Quality Characteristics of Sorbitol Added Walnut-sulgi

  • As one of study efforts to develop a food product that can satisfy the taste of modern people and increase the usage of the popular local product of walnut in the region of Chunan, the current study developed a no sugar added functional walnut-sulgi. The walnut-sulgi was manufactured by adding walnut powder into typical sulgi rice cake. While manufacturing the walnut-sulgi rice cake, the health beneficial sugar alcohol ingredient of sorbitol was added instead of commonly used sugar to specialize the walnut-sulgi as a functional rice cake. As the result of such effort, a soft and moist walnut-sulgi was produced. The color of the newly developed walnut-sulgi is white and has a pleasing taste, and its consumer acceptability was higher than the sugar added walnut-sulgi by showing much soft sweetness and textural properties. Considering the facts that sorbitol has a lower glycemic index (GI) than sugar and the content of unsaturated fatty acids that are insufficient in rice cake could be increased, the newly developed sorbitol added walnut-sulgi is thought to be an appropriate functional rice cake that can attractively appeal to obesity and diabetes concerning modern people.

호두 기름의 성분조성과 항알레르기 효과 (Physico-chemical Composition and Anti-Allegic Effects of Walnut Oil)

  • This study was conducted to investigate physicochemical properties and anti-allergic properties of walnut oil. pH, acid value and iodine value of walnut oil were respectively 4.9, 0.8 and 117. Most of general composition of walnut oil was crude fat(99.9%) Vitamin A and E were 0.06 and 10.25mg/100g and the major fatty acids of walnut oil was linoleic acid(62.8%). Total phenolics and antiallergic effects of walnut oil were estimated 27mg% and 62.82% at the concentration of 0.5% ethanol walnut oil. These results suggest that the walnut oil can provide one of the valuable resource for the functional foods.

  • Juglans regia L. 나무밑에는 다른 식물이 잘 자라지 못하고 있다. 그래서 그 임상토양, 수용추출액, 빗물 등을 써서 작물을 심어 본 결과 발아와 생장이 심하게 억제되었다. 그 억제물질을 찾기 위해서 Juglans regia L. 나무의 수용추출액과 빗물을 종이크로마토그래피법으로 분석하여 ferulic acid, p-coumaric acid, caffeic acid, vanillic acid, p-hydroxybenzoic acid, chlorogenic acid, gallic acid를 분리확인했으며, 이 물질들이 억제작용에 관계한 것으로 추정한다.

호두 첨가에 따른 청국장의 이화학적 특성 및 항산화능 변화 (Changes in the Physicochemical Characteristics and the Antioxidative Activity of Cheonggukjang by Addition of Walnut)

  • This study was conducted to investigate the changes in the physicochemical characteristics and antioxidant activity of cheonggukjang with the addition of walnuts. The pH of cheonggukjang did not change significantly with the addition of walnut. But the water content decreased significantly. Walnut addition to the soybean was expected to have a positive effect because the number of Bacillus subtilis was not reduced. The viscous substance content was significantly decreased when more than 20% of walnut was added to cheonggukjang. The addition of walnut made the color darker. The flavonoid and polyphenol content was sharply increased in proportion to the walnut addition and the DPPH radical scavenging activity of cheonggukjang also increased. Altogether, it was found that the addition of walnut had a positive influence on the cheonggukjang by increasing the antioxidant activity.

호두 첨가에 따른 양조간장의 맛 성분 및 관능적 특성 변화 (Changes in Taste Compounds and Organoleptic Preferences of Soy Sauce with Addition of Walnut)

  • This study was conducted to investigate changes in organoleptic properties and taste components including free sugar, organic acid and free amino acid with addition of walnut. Changes in total nitrogen were insignificantly different with addition of walnut. Amino type nitrogen content was decreased in proportion to supplemental level of walnut. Content of organic acids, of which three kinds were detected, such as citric acid, malic acid and lactic acid increased more than two times with addition of walnut. Contents of free sugar and amino acid were decreased with addition of walnut. The proportion of essential amino acid was 40.6~41.4 percent. Glutamic acid in total amino acid was increased in proportion with addition of walnut. The highest sensory evaluation score was recorded in soy sauce with addition of 2 percent walnut. Together, it was expected that 2 percent addition of walnut to soy sauce has a positive effect on the taste of soy sauce.

호도 내과피 추출액을 이용한 견직물의 염색성 (A Study on the Properties of Silk Fabrics Dyed with Walnut Shell Extract)

  • A natural dye aqueous walnut shell extract was obtained by extraction of walnut shell using water at various conditions in this study. Silk fabrics were dyed at various dyeing and mordanting conditions using walnut shell extract and various mordants (Al, Cu, Fe ions). Studies have been made on the effects of dyeing and mordanting conditions on the dyeing properties and fastness (light, water and dry cleaning fastness) of dyed silk Fabric. The results obtained in this study were as follows;. The dye content in the walnut shell extract increased with increasing extraction temperature to 90℃ and extraction time to 120min, and thereafter the dye content decreased a little. The dry cleaning and water fastness of non-mordanted silk fabrics were better than those of mordanted silk fabrics.

호도외피를 이용한 천연염색(II) - 면섬유의 염색성 - (Natural Dyeing with Walnut Hull(II) - Dyeing Properties of Cotton -)

  • Walnut colorants were extracted from walnut hull and their dyeing properties on cotton were investigated. Effect of dyeing conditions on dye uptake and effect of mordanting on dye uptake, color change and colorfastness were explored. Walnut colorants showed low affinity to cotton compared with wool and its isotherm adsorption curve was Freundlich type. It was considered that hydrogen bonding and van der Waal's force were involved in the adsorption of walnut colorants onto cotton. The dyed cotton showed YR color and there was no significant color change as pH changed. The dyed cotton showed generally high colorfastness except fastness to washing and light. Mordanting did not improve dye uptake and colorfastness, and not affect color of the dyed cotton significantly.

Effect of Basal Medium and Plant Growth Regulator on in vitro Plant Regeneration from Axillary Buds of Walnut New Cultiver "Sinlyeong"

  • The walnut (Juglans regia L.), a member of the Juglandaceae, is native to the mountain ranges of central Asia. This species of walnut is valued commercially for its nuts and in some areas for its timber. The seeds of walnut are recalcitrant and it has strong integument dormancy and their germination is irregular, making its natural propagation difficult. Low percentage of seed germination and long propagation cycle are the main problems of propagation. This study was conducted medium composition on in vitro plantlet regeneration from axillary buds of walnut. It has proved to be the most generally applicable and reliable method of in vitro propagation. Micropropagation culture that axillary buds are excised aseptically enables faster multiplication of plants. The axillary buds of walnut new cultivar "Sinlyeong" were cultured on two basal media which contained the different plant growth regulators depending on the respective shooting and rooting stage. After 12 weeks, the shoot generation rate was 85.3%, the shoot number and its length were 1.9/explant and 2.7 cm in the most favorable medium composition. The percentage of rooting was 25.4%. From these results, it was found the optimum basal medium and plant growth regulator for in vitro plant regeneration from axillary buds of walnut new cultivar "Sinlyeong". However, we have continued to search the other medium additives to enhance the rate of walnut root.

추출조건에 따른 호두외피추출물의 특성 (Properties of Black Walnut hull Extracts with Extractive Conditions)

  • Walnut hull is a by-product from the Walnut tree, used as natural dyestuff from ancient times. This study was done to examine the effects of extractive conditions on the properties of walnut hull extracts for making efficient use of the walnut hull as a natural colorant. Aqueous extracts of walnut hull were prepared at various extractive concentration, temperature and time. Then they were characterized using UV-Vis. Spectrophotometer, FT-IR Spectrometer, Prep Liquid Chromatography, and Energy dispersive X-ray spectrometer. The aqueous extracts have two absorbency peaks of UV-Vis. Spectrum, shoulder type peak in the range of 270-280 nm and broad type band around 420 nm. Intensity of absorbency is increased with increase of extraction concentration and time. However, Boiling temperature extraction method showed the most efficiency of all. Intensity of absorbency is also affected by extraction pH. The Prep LC examined two kinds of isolated colorant with different molecular weight. FT-IR spectra of hull extracts showed an absorption band around $3400cm^{-1}$, the peaks at $1700-1600cm^{-1}$, which are characteristic of aromatic compounds with unsaturated ketone and benzene ring. It showed that the extraction contained some mineral ions, such as K, Ca, Si, Mg.

Carpathian 호도(胡桃)나무의 종간품종간접목(種間品種間接木)에 관(關)한 연구(硏究) (Studies on the Heteroplastic Grafting of Carpathian Walnut)

  • 호도(胡挑)나무는 Nut와 Timber겸용생산 유실수(有實樹)이나 일정(一定)한 생육조건(生育條件)을 요구(要求)하므로 비교적(比較的) 분포(分布) Range가 넓은 Juglans mandshurica와 Juglans nigra를 태목(台木)으로 하고 $N40^{\circ}$ 최저(最低)$-35{\sim}-40^{\circ}C$에 재배(栽培)가 안정(安定)한 Carpathian Walnut 내한성품종(耐寒性品種) 5개(個)와 $12-15^{\circ}C$의 온난(溫暖)한데 재배(栽培)가 잘되는 Persian Walnut을 접수(接穗)로 하여 종간(種間) 및 품종간접목(品種間接木)을, 시행(施行)하여 대형온실내(大型溫室內)에 완전목동화(完全木動化)된 환경조절온실내(環境調節溫室內)에서 온도(溫度)는 $28^{\circ}C$, 습도(濕度)는 85~100%로 하여 Modified cleft grafting방법(方法)을 채택(採擇)하고 1981~1983년(年) 사이에 3개년간(個年間)에 걸쳐 온실접목(溫室接木)을 실시(實施)하였는 바 동종간접목(同種間接木)보다 이종간접목활착율(異種間接木活着率)이 비교적(比較的) 높았으며 99.33%~100%의 활착율(活着率)을 보였고 상기(上記)한 4개수종(個樹種)과 Juglans sinensis를 통(通)한 5개수종간(個樹種間)의 Heteroplatic 및 Homoplast grafting에서 태목(台木)은 5%의 유의성(有意性)을 보였으나 접수(接穗)에서는 유의성(有意性)이 없었다. 즉(卽) J. mandshurica와 J. nigra와 같이 태목(台木)의 활력(活力)이 강하면 이종간접목(異種間接木)이 잘되고 또한 접목유합속도(接木癒合速度)가 빠르고 접목묘(接木苗)의 생육(生育)이 왕성(旺盛)하고 접목(接木)의 친화력(親和力)이 높아서 Carpathian과 Persian Walnut과의 종간접목(種間接木)으로 이들 태목(台木)과 접수품종(接穗品種)의 특성(特性)을 합성(合成)한 것과 같은 내한성(耐寒性) 내난성(耐暖性)을 보강(補强)시켜 우리나라 중부지방(中部地方)에 국한재배(局限栽培)되고 있는 호도(胡挑)나무산업(産業)을 우리나라 북부(北部)와 남부지방(南部地方)까지 확대재배화(擴大栽培化)의 기틀이 마련되는 종간접목(種間接木)에 의(依)한 "양친형질합성(兩親形質合成)" 효과(效果)로 품종개량(品種改良)에도 유효적(有效的)이라고 본다.
