Principal Study of Korean Oak Woods for Utilization with Whisky Aging Barrel (국산 참나무속 수종의 위스키 원액 저장용 목통으로의 활용성 평가)

  • This paper describes experimental results on the utilization of some Korean oak woods for whisky aging barrel. Some anatomical characteristics as vessel diameter, ray spacing, ray height, existence of tyloses, water absorption and color change of alcohol during immersing of wood samples were examined. The oak woods used in this study were ring-porous. The type of ray was a compound ray consisted of uniseriate ray and broad ray. The ray parenchyma cells were almost procumbent, tyloses were presented in white oak(Quercus aliena, Quercus variabilis, Quercus dentata, Quercus mongolica), but absented in red oak(Quercus rubura). Density of wood samples decreased during immersing in alcohol. Alcohol color in Quercus dentata and Quercus aliena presented more darker than other samples. Water absorption of sapwoods was higher than that of heartwoods. Especially, red oak showed more higher water absorption than white oak. Consequently, Korean white oak woods can be used as the whisky aging barrel.

Stability of Henna Natural Hair Dye Cream Formulation According to Cetyl Alcohol Contents (Cetyl alcohol 함량에 따른 크림 제형 Henna 천연 염모제의 안정성)

  • In this study, the emulsion stability of henna, a natural hair dye, according to the content of cetyl alcohol, one of the emulsification stabilizers, was analyzed, and the content of cetyl alcohol showing the most stable emulsification was confirmed. To analyze the emulsion stability, differences in particle size, particle shape, viscosity, and color after dyeing were compared according to the content of cetyl alcohol. As a result of dynamic light scattering (DLS) zeta analysis, cetyl alcohol 3% showed the highest zeta potential value of 115.9 mV, and the particle size distribution was henna in which a cream-type hair dye containing 3% cetyl alcohol was dispersed in distilled water. The width of the particle size distribution was narrow compared to. As a result of viscometer analysis, the viscosity increased as the content of cetyl alcohol increased. As a result of measuring the henna pH of the cream formulation, it was measured in a pH range suitable for the scalp. As a result, emulsion stability increases as the content of cetyl alcohol increases in henna cream formulations for hair dye.

Characteristics of Alcohol Fermentation in Citrus Hydrolysates through Narirutin Addition (Narirutin첨가에 따른 감귤가수분해물의 알코올 발효 특성)

  • The characteristics of the narirutin-added alcohol fermentation of citrus hydrolysates were investigated to produce functionally improved citrus wine. The pH of narirutin-added citrus wine ranged from 3.38 to 3.51, and the titratable acidity was about 0.55% which show no significant differences attributable to the narirutin quantity. With regard to the color and brown color, with the addition of more narirutin, the a value was decreased while the b value and brown color increased. The sugar content decreased from 24 to 8.0-8.5 $^{\circ}Brix$ after alcohol fermentation, and the alcohol content appeared to be between 14.5 and 14.6% in all the sections. For the free sugar contents, the glucose and fructose contents were relatively high in every section. For the total polyphenol content, it was shown to increase when more narirutin was added. and the 2%-narirutin-added section showed the highest polyphenol content(46.44 mg%). The results of sensory evaluation were that the color, flavor and bitterness increased while the sweetness and overall acceptability were reduced by the additional narirutin. Functionally improved citrus wine can be produced by using narirutin, but more researches regarding quality improvement should be carried out to overcome the bitterness.

Quality Chatacteristics of Vinegar using Wasabi japonica Matsum Leaves (고추냉이 잎으로 제조한 식초의 품질 특성 연구)

  • This study was conducted to test the fermenting of high quality vinegar using Wasabi japonica Matsum leaves. Alcohol fermentation with Wasabi japonica Matsum leaves resulted in the reduction of sugar and sugar alcohol content during fermentation, which decreased sharply over 3 days. The alcohol content was maximized (15.4%) after 8-days of alcohol fermentation at $27^{\circ}C$ by adjusting the initial sugar concentration to $27^{\circ}Brix$, and vinegar with an acidity of 5.1% was obtained after 21-days of acetic acid fermentation at $30^{\circ}C$. The pH was shown to be 3.5 after 21-days of acetic acid fermentation at $30^{\circ}C$. Regarding the color of Wasabi japonica Matsum leaves vinegar, the L and b values increased according to fermentation time, whereas a color values decreased. In conclusion, based on the above results, it is determined that the use of Wasabi japonica Matsum leaves allows for the production of high-quality vinegar.

Changes in Physiochemical Properties of Kochujang by Red Ginseng Addition (홍삼 첨가에 따른 고추장의 이화학적 특성 변화)

  • Changes in physiochemical properties of Sunchang sikhe kochujang, the most famous traditional kochujang, by red ginseng addition(1, 2 and 5% red ginseng on the total weight basis) were investigated. Measurements of physiochemical parameters such as reducing sugar content, alcohol content, amino type nitrogen content and color difference value were conducted during fermentation at 25oC for 120 days. Alcohol content was increased from the begining of fermentation, reaching at the highest level after 90 days of fermentation and then slowly reduced. Alcohol content of red ginseng kochujang was generally higher than that of control kochujang after 90 days of fermentation. Crude protein content of control kochujang and red ginseng kochujang were reduced during fermentation whereas amino type nitrogen content were gradually increased during fermentation. Amino type nitrogen content of red ginseng kochujang appeared to be slightly lower than that of the control kochujang. The reduction in amino type nitrogen content of red ginseng kochujang was negatively related to the level of red ginseng addition. Among color difference values, L and b value of both control kochujang and red ginseng kochujang were reduced by 30 days from the begining of fermentation and then started to be increased.

Effects of Sterilization for Quality Control and Content of baicalin in Scutellariae Radix (멸균법에 따른 황금의 미생물학적 품질보증과 바이칼린 함량에 미치는 영향)

  • The purposes of this study was to develop the best one among the methods using dry heat, gamma irradiation and alcohol gas, to sterilize Scutellariae Radix selected based on high frequency of circulation between merchants and high susceptibility to microbial contamination, through comparing these methods in terms of the followings; ⅰ) the efficacy of sterilization in comparison with cost, and ⅱ)the alteration of chemical components of these herbal medicines. The results of this study will be taken advantage of establishment of the maximum limit of microorganism contaminated in herbal medicines. From the results of this study we conclude the followings: ⅰ) The sterilizing method using dry heat may be inappropriate, because it seriously changed their color and morphology which is an essential criterion to estimate a measure of quality between merchants and consumers, although it effectively got rid of contaminated microorganism and did not alter major components, baicalin; ⅱ) The sterilizing method using gamma irradiation may be appropriate, because it showed a strong sterilizing effect, and no alteration of chemical components, color and morphology; ⅲ)The sterilizing method using alcohol gas may also be appropriate, because it had a similar effects as in the case of gamma irradiation. Collectively, we suggest that appropriate sterilizing methods to guarantee the microbial quality of this herbal medicine may be those using gamma irradiation and alcohol gas.

Sputtering of Silk Fabric Using Poly(vinyl alcohol) Binder (폴리비닐알코올 호제를 이용한 실크직물의 Sputtering)

  • Silk fabric was sputter-treated with Au, Cu, SUS, and Ti using poly(vinyl alcohol) (PVA) as a binder, and its changes in color, antielectrostatic property, airpermearbility, and rubbing fastness were investigated. Sputter-treated silk fabric had a natural color of metal target, which was deepened by treatment of PVA solution. The rubbing fastness of thin metal layer formed by sputtering was improved by PVA treatment. Au had highest rubbing fastness among the metal targets. In addition, PVA treatment posterior to sputtering resulted In higher rubbing fastness than the other treatment method. However, a reverse trend was found in antielectrostatic property. Air permeability of the sputter-treated silk fabric was improved by PVA treatment, which was highest when sputtering was conducted prior to PVA treatment.

  • This study was conducted to develop a method to change the color of traditional Dongchimi using natural dyes to meet changing consumer demands. It was intended to improve the manufacturing process ability for color Dongchimi, and the best optimum extraction solvent and method from the natural dyes were proven to be confirmed and valid. The extraction process was evaluated using different solvents including distilled water, 20% ethyl alcohol, and 1% citric acid, and the quantity of the extracted anthocyanin was then measured based on the absorbance. The greatest absorbance was observed when 1% citric acid was used. Based on these findings, it would be most efficient to allow the traditional Dongchimi to produce citric acid naturally instead of using artificial additives during its production. Celosia cristata L. was extracted in its largest quantity when reacted with 20% ethyl alcohol. Therefore, instead of applying Celosia cristata L. to Dongchimi as the sub-ingredient during the preparatory stage, it will be more efficient to use Celosia cristata L. as the fractional ingredient in order to first extraction.

  • Oxidative hair color is currently widely used because of its beautiful light color and good dyeability. In this study, hair color, oxidative agents, and dye intermediate were reacted. Modifier, which changes color with various hue, and alkaline agent, which opens the cuticle of hair fiber and enhances the dyeing reaction, were added. For gel formation, isocetyl alcohol was used as solvent in preparing three kinds of permanent oxidative hair color. Physiochemical study of prepared permanent oxidative hair color was done for basic information acquisition. Acid perspiration test, pH measurement both at room temperature and at high temperature, drop movement test, dyeability efficiency upon the amount of hydrogen peroxide added, and humidity fastness were studied. Shampoo fastness and light fastness of prepared permanent oxidative hair color dyed hair sample were also investigated. All three kinds of hair color prepared showed good properties overall, however, dyed hair sample became reddish upon shampoo fastness and lightfastness tests.

Optimization of the Acetic Acid Fermentation for Aronia Vinegar using Response Surface Methodology (반응표면분석법을 이용한 아로니아 식초 제조를 위한 발효조건 최적화)

  • This study was conducted to determine the optimal conditions of acetic acid fermentation of aronia using the response surface methodology (RSM). Alcohol content of aronia wine was 13.1% after alcohol fermentation of aronia fruits. The optimal conditions of acetic acid fermentation were determined by five levels of initial aronia alcohol content, initial acetic acid content, and acetic acid bacteria, using the central composite design. The acetic acid yields, residual alcohol contents, pH, and color values (L, a, b) of acetic acid fermentation products were very significantly different ($p{\leq}0.01$), and were 26.34~57.82 g/L, 0.80~1.53%, 3.19~3.43, 47.58~71.00, 31.77~51.15, and 18.45~48.57, respectively. For the results, the optimal conditions of acetic acid fermentation of aronia were 7.78% of the initial alcohol concentration, 1.58% of the initial acetic acid, and 19.39% of the acetic acid bacteria.
