찰벼 품종에 따른 소곡주의 이화학적 특성 (Waxy Rice Variety-dependent Variations in Physicochemical Characteristics of Sogokju, a Korean Traditional Rice Wine)

  • 품종에 따라 제조된 소곡주의 이화학적 특성을 검토하기 위하여 원료로 사용된 보석찰, 동진찰, 해평찰, 화선찰, 눈보라, 상주찰, 신선찰의 특성을 검토한 결과 수분함량은 큰 차이를 보이지 않는 것으로 나타났으며, 단백질 함량은 상주찰이 8.11%로 가장 높게 나타났고 눈보라가 6.35%로 가장 낮은 함량을 나타내었다. 백도는 화선찰이 가장 높았으며, 보석찰이 가장 낮은 수치를 보였다. 색도를 측정한 결과 L값의 경우 백도와 비슷한 결과를 나타내었으며, a 및 b값은 보석찰이 0.35 및 13.09로 가장 높은 수치를 나타내었다. 호화특성 중 호화개시온도는 $68.03{\sim}68.08^{\circ}C$로 유의적인 차이를 보이지 않는 것으로 나타났으며, 강하점도는 보석찰 및 신선찰이 높은 것으로 나타났고 치반점도는 상주찰이 가장 높게 나타났다. 품종별로 제조된 소곡주의 알코올 함량은 품종별로 큰 차이를 보이지 않는 것으로 나타났다. 당도는 $20.5{\sim}24.6\;^{\circ}Bx$로 나타났고 탁도는 $0.0344{\sim}0.0530$ 범위로 나타났다. L 및 b값은 상주찰이 각각 6.90 및 1.45로 가장 높은 수치를 보였다. pH는 상주찰이 4.79로 가장 높았으며, 나머지는 $4.70{\sim}4.74$의 범위로 큰 차이가 없는 것으로 나타났다. 총산도는 상주찰이 0.8684%로 가장 높게 나타났으며, 그 외 품종은 $0.7998{\sim}0.8360$%의 범위로 나타났다. 품종별로 제조된 소곡주의 유리당은 glucose만 검출되었으며, 상주찰과 동진찰이 각각 10.843 및 10.331 g/100 mL로 높은 함량을 나타내었다. 유기산 함량을 측정한 결과 succinic acid, malic acid, citric acid 및 oxalic acid 등이 검출되었다. 품종별로 제조된 소곡주의 동진찰을 기준으로 하여 나머지 품종에 대한 관능검사를 실시한 결과 신선찰, 해평찰 및 화선찰이 비교적 양호한 결과를 나타내었다.

황기 첨가 비율에 따른 황기주박 쿠키의 품질특성 및 항산화 활성 (Antioxidant Activity and Quality Characteristics of Rice Wine Cakes Cookies with Different Ratio of Astragalus memvranaceus)

  • 본 연구는 황기를 이용하여 만든 황기주 주박을 활용하고자 현대인들 입맛에 맞는 쿠키에 적용하였다. 황기 함량이 0, 0.5, 1%인 황기주 주박과 박력분을 2:8의 비율로 쿠키를 제조하여 품질특성 및 항산화 활성을 검토하였다. 황기주박을 첨가하여 제조한 쿠키의 밀도가 대조군에 비해 높았으며, pH는 황기의 첨가 비율이 증가할수록 다소 낮아지고 경도는 유의적으로 증가하였다. 쿠키의 퍼짐성, 손실율 및 팽창률에서는 유의성이 없었으나 주박 첨가 실험군에서 퍼짐성과 손실률이 낮아지고 팽창률이 증가하는 경향을 보였는데, 이는 부재료인 주박의 수분함량이 영향을 준 것으로 판단되며, 황기의 첨가량 증가에 따른 일정한 경향은 보이지 않았다. 쿠키의 색도에서 황기의 첨가량이 증가 할수록 L값이 유의적으로 감소한 반면 a값은 증가하였고, 관능적 특성에서는 황기 0.5%가 기호도면에서 가장 좋은 것으로 확인되었다. 항산화 활성 실험에서 폴리페놀 및 플라보노이드 성분 함량은 황기 첨가량이 증가될수록 높아지는 경향을 보였고 증류수 보다는 70% 에탄올 추출물에서 수율이 높게 나타났다. DPPH 전자공여능에서는 황기주박 1%첨가쿠키가 높은 항산화 활성을 나타냈다. 이런 결과로 가장 항산화 활성이 좋은 황기주박의 첨가 비율은 1%였으나 풍미가 중요한 쿠키의 특성상 항산화 활성도 뛰어나고 맛의 기호도가 가장 좋은 황기 0.5% 첨가 주박 쿠키가 적합한 것으로 판단되었다.

소믈리에 서비스품질이 고객의 감정반응과 재방문의도에 미치는 영향 (The Effect of Sommelier Service Quality on Customer's Emotional Response and Revisit Intention)

  • 본 연구는 서울지역의 외식업체에서 소믈리에 서비스를 받아본 고객을 대상으로 소믈리에 서비스품질이 고객의 감정반응과 재방문의도에 미치는 영향에 대해 고찰하였으며, 소믈리에의 서비스품질 요인을 파악하고, 소믈리에의 서비스품질에 따른 고객의 감정반응이 재방문의도에 미치는 영향을 분석하여 소믈리에의 와인에 대한 전문지식, 기술과 경험에 대한 필요성을 제시하였다. 실증연구를 수행하기 위해 확보된 198개의 표본을 바탕으로 탐색적 요인분석, 신뢰도 분석, 회귀분석을 사용하여 총 3개의 가설을 검증하였다. 연구결과, 소믈리에 서비스품질이 긍정적 감정에 미치는 영향은 전문성 요인(${\beta}$=.257, p<0.001), 신뢰성 요인(${\beta}$=.314, p<0.001)과 대응성 요인(${\beta}$=.387, p<0.001)에서 유의한 영향을 미치는 것으로 나타났으며, 부정적 감정에 미치는 영향은 전문성 요인(${\beta}$=-.178, p<0.05)에서 유의한 영향을 미치는 것으로 나타났다. 소믈리에 서비스품질이 재방문요인에 미치는 영향을 분석한 결과는 신뢰성 요인(${\beta}$=.286, p<0.001)에서 유의한 영향을 미치는 것으로 나타났다. 고객의 감정반응이 재방문 요인에 미치는 영향을 분석한 결과는 긍정 감정요인(${\beta}$=.350, p<0.001), 부정 감정요인(${\beta}$=-.195, p<0.01)에서 유의한 영향을 미치는 것으로 나타났다. 이러한 연구결과를 통해 전문가로써의 소믈리에 자질향상을 통한 고객의 긍정적인 감정반응을 도출하여 재방문을 유도할 수 있는 방안을 제시하였으며, 연구의 한계 및 향후 연구방향에 대해서도 논의하였다.

The Effects of Resveratrol on Oocyte Maturation and Preimplantation Embryo Development

  • Biotechnologies for cloning animals and in vitro embryo production have the potential to produce biomedical models for various researches. Especially, pigs are a suitable model for xenotransplantation, transgenic production and various areas of reproductive research due to its physiological similarities to human. However, utilization of in vitro-produced embryos for transfer remains limited. Despite improvement over past few decades, obstacles associated with the production of good quality embryos in vitro still exist which limit the efficiency of cloning. One of major problems includes improper in vitro maturation (IVM) and culture (IVC). Oxidative stress caused from in vitro culture conditions contributes to inadequate IVM and IVC which leads to poor developmental competence of oocytes, failure of fertilization and embryo development. To reduce the oxidative stress, various antioxidants have been used to IVM and IVC system. However, limited information is available on the effects of resveratrol on livestock reproductions. Resveratrol is a polyphenolic natural product and well known as an antioxidant in foods and beverages (e.g. in grapes and red wine). Resveratrol is known to be cardioprotective, anticarcinogenic, anti-inflammatory, antioxidant and antiapoptotic. This paper will review the effects of resveratrol on in vitro maturation of oocytes and embryo development.

배 첨가가 막걸리의 품질과 생리 기능성에 미치는 영향 (Effect of Pears on the Quality and Physiological Functionality of Makgeoly)

  • This study was conducted to develop a high value pear Makgeoly that possessed the physiological functionality of pears and rice. To accomplish this, the effects of the addition of pears on the alcohol fermentation of Korean traditional rice wine, Makgeoly were investigated. The total acidity contents were unchanged for 9 days of fermentation after the addition of pear to the mash, however, it decreased by approximately 0.13% after 9 days. Additionally, the ethanol contents increased to 16.0% after 5 days of fermentation, after which they did not change significantly. The residual reducing sugar and free sugar content were decreased after 7 days and 5 days of fermentation, respectively. The total acceptability was the best in the Makgeoly that contained grated pear after 10 days of fermentation. Additionally, antihypertensive angiotensin Iconverting enzyme inhibitory activity was found to be greater than 80% in all pear Makgeoly, but the fibrinolytic activity, SOD-like activity and antioxidant activity were weakened. Based on these results, Makgeoly that was brewed by the addition of 20% grated pear into the fermented broth from fermentation at $20^{\circ}$ for 10 days has the potential to become a new functional Korean traditional Makgeoly with high acceptability and antihypertensive properties.

콩 첨가 증편의 Dextran과 내부구조에 관한 연구 (Study on the Dextran and the Inside Structure of Jeung-Pyun of Adding Soybean)

  • Jeung-Pyun Is a traditional fermented Korean food made with rice flour, water, sugar salt and unrefined rice wine(Tak-ju). In order to investigate how the addition of soybean and dextran have an influence on Jeung-Pyun fermentation and forming structure of Jeun-Pyun, adding soybean 20% and dextran 1%based on rice weight, we measured physicochemical properties. Also we measured dextran content of Jeung-Pyun batter according to the fermentation time and observed the inside of Jeung-Pyun by SEM in order to find out air pore condition. The dextran content of rice Jeung-Pyun and Jeung-Pyun adding soybean 20% was gradually increased as fermentation time was longer and Jeung-Pyun adding soybean 20% was higher than rice Jeung-Pyun. The specific volume of rice Jeung-Pyun and Jeung-Pyun adding soybean 20% was increased up to a fermentation time of 7~ 10 hours but it was decreased as fermentation time was longer. In the inside structure of Jeung-Pyun observed by SEM, the fermentation condition of Jeung-Pyun fermented for 3 and 7 hour was better and air pore size became larger, the number of it was decreased as fermentation time was longer. The air pore size of soybean 20% Jeung-Pyun is smaller more uniform than that of rice Jeung-Pyun. In conclusion. it can be suggested that the audition of soybean improves the quality of Jeung-Pyun and dextran has an influence on fermentation and forming structure of Jeung-Pyun.

알코올 발효과정 중 양파착즙액 휘발성 향기성분 변화 (Fermented Production of Onion Vinegar and Its Biological Activities)

  • This study aimed to provide volatile flavor compounds of three onion products through thermal process and alcohol fermentation, to meet the quality standard of onion products. The identified components of onion extracts (OE) included 49 (18 sulfur-containing compounds, 5 alcohols, 8 acids, 3 ketones, 4 esters, 4 aromatic compounds, 2 aldehydes, 1 pyrazines and 4 miscellaneous compounds), and 55 (17 sulfur-containing compounds, 15 alcohols, 5 acids, 11 ketones, 3 aromatic compounds, 2 aldehydes and 1 pyrazine) in autoclave-sterilized onion extracts (SOE); and 69 (10 sulfur-containing compounds, 27 alcohols, 11 acids, 11 ketones, 6 esters, 1 aromatic compound and 3 pyrazines) in onion wine (OW), respectively. Among the major flavor classes, sulfur-containing compounds (36.8%), acids (31.3%) and aldehydes (13.6%) in OE were changed to alcohols (46.5%) and ketones (27.3%) in SOE whereas, alcohols (56.3%) and acids (26.6%) in OW. Moreover, 1,3-butanediol, 2,3-butanediol, and 3-hydroxy-2-butanone were highly detected in SOE whereas, acetic acid, 3-methylbutanol, 2-phenylethanol and 1,2,3-propanetriol in OW.

제조방법에 따른 강하주의 품질 특성 (Quality Properties of Gangha-ju Liquor According to the Preparation Method)

  • This studies were performed to develop a Korean traditional folk liquor namely Gangha-ju has been prepared at Bosung district in Korea, and manufacturing conditions and anti-oxidation activity and anti-microbial activity of Gangha-ju were investigated. Ethyl-alcohol 20% and 30% Gangha-ju were brewed with glutinous rice wine, distilled liquor and 6 herbs of ginger, cinnamon, etc. Chemical and physical properties of 30% Gangha-ju were acidity 0.22, pH 4.31, amino acidity 3.26, transmittance 59 and conductivity $911\;{\mu}s/m$, and 20% Gangha-ju were 0.43, 4.20, 6.26, 62 and $924\;{\mu}s/m$. Volatile flavor compounds of ethyl alcohol, acetic acid, butanol, n-amyl alcohol, iso-pentyl alcohol, ethyl acetate, butyl acetate, acetaldehyde and furfural were detected, and main aroma compounds of Gangha-ju were isopentyl alcohol and ethyl acetate. Anti-oxidation activity by DPPH method was evaluated 31.32%, and nitrite scavenging effect was 31.79%. Anti-microbial activity against several microorganisms was pronounced strong activity over a wide range of test organisms, and Leuconostoc mesenteroids and Salmonella Ttyphimurium, Staphylococcus epidermidis were found to be more sensitive to Gangha-ju than Escherichia coli and Aspergillus flavus.

Quality Characteristics and Ginsenosides Composition of Ginseng-Yakju According to the Particle Size of Ginseng Powder

  • The aim of this study was to develop rice wine (Yakju) containing various amounts and particle sizes of ginseng powder and to analyze the physicochemical characteristics and content of ginsenosides in ginseng-Yakju. Soluble solid content, pH, ethanol concentration, acidity, amino acid content, and evaluation of preference showed no difference between four kinds of Yakju groups, regardless of ginseng supplementation and particle size of the ginseng powder. During fermentation of Yakju containing ginseng, the contents of ginsenosides Rb1, Rb2, Rb3, and Rc were decreased. Otherwise, the content of ginsenoside Rh1 was increased highly by brewing microorganisms in Yakju. Recovery ratios of ginsenosides in ginseng-Yakju were approximately 25.4% (coarse ginseng power) and 23.8% (fine ginseng powder), which were superior to the recovery ratio of ginsenosides in Yakju containing ginseng slices (5%).
