This was preliminary study that was to find out the developing point in military meal service to focus on seafood dishes that recently increased plate waste. This study was conducted to analyze menu patterns in military meal service. The result of this study was using to develop new seafood dishes in military meal service. On the basis of some findings, several developing points how to plan meals include many kinds of seafood dishes and to modify taste and cooking method that was more highly prefered by young military persons were suggested. This preliminary study findings were as follows: 1. Each meal was served cooked rice and 4 kinds of dishes(soup or stew, main dish, side dish and kimchi) 2. The seafood dishes was served as 28.6% in soup or stew, 35.0% in main dish and 36.4% in side dish of total serving of seafood dishes. 3. All of raw materials of seafood were supplied by frozen, several items were supplied dried material. Supplying seafood items were limited. Numbers of using seafood items were using 2.7 times per day. Laver and squid was most frequently used. 4. Seafood dishes were frequently serving in breakfast, especially seasoned & toasted laver was served 28.8% of seafood menu in breakfast because of convenience. 5. The nutrients contents of each dishes were as follows, the soup was $86.5{\pm}3.2kcal$ and $10.9{\pm}8.9g$ of animal protein, stew was $165.3{\pm}70.2kcal$ and $13.3{\pm}7.9g$ of animal protein. Nutrients content of other main dish and side dishes was different from 108.1kcal (in steaming dish) to 412.4kcal (in deep-fat frying dish) according to different cooking method. The highest animal protein dish that contented $18.9{\pm}5.1g$ of protein was pan-frying dish or grilling dish. Lowest one was $8.4{\pm}4.9g$ in braising dish. 6. Major cooking method of seafood was stew and the next was deep fat frying, stirfrying and braising. Pan-frying or grilling was seldomly used in military menu because of limitation of kitchen facilities and cooking utensils. On the basis of these findings, newely developing military seafood menus were focused on combination dish(such as seafood cooked rice or seafood fried rice) and many kinds of sauce that was applied to deep-fat frying dishes.
A study was conducted to evaluate seasonal variations in chemical composition of food waste (FW) and its feeding effects on growth performance and pork quality in finishing pigs. FW was collected for 1 year (6 times a month) to establish a database for use of FW as a feed ingredient. For a feeding trial (8 weeks), a total of 117 pigs ${\times}$D; 54.80$\pm$4.60kg) were used to evaluate the processing effects of FW. Treatments were: Control (a corn-soybean meal diet without FW), simple dried FW (SD) and vacuum fermented FW (VF). The gross energy, crude protein, crude fat, ash, calcium and phosphorus in FW (DM, average of 4 seasons) were 5,111kcal/kg, 22.92%, 14.31%, 15.48%, 2.7% and 1.05%, respectively. Among seasons, the energy and crude protein contents were the highest (p<0.05) in winter and summer, respectively. In lactic acid bacterial counts, there was no difference between SD and VF. Pigs fed the control diet grew faster (p<0.05) than those fed diets containing food wastes, but not feed conversion ratio. There were no differences in production traits between SD and VF. No differences were also found in dressing percentage, backfat thickness, and pork quality (color, drip loss and TBARS) among treatments. The feed cost (₩/kg body weight) was lower in pigs fed FW than those fed a control diet. In conclusion, a pelleted diet containing food waste less than 20% would reduce feed cost in finishing pigs. However, it seems that a vacuum fermentation of food waste is not necessary for diet processing.

Each kinds of the leather process wastes which is occurred in the leather making process is almost more than 50% on the basis of the raw hide. The emitted process wastes are important oil and fats and protein resources because they are composed of animal oil and fats and fibrous protein. But most of them are incinerate or filled up simply as the industrial wastes without applying to recycling into the other use. Thus the problems of environmental pollution are becoming more critical and the processing cost of the leather process wastes (40,000~60,000 won) is a heavy burden on the production cost. Because the organic wastes such as fleshing scrap, pelt scrap are high fetid, its unlawful abandonment without being processed properly causes the occurrence of secondary pollution by an offensive odor and leakage of waste water. Thus we made the re-resource experiments in order to resolve this problems. The principal contents of this study are to process the collected leather waste scrape through separate the oil and fat ingredients with various propert by processing various chemicals and enzymes on the next effector. The re-resource application of separated oil and fat ingredients produced chemical for leather applicable to manufacturing process of leather through chemical transformation process(sulphation reaction, sulphitation reaction etc.) of oil and fats.

Non-edible oil sources (i.e., Palm Acid Oil, waste animal fat) usually contain relatively high amount of free fatty acids (FFA) that make them inadequate for direct base catalyzed transesterification reaction. Enzymatic biodiesel synthesis can solve several problems posed by the alkaline-catalyzed transesterification, and has certain advantages over the chemical catalysis of transesterification, as it is less energy intensive, allows easy recovery of glycerol and the transesterification of glycerides with high free fatty acid contents. In this study, we synthesized biodiesel through enzymatic catalyzed process using high free fatty acid containing waste oil in biodiesel reactor (1 ton/day) and optimized the biodiesel production processes.
This study is about a technique for obtaining collagen by extracting fat by treating collagen-containing liposuction effluent in the presence of supercritical fluid. Using a supercritical solvent, a collagen extract could be obtained from animal-derived fat in a short time (about 6 hours), and about 2-3% of collagen by mass compared to the raw material could be obtained. The presence of collagen in the extract obtained by supercritical extraction was confirmed by SDS-PAGE, and it was confirmed that it was type 1 collagen having a relatively large molecular weight. In addition, the growth factors of IGF-1, bFGF, VEGF and NGF were analyzed to find out which growth factors were present in the collagen obtained by supercritical extraction, and it was found that these growth factors were contained in the extract. There was no significant difference in DNA content per mg of sample before and after supercritical treatment. Further in-depth studies are likely to be needed on decellularization technology using the supercritical process. In conclusion, the extracellular matrix obtained through the solvent extraction process using a supercritical fluid contains growth factors above a certain amount even after decellularization and removal of fat, so that it was found that not only biocompatibility is greatly increased, but also tissue regeneration can be rapidly induced.

Bio-heavy oil for power generation is a product made by mixing animal fat, vegetable oil and fatty acid methyl ester or its residues and is being used as steam heavy fuel(B-C) for power generation in Korea. However, if the fuel supply system of the fuel pump, the flow pump, the injector, etc., which is transferred to the boiler of the generator due to the composition of the raw material of the bio-heavy oi, causes abrasive wear, it can cause serious damage. Therefore, this study evaluates the fuel characteristics and lubricity properties of various raw materials of bio-heavy oil for power generation, and suggests fuel composition of biofuel for power generation to reduce frictional wear of generator. The average value of lubricity (HFRR abrasion) for bio-heavy oil feedstocks for power generation is $137{\mu}m$, and it varies from $60{\mu}m$ to $214{\mu}m$ depending on the raw materials. The order of lubricity is Oleo pitch> BD pitch> CNSL> Animal fat> RBDPO> PAO> Dark oil> Food waste oil. The average lubricity for the five bio-heavy oil samples is $151{\mu}m$ and the distribution is $101{\mu}m$ to $185{\mu}m$. The order of lubricity is Fuel 1> Fuel 3> Fuel 4> Fuel 2> Fuel 5. Bio-heavy oil samples (average $151{\mu}m$) show lower lubricity than heavy oil C ($128{\mu}m$). It is believed that bio-heavy oil for power generation is composed of fatty acid material, which is lower in paraffin and aromatics content than heavy oil(B-C) and has a low viscosity and high acid value, resulting in inhibition of the formation of lubricating film by acidic component. Therefore, in order to reduce friction and abrasion, it is expected to increase the lubrication of fuel when it contains more than 60% Oleo pitch and BD pitch as raw materials of bio-heavy oil for power generation.
Huge amount of persimmon peels, which are byproducts usually arising after making dried persimmons from fresh persimmons, are generated in fall, every year. As the dry matter of persimmon peel contains carbohydrates over 80%, it could be a good candidate for feed. In this study, we evaluated the persimmon peel as a feed resource for a hen laying eggs. Persimmon peel has lower ratio of crude protein and fat composition while higher ratio of crude fiber composition compared to a basal laying hen feed. Feeding the persimmon peel by adding to the feed at the level of 2% or 5% did not affect the egg-laying rate from beginning to the peak of laying. In addition, feeding the persimmon peel did not affect the egg quality either, as the pH, Haugh unit, yolk color and shell thickness of the egg were not different from each other. The composition of amino acids and fatty acids were also almost same for each other, except for the linolenic acid which was slightly higher in the persimmon peel feeding groups. In conclusion, addition of persimmon peel to the feed up to 5% might be helpful to increase the income and reduce the waste produced from the agricultural byproduct.
Objective: This study investigated the effects of feeding anthocyanin-rich black cane treated with ferrous sulfate and molasses on animal performance, rumen fermentation, microbial composition, blood biochemical indices, and carcass characteristics in meat goats. Methods: Thirty-two Thai-native×Anglo-Nubian crossbred male goats (14.47±2.3 kg) were divided equally into two groups (n = 16) to investigate the effect of feeding diet containing 50% untreated anthocyanin-rich black cane silage (BS) vs diet containing anthocyaninrich black cane silage treated with 0.03% ferrous sulfate and 4% molasses (TBS) on average daily gain (ADG) and dry matter intake (DMI). At the end of 90 d feeding trial, the goats were slaughtered to determine blood biochemical indices, rumen fermentation, microbial composition, and carcass characteristics differences between the two dietary groups. Results: Goats fed the TBS diet had greater ADG and ADG to DMI ratio (p<0.05). TBS diet did not affect rumen fluid pH; however, goats in the TBS group had lower rumen ammonia N levels (p<0.05) and higher total volatile fatty acid concentrations (p<0.05). Goats in the TBS group had a higher (p<0.05) concentration of Ruminococcus albus but a lower (p<0.05) concentration of methanogenic bacteria. The TBS diet also resulted in lower (p<0.05) thiobarbituric acid-reactive substances concentration but higher (p<0.05) total antioxidant capacity, superoxide dismutase, catalase, glutathione peroxidase, and glutathione reductase concentrations in blood plasma, while having no effect on plasma protein, glucose, lipid, immunoglobin G, alanine transaminase, and aspartate aminotransferase. Meat from goats fed the TBS diet contained more intramuscular fat (p<0.05) and was more tender (p<0.05). Conclusion: In comparison to goats fed a diet containing 50% untreated anthocyanin-rich black cane silage, feeding a diet containing 50% anthocyanin-rich black cane silage treated with 0.03% ferrous sulfate and 4% molasses improved rumen fermentation and reduced oxidative stress, resulting in higher growth and more tender meat.
Biodiesel is an alternative and renewable energy source, which is hoped to reduce global dependence on petroleum and environmental problem. Biodiesel produced from a variety of oil sources such as vegetable oil, animal fat and waste oils, and has properties similar to those associated with petro-diesel, including cetane number, volumetric heating value, flash point, viscosity and so on. In this study, we investigate the effect of quality of raw materials on alkali-catalyzed transesterification for producing of biodiesel. The increase of content of free fatty acid and water in oil were caused the sharp decrease of conversion yield. Also, the low purity of methanol in reactant was inhibited the reaction rate. In the case of addition of sodium sulfate as absorbent to prepare catalyst solution, the content of fatty acid methyl ester in product was increased more about 1.6% than that of control. However, the addition of zeolite, sodium chloride and sodium sulfate as absorbent in reactant to remove water generated from reaction did not show any enhancement in the reaction yield. This result may provide useful information with regard to the choice and preparation of raw materials for more economic and efficient biodiesel production.
Biodiesel (fatty acid alkyl esters), which is produced from sustainable resources such as vegetable oil, animal fat and waste oils, have used to as substitutes for petro-diesel. In this study, we investigate the performance of 30 L and 300 L pilot-scale biodiesel production system using alkali-catalyst transesterification from soybean oil and rapeseed oil produced at Jeju island in Korea. The 30 L-scale biodiesel production was performed to in the condition of reaction temperature $65^{\circ}C$, catalyst amount 1% (w/w) and oil to methanol molar ratio 1 : 8. At that reaction condition, the fatty acid methyl ester contents of product are above 98% within reaction time 30 min. Also, the conversion yield of over 98% was obtained in 300 L-scale biodiesel production system using rapeseed oil and soybean oil. The quality of biodiesel produced from reaction system was satisfied to recommended quality standard of Korea. Our results may provide useful information with regard to the scale-up of more economic and efficient biodiesel production process.
