Changes in Quality Characteristics of Different Combination of Brown Sauce during Storage (재료 배합을 달리한 브라운소스의 저장 중 품질 특성 변화)

  • The objective of this study was to determine the effects of wine and different meat bones added in brown sauce. Four kinds of brown sauce were prepared to find the changes of physiochemical characteristics, such as pH, $\alpha$-amylase activity, color, viscosity and microorganisms in brown sauce during storage at 4$\^{C}$. The pH of 4 kinds of brown sauce ranged from 5.0 to 5.6, and these pH ranges were stable during storage period. The activity of $\alpha$-amylase was the highest in the brown sauce made with wine and some of chicken bones and the sauces stored for 2 ∼ 6 days. The brown sauce made with wine and some of chicken bones had 35.5% of reducing sugar, which was the highest among 4 kinds of brown sauce, and had the darkest color. Also the brown sauce with wine and some of chicken bones shooed low values of L, a, b after storage and the lowest viscosity among 4 kinds of brown sauce. But they all tended to have higher viscosity during storage, especially two days after. The sauce made with wine and some of chicken bones showed the least change of viscosity and the addition of wine in the sauce appeared to inhibit the microbial growth.

  • This study was conducted to investigate the quality change of pork rectum by addition of maesil. pH of the pork rectum was decreased by the addition of maesil in a dose dependent manner. The changes in the L and a color values of both raw pork rectum and cooked pork rectum by storage were negligable. The b color value of raw pork rectum was certainly increased in the early stage of storage. The b value of cooked pork rectum, which was slightly dropped by addition of maesil, was decreased as storage progressed. In both raw and cooked pork rectum, thiobarbituric acid value (TBA) was significantly decreased in a dose dependent manner up to 5% addition of maesil. The volatile basic nitrogen (VBN) content in the ground pork rectum was conspicuously decreased by the addition of maesil. Consequently, the storage time of both raw and cooked pork rectum was extended more than 4 days by the 5% addition of maesil.

Quality Characteristics of the Bread Added with Prunus mume Byproduct Obtained from Liquer Manufacture (매실 리큐르 제조 부산물인 매실 과육을 첨가한 식빵의 품질 특성)

  • Effects of Prunus mume byproduct (PLB), obtained after manufacture of Prunus mume liquer, on quality characteristics of bread were investigated. The pH of dough and bread decreased but titratable acidity increased by addition of 10% or 20% PLB. The volume of dough during fermentation and the baking loss of bread containing PLB were smaller than those of the dough and bread without PLB. The weight of bread increased but the volume decreased by addition of PLB. L (lightness) value increased and a (redness) value decreased in the surface of bread containing PLB. b (yellowness) value did not show difference between treatments. The internal color of bread containing PLB decreased in L and a value but increased in b value. The hardness and strength of bread decreased with 10% PLB but increased with 20% PLB compared to control. Cohesiveness and springiness of bread increased with 10% or 20% PLB, but did not show significant difference between concentrations. As results of sensory evaluation, taste and flavor of the bread containing 10% PLB increased significantly compared to control. The sensory quality of bread with 20% PLB decreased significantly. The strength, springiness, and hardness of bread with 20% PLB were higher than those of control. The taste, flavor, color, and overall acceptability of bread with 10% PLB were better than those of control. No molds were found in breads with 20% PLB and 20% PLB powder during storage for 1 week at room temperature.

A Study on the Quality of Commercial Red Pepper Powder (시판 고춧가루의 품질 특성에 관한 연구)

  • Physicochemical qualities of the different commercial red pepper powder purchased in the market were investigated. In proximate composition of red pepper powder, crude protein contents were not much different from 10.10% to 10.91% but sample Ds crude lipid was the lowest as 8.28% and Cs was the highest as 11.43%. The pH values of red pepper powder were not significantly different. The value of L, a and b of sample C were 46.667, 22.738 and 19.941 respectively but it showed lower ASTA color than sample A and had same tendency with capsanthin. The highest content of capsaicin was sample D as 59.93mg 1100g and sample B was the lowest as 25.87mg/100g. Water activity of the sample A, B, C and D were 0.584, 0.676, 0.526 and 0.568 respectively. Sample A, C and D showed safety against microorganisms but sample B was susceptible to the mold.

Effects of Ethychlozate on the Fruit Quality of Satsuma Mandarin(Citrus unshiu Marc. cv. Miyagawa Early) in the Plastic House (Ethychlozate 살포가 하우스 밀감의 품질에 미치는 영향)

  • This experiment was carried out to elucidate the effect of ethychlozate foliar application on the fruit quality of Miyagawa Early Satsuma Mandarin in the plastic house. Ethychlozate(100mg.L$^{-1}$ ) was applied to the fruit at 100, 115 and 145 days after full bloom stage. The fruit was divided into four frequency level groups, with the control group receiving no Ethychlozate treatment and the level 3 group receiving all three applications. Peel coloration by a value Increased as application frequency increased. The a/b value trend was seen to be similar to this, but the b value ran contrary to the a value trend. Glucose contents of the fruit juice did not differ statistically among the application frequency levels but the fructose level was seen to be higher with increasing application frequency. Sucrose showed a similar trend to fructose in that it had a tendency to increase as application frequency increased. As a result of this, total sugar increased naturally with application frequency. The average Brix level among all treatment groups was higher than the average Brix level in the control group but Brix level did not differ significantly among application frequency levels. Acidity had a tendency to increase as application frequency increase, but there was no statistical difference found.

발아현미밥의 품질특성 비교

  • 현미가 몸에 좋다는 것은 널리 알려진 사실이다. 그러나 현미밥은 침지시간 및 취반시간이 길고 압력밥솥 등을 이용해서 뜸들이는 시간도 길어지는 등 우리의 식단을 현미식으로 바꾸기가 쉽지 않다. 또한 현미의 조직감과 식미는 소비자에게 높은 기호도를 얻지 못하여 현미 발아시 부드러워지는 조직감과 기능성 영양성분의 증가를 고려한 발아현미 무균포장밥이 출시되었다. 발아현미 무균밥은 발아현미가 약 50% 첨가된 제품으로 편리성을 추구하는 사회적 변화와 고품질 원료를 이용한 식미의향상 등으로 소비자 판매량이 꾸준한 증가 추세에 있다. 이에 현재 유통되고 있는 대표적 발아현미무균밥 제품 2종을 대상으로 품질특성을 비교하였으며, 이러한 결과를 바탕으로 쌀소비 촉진을 위한 가공밥류 제품 및 다양한 쌀가공 제품들의 개발을 위한 기초자료로 활용되었으면 한다. 시중에 유통중인 발아현미밥 A(수분함량 64.44%)와 B(수분함량 64.48%)의 색차값은 A가 L값 68.46, a값 -0.92, b값 9.49였으며, B는 L값 69.32, a값 -1.10, b값 9.77로 유의적인 차이는 없었다. 조직감 측정 결과에서는 B가 씹힘성(chewiness), 검성(gumminess), 경도(hardness)가 A보다 유의적으로 높게 나타났다. 유리당 함량은 A가 glucose 0.20%, sucrose 0.15%, maltose 0.18%였고, B는 glucose 0.14%, sucrose 0.32%, maltose 0.17%였다. 발아현미밥의 비타민 E함량은 A가 30.67 $\mu\textrm{g}$/100g, B가 46.89 $\mu\textrm{g}$/100g으로 B에 더 많이 존재하였다. 총식이섬유 함량은 A가 2.80%, B가 2.20%였다. 현미, 발아현미, 발아현미밥의 유리아미노산 분석 결과 필수아미노산을 포함한 다량의 아미노산이 존재하였으며 혈압강하 기능성 성분인 GABA(${\gamma}$ -amino butyric acid) 함량은 현미가 4.7 mg/100 g, 발아현미 20.8 mg/100 g이었으며, 동결건조 후 분석한 발아현미밥의 GABA 함량은 5.7 mg/100 g이었다. 발아현미밥의 관능검사 결과는 색, 윤기, 맛, 부착성, 응집성, 탄력성이 A가 유의적으로 높았으며, 외관의 경우도 A가 더 높은 평가를 받았다. 또한 전반적으로 A가 B에 비해 유의적인 차이를 나타내진 않았지만 더 나은 선호도를 나타내었다.

A study of baking properties depending on soybean flour and calcium added (발효 대두분 및 칼슘을 첨가한 혼합소맥분의 제빵적성에 관한 연구)

  • This study was to investigate the effect of 5~20% soybean flout(SBF) and/or 0.5~5% calcium on the quality of bread. pH of bread was increased with increasing an amount of SBF and calcium. pH of bread was higher than that of dough. The scores of specific volume and sensory evaluation for the bread quality were shown higher and increased its relative volume in the group of added both of 5~15%, SBF and 0.5~2%, calcium Endothermic peak for a thermal property of bread was increased with increasing the storage time of bread. The bread staling was progressed rapidly in control and calcium added groups only. with increasing an amount of SBF, L values of bread was decreased, but a and b values were increased. However, L, a and b values were shown no difference in the group of calcium added only. Therefore, the optimum blending ratios of SBF and calcium for the quality of bread were 5~10%, SBF and 0.5~1% calcium, respectively.

Optimization for the Preparation of Jeung-Pyun, with Added Paecilomyces japonica Powder, Using a Response Surface Methodology (반응표면분석법에 의한 동충하초 첨가 증편 제조의 최적화)

  • To optimize the preparation process of Jeung-Pyun, an experiment was derived, using a central composite design, to fmd the optimal mixing conditions. The addition of Paecilomyces japonica powder, the volume of Tak-Ju and the second fermentation time were independent variables, with the pH, volume, color, sensory and texture properties of the Jeung-Pyun selected as response variables. As the Paecilomyces japonica powder and fermentation time were increased, the b values and volume after the second fermentation also increased. The color of the Jeung-Pyun became deeper with increases in the Paecilomyces japonica powder and fermentation time, and was deepest on the addition of 30% Tak-Ju. The pH increased with increasing fermentation time of the Jeung-Pyun, and on the addition of 3% Paecilomyces japonica rapidly increased more than with the other groups. The optimal mixing conditions for the best quality Jeung-Pyun, with restricted conditions above a b value of 3, a color intensity above 3, and a volume of 40mQ and a pH of 4.02-4.04 after the second fermentation, were 4.0%, 20% and 45 mins for the Paecilomyces japonica powder, Tak-Ju and second fermentation time, respectively.

배 품종별 생장시기에 따른 이화학적 특성

  • 배 폐과를 효율적으로 활용하여 식품소재나 이를 이용한 기능성식품 개발을 위하여 배 품종별 생장시기에 따른 이화학적 특성을 조사하였다. 나주 지역에서 생산한 풍수, 신고, 추황 등 3품종을 시료로 하여 생장시기에 따라 배 무게의 증가를 관찰하였고 표면의 착색도는 Hunter 색차계로 L, a, b값을 측정하였으며 수분함량은 상압가열건조법으로 측정하였다. pH와 가용성 고형물은 각각 pH meter와 refractometer로, 총산은 적정법으로 측정하여 citric acid로 나타내었다. 총당은 phenol-황산법으로, 환원당의 함량은 DNS법으로 정량 하였고 총탄수화물의 함량과 전분의 함량은 산 가수 분해시킨 후 DNS법으로 측정하였다. 유기산과 유리당은 HPLC를 이용하여 정성, 정량 분석하였다. 풍수 과중의 증가는 거의 직선적으로 증가하였고 신고와 추황은 생장전기에는 급속히 증가하다가 후기에는 완만한 증가를 보였다. 풍수는 L, a, b값이 모두 약간의 증가를 보였고 신고와 추황은 a값이 각각 -1.80, 4.01에서 9.22, 9.70으로 증가하였으며 L, b값은 큰 변화를 나타내지 않았다. 과피의 수분함량은 약 61%에서 79%로 증가하였고 과육의 수분함량은 76%에서 90%로 증가하였다. 풍수와 추황의 경우 과육의 수분함량은 생장초기에 이미 생장후기와 비슷한 수분함량 비율을 갖고 있는 것을 알 수 있었다. 3품종 모두 생장초기 총산의 함량은 수확시기의 함량보다 높았고 추황의 경우 성장이 진행됨에 따라 과피와 과육의 총산의 함량은 감소하다가 다시 약간의 증가 추세를 나타내었다. 유기산은 주로 tartaric acid, malic acid, oxalic acid, citric acid 그리고 shikimic acid가 검출되었고 수확시기에 3품종에서 모두 malic acid 함량이 가장 높았고 malic acid와 citric acid의 함량이 풍수와 신고에서는 약 0.3%, 추황은 0.4% 이상으로 나타났다. 또한 3품종 모두에서 총산과 같은 추세로 성숙기의 유기산의 함량이 생장초기의 함량보다 많이 감소되었음을 알 수 있었다. 배의 가용성 고형물은 전체적으로 과실의 성장이 진행됨에 따라 증가하는 추세를 나타내었다. 풍수와 신고 과피의 총당과 환원당은 거의 같은 추세로 증가하였고 성숙이 가까워지면서 환원당이 감소하였다. 배 과육의 총당과 환원당 또한 거의 같은 추세로 증가를 하다가 수확 전 20일 혹은 30일부터 총당의 함량은 계속 증가하지만 환원당의 함량은 큰 변화가 없는 것으로 나타났다. 배 과실의 전반 성장과정에 있어서 전분함량은 감소하였고 총탄수화물의 함량은 과육에서는 증가하나 과피에서는 반대로 감소하는 경향을 보였다. 풍수의 전분함량은 최고 2.19%에서 0.23%로 감소하였고 신고에서는 0.43%로 추황에서는 0.48%로 감소하였다. 배 유리당은 fructose, glucose, sorbitol, sucrose 둥 4종류의 당이 검출되었고 3품종 모두에서 생장과정 중 비환원당인 sucrose 함량은 계속 증가하였고 fructose, glucose, sorbitol의 함량(추황의 sorbitol을 제외)은 생장이 촉진됨에 따라 증가하다가 다시 점차적으로 감소하였다. 이러한 결과는 총당과 환원당의 측정결과와 일치한 것으로 나타났다. 결론적으로 배의 성장에 따라 산 함량은 감소하였고 당 함량은 증가하였다.

Effect of Drying method on the Fruit and Powder color of Red Pepper (건조방법이 고추 및 고춧가루의 색도에 미치는 영향)

  • This experiment was established to find out the effect of drying methods on the fruit and powder color of red pepper. Hunter's L, a, and b values of the dried fruit were also higher with the cut fruit in comparison with the whole or punched fruit. The Hunter's a value of the pepper powder after drying and grinding was slightly higher for the whole fruit with sun drying, but it was higher for the cut fruit in case of heat drying. The ASTA value was higher when pepper fruits were sun dried. For the heat drying, the value was higher with the drying temperature $60^{\circ}C$.
