A potentially functional yogurt co-fermented with Monascus-fermented soybean powder (MFSP) was prepared, and its quality and antioxidant properties were investigated. Skim milk powder with (SMP+MFSP, 1:1, w/w) or without MFSP (SMP; control) was fermented by probiotic cultures consisting of L. delbrueckii subsp. bulgaricus KCTC 3635 and S. thermophilus KCTC 5092. The functional yogurt fermented with MFSP contained significantly (p<0.05) higher levels of ${\gamma}-aminobutryric$ acid (GABA; $107.22{\pm}3.06{\mu}g/g$), isoflavone aglycone (daidzein+genistein; $201.21{\pm}6.29{\mu}g/g$), and ubiquinone ($39.05{\pm}0.08{\mu}g/g$) than the control yogurt. During fermentation at $36^{\circ}C$ for 48 h, the functional yogurt displayed higher titratable acidity, viable cell numbers, and radical scavenging activity and a lower pH than the control yogurt (p<0.05). These results indicate that MFSP has great potential for enriching the free isoflavones, GABA, and ubiquinone contents in yogurt.

The ubiquinone and G+C contents of the bioflocculant-producing fungus, a new Aspergillus strain, were detennined using high-perfonnance liquid chromatography. The internal transcribed spacers 1 and 2 (ITS1 and ITS2), and the 5.8S ribosomal DNA (rDNA) of the strain were amplified and sequenced. The strain contained ubiquinone-l0($H_2$)as a major quinone and the G+C content was 49 mol%. A phylogenetic analysis of the ITS regions indicated that the strain belonged to the genus Aspergillus according to its previously classified morphological characteristics. Based on a sequence homology search, the strain was most closely related to Petromyces muricatus (anamorph, A. muricatus; accession number, AJ005674). The sequence of a new Aspergillus strain in ITS1 and ITS2, and 5.8S rDNA showed 97% homology to P. muricatus. Therefore, the strain is believed to be a new bioflocculant-producing Aspergillus strain.
A $Q_{10}$-producing photosynthetic bacterium was isolated from the silt at Nakdong river. The isolate had 1.55 mg of $Q_{10}$ per gram of dry cell. By the 16s-rDNA sequence analysis, the isolate was found to be Rhodobacter sphaeroids with 100% similarity (Genbank Accession No.=AM696701).
A new methyltrophic bacterium which utilizes methanol as a sole source of carbon and energy was isolated from soil. It was Gram-negative, nonmotile, nonspore-forming rod, and strictly aerobic bacterium. Catalase and oxidase activities were present. Nitrate was reduced to nitrite. Vitamins and other growth factors were not required. Generation time was 1.6 hr under the optimal condition. The isolate assimilated methanol via the ribulose mono-phosphate pathway (Enter-Doudoroff varient) and did not have .alpha.-ketoglutarate dehydrogenase. It assimilated ammonia through glutamate dehydrogenase. The guanine plus cytosine content of the DNA was 61.0 mol%. The celular fatty acid composition was primarily straight-chain saturated $C^{16 : 0}$ acids (palmitic acids) and unsaturated $C_{16 :1}$ acid (palmitoleic acids), and the isolate also contained two unidentified $C_{17}$ branched fatty acids. The major ubiquinone was Q-8, and Q-6 and Q-7 were present as minor components. Phosphatidylethanolamine and phosphatidylglycerol were predominantly present, and diphosphatidyglycerol was also detected. Based on the physiological and biochemical properties, the isolate was assigned to a novel species of the genus Methylobacillus, Methylobacillus methanolovorus sp. nov.
A new hydrogen sulfide-oxidation bacterium, Thiobacillus sp. was isolated from waste coal mine water around Hawsun in Chunnam province. The isolate was motile gram-negative rod shape, formed spore and grew up to be aerobically facultative chemolithotroph by using energy released from the oxidation of reduced inorganic sulfur compounds. It could assimilate various kinds of organic compounds and grew well upon thiosulfate-supplemented basal medium. To the lelvel of 32 mM in thiosulfate concentration, thiosulfate in itself was utilized as energy source for growth. However, from those of the higher concentration than 32 mM, thiosulfate functioned specifically as the substrate inhibitor rather than as the energy source. It was found that the optimum thiosulfate concentration for growth was 32 mM. The G+C content of the DNA was 65.0 mol%. The isolate had 16 : 1 + 17$_{cyc}$, 16 : 0 as their major non-hydroxylated cellular fatty acids, 3-OH 12 : 0 as a hydroxylated fatty acid and also contained unidentified $C_{18}$ branched fatty acid. The ubiquinone system in the respiratory chain was Q-9. Based on the physiological and biochemical characteristics, the isolate was assigned to a novel species of the genus Thiobacillus sp. iw.

The diversity of bacterial populations in rivers flowing through Changwon City, was investigated using quinone profiling. The physicochemical properties such as temperature, pH, dissolved oxygen(DO), dissolved organic carbon (DOC) and biochemical oxygen demand (BOD) were also measured in this study. Ubiquinone (UQ)-8, UQ-9 and UQ-10 were observed in all samples for the sites investigated. UQ-8 was the -predominant quinone species in rivers except for Namch'on downstream, T'owolch'on, and Kaumchongch'on in autumn, while UQ-8 was also found as major quinones in the sample except for Hanamch'on, T'owolch'on, Kaumchongch'on, and Namsanch'on in winter. A higher concentration of DOC in rivers yield high concentration of plastoquinone (PQ-9) in autumn and those of total quinones in winter, respectively. Correlation analysis also indicate that BOD is considered to be a major factor controlling the concentration of PQ in rivers.
A new strain of acidophilic, acetogenic bacterium, Acetobacter sp. strain HA was isolated by selective enrichment from the traditionally fermented rice wine vinegar in Korea. It was a gram-negative, non-motile short rod and oxidized acetate and lactate. The optimal temperature and pH for growth were $28^{\circ}C$ and 4.0, respectively. The strain HA differed from other Acetobacter species by growing well on methanol, xylitol, inositol, dulcitol, D-xylose, L-arabinose, and D-mannose as sole sources of carbon and energy. The isolated strain HA did not produce $\gamma$-pyrones from glucose and did not produce ketone bodies from glycerol. The quinone system used in this study was an ubiquinone-9 isoprene unit. The guanine-plus-cytosine content of the DNA was 50.7 mol%, and the major cellular fatty acids were $C_{18:1} and C_{16:0}$.
Cultivation of a $Q_{10}$-producing photosynthetic bacterium, Rhodobacter sphaeroids, was carried out in a 1-L flask to characterize its cellular growth reaction. The result of experiment showed that dissolve oxygen in the broth was depleted within 7 h. ORP decreased with decrease of DO, and recovered somewhat with increase of pH. The growth of R. spahaeroids reached at late-log phase in 140 h of reaction. The final pH and dry-cell weight were 7.62 and 2.2 mg/mL, respectively. The $Q_{10}$ content in the final broth was 2.35 mg/g dry cell weight, which was higher than that obtained in tube culture.
The energetics at the succinate:quinone oxidoreductase segment of V. alginolyticus was studied using a fluorescence quenching technique with inside-out membrane vesicles. A transient generation of the membrane potential (inside-positive) and ${\Delta}pH$ (inside-acidic) occurred in the presence of KCN and succinate when ubiquinone-1 (Q1) was added. The membrane potential (\Delta\psi$) generated by the succinate; quinone oxidoreductase segment was completely collapsed by the protonophore carbonylcyanide m-chlorophenylhydrazone (CCCP) and the membrane permeable anion $SCN^{-}$, whereas the ${\Delta}pH$ was completely collapsed by CCCP and $(NH_4)_2SO_4$. From these results, it was concluded that the succinate: quinone oxidoreductase segment as well as quinol oxidase [1] in the respiratory chain of V. alginolyticus generated $H^{+}$ electrochemical potential.
One strain of cellulose-producing Acetobacter was isolated from the traditionally fermen- ted grape vinegar in Korea. The isolated strain, designated as KI strain was identified as the Acetobacter xylinum with respect to physiological and biochemical characteristics. KI produced acetic acid from ethanol, and then decomposed acetate to CO$_{2}$ and H$_{2}$O. When the isolated strain was cultivated statically in broth culture, a thick cellulose pellicle was formed. KI was tolerance of 8% ethanol and 30% glucose, and the isolate was positive in ketogenesis from glycerol, $\gamma$-pyrone from glucose and fructose, and 2-ketogluconic acid from glucose. KI strain possessed straight-chain C$_{18:1}$, C$_{16:0}$, and C$_{14:0}$ fatty acid, and contained ubiquinone Q$_{9}$ and Q$_{10}$ as isoprenoid quinone. DNA base composition of KI strain was 57.6% G+C.
