Function of Dietary Fibers as food ingredients

  • Dietary fiber imparts both mutritional and functional properties to foods. This review deals with (1) the classification of dietary fiber, (2) the plant cell wall models, (3) the relations between structure and physicochemical and functional properties of dietary fiber and (4) the applications of dietary fiber in foods. Dietary fiber can be classified in terms of source, plant function, solubility, charge and topology. Plant cell wall models are presented to provide information on the interconnections of dietary fiber components which determines the content of soluble and insoluble dietary fiber content. In reality, physicochemical and functional properties of dietary fiber originate factors such as chemical constituents , charge, branching degree, conformation and etc. Dietary fibers possess a variety of functional properties in food systems, which thus make them useful in food application. In particular, rheology and gelation of water-soluble gums or hydrocolloids are discussed for their effects on food quality. A guideline s also listed for the gum selection to meet the best product requirements.

Removal of Chlorine from Fly Ash in Municipal Solid Waste Incineration Ash by Water Washing (수세에 의한 생활폐기물 소각재 중 비산재로부터 염소성분의 제거)

  • The chlorine component in fly ash from municipal solid waste incineration ash was removed by water washing for the purpose of recycling fly ash as a raw material of ordinary portland cement. The samples were a different kind of 리y ashes using $Ca(OH)_2$and NaOH as media of wet scrubber for flue gas cleaning. The content of soluble salts of fly ash using $Ca(OH)_2$and NaOH was 32.8%, 50.1% and the content of chlorine component, 22.9% and 26.0% respectively, which was KCl, NaCl, CaC1OH mainly. When each fly ash was washed using water under conditions of a agitation speed of 300 rpm, a liquid to solid ratio of 10, most soluble salts in fly ash were dissolved within 30 minutes and the content of chlorine component in ash was diminished to the content of 4.4%, 2.O% at $20^{\circ}C$ and 1.7%, 0.8% at $50^{\circ}C$ respectively. And the main compound of residual chlorine component in ash after water washing was friedel`s salt ($3CaO.A1_2$$O_3$.$CaCl_2$.$10H2$O). From analysis results of water quality for wastewater by water washing, the components exceeding discharged wastewater standard were only Pb and Cd. But As pH was controlled to 10 with addition of $CO_2$(g) or $Na_2$$_CO3$in water, the concentration of heavy metals such as Pb and Cd was also under discharged wastewater standard.

A Study on Chemical Composition and Formation of Dewfall in Miryang Area (밀양지역 이슬의 생성과 화학적 조성에 관한 연구)

  • In order to understand chemical characteristics and formation of dewfall in Miryang area, we analysed monthly distribution of dewfall, and investigated its chemical composition of dewfall. The modified teflon plate ($1m{\times}1m$) was used qualitatively to collect water soluble components at Miryang weather station from August 2002 to April 2003. Dewfall amount during the sampling periods (37 day) collected 5.28 mm. The behaviors of water soluble ions in dewfall showed the highest concentration ($555.8{\mu}eq/l$ for $Cl^-$, $338.6{\mu}eq/l$ for ${NO_3}^-$, $1118.2{\mu}eq/l$ for ${SO_4}^{2-}$, $262.7{\mu}eq/l$ for ${NH_4}^+$, $1341.0{\mu}eq/l$ for ${Ca_2}^+$, $177.8{\mu}eq/l$ for ${Mg_2}^+$, and $325.5{\mu}eq/l$ for $Na^+$) during the April, the lowest concentration ($243.6{\mu}eq/l$ for ${SO_4}^{2-}$, $39.3{\mu}eq/l$ for ${NH_4}^+$ and $456.2{\mu}eq/l$ for ${Ca_2}^+$) during the September. Monthly equivalent ratio of [${SO_4}^{2-}$]/[${NO_3}^-$] showed the highest value (6.45) during the March, the lowest value (1.86) during the September, and the mean value was 2.70.

Characteristics of Metallic and Ionic Concentration in $PM_{10}$ at Inland and Seashore in Busan (부산지역 내륙과 해안의 $PM_{10}$ 중의 금속농도와 이온농도 특성)

  • $PM_{10}$ mass were measured in Gwaebeopdong (inland) and Dongsamdong (seashore) of Busan in summer and fall, 2007 and the 24-hour averaged samples were analyzed to investigate temporal and spatial variability of metallic elements and water-soluble ions in $PM_{10}$. Overall average concentrations of $PM_{10}$ mass during the study period were 72.7 ${\mu}g/M^3$ and 64.3 ${\mu}g/M^3$ in Gwaebeopdong and Dongsamdong, respectively. As for metal elements, averaged concentrations of crustal components, Ca, Fe, K, Mn, and Ti, in Gwaebeopdong exhibited enhancement relative to Dongsamdong. Non-crustal elements, Pb and Cu, displayed elevated levels in Gwaebeopdong while Ni and Zn were observed to be high in Dongsamdong. Averaged nitrate concentration in Gwaebeopdong (6.36 ${\mu}g/M^3$) was greater than in Dongsamdong(5.68 ${\mu}g/M^3$) and both areas had higher level of nitrate in summer than in fall. Averaged sulfate concentrations in Dongsamdong (25.4%) exhibited elevated level relative to Gwaebeopdong (19.4%). Overall average contribution of water-soluble ions to $PM_{10}$ in Dongsamdong (47.5%) was higher than in Gwaebeopdong (37.8%). The average mass fractions of secondary ions in $PM_{10}$ were elevated in Dongsamdong (37.1%) as compared to Gwaebeopdong (31.4%). Equivalent ratio of [${SO_4}^{2-}/NO_3{^-}$] was seen to be lower in Gwaebeopdong (1.39) than that in Dongsamdong (1.79) and consistently higher in summer than in fall for both areas.

Stability Evaluation on Measuring Water-soluble Chloride Anions from Iron Artifacts (철제유물의 수용성 염소이온 측정방법에 대한 안정성 평가)

  • The most ideal method to measure the water-soluble $Cl^-$ ion eluted from iron artifacts is conducting the analysis on desalting solution by Ion Chromatography. But most institutes related to cultural heritages use Cl meter by reason of lack of budget and experts. This study evaluated reliability and stability between Cl meter and Ion Chromatography by doing cross-validation with results from two methods to detect $Cl^-$ ion of desalting solution. From D.I water, extremely small quantities of $Cl^-$ ion was detected by the influence of remaining water-soluble $Cl^-$ ion at the electrode of Cl meter and water-soluble $Cl^-$ which remains in Sodium sesquicarbonate, components of reagent was detected as well. The first desalting solution had the most $Cl^-$ ions, $Cl^-$ ion slightly decreased from the second to the fourth desalting solution and tend to decrease again at the stage of dealkalified in D.I water. Each Cl meter has the standard deviation according to the measured numbers and the higher concentration of $Cl^-$ ion the desalting solution has, the wider the deviation is. But when the concentration of $Cl^-$ ion is low, it was stable to use Cl meter to detect the concentration of $Cl^-$ ion from iron artifacts because there is the small deviation, It is thought that conductivity meter method is not suitable for measuring $Cl^-$ ion, because the electrical conductivity of alkaline solution is too high to measure $Cl^-$ ion.

Antioxidant Components of Gardenia Fruit (치자의 항산화 활성성분에 관한 연구)

  • An antioxidant activity of Gardenia Fruit (Gardenia jasminoides Ellis) which has been used for food coloring was studied. The antioxidant activity was determined by measuring lipid peroxide produced when a mouse liver homogenate was exposed to the air at $37^{\circ}C$, using 2-thiobarbituric acid (TBA). Both water and methanol extracts of Gardenia Fruit showed the antioxidant activity. On solvent fractionation, the antioxidant activity was removed into the ethyl acetate and butanol soluble fractions. And the final water soluble fraction also showed the antioxidant activity in the low concentration, but it promoted the lipid peroxidation in the high concentration. Two compounds (I and II) having the antioxidant activity were isolated from the butanol fraction, and compound I also occurred in the ethyl acetate fraction. The antioxidant activity of compound II was more potent than that of I. By analyzing data for UV, IR and $^1H-NMR$, compounds I and II were identified as geniposide and crocin, respectively.

  • Precipitation was formed during the preparation of decoction from a mixture of Scutellariae Radix and Coptidis Rhizoma or Phellodendri Cortex according to the prescription of Hwang-ryean-hae-dog-tang. Baicalin and berberine were identified in coprecipitated product and these components were the active ingredients of two herbal medicine. The coprecipitated product was very slightly soluble in water and sparingly soluble in ethanol. The stoichiometric ratio of baicalin and berberine was found to be 1:1. The lipid-water partition coefficients of coprecipitated product were increased more than baicalin and berberine in chloroform, but were decreased in other organic solvents. The content of baicalin and berberine in coprecipitated product, determined by HPLC, were 23.08% and 26.75%, but the content of active ingredients in supernatant were 0.66% and 0.26%, respectively. The dissolution profile of baicalin of coprecipitated product was increased more than extract of Scutellariae Radix in artificial gastric juice, but was decreased in artificial intestinal juice. The dissolution rate of berberine of coprecipitated product was lower than extract of Coptidis Rhizoma in artificial gastric juice and intestinal juice commonly.

Structural Characteristics of the Water Soluble Browning Reeaction Products Isolated from Korean Red Ginseng (홍삼으로부터 분리한 수용성 갈변물질의 구조 특성)

  • The purpose of this study was to ivestigate the structural characteristics of waste soulble browning reaction prodcuts (WS-BRPs) isolated from Korean red ginseng. They all showed the maximum absorbances at near 280 nm. Their IR spectra suggested the presence of hydroxyl, amide carbonyl and aliphatic methine groups. From sugar analysis it was identified that L and S-1 contained two kinds of suggar, glucose and xylose, and S-2, a fructose together with glucose and xylose. Thirteen different amino acids were identified in L. Ten amino acids from S-1 and seven amino acids from S-2 were identified using Auto Amino Acid Analyzer. Glycine, serine and glutamic acid in S-1 and one unknown amino acid and glycine in S-2 were detected as the major amino acids, respectively. From the 1H-and 13C-NMR spectra, it was identified that a number of sugar moieties, carbonyl and carbon double bonds (only in S-2) were contained in the three WS-BRP components. Approximate number of sugar moiety of L, S-1 and S-2 was determined to be 8∼10, 9∼11 and 4∼5, respectively. Contents of nitrogen, carbon and hydrogen showed L>S-1>S-2.

Chemical Characterization of Water-Soluble Organic Acids in Size-Segregated Particles at a Suburban Site in Saitama, Japan

  • Saturated n-dicarboxylic acids ($C_2-C_7$, $C_9$), unsaturated dicarboxylic acids (maleic, fumaric, phthalic acid), ketocarboxylic acids (pyruvic, glyoxylic acid), and dicarbonyls (glyoxal, methylglyoxal) were determined in size-segregated samples with a high-volume Andersen air sampler at a suburban site in Saitama, Japan, May 12-17 and July 24-27, 2007 and January 22-31, 2008. The seasonal average concentrations of these detected organic acids were 670 $ng/m^3$, accounting for about 4.4-5.7% (C/C) of water-soluble organic carbon (WSOC) and 2.3-3.6% (C/C) of organic carbon (OC). The most abundant species of dicarboxylic acids was oxalic acid, followed by malonic, phthalic, or succinic acids. Glyoxylic acid and methyglyoxal were most abundant ketocarboxylic acid and dicarbonyl, respectively. Seasonal differences, size-segregated concentrations, and the correlations of these acids with ambient temperatures, oxidants, elemental carbon (EC), OC, WSOC, and ionic components were also discussed in terms of their corresponding sources and possible secondary formation pathways. The results suggested that photochemical reactions contributed more to the formation of particulate organic acids in Saitama suburban areas than did direct emissions from anthropogenic and natural sources. However, direct emissions of vehicles were also important sources of several organic acids in particles, such as phthalic and adipic acids, especially in winter.

Study on components of Geranium sibiricum L. (Geranium sibiricum L.의 성분에 대하여)

  • The herb of Geranium sibirium L, a drug knwon as "Chui Sonni Poul" distributed widely, has been used as a folk-medicine for the treatment of diarrhea. The dried entire herb is boiled with methanol and methanol is distilled of from the filtered methanol extract under reduced pressure. Then the extract is boiled with water and filtered off. From the filtrate, the following substances are isolated and identified by treating with organic solvents as ether, ethyl acetate, and etc.: 1. Gallic acid: a colorless needle crystal which is soluble in alcohol and water. mp.235.deg. C, positive (dark blue) against the ferric chloride reagent. 0.76 percent of gallic acid is yielded from the herb. 2. Quercetin: a light yellow crystal. mp.194.deg. C. negative against the ferric chloride reagent. 3. Ellagic acid: a light yellow crystal which is insoluble in ehter and acetone and slightly soluble in alcohol. Positive (blue) against the ferric chloride reagent. The crystal obtained by recrystalisation from pyridine, does not melt by 360.deg. C. Represent a yield of 0.03 percent from the herb. 4. Crude tannin: a approximately 7.6 percent of crude tannin is yielded by treating with ethyl acetate. gallic acid and querceetin are yielded by hydrosis with dliute sulfuric acid. Based on the above results, the following suggestion could be recommendable; Geraed in the Japanese Pharmacoeia VI.acoeia VI.
