Effect of Paprika (Capsicum annuum L.) on Inhibition of Lipid Oxidation in Lard-Pork Model System During Storage at $4^{\circ}C$

  • This study was conducted to investigate the antioxidant activity of paprika in the lard-pork model system adding ground fresh paprika (3%) and paprika powders (5%). Paprika powders were obtained through 4 drying methods (freeze, vacuum, far infrared-ray, and hot-air). In the lard and meat-fat mixture (containing lard 30%) containing paprika powders, the rate of increase in the peroxide value (POV) and thiobarbituric acid (TBA) value decreased notably during the refrigerated storage ($4^{\circ}C$) compared to the control without paprika. Therefore, paprika powders showed potent antioxidant activity and especially the freeze dried paprika powder revealed the most effective activity among them. However, its antioxidant activity was still lower than that of the fresh paprika because the addition of fresh paprika in the lard and meat-fat mixture merely increased the POV and TBA value. In linoleic acid oxidation, the addition of capsanthin 500 ppm to mixed linoleic acid and 10 ppm of $FeCl_3$ (LF) inhibited the formation of peroxides by 15.2% compared to LF, showing its iron scavenging ability. When mixed antioxidants (${\beta}$-carotene 200 ppm + ascorbic acid 100 ppm, capsanthin 200 ppm + ascorbic acid 100 ppm) were added in LF, synergistic effects were obtained with 57.7 and 60.4% of inhibition of peroxide formation, respectively.

EFFECT OF ALKALINE HYDROGEN PEROXIDE AND PERACETIC ACID ON IN SACCO RUMINAL DIGESTIBILITY OF ASPEN SAWDUST

  • The influence of alkaline hydrogen peroxide (AHP) and peracetic acid treatment on in sacco digestion of aspen was evaluated in three non-lactating ruminally cannulated Holstein cows fed a diet containing 90% forage and 10% concentrate on a DM basis. AHP treatment decreased lignin concentration by 40 to 60% resulting in increased concentrations of neutral detergent fiber (NDF), acid detergent fiber (ADF) and cellulose. Lignin concentrations in peracetic acid treated samples were less than 10% of values for control samples. In sacco disappearance rates of aspen DM, NDF, ADF and cellulose increased (p<.05) with AHP and peracetic acid treatment. Effective degradability of DM, NDF, ADF and cellulose were determined at a ruminal outflow rate of $.05h^{-1}$. Effective degradabilities of AHP treated aspen were approximately three-fold greater and peracetic acid treated samples five-fold greater than untreated control samples. For all parameters measured, peracetic acid treatment resulted in higher (p<.05) digestion coefficients than AHP treated aspen. Results demonstrate that peracetic acid or AHP treatment can enhance the nutritive value of aspen sawdust for ruminants to a level comparable to that reported for many forages.

율무의 지질에 관한 연구 (A research on the characteristics of Job's tears oil)

  • The contents of proximate components of the polished adn unpolished Job's tears, Coix agrestis, were determined. And also the phisical and the chemical properties of fatty acids composition and the oxidative rancidity of the crude oil extracted from Job's tears were examined. RESULTS : 1.The contnets of moisture, total ash, crude protein, crude fat, and carbohydrate in Job's tears were shown to be about 9.2%, 2.1~5.0%, 19.5~20.8%, 3.7~7.2%, 60.7~67.0%. 2. The average values of specific gravity, refractive index iodine value, saponification value, acid value of the crude oil extracted from Job's tears were 0.917~0.920, 1.47574, 107~111, 198~199, 1.3~2.0, respectively. 3. The fatty acids composition in the crude Job's tears oil showed oleic acid 48.97~49.97%, linoleic acid 37.33~36.16%, palmitic acid 13.70~13.87%. 4. Generally, the peroxide values and thiobarbituric acid values of the Job's tears oils and control during 40 storage days at 40±1℃ showed very low increase. After 32 days, the peroxide values and TBA values of soybean oil showed higher than those of the Job's tears oils. Conclusively, the Job's tears oils were shown to be more stable than the soybean oil.

  • Feasibility of surface plasmon resonance (SPR) method to evaluate soybean frying oil quality was evaluated. Free fatty acid value, p-anisidine value, conjugated dienoic acid content, conjugated trienoic acid content, peroxide value, iodine value, total polar compound (TPC), ratio of unsaturated fatty acid to saturated fatty acid, refractive index, dielectric constant, smoking point, and L, a, and b of Hunter color system were selected as parameters related to conventional evaluation of soybean frying oil quality. SPR scale mapped with conventional quality parameters well described free fatty acid value, conjugated dienoic acid content, dielectric constant, TPC, and b of Hunter color system, as shown by correlation and linear regression analyses.

팜유로 튀긴 유과의 저장 중 품질 변화 (Quality Characteristics of Yukwa Fried with Palm Oil during Storage)

  • 콩기름과 팜유로 튀긴 유과를 2$0^{\circ}C$와 5$0^{\circ}C$에 저장하면서 분석한 결과 콩기름으로 튀겨 5$0^{\circ}C$에 저장한 유과의 산가는 2주에는 0.78mg/g에서 4주에 9.35mg/g으로 급격한 증가를 하였으나 팜유로 튀긴 유과는 저장 6주까지 변화가 없다가 저장 8주에서 2.08mg/g을 나타내었다. 과산화물가의 경우 콩기름으로 튀긴 유과를 5$0^{\circ}C$에서 저장하였을 때 저장 4주까지 급격한 증가를 보이다 4주 이후 감소하였다. 저장 기간에 따른 지방산의 변화는 2$0^{\circ}C$ 저장의 경우 저장 전과 큰 차이를 보이지 않았지만 5$0^{\circ}C$ 저장의 경우 콩기름과 팜유 모두 palmitic acid, stearic acid 및 oleic acid는 저장기간이 경과함에 따라 증가하였고 linoleic acid와 linolenic acid는 감소하였다. 또한 관능검사 결과 콩기름으로 튀긴 유과는 4주 이후 이취미가 발생하기 시작하여, 7주가 지난 후에는 이취미가 보다 강하게 발생하였지만 팜유로 튀긴 유과는 4주째에 이취미가 약간 발생하였으나, 그정도가 미미하였고, 8주째에도 이취미가 강하게 발생하지 않았다. 따라서 유과 튀김시 콩기름을 팜유로 대체한다면 종래 방법으로 제조된 유과에 비해 저장 기간이 증가할 것으로 사료된다.

녹차 수용성 추출물의 대두유에 대한 항산화효과 (Antioxidant Effect of Aqueous Green Tea on Soybean Oil)

  • The purpose of this study was to investigate the antioxidant effect of aqueous green tea(AGT) on soybean oil. AGT was freeze-dried and 20% of the freeze-dried aqueous green tea powder (AGTP) was added to soybean oil in the quantities of 0.5%, 1% and 5%. Soybean oil without the addition of AGTP was used as a control. Soybean oil with 0.02% butylated hydroxytoluen(BHT) was used as another experimental sample. Each sample was stored at 6$0^{\circ}C$ for 15 days. The oxidation of these samples was determined by measuring the acid value (AV), peroxide value (POV), and thiobarbituric acid (TBA) value. The result showed that the acid values were lowest in 0.02% BHT, followed by the 0.5% AGTP, 1% AGTP, 5% AGTP and finally the control. When AGTP was added, the peroxide value was lower than both the control and 0.02% BHT. The lowest TBA values were in the 0.5% AGTP followed by 0.02% BHT, 1% AGTP, 5% AGTP and the control, respectively. The 5% AGTP (285 min), 1% AGTP (249 min) and 0.5% AGTP (238) demonstrated longer induction periods, compared to the control (204 min) and the BHT (229 min) by Rancimat method.

가열산화가 냉압착 들기름의 품질특성에 미치는 영향 (Influence of Thermal Treatment on Chemical Changes in Cold-Pressed Perilla Seed Oil)

  • 냉압착 들기름과 볶음 압착 들기름 및 볶음 가열 압착 들기름의 가열산화에 의한 색도 및 갈변도, 총 페놀 함량, 과산화물가, 산가, 이중공액산가, 전자공여능 및 지방산 함량 변화를 측정하여 각 들기름의 특성 및 가열산화에 의한 품질을 비교하였다. 냉압착 들기름은 Hunter L 값은 76.62로서 볶음 압착 들기름의 39.77에 비하여 2배 이상 높게 나타났으며, 갈색도의 경우에도 각각 0.027과 0.244을 나타내어 냉압착유의 갈색화 정도가 낮은 것으로 나타났다. 산가와 이중공액산가는 냉압착 들기름이 가장 낮은 값을 나타내었고, 총 페놀 함량의 경우 볶음 압착 들기름이 7.27 mg/100 g oil로 냉압착 들기름에 비하여 1.60배 이상인 것으로 나타났으며, 전자공여능도 볶음 압착 들기름이 냉압착 들기름에 비하여 높게 나타내었다. 지방산 함량의 경우에도 냉압착 들기름의 oleic acid와 linoleic acid 함량이 가장 높았으며 포화지방산에 대한 불포화지방산의 비율이 12.10으로 가장 높게 나타났다. 또한 가열산화 처리에 의해 들기름의 Hunter L 값, 산가, 이중 공액산가 및 과산화물가는 증가하는 경향을 나타낸 반면, Hunter a 및 b 값, 갈변도, 총 페놀 함량은 감소하는 경향을 나타내었다.

방사선 조사선량에 따른 유지의 이화학적 성질변화 (I) (Changes of the phsico-Chemical Characteristics of oils treated by the ${\gamma}$-ray irradiation (I) -The Extracted soybean oil-)

  • To investigate the oxidative stabilities of the ${\gamma}$-ray irradiated soybean during storage and heating and some physico-chemical characteristics of soybean and the extracted soybean oil (SBO) with/without the ${\gamma}$-ray irradiation were determined. The ${\gamma}$-ray level use in irradiation for soybean were 2.5, 5.0 and 10.0 KGY respectively and Acid Value, Peroxide Value, Conjugated Diene Value, Composed Fatty Acids amounts, and Trans Fatty Acid occurrence were determined for all samples, which were incubated at 45$\pm$1$^{\circ}C$ for 25 days heated at 180$\pm$1$^{\circ}C$ for 30 hours. And these values of the ${\gamma}$-ray treated samples were compared to those of nontreated samples. The results were obtained as follows : 1. According to the increased level of the ${\gamma}$-ray irradiation, there was little difference in Dielectric Constant, Viscosity, and the Induction Period by Rancimat. But, in case of 5.0 KGY, oxidative stability was increased more twice than that of non-irradiation. In the quantity of fatty Acids composition of the extracted soybean oil irradiated with 10.0 KGY, palmitic, oleic and linoleic acids were less increased thanb those of non-irradiation, while stearic, linolenic acids were decreased. In the case of 2.5 KGY irradiation, stearic and oleic acids were increased. 2. The Acid Value of SBO according to the ${\gamma}$-ray irradiation level was almost not change, but was 0.1 lower than that of non-irradiation during incubation (45$\pm$1$^{\circ}C$). The Peroxide Value of SBO with the ${\gamma}$-ray irradiation, was very lower than that of non-irradiation, but its effect on oxidative stability was better of SBO treated with 5.0 KGY and 10.0 KGY. In the Fatty Acids composition of SBO, palmitic, stearic, oleic acids were increased, while linoleic, linolenic acids were decreased during incubation(45$\pm$1$^{\circ}C$). This tendency was more obvious due to the ${\gamma}$-ray level. While heating(180$\pm$1$^{\circ}C$), the Acid Value of SBO treated with the ${\gamma}$-ray irradiation was decreased, the Acid Value of SBO irradiated with 2.5 KGY was the lowest. Also the peroxide Values of SBO treated with 5.0 KGY, 10.0 KGY were very lower than that of non-irradiation. Conjugated Diene Value of SBO was almost unchanged according to the ${\gamma}$-level and heating time. 3. When the methyl linoleate was irradiated with the ${\gamma}$-ray, the Trans Fatty Acid was little produced. In case of SBO with non-irradiation, the trans C18:1 was occured about 6.5~7.9%, but trans C18:2 and C18:3 were not shown, while SBO irradiated with the ${\gamma}$-ray 2.5, 5.0, 10.0 KGY, trans C18:3 and C18:2 amount in SBO were increased according to heating time, but trans C18:3 was little occured. As these results, the effects of the ${\gamma}$-ray irradiation to oil containing food were to cut down the energy for food storage and to increase oxdative stability during storge. And also it was shown to be the best that 10.0 KGY of the ${\gamma}$-ray irradiation would be applied to soybean.

과산화수소/글리옥살 산화환원계를 사용한 양모의 염색성 (Dyeing Properties of Wool Using Hydrogen Peroxide/Glyoxal Redox System)

  • Wool fabric and merino wool top were dyed with two dyes, C.I. Acid Red 13 and C.I. Direct Blue 1 in presence of hydrogen peroxide/glyoxal redox system at various conditions such as dyeing time, temperature and redox concentration. The pH of dye bath was 4.5 in buffer solution of $KH_{2}PO_{4}$ (0.1mol/1)/$Na_{2}HPO_{4}$ (0.1mol/1). Also dyeing of cotton fabric was carried out with C.I. Direct Blue 1 in absence or presence of redox system. The color depth(K/S) increased with redox concentration and dyeing temperature. The increases in dyeing rate and equilibrium dye exhaustion of Acid Acid 13 and Direct Blue 1 on wool fiber and fabric in the present of hydrogen peroxide/glyoxal have been caused by decreasing in pH value during dyeing process which due to the decomposition of hydrogen ion in glyoxal with the assistance of hydrogen peroxide. But the decreases in exhaustion of Direct Blue 1 on cotton may be attributed to repulsive interac ion between salt and salt.

품종 및 건조방법에 따른 고추씨 기름의 이화학적 특성 (The Physico-Chemical Properties of Korean Red Pepper Seed Oil by Species and Dried methods)

  • Some Physico-chemical properties of korean red pepper seed oil were evaluated to find available method to utilize red pepper seeds used as useful cooking oil resources. Samples of red pepper seeds used as oil meterials were native, improved species and they were named such as NS (native spicies dried under sunlight), IS (improved spicies dried under sunlight), NF (native spicies dried by heating), and IF(improved spicies dried by heating), respectively. Moisture, ash, crude protein and crude fat contents of all red pepper seeds were 6.6%∼7.7%, 3.3∼3.5%, 18.25∼19.4% and 26.8∼27.5% in all samples, showing the specially high crude fat and crude protein content in NS. Capsaicin contents in crude red pepper seed oils were shown from 0.06 to 0.08% but after refining process, capsaicin contents were mostly tossed as 0∼0.006%. The types of tocopherol found in crude and refined red pepper seed oils were ${\gamma}$-, ${\alpha}$-, $\delta$-analogues, the amount of total tocopherol in IF was 2.10 mg/g oil which were the highest value of all red pepper seeds. In all red pepper seeds oils main fatty acids were linoleic acid (68∼70%), palmitic acid (14∼16%), oleic acid (10∼11%), and linolenic acid were extemely small amounts. The specific gravity (SG) 0.916∼0.919, refractive index (RI) 1.4724, acid value (AV) 0.26∼0.36, peroxide value (POV) 0.73∼1.19 and Iodine value (IV) 134.35∼134.92 were measured in all red pepper seed oils.
