The Effect of Antioxidant-complex on Oxygen Free Radical Generating and Scavenging System in Rats

  • To elucidate the effect of antioxidant complex containing $\beta-carotene$, vitamin E, vitamin C, Ginkgo Biloba leaf extract and selenium on oxygen :tree radical production and detoxification system, rats were fed normal diet and normal diet with antioxidant complex 0.1%, 0.3% and 0.5% for 3 weeks. Feed efficiency ratio, changes in body weight, weight gain and amounts of feces of rat are similar in four groups. Liver weight per body weight and hepatic lipid peroxide weight increased in 0.5% group. However, hepatic glutathione contents in all antioxidant complex added groups were significantly increased compare with normal control group. On the other hand, the activity of xanthine oxidase was a little increased due to the amounts of antioxidant complex. Superoxide dismutase and gutathione peroxidase activity of 0.1% antioxidant complex added group were increased about $10{\sim}20%$ in comparison to normal control group. These results suggest that the supplementation of antioxidant complex 0.1% to basal diet may reduce the hepatic damage caused by free radicals.

Algae-based antioxidant containing selenium yeast (Economase®) enhanced the growth performance, oxidative stability, and meat quality of broiler chickens

  • Objective: An experiment was conducted to determine the effect of algae-based antioxidant containing Se yeast (EconomasE®) on the growth performance, visceral organ weight, meat quality, and oxidative stability of broiler chickens. Methods: Nine hundred sixty, day-old male broiler chickens (Cobb, 43.97±0.55 g) were divided into three dietary treatments and allocated into 12 deep litter pens in a completely randomized design giving 4 replicate cages for each treatment. Three dietary treatments were: i) control (CON, basal diet with sufficient nutrient), ii) vitamin E (VitE, basal diet supplemented with 100 IU VitE), and iii) Algae-based antioxidant containing Se yeast (EcoE, basal diet supplemented with 0.2% algae-based antioxidant containing Se yeast: EconomasE®). Maize soybean meal based basal diets were formulated to meet or exceed the nutrition requirement for broiler chickens. Chickens were fed ad-libitum experimental diets during the 42 days experiment period. On days 21 and 42, body weight and feed intake were measured to calculate the feed conversion ratio of the chickens. Intestine and visceral organs were measured together with meat quality and oxidative stability on days 14 and 42. Results: Chickens fed with EcoE showed improved (p<0.05) growth performance, meat quality, and higher (p<0.05) oxidative stability compared to the chicken fed on CON. Moreover, broiler chickens fed with EcoE showed similar (p<0.05) growth performance with better (p<0.05) meat quality and higher oxidative stability compared to the broiler chickens fed VitE (p<0.05). Conclusion: The algae-based antioxidant containing Se yeast can be supplemented into commercial broiler diets as a substitution of VitE while maintaining growth performance with enhancing meat quality and oxidative stability of the broiler chickens.

비타민 E와 불포화 지방과의 관계 - 들깨유(油)를 중심으로 한 동물의 비교 연구 - (Relationship between Vitamin E and Polyunsaturated Fat - A comparative animal study emphasizing perilla seed oil as a fat constituent -)

  • Perilla (frutescens) seed oil, which is widely used as a source of vegetable oil in Korea, contains a strikingly large amount (58.4% of total fatty acids) of polyunsaturated linolenic acid (18 : 3) which is one of the essential fatty acids. Our hypothesis was that vitamin E contained in this oil would not be enough to prevent peroxidation of this polyunsaturated oil. A comparative study was carried out using rats and chicks devided into seven groups with various diet combinations emphasizing fat sources for the period of four weeks. The level of fat in each diet was 15% and animals were fed ad libitum. Various diet combinations were as follows; perilla seed oil and sesame seed oil with and without vitamin E supplementation, tallow as a saturated fat source and perilla seed hull group (10% at the expense of carbohydrate). The fat constituents of control group were consisted of 50% vegetable oil and 50% animal fat. A few important findings are as follows: 1. Rats fed perilla seed oil lost their hair focally around the neck and suffered from a bad skin lesion at the same place. In chicks, yellow pigmentation both of feather and of skin was clearly observed only in groups fed perilla seed oil with or without vitamin E supplementation. The basis of biochemical mechanisms of this phenomena remains as an important research interest. 2. The mean value for hematocrit was significantly lower for the chicks fed perilla seed oil than for those fed control diet. This result seems to be attributable to the effect on the red cell membrane known as peroxidation-hemolysis of vitamin E deficiency. 3. The serum cholesterol level was higher for the rats fed perilla seed oil than for those fed control diet, whereas in chicks the group fed perilla seed oil showed lower value than the control group indicating that different animal species could vary in their responses to the same diet. 4. In pathological examinations, the sign of hepatic fibrosis was seen in the perilla seed hull group and it was noticeable that the level of hepatic RNA was significantly increased in the rat recovering from vitamin E deficiency. It is hoped that more detailed studies on perilla seed oil and hulls will soon be carried out in many aspects especially i) at various levels of fat in the diet, ii) in relation to dietary selenium level and iii) to find an optimum level of dietary essential fatty acids in terms of P/S ratio using various animal species. In the mean time, the public should be informed to preserve this particular oil with care to minimize fatty acid oxidation and should be discouraged from overconsuming this oil. 대학 여자 운동선수의 셀레늄 및 아연 영양상태 (Assessment of selenium and zinc status in female collegiate athletes)

  • 본 연구는 여자 대학선수들의 혈청 셀레늄과 아연 수준을 일반 여대생과 비교 평가하고, 열량영양소 및 항산화영양소 섭취와의 관계를 평가하고자 하였다. 본 연구는 체육대학의 여자 에어로빅 및 유도선수와 운동을 규칙적으로 하지 않는 일반 여대생을 대상으로 식사섭취 조사와 혈청의 두 미량 무기질의 농도를 측정하였다. 에너지 섭취량은 에어로빅과 유도선수가 각각 2,151.0 kcal와 2,347.7 kcal를 나타내어 일반 여대생에 비해 유의적으로 높았다 그러나 체중 1 kg당 하루 에너지 섭취량은 선수와 일반 여대생간에 유의적 차이가 없었지만 유도선수의 경우 35.8 kcal에 불과하였다. 지질 섭취량은 일반 여대생에 비해 두 선수군에서 유의적으로 높은 반면에, 단백질과 탄수화물의 섭취량은 선수와 일반 여대생 사이에 유의적 차이는 없었다. 지질 중 포화지방산 섭취는 유도선수가 일반 여대생에 비해 유의적으로 높은 섭취를 보였다. 비타민 A, E와 비타민 C의 섭취량은 에어로빅 선수가 일반 여대생에 비해 유의적으로 높으며 INQ도 1이상을 보였다. 그러나 유도선수의 경우 비타민 A와 C의 INQ가 1이하를 나타내어 비타민 A와 C의 영양적 질이 부적절함을 보였다. 철의 섭취량은 에어로빅 선수가 일반 여대생에 비해 유의적으로 높았으나, 셀레늄과 아연 섭취는 유의적 차이가 없었다. 그러나 철과 아연의 INQ는 유도선수에서 유의적으로 낮았다. 에어로빅과 유도선수의 셀레늄의 평균 섭취량은 각각 $106.2{\mu}g$$101.9{\mu}g$를 나타내었고, 아연 섭취량은 각각 10.7 mg과 9.3 mg으로 일반 여대생과 비교하여 유의적 차이는 보이지 않았다. 혈청 셀레늄의 평균 농도는 유도선수가 $10.7{\mu}g/dl$을 보여 에어로빅 선수에 비해 유의적으로 낮았지만 이 들 중 셀레늄 결핍자는 없었다. 에어로빅과 유도선수의 평균 혈청 아연농도는 각각 $96.1{\mu}g/dl$$90.2{\mu}g/dl$으로서 일반 여대생과 유사하였지만, 에어로빅에서는 아연 결핍이 없으나 유도선수에서 아연 결핍율은 각각 14.3%를 보였다. 혈청 셀레늄농도의 변이는 나이 포화지방산, 비타민 E와 셀레늄 섭취에 의해 35.5%를 설명할 수 있으며, 나이를 제외한 식사요인에 의해서 33.3%를 설명할 수 있었다. 혈청 아연농도의 변이는 포화지방산 섭취에 의해 14.7%를 설명함으로써, 특히 포화지방산 섭취가 두 미량 무기질의 혈청 수준에 부정적인 영향을 줌을 보였다. 결론적으로 여자 대학선수들의 인체 셀레늄 상태는 양호하나 일부 선수에서 아연 영양부족이 우려되며 두 미량 무기질 수준을 유지하기 위해 포화지방산의 섭취를 줄이는 영양개선이 필요함으로 보였다. 나아가 셀레늄의 식사섭취와 인체 수준과의 관계를 명확하게 평가하기 위해서는 식사를 통한 셀레늄 섭취의 정확히 평가가 필요하며, 이에는 식품의 셀레늄 데이터베이스의 개선이 필요한 것으로 사료되며, 아연 영양상태 관련인자를 평가하기 위해서는 아연의 생체 이용률을 고려하는 자료가 필요할 것이다.

한우 노산암소에 대한 발정억제제 및 항산화제의 급여가 증체와 도체성적에 미치는 영향 (Effects of Melengesterol Acetate, Selenium and Vitamin E Supplemental Feeding on Growth, Carcass and Longissimus Dorsi Muscle Traits in Hanwoo Cull Cows)

  • 한우 암소에 있어서 번식기간을 연장하고 효율성 있는 암소 사양관리를 위하여 실시된 본 연구는 한우 노산암소의 단기비육을 돕는 첨가제로서 Vit. E, Se 및 MGA를 첨가 급여하여 암소의 발육성적을 검토하고, 도살 후 도체품질의 변화 및 도체의 특성을 규명하고자 평균산차 6.5산의 노산암소 24두를 대상으로 실시하였다. 본 연구에서 240일간의 증체성적은 투여구의 일당 증체량이 23.4% 증가하였고, 사료요구율도 대조구의 19.5에 비하여 투여구에서 16.3으로 개선되었다(P<0.05). 비육종료 후의 도체성적에서 육량은 투여구의 배최장근 단면적이 증가하고 등지방 두께가 감소하여 육량지수가 대조구의 63.95에 비하여 투여구에서 66.60으로 증가하였다(P<0.05). 도체의 육질에서 근내지방도는 증가하는 경향을 나타내었으며, 육색도 대조구보다 투여구에서 개선되었다(P<0.05). 등심조직 중의 육색과 일반화학성분, 물리적 특성 및 근섬유 특성은 처리구간의 차이가 없었으나, 체내 항산화 역할과 면역기능 향상에 영향하는 셀레늄 침착량은 유의하게 증가하였고(P<0.05), α-Tocoperol의 함량은 증가하는 경향을 나타내어 육색 안전성에 기여하였음을 시사하였다. 등심조직에 대한 산패도 측정을 위한 TBARS의 농도는 도살 직후부터 2주차의 시험과정동안 유의한 저장성 개선효과가 나타나(P<0.05) 14일째에는 대조구와 투여구가 각각 3.99 및 1.35mg/kg 이었다. 등심조직에 대한 지방산의 조성에서 대조구와 처리구간의 포화지방산, 단일 및 다중 불포화 지방산의 함량의 차이는 인정되지 않았으나 C18:1을 비롯한 불포화 지방산의 함량이 투여구에서 전반적으로 증가하는 현상을 나타내었다. 따라서 노산암소를 단기비육할 때 발정 억제제와 항산화제를 급여하면 증체량 및 육질 개선의 효과가 있는 것으로 사료된다.

Feeding Strategies to Produce High Quality Pork - Review -

  • The cost of production of high quality pork is compensated by high returns, but constraints by the market are increasing. A few opportunities to maintain and improve pork quality by dietary means are presented. The healthy value of pork is a prerequisite. A careful control of suppliers and preservation of feeds are essential to protect pork against presence of contaminants from the feed. The feeding level and some dietary components modify the partition of the dietary energy into different pig tissues and chemical components of pork, affecting the hygienic and nutritional value, tenderness and taste. It is difficult to transfer a nutrient from the diet to pork, if the requirements. for growth are satisfied. Fatty acids and Vitamin E are the most studied exceptions. There is some evidence that iron and selenium contents can be affected too. Varying the content of a nutrient frequently changes sensorial and technological properties of pork. The addition of oils improves the acidic profile of depot fats, but the effect on phospholipid composition is not well studied and negative effects on oxidability and consistency of meat products are observed. Vitamin E can improve many healthy and sensorial characteristics, but its effect is clearer when the meat is stressed or manipulated.

분만전후 젖소의 지방간증에 관한 연구 (A Study on Fatty Liver Syndrome in Periparturient Holstein Cows)

  • This study was carried out to investigate the Preventive and treatment effects of mixed compound of vitamin E and selenium, and ursodeoxycholic acid on the pre-parturient and post-parturient fatty liver of high. yielding dairy cows. Thirty pregnant dairy cows(2 weeks preparturition) were divided into clinical(13cows) and subclinical(17 cows) groups based upon blood chemical values, blood serum protein levels and clinical symptoms. The clinical group was subdivided into treated clinical group(6 cows) and non-treated clinical group(7 cows). The cows(treated clinical group) with fatty liver diagnosed before parturition were dosed with mixed compound of vitamin I(1head) and selenium(10mg/head) intramuscularly once before and after parturition, respectively. These cows(treated clinical group) were also given ursodeoxycholic acid(50g/head) intramuscularly 3 times before parturition. The cows(treated clinical group) with fatty liver diagnosed after parturition were also given the same compounds as dosed to the above cows at same dose rate once or 3 times, respectively after parturition. Blood samples were collected from the cows on 4th, 7th and 2nd day of preparturition and on 1st, 7th, 14th and 20th day of postparturition. Blood chemical values(non-esterified fatty acid : NEFA) concentration, serum aspartate aminotransferase activity, serum ${\gamma}$-glutamyl transpeptidase activity, bilirubin concentration, glucose level) were checked and clinical symptoms of the cows were also observed. 1. The cows in non-treated clinical group showed severe depression, anorexia and diarrhea from prepartum period, and retained palcenta, endometritis, ketosis, abomasal displacement and mastitis after parturition. Cows in treated clinical group showed moderate depression, anorexia, diarrhea during preparturient period, but they were relieved within a week from parturition. Cows in subclinical group showed mild depression, anorexia and diarrhea after parturition, but these symptoms were not observed in prepartum period. 2. NEFA concentration, serum aspartate aminotransferase activity, serum ${\gamma}$-glutamyl transpeptidase activity and bilirubin concentration observed In the cows of treated clinical group were significantly lower than those of the cows non-treated clinical group. The blood glucose concentration of the cows in treated clinical group were higher than those of the cows in non-treated clinical group. These results indicate that the preparturient and postparturient fatty liver of high-yielding dairy cows could be reduced by dosing the animals with appropriate amounts of mixed compound of vitamin I and selenium, and ursodeoxycholic acid at proper times of the preparturition and postparturition of the dairy cows.

Development of the anti-cancer food scoring system 2.0: Validation and nutritional analyses of quantitative anti-cancer food scoring model

  • BACKGROUND/OBJECTIVE: We have previously designed the anti-cancer food scoring model (ACFS) 1.0, an evidence-based quantitative tool analyzing the anti-cancer or carcinogenic potential of diets. Analysis was performed using simple quantitative indexes divided into 6 categories (S, A, B, C, D, and E). In this study, we applied this scoring model to wider recipes and evaluated its nutritional relevance. MATERIALS/METHODS: National or known regional databases were searched for recipes from 6 categories: Korean out-dining, Korean home-dining, Western, Chinese, Mediterranean, and vegetarian. These recipes were scored using the ACFS formula and the nutrition profiles were analyzed. RESULTS: Eighty-eight international recipes were analyzed. All S-graded recipes were from vegetarian or Mediterranean categories. The median code values of each category were B (Korean home-dining), C (Korean out-dining), B (Chinese), A (Mediterranean), S (vegetarian), and D (Western). The following profiles were correlated (P < 0.05) with ACFS grades in the univariate trend analysis: total calories, total fat, animal fat, animal protein, total protein, vitamin D, riboflavin, niacin, vitamin B12, pantothenic acid, sodium, animal iron, zinc, selenium, and cholesterol (negative trends), and carbohydrate rate, fiber, water-soluble fiber, vitamin K, vitamin C, and plant calcium (positive trends). Multivariate analysis revealed that animal fat, animal iron, and niacin (negative trends) and animal protein, fiber, and vitamin C (positive trends) were statistically significant. Pantothenic acid and sodium showed non-significant negative trends (P < 0.1), and vitamin B12 showed a non-significant positive trend. CONCLUSION: This study provided a nutritional basis and extended the utility of ACFS, which is a bridgehead for future cancer-preventive clinical trials using ACFS.

임신말기에 Se과 Vit. E 투여 후 태어난 한우 송아지의 혈액성분과 Vit. E 농도의 변화 (Changes of Blood Chemical Values and Vit. E Concentration in Calves Born from Hanwoo Dams Administrated Se and Vit. E at Late Pregnancying Periods)

  • 본 실험은 한우 종빈우의 임신말기에 Se과 Vit. E 투여가 종빈우에서 태어난 송아지의 발육능력을 조사하고 혈액화학치 및 혈중 Vit. E 농도에 미치는 영향을 조사하여 다음과 같은 결과를 얻었다. 1. Se과 Vit. E를 분만 1개월전에 투여 한 한우 종빈우에서 태어난 송아지의 혈액성분에 미치는 영향을 검토한 결과, 평균 혈중 albumin은 3.36, 3.51, 3.43, 3.45, 3.83 및 3.31g/d1로서 Vit. E 2000IU 투여구가 여타구보다 높은 성적을 나타냈다(P<0.05). 평균 혈중 cholesterol함량은 Vit. E 1500IU 투여구가 여타구보다 높은 함량을 나타냈으나, 혈중 BUN, creatiine, glucose, inorganic phosphorous, calcium, total protein 및 triglycerides 함량은 처리구간 유의적인 차이는 없었다(P>0.05). 2. Se과 Vit. E를 분만 2개월 전에 투여한 한우 종빈우에서 태어난 송아지의 혈액성분에 미치는 영향을 검토한 결과, 평균 혈중 albumin, cho-lesterol, BUN, creatiine, glucose, inorganic phos-phorous, calcium, total protein 및 triglycerides 함량은 처리구간 유의적인 차이는 없었다(P>0.05). 3. 분만 1개월 전에 Se과 Vit. E 투여한 한우 종빈우에서 태어난 송아지의 혈중 vitamin E 농도에 미치는 영향을 검토한 결과, 한우 종빈우에서 태어난 송아지의 생후 15일째 혈중 Vit. E 농도는 처리구간 커다란 차이가 없었으나, 생후 45일째 혈중 Vit. E 농도는 투여구가 대조구보다 높은 농도를 나타냈다. 모든 처리구에서 송아지의 생후 일령이 증가함에 따라 혈중 Vit. E 농도가 증가하는 경향을 보였다. 4. 분만 전 2개월 전에 Se과 Vit. E를 투여한 한우 종빈우에서 태어난 송아지의 생후 15일과 45일째 혈중 Vit. E의 농도는 처리구간 커다란 차이는 없었다(P>0.05).

계란의 영양적 특성 및 건강에 미치는 영향 (Nutritional roles and health effects of eggs)

  • Purpose: The aim of this study is to examine the effects of egg consumption and suggest proper guidelines for consumption of eggs by determining the relationship between eggs and cholesterol. Methods: Literature review was conducted on the relationship between nutritional, functional properties of eggs and serum cholesterol, as well as cardiovascular disease. Results: Eggs, which are a good protein food with complete amino acid composition, contain vitamin A, riboflavin, vitamin $B1_2$, folic acid, vitamin D, vitamin E, vitamin K, calcium, iron, choline, selenium, ${\beta}$-carotene, lutein, zeaxanthin, etc. However the egg yolk has a high cholesterol content, which is associated with chronic diseases, including heart disease and hypertension. As a result, its intake is subject to regulation. Outbreak of heart disease by yolk intake can show different results depending on the characteristics of the subjects, amount of egg intake, and the implications of other foods eaten. It is difficult to determine whether eggs are beneficial, as they are the main supplying source for other major nutritive elements as well. Several research studies insist that when cholesterol intake increases by 100 mg, the level of serum cholesterol increases by 2.2~4.5 mg/dL and when serum cholesterol increases by 1%, the risk of heart disease increases by 2%. This indicates that a large intake of eggs can increase the risk of heart disease. Although the cholesterol of egg yolk and serum cholesterol are correlated, it is insufficient to conclude that only cholesterol and not other components are related to heart disease. In fact, other components in egg such as various unsaturated fatty acids and phospholipids could be related as well. Rather than concluding egg as a 'good' or 'bad' food according to its cholesterol content, it is important to define egg as a part of dietary patterns. Conclusion: Generalizing an indiscriminate and uniform amount of egg intake for all seems inadequate. However, patients with diabetes or heart disease should pay particular attention to the amount of egg intake. As for the norm, eating egg with vegetables as a substitute for other animal products seems beneficial.
