Background: The current typical drying methods for red ginseng are sun drying and hot-air drying. The purpose of this study was to investigate drying characteristics of red ginseng by using far-infrared drying. Methods: The far-infrared drying tests on red ginseng were conducted at two drying stages: (1) high temperature for 24 h drying and (2) low temperature drying until the final moisture content was $13{\pm}0.5%$ (wet basis). The high temperature drying stage included three drying chamber temperature conditions of $60^{\circ}C$, $65^{\circ}C$, and $70^{\circ}C$. The low temperature drying stage was conducted at temperatures of $45^{\circ}C$ and $50^{\circ}C$. Drying characteristics were analyzed based on factors such as drying rate, color changes, energy consumption, and saponin content. The results were compared with those of the hot-air and sun drying methods. Results: The results revealed that increases in drying temperature caused a decrease in drying time and energy consumption for far-infrared drying. The saponin content decreased under all drying conditions after drying, the highest value (11.34 mg/g) was observed at drying conditions of $60{\sim}50^{\circ}C$. The sun drying condition showed the lowest color difference value when compared with far-infrared and hot-air drying. Conclusion: The far-infrared drying showed a faster drying rate, higher saponin content, lower color difference value, and a decrease in energy consumption than seen in hot-air drying.
Drying process was applied to increase the antioxidant activity of onion powder: freeze-drying or air-drying at 50, 70, and $90^{\circ}C$ and onion extracts were obtained from each powder using water or aqueous ethanol (50%) at $25^{\circ}C$ and $60^{\circ}C$. In the color analysis, the freeze-dried powders showed higher $L^*$ and lower $a^*$ and $b^*$ values than did the air-dried ones. The browning index of powders air-dried at $90^{\circ}C$ was significantly higher than that of freeze-dried powders or those air-dried at temperatures below $90^{\circ}C$. Phenolic content in the extracts was 4.02-23.12 mg gallic acid equivalent/g sample, and was the highest in the extract from the sample air-dried at $90^{\circ}C$, regardless of the extraction condition. The highest antioxidant activity, measured by 2,2-azinobis-3-ethylbenzothiazoline-6-sulfonic acid and 1,1-diphenyl-2-picrylhydrazyl methods, was found in the powder air-dried at $90^{\circ}C$, which induced browning. These findings indicate that antioxidant activity depends more on browning during drying than on extraction conditions.
A simulation model of natural air drying to predict the changes of the grain moisture content and dry matter loss of rough rice was developed by the application of mass diffusion theory. A series of simulated drying tests was conducted using the 10 year weather data (1970-1979) obtained from Cheongju, Chuncheon, Daegu, Daejeon, Jeonju, Jinju and Suweon in Korea. System performance factors treated in this study were initial moisture content, airflow rate, bin diameter and grain depth. The results obtained in this study are summarized as follows: 1) The simulation model used in this study was validated with actual experimental results and was applicable to the natural air drying of rough rice. 2) Minimum airflow rates for safe drying were determined for different initial moisture contents and regional weather conditions as shown in Table 6. 3) Equations for estimating drying time and dry matter loss in terms of airflow rate and initial moisture content were derived in the form of an exponential function. 4) These results show that the natural air drying system of rough rice is feasible in Korea even for the poorest drying condition.
Purpose: This study was conducted to investigate the hot air drying characteristics of squash slices depending on the drying conditions (input air velocity, input air temperature, and sample thickness). Methods: The developed drying system was equipped with a controllable air blower and electric finned heater, drying chamber, and ventilation fan. Squash (summer squash called Korean zucchini) samples were cut into slices of two different thicknesses (5 and 10 mm). These were then dried at two different input air temperatures (60 and $70^{\circ}C$) and air velocities (5 and 7 m/s). Six well-known drying models were tested to describe the experimental drying data. A non-linear regression analysis was applied to determine model constants and statistical indices such as the coefficient of determination ($R^2$), reduced chi-square (${\chi}^2$), and root mean square error (RMSE). In addition, the effective moisture diffusivity ($D_{eff}$) was estimated based on the curve of ln(MR) versus drying time. Results: The results clearly showed that drying time decreased with an increase in input air temperature. Slice thickness also affected the drying time. Air velocity had a greater influence on drying time at $70^{\circ}C$ than at $60^{\circ}C$ for both thicknesses. All drying models accurately described the drying curve of squash slices regardless of slice thickness and drying conditions; the Modified Henderson and Pabis model had the best performance with the highest R2 and the lowest RMSE values. The effective moisture diffusivity ($D_{eff}$) changes, obtained from Fick's diffusion method, were between $1.67{\times}10^{-10}$ and $7.01{\times}10^{-10}m^2/s$. The moisture diffusivity was increased with an increase in input air temperature, velocity, and thickness. Conclusions: The drying time of squash slices varied depending on input temperature, velocity, and thickness of slices. The further study is necessary to figure out optimal drying condition for squash slices with retaining its original quality.

A Far Infrared Ray (FIR) dryer was designed , constructed and tested for red pepper , lycium chinese, and mushroom (Cortiellus shiitake ) drying , and the results were compared to the heated air dryer at the same condition. In the FIR dryer, three different panel materials , galvanized, copper and stainless steel, were used and no ceramic coating and those with ceramic coating (three panels) were 58% , 56%, 64%, and 88% , respectively. The drying times of lycium chinese and mushroom were shortened in FIR dryer by 6 hrs and 4 hrs compared to the heated air drying, respectively. while to remarkable difference in the drying times was found in the red pepper drying . The quality of products was better in FIR dryer where more red color value for red pepper and lycium chinese and more brightness for mushroom . The drying performance of a FIR dryer was superior in terms of total cost of 80,800 WON /100kg of lycium chinese , reduced by 25% compared to the heated air drying.
For the removal of initial water content in cuttlefish, the effects of fixed-bed drying condition on the drying rate were investigated, with following results. 1. The drying rate of cuttlefish dried at fixed-bed condition was also faster than that at natural convection type or hot air dryer.2. By controlling air temperature and its direction to cut-and-peeled sample the drying time can be reduced to 2 hrs. 3. Shirai's equation and Arrhenius' law were applicable to fixed-bed dried cuttlefish. Drying rate constant (k) by Shirai's equation, and Arrhenius' plot were as shown in Table 3, 4 and Fig.3, respectively.
This study was performed to find out drying characteristics and develop drying model for the design of an efficient dryer or drying system of red peper. The basic model which describes drying phenomenon of red pepper was firstly established, and drying tests were conducted at 14-different drying conditions. In this test, the effects of drying air temperature and relative humidity on the rate of drying were undertaken. Finally, a new drying model based on these experimental results was developed to describe the drying characteristics of red pepper. The results from this study may be summarized as follows. 1. Drying constant of the basic model established from Lewis' experimental model and diffusion equation was theoretically deduced as a function of moisture content and inner-temperature of red pepper. 2. From the results of drying tests, drying air temperature was found to have the greatest effect on the rate of drying. However, the effect of temperature was small for the condition of high relative humidity, and for low temperature, the effect of relative humidity was found to be large even though the range of relative humidity was low. 3. Modified Henderson equation was found to be better than Chung equation as the EMC model for the estimation of the equilibrium moisture content of red Pepper. 4. Constant-rate drying period did not exist in the red pepper drying test. And falling-rate drying period was divided into three distinct phases. Drying rate was dependent on the moisture content, the inner-temperature of red pepper and the change of physical property due to drying. 5. Drying constant increased with decrease of free moisture content, but it decreased at the end of the drying period. Also, drying constant was dependent on the drying air temperature and relative humidity. 6. The new drying model developed in this study was found to be most suitable in describing the drying characteristics of red pepper. Therefore, it may be concluded that drying time could be accurately estimated by the new drying model.

Hot air drying is a method that let moistures evaporate by heat exchange between heating air and dry target. This way is dominating more than about 70% of dryers that the use extent is wide fairly, and is established in domestic than dryer that use conduction or radiation etc. Most of research about drying had been emphasized in size of device through analysis for these dry phenomenon plain, heating topology, and aspect of form and so on by dry target's special quality, and research about device development or waste heat withdrawal technology in energy utilization efficiency side is slight real condition. Drying Shrinkage has much complexity as it has relations with both internal elements of concrete and external factors. Therefore, experiments on Concrete Drying Shrinkage are carried out in this study under simplified circumstances applying temperature & Humidity test chamber which enables constant temperature and humidity. Comparative analyses have been made respectively according to the consequences aiming at modelling for prediction of Concrete Drying Shrinkage and making out measures to reduce it. Strain Rate of Drying Shrinkage of concrete under the condition of dry air appears to rise by about 20%-30% in proportion as the temperature rises $5^{\circ}C$ when the humidity was held below 10% compared under the condition of dry temperature & Humidity test chamber. Strain Rate of Drying Shrinkage in pit sand concrete increased 20% higher than measured when in river sand under the condition of 90-day material age. A general formula with two variables is derived as follow ${\varepsilon}={\alpha}_1+{\beta}_1x_1+{\beta}_2x_2+{\beta}_3x_1^2+{\beta}_5x_2^2$. and also graphed in 3 dimensions, enabling to apply to actual design and predict Strain Rate of Drying Shrinkage in concrete. The results of prediction of Rate of Drying Shrinkage by Response Surface Analysis are as follows. The coefficient of correlation of Drying Shrinkage in Concrete was over 90%.
This study was carried out to investigate a heat treatment condition and suitable drying schedule of bamboo material(Phyllostachys nigra var. henonis) for a vertical flute with small-notched bamboo. It is very important to prevent drying defects during its drying process. We investigated the effort of heat treatment the most suitable drying schedule for small-notched bamboo vertical flute without drying defects in this research. A direct heat treatment method and drying conditions of 3($20^{\circ}C$ 65%, $40^{\circ}C$ 40%, and dry at air condition) were applied to the Bamboo specimen that felled in several areas for a month. The result suggested that the most suitable drying schedule with the less split and the shortest time was to dry at $40^{\circ}C$, 40% condition and it was useful to direct heat-treatment because of reducing the number and size of split during drying bamboo.
