Effect of vacuum blending on antioxidant activities of apple juice and blueberry juice

  • The present study aimed to assess and compare the quality characteristics and antioxidant activities of apple juice and blueberry juice at hourly intervals over a period of time based on the presence or absence of vacuum blending (0 and 800 hPa) using a household blender. Measurement of the dissolved oxygen content revealed that the removal rates of dissolved oxygen were approximately 83% and 86% in the apple and blueberry juice samples, respectively, after vacuum blending. Moreover, compared with general blending, there was little change in the antioxidant property and degree of browning over time with vacuum blending. Furthermore, hourly assessments revealed that the decrease in the polyphenol and flavonoid contents in the apple and blueberry juice samples was significantly lesser with vacuum blending for 3, 6, and 12 h than with general blending. Assessment of the change in ferric reducing antioxidant power (FRAP) activity over time revealed that the rate of decrease in FRAP activity over time was lower with vacuum blending than with general blending for both juice samples. ABTS and DPPH radical scavenging assays performed to determine the change in free radical scavenging activity revealed inhibitory activity at 0, 3, 6, and 12 h and confirmed that vacuum blending resulted in long-lasting antioxidant activities in both apple and blueberry juice samples. Taken together, the present results confirmed that vacuum blending is associated with superior quality maintenance and antioxidant properties in comparison with general blending.

Effects of Extraction Methods on Antioxidative Properties of Carrot, Apples, and Blueberry Juices (착즙 방법에 따른 당근·사과·블루베리 주스의 항산화 영양소 비교)

  • This study was performed to compare the vitamin A, E, ${\beta}-carotene$, polyphenol content, and DPPH radical scavenging activity of carrot, apple, and blueberry juices as affected by extraction methods using slow juicer (HJ), no vacuum blending (NVJ) and vacuum blending (VJ). Juice yields of carrot, apple, and blueberry were 100% in NVJ and VJ groups. Vitamin A content of all juices was the highest in VJ group. Vitamin E content in carrot and apple juices increased most in the HJ group, followed by the NVJ and VJ group; Vitamin E content in blueberry juice was higher in the NVJ group than VJ or HJ group. ${\beta}-carotene$ and polyphenol content in all juices were highest in the VJ group. In addition, the differences between vacuum blending and non-vacuum blending were only shown on apple and blueberry juices. Polyphenol content in carrot and blueberry juices increased most in the HJ group, followed by the NVJ, and VJ groups, and in apple juice, polyphenol content was higher in the VJ group than the HJ or NVJ group. DPPH radical scavenging activity in the VJ group was significantly higher than the NVJ group. The results of this study showed the vacuum blending method had outstanding antioxidative nutrients compared to other juicing methods.

Investigation of Nanostructures in Homopolymer and Copolymer Films by Surface Techniques

  • Time-Of-Flight Secondary Ion Mass Spectrometry (TOF-SIMS) and Atomic Force Microscopy (AFM) are the useful instruments to measure nanostructures of material surfaces. Surface pattern formation in blending homopolymer and diblock copolymer films was investigated as a function of film thickness and annealing conditions. In this study, surface structures of blending homopolymer [deuterated polystyrene (Mn 20,000), poly (methyl methacrylate) (Mn 18,000)] and diblock copolymer [Poly (deuteratedstyrene(d8)-b-methyl methacrylate) (Mn 19,500-18,100)] films were observed. The AFM result indicated that the nanostructures and film thickness depended on temperature, concentration and solvent. TOF-SIMS depth profiling was obtained for the lamellar morphology of symmetric dPS-b-PMMA which is found to orient parallel to the surface of the substrate. Elemental and molecular depth profiles measured in the negative ion mode by a Cs+ primary ion beam demonstrate variations in hydrogen, deuterium, carbon, oxygen, hydrocarbons and deuterated hydrocarbons within the diblock copolymer according to the depth.

Preparation and Characteristics of Anionic Surfactant Using Waste Fleshing Scrap (피혁 제조 공정 중 발생하는 폐돈지를 이용한 음이온성 계면활성제 제조 및 특성)

  • Study has been made for producing anionic surfactant using waste fleshing scraps from the leather making process through refining, esterification, sulfonation and blending processes. As a most optimum lard oil refining method, refining was carried out for 4 hours under temperature of $120^{\circ}C$ and approximately 200 mbar vacuum, which gave a recovery of more than 80% lard oil. Refined lard oil obtained thus was undergone methlyl-esterification, then sulfonated to make a degreasing agent. By methyl-esterification using lard oil, more than 85% of fatty acid and $12{\sim}13%$ of glycerine were extracted from the oil. Sulfonation of the extracted fatty acid ester lard oil has shown most optimum at $15{\sim}20%$ chlorosulfonic acid content, and the content of bonding sulfate at this time was higher than 3.5%. Finally the followed anionic surfactant having degreasing force of 80% and higher could be made by blending process.

Bendable Photoelectrodes by Blending of Polymers with $TiO_2$ For Low Temperature Dye-sensitized Solar Cells

  • Dye-sensitized solar cells (DSSCs) based on plastic substrates have attracted much attention mainly due to extensive applications such as ubiquitous powers, as well as the practical reasons such as light weight, flexibility and roll-to-roll process. However, conventional high temperature fabrication technology for glass based DSSCs, cannot be applied to flexible devices because polymer substrates cannot withstand the heat more than $150^{\circ}C$. Therefore, low temperature fabrication process, without using a polymer binder or thermal sintering, was required to fabricate necked $TiO_2$. In this presentation, we proposed polymer-inorganic composite photoelectrode, which can be fabricated at low temperature. The concept of composite electrode takes an advantage of utilizing elastic properties of polymers, such as good impact strength. As an elastic material, poly(methyl methacrylate) (PMMA) is selected because of its optical transparency and good adhesive properties. In this work, a polymer-inorganic composite electrode was constructed on FTO/glass substrate under low temperature sintering condition, from the mixture of PMMA and $TiO_2$ colloidal solution. The effect of PMMA composition on the photovoltaic property was investigated. Then, the enhanced mechanical stability of this composite electrode on ITO/PEN substrate was also demonstrated from bending test.

Effect of Concentration Methods on the Quality of Single and Blended Juice Concentrates

  • Clarified apple, carrot and orange juices were prepared using ultrafiltration and their single and blend juices were further concentrated using ultrafiltration, freeze-drying, and rotary evaporation. Effect of concentration methods on the quality of concentrated single juices and juice blends was investigated. Turbidity values of samples concentrated by evaporation were significantly higher than those prepared by ultrafiltration and vacuum freezing regardless of juice source (i.e., apple, orange or carrot) or blending (p<0.05). The highest soluble solids contents were obtained for the samples concentrated by evaporation process. Concentrated apple juice contained significantly higher amount of vitamin C and soluble solids than concentrated orange and carrot juices regardless of concentration methods (p<0.05). For blended samples, no direct relationships between blend ratio and total amount of vitamin C were found; however, samples contained more apple juice showed the highest value of soluble solids regardless of concentration methods.

  • Water-swollen-hydrogel membranes for gas separation were prepared by dipcoating and thermal crosslinking of poly(vinylalcohol) (PVA) - poly(acrylacid) (PAA) blends on asymmetric porous polyetherimide(PEI) supporters. The polyetherimide supporters, prepared by phase inversion of polyetherimide solutions in N-methylpyrrolidone(NMP) (composition of PEI/NMP=25/75), had good heat and chemical resistane. The coating materials with different blending ratios of PVA/PAA(=90/10, 80/20, 70/30) were characterized with differential scanning calorimetry (DSC), infrared spectroscopy(IR) and the water swelling ratios. The permeabilities and the separation factors of carbon dioxide through these membranes were measured by a mass flow meter and gas chromatograph at different temperatures, respectively, under a vacuum mode of downstream.

Physicochemical and sensory properties of non-alcoholic red wine produced using vacuum distillation (진공 증류 공정에 의해 제조된 무알코올 레드 와인의 이화학적 및 관능적 특성 분석)

  • In this study, the vacuum distillation process for producing non-alcoholic red wine was optimized via response surface methodology. As a result of optimizing the responses (alcohol content, yield) for independent variables (operating time, boiling point, and temperature difference), 1% alcohol content and 81.15% yield were obtained at an operating time of 24.5 min, boiling point of 65℃, and temperature difference of 8℃. To investigate the physicochemical and sensory properties, non-alcoholic wines with different boiling points (bp 25℃, bp 45℃, and bp 65℃) and a blended wine (4.2% of control wine added) were prepared. As the boiling point increased, the alcohol content decreased, and CI (color intensity) and Hue increased. Blended wine exhibited the highest value and bp 65℃ showed the lowest value in terms of sensory properties. In conclusion, distillation at a low boiling point and blending control wine could be used to prepare non-alcoholic wine with a high preference.

Performance Characteristics of p-i-n Type Organic Thin-film Photovoltaic Cell with CuPc: $F_4$-TCNQ Hole Transport Layer (CuPc: $F_4$-TCNQ 정공 수송층이 도입된 P-i-n형 유기 박막 태양전지의 성능 특성 연구)

  • We have investigated the effect of strong p-type organic semiconductor $F_4$-TCNQ-doped CuPc hole transport layer on the performance of p-i-n type bulk heterojunction photovoltaic device with ITO/PEDOT:PSS/CuPc: $F_4$-TCNQ(5 wt%)/CuPc:C60(blending ratio l:l)/C60/BCP/LiF/Al, architecture fabricated via vacuum deposition process, and have evaluated the J-V characteristics, short-circuit current ($J_{sc}$), open-circuit voltage($V_{oc}$), fill factor(FF), and power conversion efficiency(${\eta}_e$) of the device. By doping $F_4$-TCNQ into CuPc hole transport layer, increased absorption intensity in absorption spectra, uniform dispersion of organic molecules in the layer, surface uniformity of the layer, and enhanced injection currents improved the current photovoltaic device with power conversion efficiency(${\eta}_e$) of 0.16%, which is still low value compared to silicone solar cell indicating that many efforts should be made to improve organic photovoltaic devices.
