  • Removal of phosphate from soil by leaching, runoff, and plant uptake is strongly influenced by the content and absorption characteristics of P in soil. In this study the relationships between water soluble phosphate and phosphate retention capacity of the soil was investigated. Water soluble and available phosphate, and phosphate absorption characteristics of 35 paddy soils were measured during incubation at $25^{\circ}C$. Water soluble phosphate content was highly correlated with available phosphate content, phosphorus absorption capacity (PAC), and phosphate absorbed (PS) in air-dried and wet soils. The most significant relationship was found between water soluble phosphate and the ratio of available phosphate and phosphate sorbed, and the relationship $0.01M\;CaCl_2-P=0.0828$ (Av. $P_2O_5/PS$)+0.0374 could be suggested for the estimation of water soluble phosphate from soil phosphorus characteristics.

  • The optimum level of fresh granulated low-calcium (0.2%) skim milk co-precipitate, as fat substitute in low-fat ground pork patties was determined on the basis of physico-chemical, cooking and sensory properties. Low-fat ground pork patties (<10% total fat), formulated with 15 per cent water, 4 per cent added fat, 1.5 per cent salt and 4-10 per cent milk co-precipitate, were evaluated for proximate composition, cooking characteristics and compared with control patties with 15 % added fat. The moisture and protein content of raw and cooked low-fat patties were significantly (p<0.05) higher than control. The incorporation of milk co-precipitate in low-fat patties improved cooking yield, fat and moisture retention and reduced shrinkage. The sensory properties of low-fat patties were comparable with control patties. The overall acceptability of low-fat patties formulated with 7% milk co-precipitate was significantly (p<0.05) higher than patties with 10% level and non-significantly (p<0.05) higher than low-fat patties containing 4% milk co-precipitate and control. Instrumental Texture Profiles of developed low-fat patties and control patties were comparable with slight increases in hardness and gumminess of the low-fat product. The developed low-fat ground pork patties (7% milk co-precipitate) had lower TBA values, better microbiological and sensory refrigerated storage stability than high-fat control patties packaged in air permeable films for 21 days.

  • This study explores the quality characteristics of white pan bread added with perilla leaf powder, and the results are as follows. The WRC(water retention capacity) of PLP (perilla leaf powder) added to the bread dough increased as the addition increased, and the initiation temperature during the rapid visco analysis (RVA) increased with more additions, showing significant differences. The highest and the lowest viscosity of the sample decreased as the powder added increased. The brightness(L value) of the bread without the powder was the highest, and the redness (a value) and the yellowness (b value) showed significant differences among the samples. Hardness increased showing significant differences among the samples as the powder added increased Chewiness was the highest but preference value was the lowest in the sample with 7% of the powder. The lowest score was shown in the color of the sample with the most PLP added. Flavor was the lowest of 4.93 in the comparison sample without the leaf powder added while bitter taste scored the highest of 5.21 in the sample of 3% powder added. It was also the highest in overall acceptance while the sample with the most powder showed the lowest of 4.03. From these results, it can be said that the preference of bread with PLP seems to decrease when more than 5% of PLP is added.

  • This study was designed to determine the usability of lemon fiber (LF-2%, 4%, 6%) and carrot fiber (CF-2%, 4%, 6%) to produce lowfat beef hamburgers. To that end, a certain amount of fat was replaced with each fiber. The proximate composition, pH value, cholesterol content, cooking characteristics, color, texture profile, and sensory properties of low-fat beef hamburgers were investigated. LF increased moisture content and cooking yield due to its better water binding properties, while CF caused higher fat and cholesterol contents owing to its higher fat absorption capacity (p<0.05). LF resulted in a lighter, redder, and more yellow color (p<0.05). Hardness, gumminess, springiness, and chewiness parameters decreased when the usage level of both fibers increased (p<0.05). However, more tender, gummy, springy, and smoother hamburgers were produced by the addition of CF in comparison with LF (p<0.05). Moreover, hamburgers including CF were rated with higher sensory scores (p<0.05). In conclusion, LF demonstrated better technological results in terms of cooking yield, shrinkage, moisture retention, and fat retention. However it is suggested that CF produces better low-fat hamburgers since up to 2% CF presented sensory and textural properties similar to those of regular hamburgers.

  • This study presents the effect of hydraulic retention time (HRT) on the characteristics of emission of three major greenhouse gases (GHGs) including $CH_4$, $CO_2$ and $N_2O$ during operation of a sequencing batch reactor for aerobic oxidation of methane with denitrification (AeOM-D SBR). Dissolved $N_2O$ concentration increased, leveled-off and slightly decreased as the HRT increased from 0.25 to 1d. Concentration of the dissolved $N_2O$ was higher at the shorter HRT, which was highly associated with the lowered C/N ratio. A longer HRT resulted in a higher C/N ratio with a sufficient carbon source produced by methanotrophs via methane oxidation, which provided a favorable condition for reducing $N_2O$ formation. With a less formation of the dissolved $N_2O$, $N_2O$ emission rate was lower at a longer HRT condition due to the lower C/N ratio. Opposite to the $N_2O$ emission, emission rates of $CH_4$ and $CO_2$ were higher at a longer HRT. Longer HRT resulted in the greater total GHGs emission as $CO_2$ equivalent which was doubled when the HRT increased from 0.5d to 1.0 d. Contribution of $CH_4$ onto the total GHGs emission was most dominant accounting for 98 - 99% compared to that of $N_2O$ (< 2%).

  • Most of volcanic ash soils in South Korea are distributed in Jeju province which is an island placed on southern part of Korea and has steep slope mountain area. There are many soils containing high contents of organic matter (OM) derived from volcanic ash in Jejudo, also. Therefore, irrigation and drainage in volcanic ash soil different with general soil which has low OM content have to be applied with another management way, but studies searching appropriate methods for them are set on insufficient situation because the area of volcanic ash soil in South Korea is only 1.3% (130,000ha). This study was conducted for analysis of soil water content and irrigation quantity appropriate for crops cultivated in volcanic ash soil with high OM content. Although soils with different soil color have the same soil texture, soil water characteristics curve by soil color showed the difference of water retention capability by OM content. But, this characteristics classified with soil color could be unified by scaling technique with similitude analysis method which get dimensionless water content using a present water content, a residual water content and saturated water content (or water content at 10kPa). A relation of gravimetric soil water content (GSWC) and dimensionless water content by the results showed a form of power function. The dimensionless water content (DWC) express a relative saturation degree of present water content. This was also expressed by van Genuchten model which describe the relation between relative saturation degrees and matric potentials. These results on soil water characteristics curve (SWCC) of volcanic ash soil will be the basic of irrigation plan in area having high organic contents into soil.

  • Effective management of water resources in Korea becomes very important in recent years. Especially, the management of reservoirs cannot be over emphasized. The status of sediment deposit and the dredging records of agricultural reservoirs were examined to find out at e reservoir retention capacity could be raised more than 10% of the total volume of reservoirs in Kyungbook Province. Sediment prediction methods were developed by combining the estimation mothods of geomorphological characteristics and upslope contribution area in GIS, The estimated sediment depsit amount were compared with the dredging records for three agricultural reservoires. It was found that the distributed model with ‘Flow accumulation’ and ‘Multiple Flow Direction Algorithm’ gives good prediction results for mountaineous area.

  • This study involves field monitoring of hydrlolgic characteristics of paddy fields under common irrigation practice, statistical analysis of maximum retention storage, determination of CNs for antecedent moisture conditions. Curve numbers were estimated from observed rainfall-runoff relationship of two years data. The estimated CN for AMC-II was 78, and the CNs for AMC-I and II were 63 and 88, respectively. A water balance model was used to find the effect of ridge height changes and initial ponding depth in paddy fields on runoff. The probability distribution of initial ponding depth was also investigated. The initial ponding depth follows normal probability distribution. Initial ponding depth corresponding 10%, 50%, and 90% probability were considered to be equivalent to AMC-I, AMC-II, and AMC-III, respectively. Long-term runoff data from paddy fields were simulated by a water balance model using recorded climate data, ridge height and estimated initial ponding depth derived from probability distribution. The estimated CNs using simulated runoff were 70, 79, and 89 for CN-I, CN-II, and CN-III, respectively.

  • Following the industrialization and urbanization in Korea, algal bloom causes aesthetic displeasure and many other problems such as taste and odor, coloration, scum, increase in pH, filter-bed blockage. There were some cases involving human death by microcystins during summertime in foreign countries. In Korea, Harmful cyanobacteria such as Microcystis and Anabaena develop in summer in the Daecheong reservoir, one of the main water resources, with the retention time of above 200 days. To better control algal bloom, the Ministry of Environment has been running algal bloom alert system from 1998 for the Daecheong reservoir, which needs to be improved to reflect the characteristics of river-type lakes. For this reason, we try to find new measures to improve an algal bloom alert system for each water zone considering the characteristics of harmful cyanobacteria in this study.

  • An attempt was made to enhance anaerobic treatment efficiency by adopting the anaerobic sequencing batch reactor(ASBR) process at a thermophilic temperature. Operational characteristics of the ASBR process were studied using laboratory scale reactors and concentrated organic wastewater composed of soluble starch and essential nutrients. Effects of fill to react ratio (F/R) were examined in the Phase I experiment, where the equivalent hydraulic retention time(HRT) was maintained at 5 days with the influent COD of 10g/L. A continuous stirred tank reactor(CSTR) was operated in parallel as a reference. Treatment efficiency was higher for the ASBRs because of continuous accumulation of volatile suspended solids(VSS) compared to the CSTR. However, the rate of gas production and organic removal per unit VSS in the ASBRs was much lower than the CSTR. This was caused by reduced methane fermentation due to accumulation of volatile acids(VA), especially for the case of low F/R, during the fill period. When the F/R was high, maximum VA was low and the VA decreased in short period. Consequently, more stable operation was possible with higher F/R. Effects of hydraulic loading rate on the efficiency was studied in the Phase II experiment, where the organic loading rate was elevated to 3333mg/L-d with the F/R of 0.12. Reduction of organic removal along with rapid increase of VA was observed and the stability of reaction was seriously impaired, when the influent COD was doubled. However, operation of the ASBR was quite stable, when the hydraulic loading rate was doubled and a cycle time was adjusted to 12 hour. It is essential to avoid rapid accumulation of VA during the fill period in order to maintain operational stability of the ASBR.
