Formation and Physical Properties of Yogurt

  • Yogurt gels are a type of soft solid, and these networks are relatively dynamic systems that are prone to structural rearrangements. The physical properties of yogurt gels can be qualitatively explained using a model for casein interactions that emphasizes a balance between attractive (e.g., hydrophobic attractions, casein cross-links contributed by calcium phosphate nanoclusters and covalent disulfide cross-links between caseins and denatured whey proteins) and repulsive (e.g., electrostatic or charge repulsions, mostly negative at the start of fermentation) forces. Various methods are discussed to investigate the physical and structural attributes of yogurts. Various processing variables are discussed which influence the textural properties of yogurts, such as total solids content, heat treatment, and incubation temperatures. A better understanding of factors contributing to the physical and structural attributes may allow manufacturers to improve the quality of yogurt.

효소처리인삼, 아스코르브산, 효모추출물이 첨가된 요구르트에서 프로바이오틱 세균의 활성 (Viability of Probiotic Bacteria in Yogurt Supplemented with Enzyme-Bioconverted Ginseng, Ascorbic Acid, and Yeast Extract)

  • The effects of yogurt supplementation with enzyme-bioconverted ginseng (EBG), ascorbic acid, and yeast extract on the bacterial counts of Streptococcus thermophilus, Lactobacillus acidophilus LA-5, and Bifidobacterium BB-12 were investigated to develop healthy yogurts with high probiotic counts during storage. In addition, the colors and viscosities of the yogurts were determined. EBG, ascorbic acid, and yeast extract did not affect S. thermophilus counts. EBG and ascorbic acid enhanced the viabilities of L. acidophilus LA-5 and Bifidobacterium BB-12 during storage. Yeast extract improved growth of L. acidophilus LA-5 and Bifidobacterium BB-12 during fermentation. EBG turned the yogurt into brown color. We conclude that supplementation of yogurt with EBG, ascorbic acid, and yeast extract may enhance its health-promoting functions by increasing the viability of probiotics, which can thus promote consumption of the yogurt.

Effects of Freeze-dried Mulberry on Antioxidant Activities and Fermented Characteristics of Yogurt during Refrigerated Storage

  • This study investigated the effect of added freeze-dried mulberry fruit juice (FDMJ) (1, 3 and 5%) on the antioxidant activity and fermented characteristic of yogurt during refrigerated storage. A decrease in pH of yogurt and increase in acidity was observed during fermentation. The yogurts with FDMJ exhibited faster rate of pH reduction than control. Initial lactic acid bacteria count of yogurt was 6.49-6.94 Log CFU/g and increased above 9 Log CFU/g in control and 1% in FDMJ yogurt for 24 h. The total polyphenol and anthocyanin content of FDMJ yogurt was higher than that of control due to the presence of phytochemical contents in mulberry. Moreover, antioxidant activity such as DPPH and reducing power was highest 5% FDMJ yogurt. During cold storage, pH decreased or remained constant in all yogurts with values ranging from 4.08 to 4.78 units. In sensory evaluation, the score of 1% FDMJ yogurt was ranked higher when compared with other yogurts. It is proposed that mulberry fruit juice powder can be used to improve sensory evaluation and enhance functionality of yogurt.

함초 추출물 첨가가 요구르트 저장 중의 품질 특성에 미치는 영향 (Effect of Slander Glasswort Extract Yogurt on Quality during Storage)

  • This study was performed in an effort to create a functional and stable yogurt product containing slander glasswort extract. The extract was added to milk at concentrations of 0.25, 0.5, and 1.0% (w/v), which was then fermented with lactic acid bacteria (Lactobacillus bulgaricus and Streptococcus thermophilus) at $42^{\circ}C$ for 6 hr. During a period of 15 days of storage, the quality characteristics of the yogurt samples were evaluated in terms of acid production (pH and titratable acidity), levels of lactic acid bacteria, color values, viscosity, and sensory characteristics. There were no significant differences in pH during the storage period; however, the control yogurt presented the highest pH value. The 1.0% slander glasswort yogurt had the highest titratable acidity; but again, there were no significant differences among the yogurts. The 1.0% slander glasswort yogurt also had the highest level of lactic acid bacteria, and both the control and slander glasswort-containing yogurts had increasing levels of lactic acid bacteria over the storage period. The 1.0% slander glasswort yogurt had the lowest L-value and highest a- and b-values. And the slander glasswort yogurts presented lower viscosity values than the control. In sensory evaluations, the 0.25% slander glasswort yogurt scored higher than the other groups for color, flavor, viscosity, sweetness, sourness, and overall palatability. The final sensory results indicated that the 0.25% slander glasswort yogurt was superior.

국내 액상발효유에서 분리한 유산균의 제품제조 적성조사 (Aptness for the Preparation of Liquid Yogurt by Lactobacilli isolated from Korean Liquid Yogurts)

  • 국내의 액상발효유 7개 회사 제품에서 불리한 8종의 유산균에 대하여 발효유 제조와 관련된 균학적인 특성을 조사하였다. skim milk에 배양할 때 산생성을 촉진시키기 위하여 L. bulgaricus D는 포도당의 첨가를, L. casei A와 L. casei E는 포도당과 유단백질 분해물의 첨가를 필요로 했으나, L. jugurti B, L. jugurti C, L. jugurti G, L. helveticus F 및 L. acidophilus B는 이들의 첨가를 필요로 하지 않았다. 포도당을 첨가한 skim milk에 배양할 때 L. jugurti B, L. jugurti C, L. jugurti G L. helveticus F 및 L. bulgaricus D는 산생성속도와 균의 사멸속도가 빨랐으나, L. acidophilus B, L. casei A 및 L. casei E는 산생성과 사멸이 느렸다. L. jugurti B, L. jugurti C, L. jugurti G, L. helveticus F, L. bulgaricus D 및 L. acidophilus B로 제조한 액상발효유는 침전이 발생되고 맛과 향이 좋지 못했으나, L. casei A 및 L. casei E로 제조한 것은 침전도 생기지 않았고 맛과 향도 비교적 좋았다.

효소로 당화시킨 주박 분해물을 첨가한 요구르트의 발효 특성 (Preparation and characteristics of yogurt added with enzymatically saccharified Korean rice wine lees powder)

  • 본 연구에서는 효소 처리한 주박 당화물 분말을 발효식품에 이용하고자 상업용 Lactobacillus acidophilus, Streptococcus thermophilus, Bifidobacterium longum 혼합 균주를 이용하여 탈지분유에 주박 당화물을 첨가하여 요구르트를 제조하고 주박 당화물 분말의 첨가량에 따른 요구르트의 발효특성과 저장성을 조사하였다. 탈지분유에 주박 당화물을 0.5-2.0% 첨가한 결과 적정산도는 주박 당화물의 사용량에 비례하여 증가하였으며, 12시간 후 대조군 0.72%에서 주박 당화물 첨가 요구르트는 0.77-0.90%로 증가하였다. pH의 변화도 적정산도의 변화와 일치하는 경향이었다. 젖산균 생균수는 주박 당화물의 첨가량에 비례하여 증가하였으며, 12시간 배양 후 대조군은 7.83 log CFU/g에서 주박 당화물 첨가군은 8.01-8.13 log CFU/g까지 증가하였다. 또한 주박 당화물은 주박과는 상이하게 커드의 안정성에 대한 효과가 매우 미미하였다. 관능평가 결과. 주박 당화물의 첨가 수준은 0.5%가 적절하였다. 주박 당화물을 첨가한 요구르트를 $4^{\circ}C$에서 16일간 저장하는 동안 pH와 적정산도의 변화는 미미하였고, 젖산균 수는 약간 감소하였으나 모든 조건에서 $10^7CFU/g$ 이상으로 유지되었다.

Fermentation Properties of Yogurt with Added Nano-Filtered Sunmul Powder

  • This study was performed to determine the feasibility of developing a healthy yogurt using tofu whey concentrates separated by nanofiltration (NF). The curd yogurt was prepared from whole milk with added skim milk powder, in which the NF powder was substituted at 0, 6.25, 12.5, or 25% for the skim milk powder. The quality characteristics were evaluated for pH, titratable acidity, viscosity, color, and viable cell counts. There were no significant differences in pH or titratable acidity between the control (yogurt with added skim milk powder only) and the yogurts with added NF powder, after 24 hr of fermentation at $37^{\circ}C$. The apparent viscosities of the yogurts with added NF powder were higher ($3,197{\sim}3,574\;cps$) than that of the control yogurt (3,196 cps). Lightness decreased, while yellowness increased, as the amount of NF powder increased. Sensory evaluations showed that the NF powder could be substituted for the skim milk powder at 6.25% without lowering the yogurt quality.

유자 요구르트의 항산화능과 품질특성 (Antioxidant Activity and Quality Characteristics of Yogurt Added Yuza(Citrus junos Sieb ex Tanaka) Extract)

  • This study investigated to develop new functional yogurt added domestic yuza(Citrus junos). In order to make the most effective yogurt, yuza extract and fructose were mixed at different proportions. DPPH free radical scavenging activity of yuza yogurts increased dependent on concentration. The results of the DPPH free radical scavenging activity, the 1% yuza yogurt was proven to be the best. The overall sensory score for yogurt made from adding 1% yuza ethanol extract was the best of tested yogurts. The antioxidant activity(DPPH free radical scavenging activity) was the highest in 1% yuza yogurt. The quality characteristics of prepared yogurt were evaluated in terms of acid production(pH and titratable acidity), viscosity, color and levels of lactic acid bacteria during storage period. During storage, the quality of yogurt made from adding yuza extract was better than control(without yuza extract). The sedimentation of curd was repressed a little by adding 1% yuza extract.

시판용 요구르트와 Lactobacillus acidophilus 요구르트의 생화학적 활성의 비교 (Comparison of the Biochemical Activities of Commercial Yogurts and Lactobacillus acidophilus-containing Yogurt)

  • Lactobacillus spp.같은 유산균은 탄수화물을 발효하여 ATP를 생성하며, 시판되는 요구르트 생산에 이용되고 있다. Lactobacillus spp.는 장관계 건강에 유익한 균으로, 특히 Lactobacillus acidophilus를 함유하는 요구르트는 대장암 초기단계를 예방하는 효과가 있는 것으로 나타나 관심이 모아지고 있다. 본 연구에서는 고형 요구르트와 액상 요구르트, 그리고 Lactobacillus acidophilus 세 그룹의 유산균을 배양하였다. 먼저 Lactobacillus spp.의 최적의 배양조건을 조사하였고 세 그룹의 생장능과 젖산생성을 비교하기 위해 혼탁도와 pH를 측정하였다. 배양 상층액의 젖산을 비교하기 위해 HPLC를 시행하였으며 Staphylococcus aureus와 Escherichia coli에 대한 항균력을 측정하였다. Lactobacillus spp.의 최적의 배양조건은 $25^{\circ}C$의 온도로 MRS배지에서 24시간 배양이었다. 혼탁도와 젖산 생성은 L. acidophilus가 가장 높았고 액상 요구르트, 고형 요구르트 순으로 나타났다. Paper disk법을 이용한 항균력 시험에서는 S. aureus에 대해서는 세 그룹 모두 항균력이 없었으며 E. coli에 대해서는 L. acidophilus에서 1.8 mm의 억제대를 보였다. 이 연구결과로 L. acidophilus는 높은 젖산 생성 능력과 항균력을 가지고 있음을 확인하였다.
