쌀의 열수 가용성 물질과 밥의 텍스처와의 관계 (Relationship Between Hot Water Solubles of Rice and Texture of Cooked Rice)

  • 일반계와 통일계 쌀의 가열에 따른 가용성 물질과 밥의 텍스처와의 관련성을 연구하였다. 가열에 의한 쌀 또는 쌀가루의 가용성 물질 또는 가용성 아밀로오스 함량은 일반계는 품종간에 큰 차이가 없었으나 통일계는 품종간에 차이를 보였다. 같은 가열조건에서 일반계는 통일계 보다 가용성 물질의 함량이 높았고 가용성 아밀로오스함량도 높았다. 쌀 또는 쌀가루의 가용성 물질과 아밀로오스 함량은 밥의 경도와는 부의 상관을, 부착성과는 정의 상관을 보였다.

낙엽의 분해과정에 따른 영양염류 및 화학적 구성원의 동태 (Dynamics of Nutrient and KDICical Constituents during Litter Decomposition)

  • Dynamics of nutrients, non-polar, water solubles, acid solubles and acid insolubles (lignin) in decomposing litter were investigated for 2 years in the oak, Quercus acutissima, and the pitch pine, Pinus rigida, stands in the vicinity of Kongju, Chungnam Province. Nitrogen and phosphorus conetrations in decomposing litter increased with time elapsed, however, potassium decreased rapidly within three months and then remined constant with time elapsed. Calcium concentration in needle litter during experimental period was lower than that of initial concentration in needle litter during experimental period was lower than that of initial concentration, and showed no significant variation with time elapsed. Calcium concentration in oak litter during the experimental period, however, were higher than that of initial concentration. Magnesium concentration in oak litter decreased repidly during six months, and then remaines constant thereafter. Annual amount of nitrogen, phosphorus, potassium, calcium and magnesium which returned to soil via litter decomposition in the oak and the pitch pine stands was $3.3g/m^2$ and $0.9g/m^2$ for N, $0.03g/m^2$ and $0.01g/m^2$ for P, $1.3g/m^2$ and $0.7g/m^2$ for K, $0.7g/m^2$ and $1.2g/m^2$ for Ca, $0.9g/m^2$ and $0.4g/m^2$ for Mg, respectively. Non-polar, and water- and acid-soluble fractions in decomposing litter decreased and lignin increased with time.

Condensed Molasses Solubles(CMS) / 당밀 혼합물이 반추위 미생물 단백질 합성량에 미치는 영향 (The Effects of Condensed Molasses Solubles(CMS) / Molasses Mixtures on Ruminal Microbial Protein Synthesis)

  • 본 연구는 monosodium glutamate의 생산 후 발생되는 부산물인 condensed molasses solubles(CMS)가 반추가축의 질소 공급원으로서 반추위 미생물 단백질 합성에 미치는 효과를 조사하기 위하여 수행하였다. 반추위 canulae가 부착된 4마리의 비착유소를 4 ${\times}$ 4 라틴 방각법에 적용하여 실험을 수행하였으며, 4개의 처리구는 다음과 같다. (1) 기초사료(앞착된 보리 3kg/일과 보리짚의 자유채식), (2) 기초사료에 당밀 200g/일 그리고 물 300g/일 첨가, (3) 기초사료에 당밀 200g/일, CMS 100g/일 그리고 물 200g/일 첨가 (4) 기초 사료에 당밀 200g/일, CMS 200g/일, 그리고 물 100g/일 첨가. CMS의 첨가수준에 따른 반추위내 발효양상은 처리구간에 유의적인 차이가 없었으나, CMS를 200g/일을 첨가한 처리구가 다른 처리구들에 비해 반추위내 미생물 단백질 합성량의 표시로서 이용된 allantoin/creatinine의 비율을 증가시키는 경향이 나타났다(P < 0.10).

볶음전 증자처리가 둥굴레 근경의 수용성 성분 및 갈색화에 미치는 영향 (Effect of Steaming Prior to Roasting of Polygonatum odoratum Roots on Its Water Solubles and Browning)

  • This work was designed to determine the effect of steaming-Pretreatment on Physicochemical and functional properties of roasted Polygonatum odoratum roots. Steaming treatments led to some reduction in the contents of water solubles, such as total solid, reducing sugar and free-amino nitrogen of the unroasted samples. Moreover, roasting processing caused decrease in reducing sugar and free-amino acid, with increase in total soluble solid and browning color of the samples, which showed the dependence of steaming treatment as well as roasting temperature. Electron-donating ability and nitrite-scavenging ratio of the samples were also highly developed along with roasting processing at 17$0^{\circ}C$ within 35min. Considering the physicochemical and some functional parameters of water extracts of roasted samples, roasting at above 14$0^{\circ}C$ for over 55min or at 17$0^{\circ}C$ for around 35min was recommendable for the higher quality of Polygonatum odoritum tea, which conditions were similarly adapted for both steamed and unsteamed samples.

인삼성분이 효모의 생육 및 대사에 미치는 영향 (The Effects of Korean Ginseng (Panax ginseng C.A. Meyer) Extracts and Their Fractions on the Growth and Metabolism of Saccharomyces cerevisiae and Saccharomyces uvarum)

  • This study was conducted to investigate the effects of Korean ginseng extracts and their fractions on the growth of Saccharomyces cerevsiae and Saccharomyces uvamm, their glucose consumption and alcohol production. The growth of both yeasts were stimulated by ginseng extracts and their water soluble fractions, but were supressed by ether extracts and an n-butanol extracts. Their growth were enhanced considerably by low molecular weight fractions (< 1,000) in water solubles. Similar results were also obtained with glucose consumption by yeasts. Substances increasing the growth and glucose consumption by yeasts proved to be a low molecular weight fractions (<1,000) in water solubles not saponins. The production of n-propyl alcohol by yeast was enhanced by adding ginseng extracts into the media, but that of ism-butyl alcohol was suppressed at same condition.

근적외선 분광분석법을 이용한 판상엽 화학성분 평가 (Evaluation of Chemical Composition in Reconstituted Tobacco Leaf using Near Infrared Spectroscopy)

  • Near InfraRed Spectroscopy(NIRS) is a quick and accurate analytical method to measure multiple components in tobacco manufacturing process. This study was carried out to develop calibration equation of near infrared spectroscopy for the prediction of the amount of chemical components and hot water solubles(HWS) of reconstituted tobacco leaf. Calibration samples of reconstituted tobacco leaf were collected from every lot produced during one year. The calibration equation was formulated as modified partial least square regression method (MPLS) by analyzing laboratory actual values and mathematically pre-treated spectra. The accuracy of the acquired equation was confirmed with the standard error of prediction(SEP) of chemical components in reconstituted tobacco leaf samples, indicated as coefficient of determination($R^2$) and prediction error of sample unacquainted, followed by the verification of model equation of laboratory actual values and these predicted results. As a result of monitoring, the standard error of prediction(SEP) were 0.25 % for total sugar, 0.03 % for nicotine, 0.03 % for chlorine, 0.16 % for nitrate, and 0.38 % for hot water solubles. The coefficient of determination($R^2$) were 0.98 for total sugar, 0.97 for nicotine, 0.96 for chlorine, 0.98 for nitrate and 0.92 for hot water solubles. Therefore, the NIRS calibration equation can be applicable and reliable for determination of chemical components of reconstituted tobacco leaf, and NIRS analytical method could be used as a rapid and accurate quality control method.

찰흑미와 일반찰벼의 열수가용성 물질 (Hot-water soluble on Waxy Black Rice and Waxy Rice Flours)

  • 가용성 탄수화물 함량은 찰흑미와 일반찰벼 쌀가루를 $90^{\circ}C$에서 10분, 20분 및 30분 동안 열처리한 결과 찰흑미는 17.1%, 21.5%, 24.7%이였으며, 일반찰벼는 18.6%, 21.7%, 23.4%의 함량을 보여 두 시료 모두 비슷한 양상을 보였다. 찰흑미와 일반찰벼 모두 가용성 탄수화물 함량의 대수값은 가열시간이 증가할수록 증가하여 직선적인 관계를 보였다. 쌀가루를 가열온도($80^{\circ}C,\;90^{\circ}C,\;95^{\circ}C$$98^{\circ}C$)에 따라 일정 시간(10분, 20분 및 30분) 가열하여 얻은 가용성 탄수화물의 Sepharose CL-2B 컬럼에 의한 용출양상은 찰흑미와 일반찰벼 모두 void volume($V_0$) 부근에서 대부분 용출되었으며, 가열시간이 증가할수록, 가열온도가 높아질수록 가용성 탄수화물의 용출양상은 증가하였다. 또한 $180{\sim}210\;mL$ 부근에서도 일부가 용출되었다.

Use of condensed molasses fermentation solubles as an alternative source of concentrates in dairy cows

  • Objective: The purpose of present study was to investigate the effects of condensed molasses fermentation solubles (CMS) on lactation performance, rumen fermentation, nutrient digestibility, and serum parameters of dairy cows. Methods: A total of 75 healthy Holstein cows with the same parity (milk production = 35±2.5 kg, body weight = 570±28 kg) were randomly selected and divided into 5 groups. One group served as control group (CON; no CMS), whereas the other 4 groups were CMS1 (accounted for 1% of the diet), CMS2 (2%), CMS3 (3%), and CMS4 (4%). All cows were fed regularly three times each day at 0800, 1600, and 2400 h. Cows received diet and water ad libitum. The experiment lasted for 60 days. Results: Results showed that the dry matter intake, milk yield, and protein of CMS2 were maximum and higher (p<0.05) than CMS4. The ruminal pH was observed less than 6 in CMS3 and CMS4 groups. No noticeable difference of microbial protein was found between CON and CMS2 groups, while the microbial protein in these groups was higher (p<0.05) than CMS3 and CMS4 groups. The apparent digestibility of dry matter, organic matter, and crude protein in CMS2 group was higher (p<0.05) than CMS3 and CMS4 groups. Compared to CMS3 and CMS4 groups, the CMS2 group increased (p<0.05) the serum concentrations of immunoglobulin G and immunoglobulin M on d 60. Conclusion: Therefore, it is practicable that CMS substitutes for a part of concentrates in lactating cows' diets, but higher addition of CMS (more than 3% of the diet) could decrease production performance of dairy cows as seen in the present study.

취반중 쌀의 수분 흡수 및 열수 가용성화 특성 (Hydration and Hot-water Solublilization of Milled Rice During Cooking)

  • 우리나라 쌀로서 계통이 다른 일반계와 통일계 쌀의 취반 및 가공 적성을 이해하기 위하여 취반 중 백미의 수분 흡수 특성과 열수 가용화 특성을 조사하였다. $100^{\circ}C$에서 취반 중 백미의 수분 흡수 속도는 일반계가 $0.43{\sim}0.47m^{-1/2}$이고 통일계가 $0.49{\sim}0.53m^{-1/2}$로서 일반계가 통일계보다 더 느린 속도로 일어났다. 쌀의 취반에 따른 열수 가용화 특성은 가용성 물질 뿐만 아니라 가용성 아밀로오스 모두 통일계 쌀이 일반계 쌀보다 더 빠른 속도로 가용화가 일어났다. 가용성 물질에 대한 가용성 아밀로오스의 비율은 취반 30분 후에 일반계 쌀이 $51{\sim}55%$, 통일계 쌀이 $44{\sim}48%$로서 일반계 쌀이 다소 높았으며, 30분 이전까지는 그 비율이 점차 감소하였으나 30분 이후에는 증가하는 현상을 보였다. 이러한 결과에서 취반 중 백미의 수분 흡수 및 열수 가용화 특성은 취반 및 가공 적성에 영향을 미칠 것으로 생각된다.

보리의 효소적(酵素的) 제분(製粉) 및 이용(利用)에 관한 연구 (Enzymatic Milling Process for Barley Flour Preparation)

  • 부분도정한 보리를 미생물효소(Asp. niger 및 oryzae)에 의한 분해반응 및 미세 고형분의 용출, 여과, 침강 또는 원심분리, 건조 등의 과정을 거쳐 제분할 때, 보리가루 획분$(73{\sim}76%)$, 맥강, 배아, 종구등의 잔유물 획분(3.6% 내외) 그리고 가용성물질 획분 등으로 분리하여 얻을 수 있었다. 이 때 가장 좋은 효소반응 조건은 온도 $45^{\circ}C$, 보리와 물의 비율 1 : 1.5(w/v)였고, ${\alpha}-a-mylase$역가 보다는 glucanase 와 Protease의 역가가 높은 효소를 사용할 때 더 좋은 효과를 보였다. 그리고 얻어진 세가지 종류 획분의 성분 조성은 단백질, 지방, 섬유소 등에서 각각 현저한 차이를 보여, 각 획분의 특성별 구분 이용이 가능하였다.
