Effect of starch nanoparticle on the quality characteristics of whipped cream (전분 나노입자 첨가가 휘핑크림 품질특성에 미치는 영향)

  • This study was performed to investigate how the addition of starch nanoparticles prior to whipping could affect the quality characteristics and stability of full-fat dairy cream. Starch nanoparticles were prepared by dry heating under mildly acidic conditions and added to dairy cream as amount of 1, 3, and 5% (w/w). The whipped cream's storage stability, viscosity, overrun, and droplet size were investigated in combination with various starch nanoparticle contents. The storage stability and apparent viscosity increased in parallel with the increasing starch nanoparticle content compared to the control. The mean size and homogeneity of the droplets in the whipped cream increased with higher starch nanoparticle addition levels. Even though the whipped cream overrun was reduced by the addition of starch nanoparticles, the 1% addition level exhibited a similar overrun value as the control.

  • The management of construction materials is one of the important administration factor to perform construction projects. If it is not flexible to supply necessary materials to a workplace at a proper time, some problems such as a construction cost increase, an operation delay, a lowering of work efficiency and etc. could occur during the progress of work. Therefore, tracking the precise location of materials is important and necessary to input materials in the accurate place. Although Location sensing techniques comprise GPS, Active Badge, EasyLing and so forth, there are technical limitations to apply these techniques on construction site. Accordingly, in this paper, we propose the technically feasible method to automatically locate materials on site using recent RFID and wireless network technologies.

  • There are many researches on the organization formation and business strategy of architecture firms to improve of organizational capability. However the previous researches have been only focused on the improvement of organizational capability and efficiency in management parts of view. There have been lack of the researches on evaluation of organizational capability. Especially, there are no researches on the evaluation of organizational capability reflecting the characteristics of architecture firms which is mainly operated by human resources. Therefore, the objective of this research is to develope a index frame for evaluating organizational capability of architecture firms in Korea. The proposed indexes can be used in evaluation of organizational capability and analysis on correlation between organizational capability and performance of organization in architecture firms.

  • RFID-based logistics is increasingly adopted in various areas of the construction industry as a technology that can improve effectiveness and efficiency of construction logistics. However, the technology is not widely adopted yet compared to the potential of RFID applications in the construction industry that the existing research has shown. Since the validation and verification of the benefit from RFID applications were biased toward the productivity of managers, more wide aspect of validation and verification is necessary. Therefore, the objective of this paper is to show how much impact the RFID-based logistics management system can have on resource leveling and allocation that have a direct impact on a construction project as well as the managers' productivity improvement that was shown by the existing research. This paper also discusses issues arisen during the test process.

  • Analyses which loads were regarded as instant load and gradual step load were performed with data measured on gradually loaded field, and the results were inspected to find effect of load condition, and final settlements predicted by Hyperbolic, Tan's, Asaoka's, and Monden's method were compared with each other. According to above analyses, the following conclusions were obtained. Settlement curves which loads were regarded as instant load and gradual step load were beginning to coincide at time of twice duration of embankment. On the ground installed vertical drain, the result of Hyperbolic, Tan's, Asaoka's, Monden's, curve fitting I, and curve fitting II (simple, Carrillo) methods make conclude that Asaoka, curve fitting I, and curve fitting II methods agree with measured settlement.

Assessment of the Economic Impact of the Non-smoking Area Policy on Restaurant Sales (음식점 매출변화를 통해 살펴본 금연구역 정책의 경제적 영향 분석)

  • Purposes: Despite the positive health effects of both smokers and non-smokers, the non-smoking area policy is being negatively evaluated because of the vague fears of declining restaurant sales. The purpose of this study is to analyze the changes in sales of general restaurants(including liquor stores) and other restaurants that are considered to have the most applications of smoking cessation policy among the smoking facilities, and to examine the economic impact of the designation and expansion policies of non-smoking areas. Methodology: This study used the wholesale and retail trade survey data of the Korea National Statistical Office from 2011 to 2014 and analyzed 31,577 restaurants excluding missing values. For statistical analysis, t-test, ANOVA and Difference-in-differences(DID) models were used and the interaction term of area and year was entered. Findings: As the non-smoking area policy had been designated and expanded from December 2012 to December 31 2013, high restaurant sales in 2012 declined sharply in 2013. However, despite the expanding of the no-smoking area from January 1 2014 through December 31 2014, restaurant sales slightly recovered in 2014. In the case of other restaurants, there is no significant change in sales since the start of the policy in 2013. Practical Implications: The decline in restaurant sales due to the designation and expansion of non-smoking areas is temporary and can not be sustained over the long term. This result can be used to positively suggest negative perceptions of the designation and expansion policy of non-smoking areas. Also, this result can contribute to health promotion and smoking cessation policies by protecting non-smokers from the risk of secondhand smoking exposure and inducing smokers to decrease smoking rate and smoking amount.

  • Most of large construction companies have developed construction information systems and their ultimate goals should be improvement of the management efficiency of the construction projects. In order to make them successful, the systems should be designed to meet system users' needs Therefore purpose of this study is to evaluate the current information management systems from the viewpoint of the system users, especially on-site engineers. Questionnaire surveys and interviews have been conducted for the highly ranked 10 construction companies on four major factors including the functions of the systems and satisfaction level of each function, recognition of the use effect, informatization support. From the surveys results, correlation between the functions of the systems and the others has been statistically analyzed.

  • The construction Supply Chain Management(SCM) plays a critical role to proceed construction projects successfully. It is necessary to develop a system to support better communication among various actors and to supply construction materials in the right place on time with unstable situations on site according to the planned construction schedule for effective Supply Chain Management. Therefore, the objective of this study is to propose an automated and intelligent process that can be used to utilize ubiquitous technologies in construction supply chain management. This process consists of various equipments that can collect, store, calculate and communicate data among themselves. This study deals with a conceptual idea in order to improve process and equipment in the supply chain management process.

  • It's essential to build an earth retaining structure at the beginning and end point of a tunnel constructed in a colluvium area. A large scale of colluvial soil may cause a problem to the stability of the excavation ground. An excavation in colluvium has different behavior characteristics from those in a sandy soil due to unstable elements and needs counter measures for it. There are few systematic research efforts on the behavior characteristics of an earth retaining structure installed in colluvial soil. Thus this study set out to collect measuring data from an excavation site at the tunnel pit mouth in colluvium and set quantitative criteria for the safety of an earth retaining structure. After comparing and analyzing the theoretical and empirical earth pressure from the measuring data, the lateral earth pressure distribution acted on the earth retaining wall was suggested.

  • We investigated the role of autophagy in SNUC5/5-FUR, 5-fluorouracil (5-FU) resistant SNUC5 colon cancer cells. SNUC5/5-FUR cells exhibited low level of autophagy, as determined by light microscopy, confocal microscopy, and flow cytometry following acridine orange staining, and the decreased level of GFP-LC3 puncta. In addition, expression of critical autophagic proteins such as Atg5, Beclin-1 and LC3-II and autophagic flux was diminished in SNUC5/5-FUR cells. Whereas production of reactive oxygen species (ROS) was significantly elevated in SNUC5/5-FUR cells, treatment with the ROS inhibitor N-acetyl cysteine further reduced the level of autophagy. Taken together, these results indicate that decreased autophagy is linked to 5-FU resistance in SNUC5 colon cancer cells.
