The objective of this study was to investigate the associations between the prevalence of overweight and obesity and the degree of adherence to the Korean Dietary Action Guides for Children (KDAGC). In a cross-sectional study based on a child care center-based survey in Seoul, Korea, we collected parental-reported questionnaires (n = 2,038) on children's weight and height, frequency of fruit and vegetable consumption, and the quality of dietary and activity behaviors based on the 2009 KDAGC Adherence Index (KDAGCAI) which was developed as a composite measure of adherence to the KDAGC. Overweight and obesity were determined according to age- and sex-specific BMI percentile from the 2007 Korean national growth chart. Associations were assessed with generalized linear models and polytomous logistic regression models. Approximately 17.6% of Korean preschool children were classified as overweight or obese. Obese preschoolers had lower adherence to the KDAGCAI compared to those with lean/normal weight. Preschoolers with a high quality of dietary and activity behaviors had a 51% decreased odds ratio (OR) of being obese (highest vs. lowest tertile of KDAGCAI-score, 95% CI 0.31, 0.78; P = 0.001); the associations were more pronounced among those who were older (P = 0.048) and lived in lower income households (P = 0.014). A greater frequency of vegetable consumption, but not fruit, was associated with a borderline significant reduction in the prevalence of obesity. Our findings support the association between obesity prevention and high compliance with the Korean national dietary and activity guideline among preschool children.

Unusual mushrooms were observed in strawberry and sweet pepper greenhouses in the Hwasun area of Korea in September 2015. The mushrooms usually grew on beds in the greenhouses, frequently along with vegetables. The identity of the mushrooms in the greenhouses and effects of the mushrooms on the growth and quality of vegetables were investigated. Mushroom specimens collected were identified based on their morphological and molecular characteristics. The mushroom specimens collected from the strawberry greenhouse were identified as Leucocoprinus birnbaumii and L. ianthinus, and those from the sweet pepper greenhouse as Gymnopilus lepidotus. These were the first observations of L. ianthinus and G. lepidotus in Korea. The results revealed that the mushrooms originated from coco peat media used for the beds in the greenhouses. The mushrooms did not affect the growth and quality of the two vegetables.

Bean curd is a traditional food which have good nutrients, and so various cooking methods are needed to be developed for the supplement of high quality food. 1) Cereals such as rice, barley, and bean curd, soybean, green vegetables, tangle and brown seaweed are known as food for long life. 2) Soybean is able to suppress the formation of hydroperoxide by saponin and lecithin. 3) Curd in bean curd means soft in Chinese character, and bean curd may be the mother of cheese. 4) Bean curd have high nutrition and digestibility. As soybean is dipped longer in water for bean curd, the production rate is higher. 5) There are many kinds of bean curd products, and can be purchased inexpensively.
Asia has 60% of the world population and only about 34.5% of the world arable land. However, Asians traditionally consume very large amount of horticultural produce and depend heavily on vegetables for the sources of horticultural food crop. The vegetable production in Asia is highly intensive and multiple and successive cropping are routinely practiced. Concomitant with the rapid economic growth in many east Asian countries, the demands for high-quality horticultural crop have been drastically increased among many Asians and their interest in high-quality products, outstanding cultivars, machinery and equipment, production technology has been sharply increased in recent years. It is therefore believed that establishing and maintaining closer and regular relations among scientists and societies could provide an excellent momentum for promotion of horticulture on a global basis and both the ISHS and the ASHS could play decisive roles for this kind of promotion.
Soybean sprouts have been a considered a nutrient-rich vegetable for hundreds of years. To evaluate the seedlot quality of soybean sprouts grown, and to evaluate a method for reducing the presence of improper seeds in soybean seedlots, microbes associated with soybean sprout rot were isolated from samples collected. Morphological characteristics and gas chromatography profiles of the cultured fungal and bacterial strains were identified. Eight types of improper seeds were identified: purple stain(Ps), black rot(Br), seed coat black spot(Cb), wrinkled seed(Ws), brown hilum(Bh), seed coat fracture(Cf), unripe seed(Us), and brown seed coat(Bc). The improper seeds were also dipped into 15%, 20%, and 25% NaCl solutions, as well as a saturated solution of NaCl, for 1min. As the NaCl concentration increased, the number of floating improper seeds increased as well. The highest floating rates were observed for the Cf seeds.
This study was carried out to establish storage methods and to keep high quality of the raw and boiled vegetable peanut. After boiling at 100$^{\circ}C$ for 20min at 7% saline water far 40min the pods were packaged with 80 $\mu\textrm{m}$ Ny/LDPE film in vacuum, 80$\mu\textrm{m}$ LDPE film and Gauge-bag, and stored at room temperature and 4$^{\circ}C$. The moisture content of pods in room temperature were decreased than pods at 4$^{\circ}C$. After 21days storaging with Gauge-bag, texture of pods were toughen because moisture content of pods reduced severely. Colour of raw pods in packaging 80 $\mu\textrm{m}$ Ny/LDPE film vacuum was severely browning but boiled pods was browning little after opening a seal. After 2days storage at room temperature and 21days storage at 4t, pods were deteriorated. The hardness was much lower in boiled kernels than raw kernels and decreased when the storage period elapsed.
A new vegetable peanut cultivar "Charmwon" (Arachis hypogaea ssp. fastigiata.L.) was developed at the Yeongnam Agricultural Research Institute, NICS, in Milyang 2006. It was developed from the cross between the disease resistant cultivar "HYQ(CG)S-10" and the high-yielding cultivar "Sinkwang". "Charmwon" which has been classified as Shinpung plant type is less branch number with early flowering and ellipse-shaped large kernel. Each pod which showed very shallow constriction had two grains with red testa and 100 seed weight was 90g in the regional yield trials (RYT). This variety also showed higher free sugar and protein contents in seed quality, and had more resistant to early and late leaf spot diseases compared with check one. In the regional yield trials "Charmwon" was out-yielded than check variety by 18% with 8.93 ton/ha for fresh pod and by 4% with 3.95 ton/ha for grain.

Coarse grain crops including maize, sorghum, buckwheat, fox-tail millet, pearl millet, proso millet and barnyard millet have been used as health food, feed and industrial materials in Korea for a long time. Korean ancestors thought and treated them as the very important good crops for human health and the crops have served as a dish made with all the grains, particularly in January 15 of the lunar month in korea because the grains make the five viscera of heart, liver, spleen, lungs and kidneys and the six entrails of gall bladder, stomach, small and large intestines, the paunch, the bladder, and the bowels strong and build healthy body. Thus, the objectives of the paper were to review and summarize the results obtained from the quality breeding and functional researches worldwide on nutrition, utilization and medical action of the coarse grain crops. Maize grain, fresh ear and green fodder yields have increased since 1960s in Korea. Agronomic traits improvements also occurred for cold tolerance, disease and insect resistance, resistance to barrenness, resistance to loding, pollen production, grain and seed yields, and eating quality. To assess the food intake and diet quality of preschool children in Pusan, dietary survey was conducted with 176 subjects using 24hr recall method. Diet quality was assessed by food group pattern, dietary diversity score(DDS), dietary variety score(DVS), and dietary frequency score(DFS). The total number of food items consumed was 307. The foods consumed most frequently were rice, Korean cabbage kimchi, milk and green onion. When investigating the consumption pattern of major six food groups, 38.1% of subjects consumed all six groups. Food group was missed in order of fruit(41.5%), sweet(19.9%), dairy(16.5), vegetable(4.5%) and meat(1.7%). The mean values of DDS, DVS, and DFS were 5.16, 13.82, and 16.07 re spectively. Persons who had higher DDSs also had higher DVSs(p<0.001). DDS, DVS and DFS correlated positively with NAR(nutrient adequacy ratio) and MAR(mean adequacy ratio) significantly. Associations between the NAR of most nutrients and MAR with DVS and DFS were higher than those between the NAR of most nutrients and MAR with DDS. People with DDS of above 6 or DVS of above 16 or DFS of above 21 met two thirds of recommended dietary allowance for nutrients. Based on the result of the food group intake, the food intake of subjects was not adequate, especially the fruit and dairy groups. When assessing the dietary quality of subjects using DDS, DVS and DFS, many people appeared not to have a desirable food intake.
Sesame (Sesamum indicum L.) is probably the most ancient oilseed crop known in the world. Sesame seed is known for its high nutritional value and for having oil (51%) and protein (20%) content. The fatty acid composition of sesame oil is palmitic acid (7.8%), stearic acid (3.6%), oleic acid (45.3%), and linoleic acid (37.7%). Sesame oil is characterized by a very high oxidative stability compared with other vegetable oils. Two lignan-type compounds, sesamin and sesamolin, are the major constituents of sesame oil unsaponifiables. Sesamol (a sesamolin derivative) can be present in sesame seeds and oils in very small amount. Other lignans and sesamol are also present in sesame seeds and oils in very small amount as aglycones. Lipid oxidation activity was significantly lower in the sesamolin-fed rats, which suggests that sesamolin and its metabolites contribute to the antioxidative properties of sesame seeds and oil and support that sesame lignans reduce susceptibility to oxidative stress. Sesaminols strongly inhibit lipid peroxidation related to their ability to scavenge free radical. The sesame seed lignan act synergistically with vitamin I in rats fed a low $\alpha$-tocopherol diet and cause a marked increase in a u-tocopherol concentration in the blood and tissue of rats fed an $\alpha$-tocopherol containing diet with sesame seed or its lignan. The authors are reviewed and discussed for present status and prospects of quality evaluation and researched in sesame seeds to provide and refers the condensed informations on their quality.
