Volatile compounds in low-temperature and long-term fermented Baechu kimchi were extracted by high vacuum sublimation(HVS), and then analyzed by gas chromatography/mass spectrometry(GC-MS). A total of 62 compounds, including 7 sulfur-containing compounds, 8 terpenes, 5 esters, 8 acids, 15 alcohols, 2 nitrites, 2 ketones, 11 aliphatic hydrocarbons and 4 miscellaneous compounds, were found in low-temperature and long-term fermented Baechu kimchi. Among them, acetic acid and butanoic acid were quantitatively dominant. Aroma-active compounds were also determined by gas chromatography/olfactometry(GC-O) using aroma extract dilution analysis(AEDA). A total of 16 aroma-active compounds were detected by GC-O. Butanoic acid was the most potent aroma-active compound with the highest FD factor($Log_3FD$) followed by linalool, acetic acid, 2-vinyl-4H-1,3-dithin and 3-methyl-1-butanol. The major aroma-active compounds, such as acetic acid and butanoic acid, were related to sour and rancid or notes.
Volatile flavor compounds of cheonggukjang and doenjang, which are the most representative Korean soybean fermented foods, were compiled throughout literature review. Total of 225 and 404 volatile flavor compounds were found in cheonggukjang and doenjang, respectively. The most characteristic volatile flavor compounds in cheonggukjang are thought to be pyrazine compounds. In addition, acids, such as 2-methyl propanoic acid, butanoic acid, 2-methyl butanoic acid, and 3-methyl butanoic acid, contribute to aroma characteristics of cheonggukjang. On the other hand, ester compounds are the most predominant volatile flavor compounds in doenjang. Ninety six ester compounds were detected in doenjang while 22 ester compounds were identified in cheonggukjang. Pyrazine compounds and acids also play an important role in the flavor of doenjang. Compilation of volatile flavor compounds from cheonggukjang and doenjang will provide basic information to food industry to understand and improve aroma characteristics of cheonggukjang and doenjang.
The extracts of selected plants and analyzed phenolic compounds were used to study the effects of alleloKDICicals on seed germination and seedling growth. HPLC analysis of the aqueous extracts of seven species identified 15 phenolic compounds including caffeic acid. Among them, protocatechuic acid was detected at 65.87ppm and 6.84ppm, in Erigeron canadensis and Pinus rigida, respectively. And the extract of P. rigida showed the strongest inhibitory effect on seed germination. The extract of P. rigida leaves significantly inhibited germination and radicle growth of Raphanus sativus var. hortensis for. acanthiformis in direct proportion to concentration. However, germination of Cassia mimosoides var. nomame was stimulated by the treated extracts at the same concentrations, but root growth was inhibited at high concentrations. Except chlorogenic acid, eleven of the twelve phenolic compounds inhibited the germination of R. sativus var. hortensis for. acanthiformis. In the case of C. mimosoides var. nomame, some phenolic compounds such as chlorogenic acid, vanillic acid, protocatechuic acid, ferulic acid, gallic acid and ${\rho}-coumaric$ acid stimulated germination, while the others reduced it.
Five compounds were isolated from the BuOH fraction of Polygonum bistorta (Polygonaceae). On the basis of spectral data, these compounds were established as caffeic acid, quercimeritrin, avicularin, gallic acid and protocatechuic acid. The inhibitory activies on $3{\alpha}-hydroxysteroid$ dehydrogenase $(3\;{\alpha}-HSD)$ of isolated compounds were compared. $IC_{50}$ value of isolated compounds were $133.57\;{\mu}g/ml\;(caffeic\;acid)$, $89.1\;{\mu}g/ml\;(quercimeritrin)$, $189.85\;{\mu}g/ml\;(avicularin)$, $140.69\;{\mu}g/ml\;(gallic\;acid)$ and $165.27\;{\mu}g/ml\;(protocatechuic\;acid)$ respectively. Although all compounds showed lower inhibition activities than BuOH fraction $(IC_{50}<50\;{\mu}g/ml)$ of Polygonum bistorta, it showed higher inhibition activities than aspirin $(IC_{50}\;246.81\;{\mu}g/ml)$.
Amides from amino acid ester and nalidixic acid were synthesized. The solubility characteristics and partition coefficient of the compounds were studied. The hydrolysis of the compounds was studied in the simulated gastric fluid and simulated intestinal fluid. Some compounds showed better antibacterial activity than nalidixic acid.
Phenolic compounds are known to inhibit the nitrosation or oxidation reaction. In the present work, the effects of phenolic compounds including phenolic acids and flavonoids on the nitrite-scavenging and electron donating ability were tested as scavenger of nitrite which is believed to participate in the formation of N-nitroso compounds and investigated as electron donator. The nitrite scavenging ability appeared in all the phenolic acids and showed the highest value at PH 1.2. Among the Phenolic compounds, phenolic acids showed higher nitrite-scavenging action than some flavonoids. Futhermore, the nitrite scavenging action of phenolic compounds was pH dependent highest at pH 1.2 and lowest at pH 6.0. The electron donating ability (EDA) by reduction of ${\alpha},{\alpha}$-diphenyl-${\beta}$-picrylhydrazyl (DPPH) among hydroxybenzoic acids was in the decreasing order of gallic acid, gentisic acid, syringic acid, protocatechuic acid, salicylic acid, vanillic acid, benzoic acid and p-hydroxybenzoic acid. EDA of hydroxycinnamic acids was in the decreasing order of hydrocaffeic acid, caffeic acid, ferulic acid, p-coumaric acid and trans-cinnamic acid. EDA of flavonoids was in the decreasing order of (+)catechin, rutin, quercetin, naringin and hesperidin. Other phenolic compounds were significantly high in electron donating abilities.
The optimization and microwave assisted extraction of stem bark of Terminalia arjuna, quantitative estimation of the marker compounds arjunic acid and arjunolic acid using HPTLC and the evaluation of free radical scavenging activity has been performed in this study. The central composite design was used for optimization and the values of parameters for optimized batch of microwave assisted extraction were 1000 W (Power), 3 minutes (Time) and 1/120 (Solid/solvent ratio). The solvent system to carry out the HPTLC was toluene: acetic acid: ethyl acetate (5: 5: 0.5) and quantitative estimation was done using standard equations obtained from the marker compounds. The in-vitro free radical scavenging activity was performed spectrophotometrically using ascorbic acid as standard. The value of estimated percentage yield of arjunic acid and arjunolic acid was 1.42% and 1.52% which upon experimentation was obtained as 1.38% and 1.51% respectively. The DPPH assay of the different batches of microwave assisted extraction and marker compounds taken suggested that the marker compounds arjunic acid and the arjunolic acid were responsible for the free radical scavenging activity as the batch having the maximum percentage yield of the marker compounds showed best free radical scavenging effect as compared to standard ascorbic acid. The $IC_{50}$ value of the optimized batch was found to be 24.72 while that of the standard ascorbic acid was 29.83. Hence, the yield of arjunic acid and arjunolic acid has direct correlation with the free radical scavenging activity of stem bark extract of Terminalia arjuna and have potential to serve as active lead compounds for free radical scavenging activity.
The chemical behaviours of 4-methyl-2-oxo-2H-benzopyran-7-yl oxoacetyl hydrazine (2) towards some different reagents such as anhydride compounds, aromatic aldehydes, carb on disulphide, and nitrous acid yielded the corresponding pathalazine derivatives (3, 4, 5), hydrazone derivative (6), 1,3,4-oxadiazole derivative (7, 8, 9) and acid azide (10) respectively. Treatmen of 10 with absolute alcohols, amines and ethyl amino acid ester gave the corresponding carbamate derivative (11), substituted urea derivative (12) and ethyl substituted alkyl acetate (13) respectively. The biological activity of some synthesized compounds was evaluated.
This study was carried out to investigate the changes in composition of the non-volatile organic acid, fatty acid and polyphenolic compounds during air-curing in burley tobacco leaves, and the effect of curing methods on the contents in air-cured leaves. The air-cured variety, (Nicotiana tabacum cv KB108) was normally grown at the Chonju tobacco experiment station in 1998. Plants designated for the each curing methods were harvested on the same date, and the ripe leaves for primed curing were harvested at the tenth leaf position from the top on the stalk. The major compounds of non-volatile organic acid and fatty acid were malic, citric, oxalic, palmitic, and linolenic acid. The concentrations of malic acid, unsaturated fatty acids, chlorogenic acid and rutin in cured leaves were remarkably decreased during curing, while citric acid was increased. The changes of these compounds showed the similar pattern during both primed and stalk curing. In connection with curing methods, the contents of malic, linoleic and linolenic acid were higher in excessive cured leaves than those in primed cured or stalk cured leaves, while the content of citric acid was lower in excessive cured leaves than that in primed cured or stalk cured leaves.
This study was conducted to determine the acid and phenol compounds in smoke total particulate matter(TPM) by the different tobacco variety, and grade of tobacco leaves. Sixteen kinds of tobacco leaves which were flue-curd, burley, orient, reconstituted tobacco, expanded stem, and expanded cut tobacco, were selected for this study. After collecting a TPM by using smoking machine, the concentration of TPM components was analyzed by GC. Acid components of TPM of mainstream smoke were different from the variety and grade. The order of the highest concentration of acid compounds in TPM was flue-cured > orient> burley> expanded cut tobacco> reconstituted tobacco> expanded stem. Though lactic acid and glycolic acid concentrations in flue-cured tobacco were twice higher than those in burley tobacco, the contents of 2-furoic acid and 3,4-dihydroxy butanoic acid in burley tobacco were higher than those in flue-cured tobacco. The content of phenolic compounds in the high grade and thick leaves was higher than that in other tobacco leaves. Phenol and catechol compounds in burley CD3W-2 revealed the least value in concentration among the samples tested. Pyrocatechol and hydroquinone concentrations in flue-cured tobacco were 2-3 times higher than those in burley and orient tobacco.
