The Effect of Several Fertilizers on Physiological Active Compounds of Buckwheat(Fagopyrum esculentum Moench) (메밀의 생리활성 물질에 대한 여러 가지 비료의 효과)

  • In order to investigate the change of physiological active compounds in buckwheat with soil chemical properties and soil conditioners, we cultured buckwheat at an experimental open field station, Chonnam Provincial Agicultual Reserch and Extension Service. Fatty acids, phenolic compounds and tyrosinase inhibitory activity (TIA) from buckwheat grains and plants were analyzed. The contents of fatty acids in buckwheat plants was less than that of buckwheat grain. The fatty acids of buckwheat plants and grains were composed of saturated and unsaturated fatty acids. The contents of unsaturated fatty acids were more than saturated fatty acids. The phenolic compounds in buckwheat were from $682.6mg\;kg^{-1}$ to $1822mg\;kg^{-1}$. The phenolic compounds in buckwheat with addition of applied lime were $1822mg\;kg^{-1}$. It was higher than any other plot. The tyrosinase inhibitory activity (TIA) of sediment c in buckwheat grain with addition of applied lime was 92.8%. It was more than that of sediment a, b or compound A, B, C within the same treatment. But the TIA of compound C in buckwheat with application of borax was 81.0%. It was highest of all sediments and compounds within the same treatment.

Quality Characteristics of Commercial Slices of Skate Raja kenojei (국내산과 수입산 시판 홍어회의 이화학적 및 미생물학적 품질 특성에 관한 연구)

  • The purpose of this study was to investigate the quality characteristics of domestic and imported slices of skates Raja kenojei. Four types of slices of skates Raja kenojei were analyzed for proximate composition, extractive nitrogen, free amino acids, and fatty acids. A large amount of TMAO was detected in the domestic slices of skate. Both the domestic and imported skate contained aerobic bacteria, with approximate levels of 6.6 log CFU/g and 5.1${\sim}$6.5 log CFU/g, respectively. The total free amino acids contents of the domestic and imported skates were 579.7 mg and 387.6${\sim}$496.3 mg, respectively; all samples had high levels of taurine, anserine, lysine, alanine, glycine, proline, ${\beta}$-alanine, and histidine. Eleven different saturated fatty acids were found in the domestic skates whereas the impored skate had 7${\beta}$10 different types of saturated fatty acid. In addition, 16 kinds of domestic skate, and 10${\beta}$15 kinds of imported skate were analyzed for unsaturated fatty acid content. From the overall results, the domestic skate proved to be a better source of amino acid, and had higher levels of aerobic bacteria and fatty acids than the imported skate.

  • Fatty acids such as n-3 and n-6 polyunsaturated fatty acids (PUFA) are critical nutrients, used to improve male reproductive performance through modification of fatty acid profile and maintenance of sperm membrane integrity, especially under cold shock or cryopreservation condition. Also, PUFA provide the precursors for prostaglandin synthesis and can modulate the expression patterns of many key enzymes involved in both prostaglandin and steroid metabolism. Many studies carried out on diets supplemented with PUFA have demonstrated their capability to sustain sperm motility, viability and fertility during chilling and freezing as well as improving testis development and spermatogenesis in a variety of livestock species. In addition to the type and quantity of dietary fatty acids, ways of addition of PUFA to diet or semen extender is very crucial as it has different effects on semen quality in male ruminants. Limitation of PUFA added to ruminant ration is due to biohydrogenation by rumen microorganisms, which causes conversion of unsaturated fatty acids to saturated fatty acids, leading to loss of PUFA quantity. Thus, many strategies for protecting PUFA from biohydrogenation in rumen have been developed over the years. This paper reviews four aspects of PUFA in light of previous research including rumen metabolism, biological roles, influence on reproduction, and strategies to use in male ruminants.

  • Attempts were made to investigate on the fatty acids of Lentinus lepideus Fr. Fats were extracted from its carpophores and saponified with alcoholic potassium hydroxide. Isolated fatty acids were methylated and were subjected to column chromatography and GLC. Six saturated fatty acids, i.e., dodecanoic, tridecanoic, tetradecanoic, pentadecanoic, hexadecanoic and octadecanoic acids were identified. Especially myristic acid was abundant. Four unsaturated fatty acids, i.e., hexadecadienoic, oleic, linoleic, linolenic acids, were identified. Especially oleic and linoleic acid were abundant.

  • Purification method of unsaturated fatty acid from silkworm pupa has been set up. Over 70% of total fatty acid was unsaturated form. Unsaturated,fatty acid from silkworm pupa improved hyperlipemia in the induced hyperlipemial mice, increased the production of collagen, inhibited the activity of collagenase, and cured the dryness-induced skin very quickly.

Biogas Production Performance Based on Carbon Number and Double Bond Count of Long-chain Fatty Acids

  • Purpose: The objective of this study was to investigate the high-efficiency anaerobic digestion of organic wastes with high fat content. Specifically, the analysis focused on biogas production performance with a focus on carbon number and the double bond count of the long-chain fatty acids (LCFAs), which are hydrolysis products of triglycerides. Methods: Experiments were performed under mesophilic anaerobic conditions with a feed-to-microorganism ratio (F/M) of 1.0. Biogas production performance was analyzed through biogas production patterns, lag-phase, and the time required for 90% biogas production (T90). Results: Biogas production increased when the content of unsaturated LCFAs (containing relatively large numbers of carbon atoms) increased. In substrate containing LCFAs with four or more double bonds, although the initial lag-phase in biogas production was shortened, development of a three-step lag-phase resulted in decreased biogas production. These results suggest that high rates of anaerobic digestion are possible when the LCFAs have high unsaturated fatty acid content with three or fewer double bonds. Conclusions: When various types of LCFAs are digested anaerobically, biogas production performance can be improved if the unsaturated fatty acid content and number of double bonds are optimized for maximum production.

Comparison of the Fatty Acid Composition and Small Molecular Metabolites between Yanjin Blackbone Chicken and Piao Chicken Meat

  • The fatty acid composition and small molecular metabolites in breast and leg meat of Yanjin blackbone chickens (YBC) and Piao chickens (PC) were detected by gas chromatography-mass spectrometry and liquid chromatography-quadrupole static field orbital trap mass spectrometry. Thirty-two fatty acids were detected, and the total fatty acid content of PC was significantly higher than that of YBC (p<0.05). Oleic acid, linoleic acid, palmitic acid, stearic acid, and arachidonic acid were the main fatty acids in the two chicken varieties, and the composition of fatty acids in the two varieties were mainly unsaturated fatty acids, being more than 61.10% of the total fatty acids. Meanwhile, 12 and 16 compounds were screened out from chicken legs and chicken breasts of YBC and PC, respectively, which had important contributions to the differences between groups.

Chemical Composition of Pine Sprouts and Pine Needles for the Production of Pine Sprout Tea (송순차 제조를 위한 송순 및 솔잎의 화학적 조성)

  • As a basic study for preparing pine sprout tea, chemical components in pine sprouts and pine needles were analyzed as follows: In proximate composition the contents of most components except for crude fat were different between in pine sprouts and pine needles. Moisture content in pine sprouts was higher than that in pine needles. Calcium and potassium were major minerals contained in pine sprouts and needles, and their contents in pine needles picked in December were higher than those picked in June. Soluble tannin and vitamin C contents in leaf part of pine sprouts were much higher than those in stem part and their contents in pine needles were increased according to their growth. Free sugars like fructose, glucose and sucrose were contained in both pine sprouts and needles, and their contents in pine sprouts were higher in stem part as compared that in leaf part. Although fourteen kinds of amino acids were detected in pine sprouts and pine needles, their contents were extremely low. Amino acid composition between pine sprouts and pine needles was different each other, but major amino acids contained in them were same, those are acidic amino acids such as aspartic acid and glutamic acid. Amino acid contents in pine needles were increased according to the growth. In fatty acid composition in leaf part of pine sprouts, saturated fatty acid contents were higher than unsaturated fatty acid contents, but in stem part unsaturated fatty acid contents were higher. In pine needles the amount of saturated fatty acid was increased with the growth, but the amount of unsaturated fatty acid was rather decreased.

Identification of Quantitative Trait Loci for Fatty Acid Content in Brown Rice (Oryza sativa L.)

  • The rice bran oil contained in brown rice is composed of highly valued ingredient. Improving the content of unsaturated fatty acids in rice seed, such as oleic acid, linoleic acid, and ${\alpha}$-linolenic acid, would provide more benefit to human health. Fatty acid content is quantitative trait controlled by multiple genes. We have utilized high-density SNP data from highly advanced breeding populations to identify QTLs for fatty acid contents in brown rice. Here, we identified 51 major QTLs (M-QTLs) and 25 epistatic QTLs (EpQTLs) related to eleven fatty acid contents. Eight and four M-QTLs were pleiotropically associated with the content of different fatty acids in MT-RILs and DT-RILs, respectively. Total effect of M-QTLs for palmitic acid (16:0), oleic acid (18:1), and linoleic acid (18:2), could explain phenotypic variations of 36.7%, 63.7%, and 41% in MT-RILs, respectively. Alpha-linolenic acid which is important for a human's health could be explained phenotypic variation of 15.7% by six M-QTLs. These QTLs identified in this study can be used to improve nutritious content in rice breeding programs.

Effect of Different Cooking Methods on the Composition of Intramuscular Fatty Acids of Hyla Rabbit

  • The influence of three cooking methods (stewing, microwaving and Aluminium (Al) foil-baking) was evaluated on the content of intramuscular lipid and the composition of intramuscular fatty acids of Hyla rabbit. The percentage of intramuscular lipid in cooked-longissimus dorsi (LD) (dry weight %) were in the order mentioned below: microwaving > foil-baking > stewing. All treated samples showed decrease in the proportion of polyunsaturated fatty acids (PUFA) and monounsaturated fatty acids (MUFA), whilst increase in the proportion of saturated (SFA) and n-6/n-3 value during processing. All of the cooked samples had the n-6/n-3 ratio within the recommended range (5-10). By the analysis of partial least squares regression (PLSR), the microwaving treatment was better to keep the stability of unsaturated fatty acids (UFA), whilst the long-time Al foil-baking did the most serious damage to UFA, especially the PUFA. In addition, the heating method showed greater influence on the samples than the processing time. The shorter processing time was better to retain the intramuscular PUFA of Hyla rabbit, especially the LC-PUFAs (C20-22). Considering all the factors, microwaving showed the superiority in reserving the composition of intramuscular fatty acids of Hyla rabbit.
