  • The drying rate in freeze drying was obtained by experiment of garlic moisture contents depending on the drying time. Freeze drying experiment of garlic juice was carried out in vaccum freeze drier of laboratory scale by backface heating, and a mathematical model is also used to simulate the process of simultaneous heat and mass transfer in freeze drying to compare with experimental data.

  • This study was conducted to analyze the properties of the roasted dandelion tea prepared after various pre-treatments such as pre-drying, steaming and air blast drying. The dandelion tea was prepared by roasting the pre-treated dandelion leaves and its total yield, pH, soluble solid content, turbidity, browning and sensory value were evaluated. Total yield and soluble solid content were the highest in case of air blast drying. Turbidity and browning degree were similar in all the teas regardless of their pre-treatment including pre-drying, steaming or air blast drying. The best palatability in the sensory evaluation was obtained at the steaming condition for 60 sec without pre-drying. Longer air blast drying time resulted in the increase in the a and b values. turbidity, browning degree, total yield and soluble solid content in the air blast dried tea.

Quality Characteristics of Blackberry Powder obtained by Various Drying Methods (다양한 건조방법에 따른 블랙베리 분말의 품질 특성)

  • This experiment was carried out to enhance the availability of blackberry. Since it is difficult to use blackberry as a fresh fruit, we investigated the quality characteristics of blackberry powder obtained by various drying methods (freeze drying and hot-air drying at $40{\sim}80^{\circ}C$). The L- and b-values of freeze-dried powder was higher than hot-air dried powder. The pH (3.2) was lowest and the acidity (14.4%) was highest in freeze-dried powder. In freeze drying, the brix degree was $65.7^{\circ}Bx$, but it increased from $54.7^{\circ}Bx$ to $68.5^{\circ}Bx$ with increasing temperature during hot air drying. The total polyphenol and flavonoids contents were the highest in freeze-dried powder, at 9.3 and 6.2 mg/g, respectively. The levels increased as temperature increased in hot air drying. Anthocyanin content in freeze-dried powder was 8.51 mg/g, while it sharply decreased to 1.17~2.45 mg/g in hot-air drying. Vitamin C content in freeze drying ($979.4{\mu}g/g$) was higher than that in hot-air drying ($48.3{\sim}303.2{\mu}g/g$). The sample concentration required for 50% reduction of DPPH free radical scavenging ($RC_{50}$) was $79.7{\mu}g/mL$ in freeze drying, and showed high antioxidant activity. Also it decreased from $122.4{\mu}g/mL$ to $87.7{\mu}g/mL$ with temperature increase during hot air drying. We therefore conclude from the above results that freeze drying is more suitable for the production of blackberry powder, because this method showed high value of chromaticity, total polyphenol, flavonoid, anthocyanin content, vitamin C and antioxidant activity.

  • In recent, Kimchi is produced in the scale of industry, Consumers show increased demand of safety and high quality and hygienic process control. So, sun drying, hot air drying and cold air drying methods were investigated to compare the demand Sun drying took 96 hrs, hot air drying took 4 hrs at $70^{\circ}$ and cold air drying took 102 hrs at $10^{\circ}C$ in removing water to $90\%$ from radish. Brownness of radish was expressed as absorbance. Absorbance were 0.20, 2.04 and 1.87 and also Vit-C contents were 0.14 mg/g, 0.12 mg/g and 0.096 mg/g in dried radish according to cold air drying, hot air drying and sun drying, respectively. From overall experimental results, cold air drying method was found as superior drying method to other drying methods.

Effect of different air-drying time on the microleakage of single-step self-etch adhesives

  • Objectives: This study evaluated the effect of three different air-drying times on microleakage of three self-etch adhesive systems. Materials and Methods: Class I cavities were prepared for 108 extracted sound human premolars. The teeth were divided into three main groups based on three different adhesives: Opti Bond All in One (OBAO), Clearfil $S^3$ Bond (CSB), Bond Force (BF). Each main group divided into three subgroups regarding the air-drying time: without application of air stream, following the manufacturer's instruction, for 10 sec more than manufacturer's instruction. After completion of restorations, specimens were thermocycled and then connected to a fluid filtration system to evaluate microleakage. The data were statistically analyzed using two-way ANOVA and Tukey-test (${\alpha}$ = 0.05). Results: The microleakage of all adhesives decreased when the air-drying time increased from 0 sec to manufacturer's instruction (p < 0.001). The microleakage of BF reached its lowest values after increasing the drying time to 10 sec more than the manufacturer's instruction (p < 0.001). Microleakage of OBAO and CSB was significantly lower compared to BF in all three drying time (p < 0.001). Conclusions: Increasing in air-drying time of adhesive layer in one-step selfetch adhesives caused reduction of microleakage, but the amount of this reduction may be dependent on the adhesive components of self-etch adhesives.

  • A Far Infrared Ray (FIR) dryer was designed , constructed and tested for red pepper , lycium chinese, and mushroom (Cortiellus shiitake ) drying , and the results were compared to the heated air dryer at the same condition. In the FIR dryer, three different panel materials , galvanized, copper and stainless steel, were used and no ceramic coating and those with ceramic coating (three panels) were 58% , 56%, 64%, and 88% , respectively. The drying times of lycium chinese and mushroom were shortened in FIR dryer by 6 hrs and 4 hrs compared to the heated air drying, respectively. while to remarkable difference in the drying times was found in the red pepper drying . The quality of products was better in FIR dryer where more red color value for red pepper and lycium chinese and more brightness for mushroom . The drying performance of a FIR dryer was superior in terms of total cost of 80,800 WON /100kg of lycium chinese , reduced by 25% compared to the heated air drying.

Physicochemical Properties of Chaga (Inonotus obliquus) Mushroom Powder as Influenced by Drying Methods

  • The effects of drying methods on the physicochemical properties of chaga (Inonotus obliquus) mushroom powder were investigated. Scanning electron micrograph revealed that freeze drying produced smaller particle- sized samples which in turn resulted in higher porosity than did vacuum and hot-air drying. Samples prepared by freeze drying showed a significantly higher L*-value as compared with those prepared by hot-air drying and vacuum drying (p<0.05). The lightness (L*-value) significantly decreased with increasing relative humidity and storage temperature regardless of drying method (p<0.05). The yellowness (b*-value) increased significantly with increasing relative humidity (p<0.05). Browning index was significantly lower in samples prepared by freeze drying (p<0.05) but not significantly different between samples dried by hot-air and vacuum drying. Freeze dried sample exhibited a significantly higher degree of rehydration than other samples (p<0.05) probably due to the small particle size. Water solubility of the freeze dried sample was higher than those of the other methods while swelling ratio of the same sample appeared to be lower than those of others. Freeze dried chaga mushroom powder contained significantly lower amount of total phenolics and total sugar as compared to other samples (p<0.05).

  • Drying process of red pepper is very important in terms of drying cost and quality of the end product. Recently, many studies on red pepper drying have been performed. Nevertheless, an optimum drying condition is not established yet. Drying characteristics of red pepper is much affected by drying factors such as variety and initial state of red pepper as well as by environmental drying factors such as temperature and relative humidity of drying air. Various varieties of red pepper are being cultivated and the initial state of red pepper at harvest is very ambiguous. For this reason, it is very costly and time-consuming to establish an optimum drying condition of red pepper by experiment. A general drying model to descirbe a drying process has not been developed due to diversity of drying characteristics of red pepper. This study was, therefore, performed to develop a general drying model describing a drying process of red pepper. The results from this study are summarized as follows. 1. A basic model was established to develop an appropriate mositure content model and temperature model describing a drying process of red pepper, and the basic model was validated with experimental data. 2. The bone dry weight of fruit and mositure content were accepted satisfactorily as parameter to define the arbitrary red pepper. 3. The equilibrium moisture content of red pepper was found out to be different according to the variety of red pepper, air temperature and relative humidity. Also, the EMC model was developed using the parameters of air temperature, relative humidity and bone dry weight of fruit. 4. A general drying model for red pepper was developed, parameters of which were expressed as the function of drying factors related with drying phenomena. The developed drying model was found out to describe well the drying process of red pepper.

  • Low temperature vacuum drying technique, whose drying time and quantity of exhausting energy is about 25~30% of hot air drying, is very excellent in the drying efficiency. This paper is made out in the aspects of heat engineering with the object of developing Korean drying machine which can dry once a large quantity of objects to be dried in the state of low temperature and vacuum. As the results, it took about 17 hours(3~4 days in case of hot air drying) for material to reach about 18% of the final moisture content in order to store products for a long time, from about 78~80% of the early moisture content at the beginning of drying, and maximum drying rate comes to about 0.35 kg/m2hr at about 400% of the moisture content.

  • This study examined changes in antioxidant activity as well as contents of rosmarinic acid, homoplantaginin, and luteolin, which is the main substance of Salvia plebeia R. Br. (SPR) known to have anti-inflammatory efficacy, according to drying, blanching, and fermentation conditions. Rosmarinic acid content was 16.42 mg/g upon hot-air drying and 10.19 mg/g upon hot-air drying after blanching, and there was no significant difference in the case of leaf and root freezing or cold-air drying. Rosmarinic acid content was 8.69 and 8.15 mg/g in the case of air-drying in the shade and freeze-drying, respectively, and decreased to 0.05 mg/g or undetected after fermentation. SPR processed by freeze-drying, cold-air drying in the shade, and hot-air drying showed ABTS radical scavenging ability over 98.5% at a concentration over $500{\mu}g/mL$ as well as excellent radical scavenging ability of 87.3% in the case of hot-air drying after blanching. Root showed lower ABTS radical scavenging ability than leaves. SOD-like activity was measured to be 6.1~27.8% at a concentration of $1,000{\mu}g/mL$, which was significantly difference from ABTS radical scavenging ability. As rosmarinic acid and homoplantagine, an anti-inflammatory material contained in SPR, are almost undetectable after oxidation fermentation during processing, hot-air drying after blanching or drying seems to be suitable to develop SPR as a functional substance.
