Study on Measures to Improve Fresh Food Sales at Military Commissaries (PX)

  • This study aims to confirm the appropriateness of fruit and vegetable sales at military commissaries, with the purpose of enhancing the physical health and morale of military personnel. In order to achieve this objective, we examined the actual conditions of fruit and vegetable sales at military commissaries and analyzed the soldiers' awareness of fruit and vegetable sales through questionnaire surveys. The conclusions of this study are as follows: Firstly, fresh fruits and vegetables were not sold at military commissaries. Secondly, soldiers acknowledged the need for the consumption of fruits and vegetables and strongly expressed the desire for these fresh food products to be sold at military commissaries. Although the ROK Navy privatized military commissaries for the purposes of increasing management efficiency of national defense and strengthening combat power by transferring PX salesclerk soldiers to join combat personnel, this effort produced a negative effect of price increase. The following are proposals for improving this condition: fruit and vegetable products should be introduced to military commissaries through military welfare funds; fresh food markets should be established by closely cooperating with the local community's agricultural producers; processed fruit and vegetable product (dry, frozen, airtight packaged, etc.) sales should be increased; and the privatization of the navy commissaries should be abolished.

Quality Variable Prediction for Dynamic Process Based on Adaptive Principal Component Regression with Selective Integration of Multiple Local Models

  • The measurement of the key product quality index plays an important role in improving the production efficiency and ensuring the safety of the enterprise. Since the actual working conditions and parameters will inevitably change to some extent with time, such as drift of working point, wear of equipment and temperature change, etc., these will lead to the degradation of the quality variable prediction model. To deal with this problem, the selective integrated moving windows based principal component regression (SIMV-PCR) is proposed in this study. In the algorithm of traditional moving window, only the latest local process information is used, and the global process information will not be enough. In order to make full use of the process information contained in the past windows, a set of local models with differences are selected through hypothesis testing theory. The significance levels of both T - test and χ2 - test are used to judge whether there is identity between two local models. Then the models are integrated by Bayesian quality estimation to improve the accuracy of quality variable prediction. The effectiveness of the proposed adaptive soft measurement method is verified by a numerical example and a practical industrial process.

  • During rolling, rolling mill rolls endure wear when shaping metal billets into a desired form, such as bars, plates, and shapes. Such wear affects the lifespan of the rolls and product quality. Therefore, in addition to rigidity, wear performance is a key factor influencing the performance of rolling mill rolls. Conventional methods such as casting and forging have been used to manufacture rolling mill rolls. However, powder alloying methods are increasingly being adopted to enhance wear resistance. These powder manufacturing methods include atomization, canning to shape the powder, hot isostatic pressing to combine the powder alloy with conventional metals, and various wear performance tests on rolls prepared with powder alloys. In this study, numerical simulations and experimental tests were used to develop and elucidate the wear analysis mechanism of rolling mill rolls. The wear characteristics of the rolls under various rolling conditions were analyzed. In addition, experimental tests (wear and surface analysis tests) and wear theory (Archard wear model) were used to evaluate wear. These tests were performed on two different materials in various powder states to evaluate the different aspects of wear resistance. In particular, this study identifies the factors influencing the wear behavior of rolling mill rolls and proposes an analytical approach based on the actual production of products. The developed wear analysis mechanism can serve the future development of rolls with high wear resistance using new materials. Moreover, it can be applied in the mechanical and wear performance testing of new products.

  • We are faced with the crisis of the R&D investment because of the effects of the IMF conditions. Most of the laboratories are going to restructure by the cutting off of money, man power and the reduction of R&D thema. Therefore it is necessary to allocate the R&D resources effectively to the R&D projects. The evaluation and the selection of the R&D projects have been recognized as the most important process for the allocation of the R&D resources. The result of the KITA(1997) shows that the commercial success rate of the R&D from new-product brain storming is only 5.8%. This study aims to analyze the actual conditions of the cost benefit analysis(CBA) of R&D projects of selected laboratories and to study measure methods of the R&D benefits. The research method of this study reviews the CBA of R&D firstly, and surveys 200 selected high ranking labs of the R&D expenditures. For the comparison of the results between '87 and '97, this survey used the same questionaries for each year. As the result of the survey only 27 labs(response rate 13.5%) responded. The result of the '97 survey is as follows : The CBA is used by 44% of responding labs. The economic evaluation method for the R&D project selection is used by 48% of labs and this numbers increased by over 10 percents points compared with the result of '87. The CBA is used for about 40% about each of the budget preparing and the budget analysis, and by 30% of labs to analyze sales and expenditures of the overall period of the project. As the measurement of benefits of R&D projects, 30% of labs responded that it is impossible to measure the benefits, and 20% of labs measured the benefits between sales and expenditures of the R&D project.

Determination of Shelf Life for Butter and Cheese Products in Actual and Accelerated Conditions

  • The aim of this study was to estimate the shelf life of butter and cheese products, with shelf life being a guide used to determine the storage period of food before deterioration. Butter and cheese samples stored at $10^{\circ}C$ and $15^{\circ}C$ had a shelf life of 221 d, while those stored at $25^{\circ}C$ and $35^{\circ}C$ had a shelf life of 109 d. Quality changes, including total cell count, coliform counts, Listeria monocytogenes counts, acid value, moisture content, pH, acidity and overall sensory evaluation, were monitored. In order to pass the overall sensory evaluation, a quality score of 5 points on a 9-point scale was required. For other quality criteria, legal quality limits were established based on the "Process Criteria and Ingredient Standard of Livestock Products" by the Animal, Plant and Fisheries Quarantine and Inspection Agency (Republic of Korea). The nonlegal quality limit was estimated by regression analysis between non-quality criteria (y) and overall sensory evaluation (x). The shelf life was estimated based on the number of days that the product passed the quality limit of the quality criteria. The shelf life of samples stored at $10^{\circ}C$, $15^{\circ}C$, $25^{\circ}C$ and $35^{\circ}C$ was 21.94, 17.18, 6.10 and 0.58 mon, respectively, for butter and 10.81, 9.47, 4.64 and 0.20 mon, respectively, for cheese.

Application of Response Surface Methodology (RSM) for Optimization of Anti-Obesity Effect in Fermented Milk by Lactobacillus plantarum Q180

  • Obesity, a condition in which an abnormally large amount of fat is stored in adipose tissue, causing an increase in body weight, has become a major public health concern worldwide. The purpose of this study was to optimize the process for fermented milk for the production of a functional product with an anti-obesity effect by using Lactobacillus plantarum Q180 isolated from human feces. We used a 3-factor, 3-level central composite design (CCD) combined with the response surface methodology (RSM). Concentration of skim milk powder (%, $X_1$), incubation temperature ($^{\circ}C$, $X_2$), and incubation time (h, $X_3$) were used as the independent factors, whereas pH (pH, $Y_1$), anti-lipase activity (%, $Y_2$) and anti-adipogenetic activity (%, $Y_3$) were used as the dependent factors. The optimal conditions of fermented milk for the highest anti-lipase and anti-adipogenetic activity with pH 4.4 were the 9.5% of skim milk powder, $37^{\circ}C$ of incubation temperature, 28 h of incubation time. In the fermentation condition, the predicted values of pH, anti-lipase activity and anti-adipogenetic activity were 4.47, 55.55, and 20.48%, respectively. However, the actual values of pH, anti-lipase activity and anti-adipogenetic activity were 4.50, 52.86, and 19.25%, respectively. These results demonstrate that 9.5% of skim milk powder and incubation at $37^{\circ}C$ for 28 h were the optimum conditions for producing functional fermented milk with an anti-obesity effect.

스크린 프린팅 공정에 의해 제조된 비데용 Ag-Pd 봉형 발열체의 내구성 및 물성 평가 (Durability and Characteristics of Ag-Pd Rod Heater for Bidet Fabricated by Screen Printing Process )

  • Heaters using the resistance heating principle are used in various industrial fields that require heat and are also essentially used in bidet among small home appliances. A planar heater and a coil-inserted heater mounted on a conventional commercially used bidet have disadvantages and limitations of complicated manufacturing process and local heating. In this study, silver-palladium (Ag-Pd) powder material was used for a screen-printing process that is more advantageous in achieving simplification than the existing process, and a rod-type heater for bidet was manufactured. The on-off cycle test under actual conditions was conducted to confirm the durability and the capability of the fabricated heater, and the fabricated heater operated more than 2,600 on-off cycles, which means it could be applied for a commercial product. In addition, through the on-off cycles under harsh conditions, the cause of failure was identified after the test that the durability limit temperature of the heater was 850℃. Through Ag-Pd rod heater in this study, it is expected to contribute to the efficient development of electrode materials for heaters and the improvement of the durability of heaters in the future.

표면반응분석법을 활용한 뼈 연화 및 비린내 저감화 고등어(Scomber japonicus) 가공품의 가공공정 최적화 (Optimization of the Bone-softening and Fishy Odor-reducing Processing of Mackerel Scomber japonicus Products using Response Surface Methodology)

  • This study optimized the bone-softening and fishy odor-reducing process for mackerel Scomber japonicus products using response surface methodology (RSM). The RSM showed that the optimum concentrations of doenjang and citric acid for reducing the fishy odor in bone-softened mackerel were 11.8% and 0.04%, respectively, and the optimum immersion time was 52.2 min. The estimated overall acceptance, salinity, and acidity of the products under these optimum conditions were 7.7 points, 1.1%, and 202.6 mg/100 g, respectively, which were similar to the actual measured values of $7.6{\pm}1.2$ points, $1.0{\pm}0.1%$ and $203.2{\pm}3.8mg/100g$. Moreover, the heating temperature and time for bone-softening based on RSM were $107.3^{\circ}C$ and 4.4 h, respectively. The estimated hardness and proportion of skin removed from the product under the optimal conditions were $161.5g/cm^2$ and 0.09%, respectively, which were also similar to the actual measured values of $171.1{\pm}12.6g/cm^2$ and $0.10{\pm}0.02%$. The optimum bone-softening and fishy odor-reducing process for mackerel consisted of the following steps: thawing (${\leq}10^{\circ}C$, 8 h), filleting, washing/dewatering, immersing in an 11.8% doenjang -0.04% citric acid solution for 52 min, washing/dewatering, heating ($107.3^{\circ}C$, 4.4 h), freezing, depanning, internal and external packaging, and X-ray detection treatment.

하이브리드 에너지하베스팅 블록의 차량주행 발전성능 평가 (Power Generation Performance Evaluation according to the Vehicle Running on the Hybrid Energy Harvesting Block)

  • 이 연구는 평소에 주변에 상존하지만 버려지는 미활용 에너지를 수확하여 전기로 생산하는 에너지하베스팅에 관한 것이다. 이 연구에서는 다양한 에너지원들 중에서 도로나 주차장을 주행하는 차량의 진동과 압력을 동시에 활용하는 하이브리드 방식의 에너지 하베스터를 개발하였다. 1단계 연구에서는 프로토타입 에너지하베스터, 이를 개선된 하이브리드 모듈, 그리고 하이브리드 모듈의 성능을 개선한 최종 모듈을 개발하였으며, 그 결과는 이전 논문으로 발표하였다. 본 논문은 최종 개발된 하이브리드 모듈을 실제 주차장에 설치하여 차량의 주행에 따른 압력과 진동, 그리고 차량주행 속도에 따른 발전성능을 측정하고 앞서 발표된 실험실 조건에서의 측정결과와 비교하였다. 선행연구에서 수행한 실험실 조건에서의 에너지블록의 최대전력은 1회 가진시 1.066W, 5회연속 가진시 1.830W로 측정되었다. 반면에 이 연구에서 실시한 실제 주차장 주행차량 속도별 측정결과는 5km/h 주행시 평균 0.310W, 10km/h에서 0.670W, 20km/h에서 1.250W, 30km/h에서 2.1600W로 측정되었다. 즉, 차량의 주행속도가 높을수록 발전성능은 증가하는 것으로 나타났다. 그러나 실험실조건에 대비해서 주행속도 20km/h까지는 발전성능이 떨어지며, 실험실 조건의 1회 가진시 대비해서는 20km/h이상, 그리고 5회연속가진에 대비해서는 30km/h 이상일 때 발전성능이 높은 것으로 측정되었다. 이는 실험실과 실제차량이라는 재하조건의 차이로 사료된다. 따라서 향후 도로용 에너지블록의 적용은 주차장 조건보다는 주행도로용으로 활용하는 것이 효과적일 것으로 사료된다.
