  • As the COVID pandemic has been prolonged, 'Contact-free' has emerged as a major trend keyword. Naturally, most people don't go out and eat at home. As a result, sales of products that can easily cooked such as 'meal-kits' have increased remarkably. Although the number of vegetarians is increasing rapidly in Korea, the domestic market has not been activated. Most vegetarians are cooking or eating HMR together due to the lack of vegetarian restaurants and vegetarian menus. According to the survey, the subjects perceive meal-kit as positive as their experience with meal-kit expanded, and this positive perception and the need for vegetarian meal-kits had a positive effect on the purchase intention of the vegetarian meal-kit. This study presents the direction and potential for development of vegetarian meal kits that meet consumer needs. It will be used as a basis for the development of products and expansion of the market for vegetarian meal-kits.

Exploring the phenomenon of veganphobia in vegan food and vegan fashion (비건 음식과 비건 패션에서 나타난 비건포비아 현상에 대한 탐구)

  • This study investigates the negative perceptions (veganphobia) held by consumers toward vegan diets and fashion and aims to foster a genuine acceptance of ethical veganism in consumption. The textual data web-crawled Korean online posts, including news articles, blogs, forums, and tweets, containing keywords such as "contradiction," "dilemma," "conflict," "issues," "vegan food" and "vegan fashion" from 2013 to 2021. Data analysis was conducted through text mining, network analysis, and clustering analysis using Python and NodeXL programs. The analysis revealed distinct negative perceptions regarding vegan food. Key issues included the perception of hypocrisy among vegetarians, associations with specific political leanings, conflicts between environmental and animal rights, and contradictions between views on companion animals and livestock. Regarding the vegan fashion industry, the eco-friendliness of material selection and design processes were seen as the pivotal factors shaping negative attitudes. Furthermore, the study identified a shared negative perception regarding vegan food and vegan fashion. This negativity was characterized by confusion and conflicts between animal and environmental rights, biased perceptions linked to specific political affiliations, perceived self-righteousness among vegetarians, and general discomfort toward them. These factors collectively contributed to a broader negative perception of vegan consumption. In conclusion, this study is significant in understanding the complex perceptions and attitudes that con- sumers hold toward vegan food and fashion. The insights gained from this research can aid in the design of more effective campaign strategies aimed at promoting vegan consumerism, ultimately contributing to a more widespread acceptance of ethical veganism in society.

A Longitudinal Study on Calcium, phosphorous and Magnesium Contents in the Breast Milk of Lacto-ove-vegetarian (채식 수유부의 모유중 수유기간별 칼슘, 인, 마그네슘 함량에 관한 연구)

  • The longitudinal changes on contents of calcium, phosphorous and magnesium of breast milk of 23 Korean lacto-ovo-vegetarians(primiparae=11, multiparae=12) at 0.5, 1, 2 and 3 months postpartum have been studied. The mean ash content of breast milk per 100ml was 0.21g in total lactating women(n=23), and it decreased significantly during lactation(p<0.05). The mean calcium, phosphorous and magnesium contents of breast milk per 100ml were 26.83mg, 14.01mg and 2.72mg, respectively. Body calcium and phosphorous contents decreased significantly during lactation(p<0.05), but magnesium content tended to increase during lactation. There were no significant differences in ash, calcium, phosphorous and magnesium contents between primiparae and multiparae. The ratio of calcium to phosphorus was about 1.95:1 in breast milk and 0.62 : 1 in maternal dietary intake. In calcium and phosphorous, no correlation was found between maternal dietary intake and the concentration in breast milk. This study suggests that the contents of calcium, phosphorous and magnesium in lacto-ovo-vegetarian breast milk are not different from the concentrations of those in non-vegetarian.

  • This study was conducted to research on the nutritional status of vegetarian boys high school students, to keep abreast with the international trend of stressing the vegetarian diet, thereby analyzing the degree of the influence of their dietary habit on their growth. The object of the study were 62boys high school students who are lacto-ovo vegetarians, and the author adopted three popular research methods. questionaire physical test and blood test Though vegetarian diet is helpful for the prevention of coronary and heart diesedse of the adults, but it is not enough for the students who are needed lot of protein and calorie.

  • 전 세계적으로 건강, 환경보호, 윤리적 소비를 추구하는 소비자들이 증가하면서 다양한 분야에서 동물성 제품을 섭취하거나 소비하지 않는 생활방식인 비거니즘(Veganism)을 지향하는 사람들이 증가하고 있다. 한국 또한 매년 채식에 대한 관심이 높아지고 있지만 외국에 비해 채식하기에 좋은 환경은 구축되어 있지 않으며 가공식품을 구매할 경우 성분 표를 일일이 확인해야 하는 어려움이 있다. 본 연구에서는 사용자가 섭취하고자 하는 가공식품의 성분을 분석하여 본인의 채식주의자 단계에 적합한 제품인지 쉽게 판별할 수 있는 모바일 앱을 제안한다.

  • 최근 동물성 제품을 섭취하거나 소비하지 않는 비거니즘 생활방식을 지향하는 사람들이 증가하고 있다. 그러나 채식 인구의 증가에 수반되어야 하는 채식하기 좋은 환경에 대한 구축은 아직도 미흡한 실정이다. 본 연구에서는 채식주의자들을 위해 가공식품 성분 표를 분석하여 채식주의자 단계에 맞는 대체식품을 추천해 주는 시스템을 제안한다. 제안 시스템은 먼저, 가공식품의 원재료들이 표기되어 있는 성분 표를 분석하여 사용자의 채식주의자 단계에 적합한지를 확인한다. 확인 결과 적합하지 않다면, 한국식품안전관리인증원의 공개 API를 이용하여 해당 가공식품과 제품 유형이 같은 식품을 검색하고 그 결과로부터 사용자의 채식주의자 단계에 적합한 원재료들이 포함되어 있는 식품을 추천해준다.

Studies on the Development of Soybean Cheeses (대두를 이용한 소이 발효 치즈 개발에 관한 연구)

  • This study suggests a method of making cheese using soybeans for healthy food for people that are allergic to animal proteins, vegetarians, people on a diet, infants and toddlers. Additionally, the study was conducted to provide basic data that can contribute to the development of a quality control class of Korean cheese and underdeveloped cheese industry. Soybean cheeses have a high protein content and low fat. The free amino acids of soybean cheeses contained 11.48 mg of arginine per 100 g, 9.33 mg of glutamate, and leucine 4.91 mg, in that order. The free amino acids of Company A's milk cheese contained 20.95 mg of glutamate, 8.95 mg of proline and 8.02 mg of lysine per 100 g. In soybean cheeses, there were 2.21 mg of tryptophan and 0.73 mg of cysteine, which were not analyzed in the milk cheese of company A. The contents of the constituent amino acids was 1,070.22 mg of glutamate, 467.30 mg of aspartate and 446.30 mg of leucine in 100 grams of soybean cheeses per 100 grams. The milk cheese of Company A was 1,715.97 mg of glutamate, 798.72 mg of leucine and 685.31 mg of proline. The mineral contents of the soybean cheese were 120.29 mg/100 g of calcium, 0.92 mg/100 g of iron, 0.78 mg/100 g of zinc and 0.40 mg/100 g of selenium, respectively. The contents of vitamin $B_1$ and ${\beta}$-glucan in soybean cheese were higher than that of the milk cheese in Company A at 0.08 mg/100 g and 13.73 mg/g, respectively. Therefore, it is considered that the soy cheese is excellent in nutritional aspect and will contribute to health promotion. It is also suitable for people that are allergic to animal proteins, vegetarians, people on a diet and healthy foods for infants.

Probiotication of Tomato Juice by Lactic Acid Bacteria

  • This study was undertaken to determine the suitability of tomato juice as a raw material for production of probiotic juice by four lactic acid bacteria (Latobacillus acidophilus LA39, Lactobacillus plantarum C3, Lactobacillus casei A4, and Lactobacillus delbrueckii D7). Tomato juice was inoculated with a 24­h-old culture and incubated at $30^{\circ}C$. Changes in pH, acidity, sugar content, and viable cell counts dur­ing fermentation under controlled conditions were measured. The lactic acid cultures reduced the pH to 4.1 or below and increased the acidity to $0.65\%$ or higher, and the viable cell counts (CFU) reached nearly 1.0 to $9.0\times10^9/ml$ after 72 h fermentation. The viable cell counts of the four lactic acid bacteria in the fermented tomato juice ranged from $10^6\;to\;10^8\;CFU/ml$ after 4 weeks of cold storage at $4^{\circ}C$. Pro­biotic tomato juice could serve as a health beverage for vegetarians or consumers who are allergic to dairy products.

  • Korea used to be a country where individuals ate diets high in vegetables and rice, but in recent years, it has become a country where western-style diets are increasingly popular. Consequently, the age for chronicle disease, including obesity and diabetes, has become lower. The purpose of this study was to compare the dietary habits of kindergarten children between lacto-ovo vegetarian and non-vegetarian families. The data were collected from the children(n=300) at Sahmyook University Kindergarten. The results showed that non-vegetarians had higher intakes of cookies, cakes, processed foods, ice cream, and fast foods, while vegetarian children consumed high amounts of vegetables, fruits, and kimchi. The non-vegetarian children tended to have irregular meals, and ate high-fat meats such as kalbi and samgyupsal. However, the results show it is important that many children among both vegetarian and non-vegetarian families should be encouraged to have appropriate essential nutrients, because a high percentage of children in both groups appeared to have low intakes of energy, vitamin $B_2$, vitamin C, calcium, zinc, iron, etc.

Comparison of PHP Indexes According To Smoking, Drinking And Eating Habits (흡연, 음주, 식이행태에 따른 PHP index 비교)

  • Purpose. This study was conducted from the period of April 12th, 2017 to April 26th, 2017. The questionnaires were distributed among a group of 76 adults aged 20 years or older, who participated in the prevention program of the department of dental hygiene at Busan Metropolitan City. The negative questionnaire was finally analyzed. Methods. The SPSS program was used for analysis of this study. The general characteristics of the subjects were t-test and one-way, ANOVA(by Scheffe post-test) for a PHP index (Patient Hygiene Performance index) according to frequency analysis, general characteristics, smoking and drinking behavior, and dietary behavior. Results. As a result of an examination of the PHP index(Patient Hygiene Performance index) ac- cording to smoking and drinking behavior, the amount of alcohol drunk was statistically higher than that of 'soju that was not drunk'(P<0.05). As a result of the PHP index (Patient Hygiene Performance index) according to dietary behavior, 'vegetarians' were statistically higher than 'Carnivorous oriented' individuals (P<0.05). Moreover, individuals who regularly 'drank almost no water' were statistically significantly higher than those who 'drank water steadily'.(P<0.05). Conclusion. As a result, appropriate management is required for oral health of the patient, Oral health education is needed to systematically consider smoking, drinking, and eating habits when taking into consideration the individual oral environment.
