Allium sativum group compared to STZ-control group. The Allium sativum and Allium tuberosum groups showed the hypoglycemic effects at 4 weeks. There were no significant differences between the control and all the other diabetic groups in the plasma levels of cholesterol, HDL-cholesterol, triglycerides and free fatty acids. Most of the Allium groups except Allium fistulosum were observed significantly lowered level of MDA in the lung compared to STZ-control group. The diabetic rats fed the Allium cepa and Allium sativum have shown significantly lowered hepatic Zn contents. The results suggested that the intake of the Allium vegetables may be effective in the antihyperglycemia by lowering blood glucose levels.

Contents of Minerals and Vitamins in Organic Vegetables (유기농 야채의 무기물 및 비타민 함량)

  • Proximate components, minerals, vitamins and chlorophyll contents were determined in vegetables purchased at Garak-dong market and organic vegetables cultivated at Hongchun, Kangwon-do. The vegetables were Kale, Angelica Keiskei Koidz, Celery, Lettuce and Allium fistulosum. In proximate component contents, analyzed crude protein and fat contents of organic vegetables were higher than those of general vegetables. Organic vegetables had strong green color. Minerals such as sodium, potassium, calcium, phosphorus, iron as well as vitamins were determined. Contents of minerals and vitamins in organic vegetables were higher than those of general vegetables. Total mineral content of organic and general kales were 811.8 mg/l00g, and 688.1 mg/l00g, respectively. Total mineral content of organic Angelica Keiskei Kowz, Celery, Lettuce and Allium fistulosum were 447.9, 486.5, 368.6, and 320.9 mg/100g, respectively.

Phylogenetic relationships of Iranian Allium species using the matK (cpDNA gene) region

  • Allium L. is one of the largest genera of the Amaryllidaceae family, with more than 920 species including many economically important species used as vegetables, spices, medicines, or ornamental plants. Currently, DNA barcoding tools are being successfully used for the molecular taxonomy of Allium. A total of 46 Allium species were collected from their native areas, and DNA was extracted using the IBRC DNA extraction kit. We used specific primers to PCR amplify matK. DNA sequences were edited and aligned for homology, and a phylogenetic tree was constructed using the neighbor-joining method. The results show thymine (38.5%) was the most frequent and guanine (13.9%) the least frequent nucleotide. The matK regions of the populations were quite highly conserved, and the amount of C and CT was calculated at 0.162 and 0.26, respectively. Analysis of the nucleotide substitution showed C-T (26.22%) and A-G (8.08%) to have the highest and lowest percent, respectively. The natural selection process dN/dS was 1.16, and the naturality test results were -1.5 for Tajima's D and -1.19 for Fu's Fs. The NJ dendrogram generated three distinct clades: the first contained Allium austroiranicum and A. ampeloprasum; the second contained A. iranshahrii, A. bisotunense, and A. cf assadi; and the third contained A. rubellum and other species. In this study, we tested the utility of the matK region as a DNA barcode for discriminating Allium. species.

Physiological Responses of Allium victorialis var. platyphyllum, Ligularia fischeri and Ligularia stenocephala Growing at Different Fertilizing Schemes (시비처리에 따른 산마늘, 곰취, 곤달비의 생리적 반응)

  • The present study was conducted to investigate photosynthetic responses (Pn), chlorophyll fluorescence (Pe), chlorophyll contents of Allium victorialis var. platyphyllum, Ligularia fischeri, and Ligularia stenocephala growing at four different fertilizing schemes (non-fertilizing and 2.5 $g{\cdot}l^{-1}$, 5 $g{\cdot}l^{-1}$, 10 $g{\cdot}l^{-1}$ fertilizing). Three wild vegetables showed outstanding Pn and Pe at 5 $g{\cdot}l^{-1}$ fertilizing treatment. 10 $g{\cdot}l^{-1}$ of fertilizer, however, proved to be too much eventually leading to declined growth. A. victorialis var. platyphyllum showed good Pn and Pe under shade treatment whereas Pn and Pe of L. fischeri, and L. stenocephala showed the opposite tendency. The chlorophyll contents of the three wild vegetables showed the highest measurement ranging between 11.70~24.36 $mg{\cdot}g^{-1}$ when treated with 5 $g{\cdot}l^{-1}$ of fertilizer. Also it was showed that there were more chlorophyll contents under shade treatment as opposed to full sun. These results showed that 5 $g{\cdot}l^{-1}$ fertilizing treatment is optimal fertilizing of three wild vegetables and fertilizing and light intensity controlling is very important for productivity of vegetables.

Analysis Growth Performance and Ascorbic Acid Contents of Allium victorialis var. platyphyllum, Ligularia fischeri, and L. stenocephala Under Changing Light Intensity (광도 변화에 따른 산마늘, 곰취, 곤달비의 생장 및 Ascorbic acid 함량분석)

  • The present study was conducted to investigate growth performance and ascorbic acid contents of Allium victorialis var. platyphyllum, Ligularia fischeri, and L. stenocephala growing under four different light intensity regimes (full sun, and 64~73%, 35~42%, 9~16% of full sun). The leaf area and total biomass of Allium victorialis var. platyphyllum were highest in 35~42% of the full sun. However, the leaf area and total biomass were highest in 64~73% of the full sun in Ligularia fischeri, and L. stenocephala. The leaf thickness decreased with increasing shading in all three wild vegetables. The growth of root comparing to that of shoot decreased as shading increased, and as the result, the ratio of shoot biomass to root biomass increased. Ascorbic acid contents were higher in Allium victorialis var. platyphyllum than in Ligularia fischeri and L. stenocephala. Allium victorialis var. platyphyllum showed the highest contents of ascorbic acid in 35~42% of full sun. Whereas Ligularia fischeri and L. stenocephala showed the highest in 64~73% of full sun.

Dietary Fiber Contents and Physical Properties of Wild Vegetables (산채류의 식이섬유 함량과 물리적 특성)

  • Nine wind vegetables were analyzed for moisture, ash, crude protein, crude lipid and dietary fiber. Wild vegetables contained 33-53% of dietary fiber on a dry weight basis. Dalle (Allium monanthum) contained 49% total dietary fiber and 22% soluble dietary fiber and dodok(Codonopsis lanceolata) contained 55% total dietary fiber and 21% soluble dietary fiber. Wild 8% more dietary fiber than cultivated one. Water holding capacities of wild vegetables were higher than commercial wheat bran and soy fiber, but lower in oil absorption. When wild dodok and dalle were wet milled by blade grinding before sieving the dietary fiber content in dodok was increased from 55 to 83 % with increasing the dietary fiber content in dalle form 49% to 69%.

Content of Pesticide Contaminants Content in Organic Vegetables (잔류농약, 무기물 분석에 의한 유기농 채소의 판별: 유기농 채소의 잔류농약 함량)

  • Pesticide contaminants content was determined about both general vegetables marketed at Garak-dong market and organic vegetables cultivated at Hongchun, Kangwon-do. The vegetables were kale, Angelica Keiskei Koidz, celery, lettuce and Allium fistulosum. Pesticide contaminants content of 5 kinds general vegetables were 93.5, 57.7, 112.4, 76.5, 65.2 ppm, respectively. This residual levels were showed 75.35, 70.68, 78.49, 70.49% about standard level, respectively. Angelica Keiskei Koidz was not able to calculate the residual level because the standard level was not established in Korea. In contrast, the residual levels of organic vegetables were determined 36.4, 21.0, 42.9, 29.1, 25.1ppm, respectively. This level was about 30% of standard level, 38.93, 36.40, 38.17, 38.04, 38.50% of general vegetables. At the result, pesticide contaminants content of organic vegetables was less than 40% of general vegetables.

White Rot of Korean Wild Chive Caused by Stromatinia cepivora

  • In May 2020, we surveyed disease occurrence on vegetables grown in Seosan area, Korea. During the disease survey, white rot symptoms were observed in Korean wild chive (Allium monanthum) plants growing in fields. The symptoms occurred mainly in the seed bulb-producing fields of the crop. The above ground parts of the diseased plants displayed premature yellowing and dying of older leaves and stunting of the plants. The bulbs and roots of the diseased plants turned black and rotted. The disease occurred in a range of 1-60% in four of the eight fields surveyed. Three isolates of Sclerotium sp. were obtained from the bulb lesions of diseased plants. All isolates were identified as Stromatinia cepivora based on the morphological characteristics and phylogenetic analysis. Pathogenicity of the isolates on Korean wild chive was confirmed by artificial inoculation test. The lesions induced by the inoculation test were similar to those observed in the investigated fields. This is the first report of S. cepivora causing white rot in Korean wild chive.
