Dynamic Headspace Analysis of Volatile Constituents of Swiss Cheese Whey Protein Concentrate

  • Volatile flavor compounds in the headspace of swiss cheese whey protein concentrate (WPC) were analyzed by dynamic headspace analyzer, gas chromatography, and mass spectrometer. Sixty one compounds were detected from the headspace of dry WPC and 23 compounds from the headspace of an aqueous solution of WPC. The major components were propanol, hexanal, 2-butanone, 2-pentanone, 2,3-butanedion, 2-propanol, acetic acid, dimethyl disulfide and benzothiazole. An external dynamic headspace sampler, devised for this study, effectively collected volatiles from the headspace of dry WPC and aqueous WPC solutions.

  • Acetic acid producing bacteria were isolated from deastringent persimmon vinegar and the major bacterium was identified using morphological and biochemical tests. Acetobacter sp. AH-1 was motile, gram negative rod with catalase positive and oxidase negative. The strain can grow up to 5 % ethanol and 2% NaCl as well as 25% glucose. Optimum temperature and pH for growth were 3$0^{\circ}C$ and 5.0, respectively. Volatile constituents of persimmon vinegar were analyzed by purge and trap sampling . Acetic acid adn alcohol were the largest volatile compounds quantitiatively in persimmon vinegar. Among alcohols, 20methyl-1-propanol, isoamyl alcohol and amyl alcohol were detected. Isovaleradehyde and benzaldehyde for aldehyde, isoamyl acteate, ethyl formate, propyl aceetate, and ethyl acetate for esters were likely to contribute to persimmon vivegar flavor.

  • To investigate the constituents of following plants, Valeriana fauriei species, which are V. fauriei var. fauriei $H_{ARA}$, V. fauriei form. coreana $H_{ARA}$ and V. fauriei var. dasycarpa $H_{ARA}$, we carried out gas-liquid chromatographical analysis of the volatile oils of these plants and found that camphene, l-bornylacetate, ${\alpha}-pinene,\;{\beta}-pinene$, d,l-limonene, l-borneol and ${\alpha}-kessylacetate$ were common components in their volatile oils. However, their terpenoidal composition was considerably different from ${\alpha}-kessylacetate$ in V. faurie var. fauriei, from kessanol, ledol, kessoglycol and nardol in V. fauriei var. dasycarpa, and from kessoglycoldiacetate, ${\alpha}-kessylalcohol$, faurinone and terpineol in V. faurie form. coreana. It was found by gas-liquid chromatography that the terpenoidal patterns of these Korean valerians were similar to those of Japanish valerians.

  • The contents of volatile oil and camphor in the oil of Artemisia messer-schmidtiana $B_{ESSER}$ var. viridis $B_{ESSER}$ f. typica $N_{AKAI}$ and Artemisia asiatica $N_{AKAI}$ which were known to be effective as antibacterial, antifungal and antineoplastic agents by screening experimentation, were determined quantatively by gas chromatography. The volatile oil contents of Artemisia messer-schmidtiana $B_{ESSER}$ var. viridis $B_{ESSER}$ f. typica $N_{AKAI}$ and Artemisia asiatica $N_{AKAI}$ are 0.17% and 0.19%, and the camphor contents are 8.51% and 1.46%, respectively.

  • Normally cultured aromatic tobaccos, KA 101 and KA 103, were primed progressively in three-leaf segments, either 7 days before bud, bud, or early flower stage with 7 days interval, respectively, The cured leaves were weighed for yield, graded, analyzed for quality-related constituents including volatile aroma components. Also the cured leaves were manufactured and smoked by panelists. Yield and quality by price decreased with advancing ripeness. Reducing sugar, total nitrogen, protein nitrogen decreased with successive ripeness, but reverse in this trends with nicotine, petroleum ether extracts and volatile acids components. Among volatile neutral components, furfural, furfuryl alcohol, benzyl alcohol, penethyl alcohol and p-cresol decreased, but solanone increased with delayed harvest. Neophytadiene, oxysolanone, furfuryl aceton was highest at mid harvest, which was judged to be best by panelists. Mid harvest, first primed at bud stage when leaf color comes to pale green to yellow green, seems to be highly recommendable.

Volatile Aroma Composition of Chrysanthemum indicum L. Flower Oil

  • The aroma constituents of Chrysanthemum indicum L. were separated by the hydro distillation extraction method using a Clevenger-type apparatus, and were analyzed by gas chromatography-mass spectrometry (GC/MS). The yield of Chrysanthemum indicum L. flower oil was 2.0% (w/w) and the color was light golden yellow. Sixty-three volatile flavor components, which make up 89.28% of the total aroma composition of the flower oil, were tentatively characterized. This essential oil contained 35 hydrocarbons (48.75%), 12 alcohols (19.92%), 6 ketones (15.31%), 3 esters (4.61%), 5 aldehydes (0.43%), 1 oxide (0.22%), and 1 miscellaneous component (0.04%). ${\alpha}$-Pinene (14.63%), 1,8-cineol (10.71%) and chrysanthenone (10.01%) were the predominant volatile components in Chrysanthemum indicum L., an aromatic medicinal herbaceous plant.

생강 저장 중의 향기성분 변화 (Changes in Volatile Constituents of Zingiber officinale Roscoe Rhizomes During Storage)

  • 우리나라 생강의 대표적인 산지인 전북 봉동 지역에서 음저장(평균온도 $15^{\circ}C$, RH 95%) 한 생생강의 저장 기간 및 저장 중 발생한 생강의 싹과 근경 중의 항기성분 SDE장치를 이용하여 향기 성분을 분리하고 GC 및 GC-MS를 이용하여 분석 검토하였다. 생생강 및 저장 생강에 함유되어 있는 essential oil의 조성은 zingiberene, $citronellol+{\beta}-sesquiphellandrene$, ${\beta}-phellandrene$, camphene, geranial, ${\gamma}-bisabolene$, ar-curcumene+geranvl acetate, ${\alpha}-pinene$, ${\beta}-gurjunene$, limonene, neral 등이 주요 향기 성분 이었고, 생강 근경은 저장 기간이 경과할수록 sesquiterpene hydrocarbons 및 oxygenated sesquiterpene과 같은 고분자 물질의 조성비는 감소하는 반면 monoterpene hydrocarbons 저분자 성분들의 조성비는 증가하는 경향을 보였다. Zingiberene, $citronellol+{\beta}-sesquiphellandrene$과 같은 sesquiterpene류는 저장 기간이 경과함에 따라 감소 추세를 보였던 반면 camphene, ${\beta}-phellandrene$, citral(neral과 geranial) 등과 같은 monoterpene류는 증가하는 경향을 보였다. 또한 저장후 약 6개월 후 발생한 생강 싹의 향기 성분 조성은 근경과 상당한 차이를 보였는데 생강 싹의 향기 성분들은 생강 근경에 비하여 terpene hydrocarbon류보다 oxygenated terpene류가 많았다. 성분 조성에서는 생강 향기의 발현에 가장 큰 역할을 하는 citral성분(neral과 geranial)를 근경에 비해 적었으나 bornyl acetate, ${\beta}-gurjunene$, ar-curcumene+geranvl acetate 등의 함량비가 높아 생강의 부위에 따른 항기 성분 조성 pattern 또한 상당한 차이를 보였다.

국내산 복숭아의 품종별 휘발성 향기성분 (Volatile Flavor Components in Various Varieties of Peach(Prunus persica L.) Cultivated in Korea)

  • 국내에서 생식용 및 가공용으로 널리 재배되고 있는 5종류 품종, 백도ㆍ천도ㆍ유명ㆍ대구보 및 황도의 복숭아의 휘발성 향기성분을 SDE 방법으로 추출하고, 이를 GC와 GC/MS를 사용하여 분리 확인하였다. 복숭아의 품종별 즉 백도, 천도, 유명, 대구보 및 황도에서 83, 85, 70, 74, 66종의 휘발성 향기성분이 각각 동정되었다. 확인된 성분들은 29 알코올, 27 케톤, 18 알데히드, 9 에스터, 5 에테르, 3 유기산. 6 테르펜과 그 유도체 및 26 기타성분으로 구성되었다. 각각의 품종에서 (E)-2-hexenal이 가장 많은 함량을 차지하였으며, 품종별 약간의 차이는 있었지만 ethylacetate, hexanal, o-xylene, (E)-2-hexen-1-ol, benzaldehyde, r-decalactone과 r-dodecalactone 역시 다량 확인되었다. $C_{6}$-C$_{12}$까지의 r-와 $\delta$-lactone류, 특히 이들 lactone류 중에서 다량 검출된 r-decalactone과 r-dodecalactone이 포함된 화합물그룹과 불포화지방산의 과산화물인 $C_{6}$-aldehyde와 $C_{6}$-alcohol이 복숭아의 휘발성 향기성분에 큰 비중을 차지하였다.

  • 오리엔트종 연초에서 생육 후기 조도와, 인공기상실에서의 생육 온도를 달리하여 각각 잎담배의 화학성분과 품질과의 관계를 분석한 결과, 1. 조도가 낮을수록 잎담배의 품질이 낮고, 수확엽의 엽록소함량이 높으나 단위엽면적량이 낮았으며, 2. 당, 석유에텔 추출물 및 휘발성 유기산함량이 낮고, 전질소, 니코틴, 회분, pH는 높았으며 ester 화함물은 조도가 높은 구에서 neophytadiened은 조도가 낮을수록 함량이 높았다. 3. 생육 온도가 2$0^{\circ}C$, $25^{\circ}C$, 3$0^{\circ}C$로 높을수록 개화일수가 짧고 생육이 저하되었으며, 품질은 큰 차이를 보이지 않았다. 4. 생육 온도가 높을수록 질소화합물, 회분함량, pH가 높은 당합량이 낮았으나, 석유에텔 추출물, 휘발성 유기산 및 적유성분 중성부 함량은 큰 차이가 없었다. 5. 생육중 일조와 온도가 다른 환경의 잎담배 품질평가에 공통적으로 적용이 가능한 지수로는 I-IV, IX 및 X이 추천된다.

Characterization of Volatile Organic Compounds associated with Environmental Tobacco Smoke

  • In this study, a wide range of volatile organic constituents of environmental tobacco smoke (ETS) were determined using an environmental chamber, where ETS is the sole source of target compounds. ETS was generated in an environmental chamber by a number of different cigarettes, including the Kentucky reference cigarette and eight different commercial brands. More than 30 compounds were measured simultaneously for a total of twelve experimental runs. The target compounds are classified into three major classes, i.e. vapor phase ETS markers including 3-ethnylpyridine (3-EP) and nicotine, carbonyl compounds including formaldehyde, and volatile organic compounds (VOCs). The results from the chamber study were used to generate characterized ratios of selected VOCs to 3-EP, a vapor phase ETS marker. Emission factors for VOCs associated with ETS were also estimated. The characteristic ratios appeared to be generally in good agreement with published data obtained by environmental chamber studies similar to this study. This implies that the ratios may be useful for identifying and quantifying the impact of ETS as a source of target compounds in 'real world' indoor environments, which is affected by a complex mixture of multi-sources. The environmental chamber method described here provides a direct and reliable method to compare the ETS generated by different cigarettes. The method can also be applied to the simultaneous determination of many different ETS components.
