In this study, the food selection of abalone, Haliotis discus hannai, on four various diets, Ulva pertusa, Laminaria japonica, Navicula spp., and artificial diet, was investigated. The abalones in Ulva pertusa and Navicula spp groups had the higher migration rate than the others. The artificial group had the lowest migration rate. As to the growth, Ulva pertusa group had the highest daily increment and the growth rate, which is 120.7 ${\mu}$m and 2.41%. The value of Navicula spp. group is 102.0 ${\mu}$m and 2.04% and that of Laminaria japonica group is 88.7 ${\mu}$m and 1.77%. The lowest one is 81.7 ${\mu}$m and 1.63%, which appeared at the artificial diet group. We suggest that, when breeding Haliotis discus hannai and the diets which is easy to be ingested and digested, as well as contains much nutrient content, should be used. If the artificial diet is used, it should contain low concentration of flesh-eating content.
To analyse wedding feast dishes of royal prince of Chosun Dynasty(1744, 1819), the author studied historic book-GareDogamEuigwae, in which the wedding feast dishes of King and Prince in Chosun Dynasty were described. The results obtained from the study were as follows, 1. Arranged dishes in wedding ceremony were four kinds of table, main table, second table, third table and fourth table. That table setting was same as that of the year 1651. 2. Meal ceremonies were in sacrificial food partaking, drinking ceremony and courtesy of levee. 3. In wedding ceremony, prince and princess drank three cups of liquor. At the first cup they eat abalones soup and others in a small round table(初味), at the second cup fine noodles and others in another table(二味), at the third cup bun stuffed with fish and others in the other table(三味). 4. In sacrificial food partaking and drinking ceremony, King drank nine cups of liquor, at first cup, King eats a small boiled beef(小膳) and (初味), at second cup eats(二味), at third cup eats(三味),${\cdots}$, at nineth cup, King eats a soup, a large boiled beef(大膳) and fruits. 5. Dish materials and quantities used for wedding ceremony in the year of 1819 was same as that of the year 1651.
The effects of different heat treatments on the sensory characteristics of abalones are studied in this study. In this paper, the sensory evaluation of abalone samples under different heat treatment conditions is carried out, and the evaluation results are analyzed. The three-dimensional (3D) scanning and reverse engineering are used in tooth modeling of the sensory evaluation of abalone samples under different heat treatment conditions. Besides, the chewing movement models are simplified into three modes, including the cutting mode, compressing mode and grinding mode, which are simulated using finite element simulation. The elastic modulus of the abalone samples is obtained through the compression testing using a texture analyzer to distinguish their material properties under different heat treatments and to obtain simulated mechanical parameters. Finally, taking the mechanical parameters of the finite element simulation of abalone chewing as input and sensory evaluation parameters as the output, BP neural network is established in which the sensory texture evaluation model of abalone samples is obtained. Through verification, the neural network prediction model can meet the requirements of food texture evaluation, with an average error of 9.12%.
For the artificial precocious breeding of abalone effects of changes in environmental parameters, water temperature and light period, on the induction of spawning have been studied. Subtidal specimens of Haliotis discus hannai were collected irregularly for 6 times from April to June 1975 in Chungmu Bay near Jukdo Island, the southern coast of Korea. One hundred and fifty specimens were reared in 4 aquarium tanks in the laboratory and in a creel submerged in the sea during the period of 60 days from April 24 to June 23, 1975. The all groups kept in the four tanks and a creel showed very high spawning rates $(70\~100\%)$, compared to those inhabited the natural environment at sea until right before the spawning time $(0\~50\%,\;average\;16.4\%)$. From the results of the present induced spawning, the parameters can be discussed as follows: It seems likely that photoenvironment may stimulate to produce and secrete some internal substances which may concern to giving the fertilizing ability to the eggs before spawning and to inducing spawning, but the temperature may not be a factor for this concern. For effective precocious breeding, it seems to require that abalones are to be realoed under controlled conditions of darkness below 2,000 lux even during day time for more than 60 days before inducing spawning.

The presence of predators (excluding starfishes) of disk abalone, Haliotis discus hannai was directly investigated by nine SCUBA divings during February-December 2014 at the coastal areas of Yangjeong, Jukjin and Bongpyeong, Uljin, Korea, where the young disk abalone seedlings were artificially released. The results revealed that a total of six individuals of Neptunea cumingii that were feeding on the young disk abalone were observed within the water depth 10m at the coastal area of Jukjin, of which bottom substrate consists of the relatively high composition rate of rocks (60.3%). Though N. cumingii is well known as a carnivorous predator of diverse marine invertebrates such as live mussels (Mytilus spp.) it is the first report that this predator also feeds on the disk abalones. Thus, our results strongly suggest that the future artificial release projects around Korean coasts necessitate extermination works of predators including newly observed N. cumingii in this study as well as previously known starfishes prior to the releases of young Pacific abalone seedlings.

A 20-week growth trial was conducted in flow-through aquarium system to investigate the effects of supplemental macroalgae and spirulina in the diets on growth and body cmposition in juvenile abalone (Haliotis discus hannai). Four replicate groups of the abalone averaging 65mg were fed one of ten isonitrogenous (34%) and isolipidic (7.5%) diets containing 8.1% Ulva, 7.5% Undaria, 11% Laminara, 11% Sargassum, spirulina (5, 10 and 15%), or dried Undaria powder (10 and 20%). In addition, these formulated diets were compared with natural food(dried Undaria). Survival rate of abalone were not significantly affected by the different dietary macoralgae sources, spirulina or dried Undaria powder levels (P>0.05). Weight gain and soft body weight of abalone fed the diet containing Sargassum was significantly higher (P<0.05) than those of abalone fed the diets containing Laminaria, 20% dried Undaria powder and natural food. Survival rate, weight gain, soft body weight and shell length of abalone fed natural food were lowest (P<0.05) among all diet. Moisture, protein and lipid contents of soft body were not influenced by experimental diets except natural food. Lipid content of abalones fed natural food was significantly lower than those of abalone fed other diets (P<0.05). These data indicate that abalone can more efficiently utilize Sargassum than Ulva, Undaria, Laminaria or spirulina.

The effect of broodstock age on the spawning performance of cultured abalone, Haliotis discus hannai, was assessed for five age groups (3, 4, 5, 6, 7 years old). Spawning performance of the five age groups was assessed in terms of the percentage of spawning abalone, eggs per spawning female, fertilization rates, hatch rates and attachment rates per spawning. The percentage of spawning abalone increased along with broodstock age, reached maximum in female groups of 5- and 6-year age (60%), and in male group of 6-year age (100%), subsequently decreased in 7-year age group. The number of eggs produced per spawning also increased with broodstock age, and the maximum was found in 6-year age. Although the number of spawned eggs for the oldest abalone declined, it still spawned much more eggs than 3, 4, and 5 years old females. The fertilization and hatch rates were obviously larger for 4-6 years old group than the younger and older abalones. The maxima were found in 5-year age group (96.0% and 84.5%), and the minimum were appeared in 7-year age group (79.3% and 58.2%). The attachment rate increased with broodstock age, reached maximum in 6-year age group (33.6%), although the increment gradually declined. The attachment rate for 7-year age group rapidly decreased (16.6%). These results suggested that broodstock age affected the spawning performance of H. discus hannai, which peaked between 5 and 6 years old, and broodstock should be bred during this period for hatchery production.
To analyze reception dishes of Choson Dynasty, studied historic book 'Youngjeob Dogam Younhyangsek Euigwae' (1609, 1634, 1643 year) discribed feast dishes for Chinese envoy in Choson dynasty. The results obtained from this study are as follows. 1. the feast dishes consisted of the first main feast dishes (下馬宴, 上馬宴) the Second main feast dishes (翌日宴, 請宴 and etc) and the third main feast dishes (別茶啖). 2. 翌日宴 were arranged in two kinds of table, the first one called the main table, the second the confronting side table. Dishes of main table were oil and honey pastry and fruits. Dishes of the second table were cooked vegetable, dried slices of meat seasoned with spices, cooked meat and fried fish. In feast, Chinese envoy drank 11cups (1609 year) and 5 cups (1643 year) of liquor. At the first cup they abalones soup, others in a small round table (初味), a small boiled meat (小膳) and a large boiled meat (大膳), at the second cup eat 二味, at third cup eat 三味... at the eleventh cup, they eat 十一味. 3. 別茶啖 (1643 year) were arranged in one kind of table. Dishes of the table were oil and honey pastry, fruits, honey water, dried fish and meat, cooked meat and fish, and cooked egg. In feast, Chinese envoy drank 5 cups and eat 一味${\sim}$五味.

The accumulation of ammonia, a consequence of intensive aquaculture activity, can damage cultured animals. We analyzed the survival rates, growth, antioxidant responses, and immune responses of abalones, Haliotis discus hannai (mean shell length 70.2 ± 4.9 mm; mean body weight 36.9 ± 3.6 g), biweekly for four weeks, to determine the accumulated concentrations of ammonia (0, 0.1, 0.2, 0.4, 0.8, and 1.6 mg/L). In our biweekly measurements, a survival rate of ≥ 95% was observed for all concentrations of ammonia. The specific growth rate (SGR) decreased at ≥ 0.8 mg/L (p < 0.05), but the daily increment in shell length (DISL) showed no significant change (p < 0.05). Regarding antioxidant responses, the superoxide dismutase (SOD) activity of the hepatopancreas was increased at ammonia concentrations over 0.8 and 0.2 mg/L (p < 0.05) at two and four weeks, respectively, and the SOD activity of the gills increased at concentrations over 0.4 and 1.6 mg/L (p < 0.05) at four weeks. The catalase (CAT) activity of the hepatopancreas and gills increased at ammonia concentrations > 0.8 mg/L (p < 0.05). Phenoloxidase (PO) activity increased at ammonia concentrations over 0.8 mg/L (p < 0.05), and Lysozyme (LZM) increased at concentrations over 0.8 and 0.4 mg/L (p < 0.05). Overall, our findings indicated that ammonia concentrations over 0.8 mg/L in seawater might damage the SGR, antioxidant responses, and immune responses in H. discus hannai. Our findings suggest the necessity of improvement or reinstallation for abalone aquaculture systems and can be used to assess the toxic effects of ammonia on H. hannai.
