건조방법에 따른 건고추의 품질특성과 생산효율 비교 (Comparison of Dried Hot Pepper Quality and Production Efficiency by Drying Methods)

  • 고추는 조미채소의 한 종류로 우리나라 채소시장에서 큰 비중을 차지하는 품목이다. 대부분 고추의 이용은 건고추의 분말형태인 고춧가루로 가공하여 이용되고 있으므로, 고추건조에 대한 품질과 생산성 향상이 중요한 부분이다. 따라서 본 연구에서는 고추의 건조방법에 따라 고춧가루의 품질을 좌우할 수 있는 성분의 변화에 대하여 비교하고, 생산비를 고려하여 적정 건조방법을 제시하고자 실험을 수행하였다. 건조방법으로는 관행으로 많이 이용되는 양건과 화건을 이용하였으며, 제습기를 이용한 제습건조방식을 추가 적용하여 건고추 생산성과 품질을 비교하였다. 고추의 건조방식에 따른 건조율은 화건이 85.1%로 제일 높았고, 이에 따라 고춧가루의 수분함량도 13.5%로 가장 낮게 나타났다. 고추의 색택을 좌우하는 ASTA(American Spice Trade Association) 색도는 양건처리에 비해 화건과 제습건조처리가 높은 결과를 보였다. 고춧가루의 신미성분인 capsaicinoid 함량은 양건처리에 비하여 화건과 제습건조처리에서 모두 낮게 나타나 이에 대한 추가적인 적정 건조조건에 대한 연구가 추가되어야 된다. 당함량은 건조시간이 비교적 짧았던 화건과 제습건조처리에서 양건에 비해 높게 나타났으나 두 처리간에는 유의한 차이를 보이지 않았다. 건고추 생산비용은 제습건조처리가 화건처리에 비해 9.9% 효율이 높은 것으로 나타났다. 본 연구를 통해 화건과 제습건조가 당함량의 증진과 건고추의 색 발현 측면에서는 효과적 이었음을 알 수 있었다. 고추의 신미성분인 capsaicinoid 함량 증진을 위해서는 화건과 제습건조처리에서 적정한 건조온도와 건조시간에 대한 연구가 추가되어야 될 것으로 판단되었다.

Acetic acid와 UV-C 병합처리가 돌나물의 저장 중 미생물 성장과 품질에 미치는 영향 (Effects of combined acetic acid and UV-C irradiation treatment on the microbial growth and the quality of sedum during its storage)

  • 수확 후 돌나물의 미생물학적 안전성 확보를 위해 1% acetic acid 침지 세척과 $10kJ/m^2$ UV-C 조사를 병합처리하여 $10^{\circ}C$에서 6일간 저장하면서 미생물 수, 색도, 비타민 C 함량, 항산화능을 측정하였다. 돌나물에 병합처리 후 총호기성 세균 수는 대조구와 비교하여 3.28 log CFU/g, 효모 및 곰팡이에서는 4.22 log CFU/g 감균 효과를 보였으며, 이러한 효과는 저장 6일 동안 유지되었다. Acetic acid와 UV-C 병합처리는 대조구와 비교하여 돌나물의 저장 중 Hunter 색도 값에 부정적인 영향을 끼치지 않았다. 또한 비타민 C 함량과 항산화능은 저장기간 동안 처리구와 대조구 모두 감소하였으나, 처리에 의한 차이는 없는 것으로 나타났다. 따라서 본 연구 결과 acetic acid와 UV-C 병합처리가 수확 후 돌나물의 저장, 유통 시 미생물학적 안전성을 확보하고 품질 유지에 효과적인 hurdle technology라고 판단된다.

열수처리가 신선 편의가공 양파의 저장품질에 미치는 효과 (Effect of Hot Water Treatment on Storage Quality of Minimally Processed Onion)

  • 신선 편의가공 채소류의 전처리기술로서 중온처리의 적용 가능성을 확인하고자 박피 양파의 열수처리에 따른 저장중 품질특성 변화를 살펴보았다. 건조외피 제거, 절단, 수세를 거친 양파 시료에 대해 $50-80^{\circ}C$의 열수로 1 분간 침지한 후 물기를 제거하고 $63\;{\mu}m$ 두께의 LDPE 필름에 밀봉 포장하여 $10^{\circ}C$에 저장하면서 이화학, 미생물, 관능적 특성 변화를 측정하였다. 생체 중량감소 및 절단 표면색 변화는 상대적으로 고온($70,\;80^{\circ}C$) 처리구에서만 유의적인 증가를 나타내었고, 미생물의 경누 열처리 직후 고온 처리구에서 90% 이상의 생균수 감균 효과를 확인할 수 있었으나, 저장 중기 이후에는 처리구별로 유의적인 생균수 차이를 구분할 수 없이 약 $10^6-10^7\;CFU/g$ 수준을 나타내었다. 관능 평가에서는 저장 28일까지 $60^{\circ}C$ 중온 처리구가 변색, 시듦, 부패 항목에서 상대적으로 가장 낮은 점수를 나타내었고 외관 품질도 비교적 우수하여 박피 양파의 저장중 품질유지에 가장 유리한 열수 처리온도임을 확인할 수 있었다.

고품질 내병 다수성 지황 고강 (A New High-Quality, Disease Resistance and High-Yielding Rehmannia glutinosa Cultivar, "Kokang")

  • "고강"은 고품질 내병 다수성 지황 개발을 목표로 지황1호 실생 집단에서 우량 개체를 선발, 증식을 거친 후 2001~'02년 생산력 검정시험을 실시하였다. 그 결과 고품질이면서 병해에 강하고수량성이 높아 수원7호로 계통명을 부여한 후, 2003~'05년까지 3년간 지역적응시험을 실시한 결과 우수성이 인정되어 2005년 12월 직무육성 품종 심의회를 거쳐 "고강"으로 명명하였는바 그 주요특성을 요약하면 다음과 같다. 1. 고강의 초형은 지면에서 약간 솟아오르는 형태를 나타내며, 생육중기 완전 전개된 잎중 가장 어린잎들의 색깔은 안토시아닌 색소를 거의 띠지 않아 대비품종과 구별된다. 2. 고강은 지황1호에 비하여 잎이 크고 많으며, 뿌리가 굵고 길다. 3. 고강은 병에 대한 저항성도 비교적 강하여 생산의 안정성이 높은 품종이다. 4. 고강은 2003~'05년까지 3년간 실시한 지역적응시험결과 수원 등 3지역에서 모두 증수되는 것으로 나타났고, 3지역의 10a당 평균 수량은 1,186kg로 지황1호 대비 13% 증수하였다. 5. 고강은 지황의 주요성분인 catalpol과 엑스함량이 지황1호에 비하여 많은 고품질 품종이다.

수확 후 저장 조리조건에 따른 배추 가식분위내 $NO_3^-$함량변화 (Changes of Nitrate Contents in Edible Parts of Chinese Cabbage by Conditions of Cooking and Post-Harvest Storage)

  • Inorder to minimize the daily intake amount of nitrate by chinese cabbage, the favorate vegetable for Korean, the influences of storage conditions at different temperature and light or dark treatments after post-harvest and effects of cooking temperature and infrared rays on changes of nitrate contents in edible parts of chinese cabbage were determined. The nitrate contents on midrib and leaf blade in chinese cabbage during post-harvest were decreased steeply in 2 days and decreased slowly again in 5 days. The temperature treatment to decrease the nitrate contents in midrib and leaf blade of chinese cabbage were effective as the following of $25^{\circ}C$> $15^{\circ}C$ > $-4^{\circ}C$ > $-10^{\circ}C$. The nitrate contents of midrib and leaf blade were decreased in the timecourse of post-harvest. It is more effective to store in $4^{\circ}C$ than in $15^{\circ}C$, and is more effective in transparent vinyl package than in black vinyl package, but the treatment of light is more effective than the treatment of temperature. The nitrate contents of midrib decreased rapidly by 17.9% in the treatment of 5 days at$ 15^{\circ}C$. By treatment of $80^{\circ}C$, $90^{\circ}C$, $100^{\circ}C$ water, the nitrate contents of midrib were increased slightly, but decreased in leaf blade. It reached 68.5%, 50.6%, 45.9% in the leaf blade respectively by treatment of 80%, 90%, 100% water at 1 min. By infrared rays treatment, the nitrate contents of midrib did not change in 3 min but increased rapidly after 6 min, and in the leaf blade it increased continually after 1 min.

결식아동을 위한 가정배달 도시락의 생산과 배달과정 중 미생물적 평가 (Microbiological Assessment of Home-Delivered Meals for Children from Low-income Families during Production and Delivery)

  • The purpose of this study was to assess the microbiological quality of home-delivered meals during production and delivery for children from low-income families. Production flows from a facility in Seoul that provides home-delivered meals were analyzed and the time-temperature of the food was measured. Microbiological assessment was performed for the production environment, personal hygiene, and food samples at each production and delivery step based on the process approach. It took 2 hours or longer from completion of production to meal delivery. An aerobic colony count (ACC) and coliform were not detected at knives, cutting boards, and dish towels. However, ACC (at pre-preparation, preparation, and packing areas) and coliform (at the preparation area) were detected on the hands and gloves of employees. Air-borne bacterial counts varied according to day and preparation area (ND~6 CFU/plate/15 min). Food temperatures, on the completion of production and meal delivery, fell into temperature danger zones. ACC and coliform counts of raw ingredients did not decrease after pre-preparation (washing and sanitizing) for menus involving food preparation with no cook step. ACC decreased after cooking step for menus of food preparation with cook step, but the ACC of the stir-fried and seasoned dried filefish fillet on the completion of cooking was too numerous to count due to improper heating. The ACC of seasoned young Chinese cabbages (a menu with complex food preparation) increased during delivery (from 2.5 log CFU/ml to 5.0 log CFU/ml). This qualitative assessment of foodborne pathogens revealed that B. cereus was detected in vegetable and meat product menus. These results suggest time-temperature control is necessary during production and delivery and management guidelines during production of home-delivered meals are provided for safe production.

Development of a Novel Process to produce Biodiesel and its use as fuel in CI Engine performance study

  • A novel process has successfully been developed by overcoming major difficulties through the elimination of number of process steps involved in the Classical Transesterification reaction during the preparation of Fatty Acid Methyl/Ethyl Ester (FAME.FAEE) called biodiesel. The Classical process with cost intensive process steps such as the utilization of excess alcohol, needing downstream distillation for the recovery and reutilization of excess alcohol/cosolvent, unrecoverable homogenous catalyst which consumes vast quantity of fresh distilled water during the purification of the product and downstream waste water treatment before its safe disposal to the surface water body. The Novel Process FAME/FAEE is produced from any vegetable oil irrespective of edible or inedible variety using sonication energy. The novelty of the finding is the use of only theoretical quantity of alcohol along with a co-solvent and reduced quantity of homogeneous catalyst. Under this condition neither the homogeneous catalyst goes to the FAME layer nor is the distillation needed. The same ester also has been prepared in high pressure high temperature reactor without using catalyst at sub critical temperature. The quality of prepared biodiesel without involving any purification step meets the ASTM standards. Blended Biodiesel with Common Diesel Fuel (CDF) and FAME is prepared, characterized and used as fuel in the Kirloskar make CI Engines. The evaluation of the engine performance result of pure CDF, B05 biodiesel, B10 biodiesel of all types of biodiesel prepared by using the feedstock of Soybean (Glycine max) and Karanja (Pongamia pinnate) oil along with their mixed oil provides useful information such as brake power, brake thermal efficiency, brake specific fuel consumption, etc, and established it as ideal fuel for unmodified CI engine.

보리순의 영양성분과 항산화 효과 (Nutrient Composition and Antioxidative Effects of Young Barley Leaf)

  • This study was conducted to investigate the proximate composition and antioxidative activities of young barley leaf(YBL). YBL powder(all w/w) was 2.98% moisture, 17.13% crude protein, 4.00% crude fat, 10.72% crude ash, and 65.17% carbohydrate. The contents of total, insoluble, and soluble dietary fiber were $36.62{\pm}2.33$, $19.05{\pm}1.04$, and $17.57{\pm}1.01g/100g$, respectively. The essential and non-essential amino acids contained in the YBL powder accounted for 46.56% and 53.44% of the total amino acids, respectively. The major unsaturated fatty acid was linolenic acid. The ratio of polyunsaturated fatty acids to saturated fatty acids was 4.84. Only tartaric acid was detected. The contents of vitamins A, C, and E were 0.761, 398.05, and 0.936 mg%, respectively. The mineral contents of YBL powder were in the order of Na$IC_{50}$ value for the DPPH radical scavenging of the YBL ethanol extract was $365.74{\pm}6.98mg/mL$. The antioxidative index was high and was similar to that of t-butylated hydroxytouene. These results suggest that YBL can be recommended as a baby vegetable of high nutritional quality and antioxidative properties.

Development of Cabbage Juice Medium for Industrial Production of Leuconostoc mesenteroides Starter

  • Leuconostoc mesenteroides is used as a starter to produce high-quality kimchi products. In this study, an efficient and economical cabbage juice medium (CJM) was developed by process optimization of cabbage extraction and pasteurization and by compositional supplementation of various lacking nutrients. The pasteurized cabbage juice was determined to be a good medium candidate to cultivate L. mesenteroides, showing maximal cell numbers ($9.85{\times}10^8CFU/ml$) after 24 h. Addition of sucrose and yeast extract with soy peptone resulted in increment of bacterial cell counts in CJM, showing the supplementing effect of the lacking nutrients. Furthermore, addition of shell powder gave a protective effect on bacterial cells by preventing pH decline and organic acid accumulation in CJM, resulting in a 2-fold increase of bacterial counts. The optimized composition of CJM was 70% cabbage juice diluted with water, 0.5% (w/v) sucrose, 1% (w/v) yeast extract, 1% (w/v) soy peptone, and 1.5% (w/v) ark shell powder. The CJM developed in this study was able to yield a comparable level of bacterial counts with MRS medium and reduced the cost by almost 10-fold.

Genetic Diversity and Population Structure of Korean Soybean Collection Using 75 Microsatellite Markers

  • Soybean (Glycine max L.) is crucial legume crop as source of high quality vegetable protein and oil, and Korea is regarded as a part of center of soybean origin. To expand the information of conserved genetic diversity, we analyzed the genetic variability of soybean collection mainly introduced Korean accessions using 75 microsatellite markers. A total of 1,503 alleles with an average value of 20.0 alleles were detected among 644 accessions. Korean collection revealed average allele number of 13.4 while Chinese, Japanese and Southeast Asian accessions showed 9.0, 5.4 and 6.5 mean alleles, respectively. Especially, Korean accessions showed more number of private allele per locus as 3.4 contrary to other geographical groups. The mean expected heterozygosity and polymorphic information content was 0.654 and 0.616, respectively, and expected heterozygosity values were not significantly distinguished according to the geographical groups. The phylogenetic dendrogram and deduced population structure based on DNA profiles of 75 SSR loci showed Korean accessions formed distinct gene pool against Chinese accessions, and could be divided into five subpopulations. Korean soybean accessions have specific genetic diversity and might be serve the valuable alleles for bio-industry as a part of the center of soybean origin.
