The purpose of this study was to investigate of the dietary life and nutritional status of the Buddhist priests. Dietary life, the state of prepare a meal and menu are carried out through the questionnaire and the nutritional status is carried out through the analysis of the constituents of the blood. The results of this study can be summarized as follows. 1. The traditional temple's foods undergo a change with the variety and westernization of dietary life. 2. Buddhist priests take a carbohydrate centered meal and the intake of protein and lipid is tendency to lack, but the intake of vitamin and mineral is sufficient with various vegetables. 3. The content of the lipid compoents and glucose of blood are low and they are free from the danger of geriatric diseases but the content of triglyceride is very higher than the healthy general adults. Therefore it is necessary to improve the nutritional status of the buddhist priests with decrease the intake of rice and increase the various side dish and to develop the standard menu for the Buddhist priests.
In Korea, there is an urgent need to identify nutrition-related risk factors for obesity, because the prevalence of these conditions continues to rise among Koreans. While some studies suggest that westernized dietary pattern may increase the risk of obesity, others do not support these findings. Longitudinal studies examined the role of dietary patterns in relation to changes in body fat composition. Nowadays rapid changes in dietary patterns are related to socioeconomic status and westernized diet. Major dietary changes include a large increase in the consuming of at in the diet and a fall in total cereal intakes and fiber. This research showed remarkable decline in the consuming proportion of the grains and vegetables. These results fit closely with the trend toward increased prevalence of obesity in Korea. Most longitudinal studies on these relationships among children and adults showed that the dietary patterns affected obesity. In conclusion, we need programs to promote healthy Korean diet pattern in Korea.

The isoflavonoids comprise a group of phyto-oestrogens that have useful biological activities including oestrogenic, antioxidant and anticancer. As dietary components for humans, they are bioavailable from leguminous vegetables (such as genistein from soybean), and have been well-documented to have numerous health benefits. A wide range of epidemiological studies in humans and limited studies in animals have identified isoflavonoids as potential chemopreventive agents against hormone-dependent cancers. Therefore, an attempt has been made through this review to summarise the information in the mechanisms aspect of isoflavonoid phyto-oestrogens in inhibiting cancer in vitro and in vivo in the models of human cancers.
Northeast Asia comprises many characteristic cultural areas including China, Mongolia, Korea and Japan. These areas have their own traditional food cultures, and Korea is known as the home of fermented foods in this region. The origin of Northeast Asian fermented foods, cereal alcoholic beverages, fermented vegetables(kimchi), fermented fish and fermented soybean products were investigated in relation to the primitive earthen vessels developed in this region. The geographical and environmental background of the appearance of primitive pottery culture in the Korea Strait region, and its influence on the development of fermentation technology in Northeast Asia were reviewed focusing on Korean dietary culture.
The purpose of this study was to investigate the effect of green dietary life recognition and low-carbon green life practice on health-related dietary habits in high school students. The subjects were 367 high school students in the Incheon area. This cross-sectional survey was conducted using a questionnaire, and data were analyzed with the SPSS 20.0 program. According to the findings, green dietary life recognition were categorized into two sub-factors: 'Eco-friendly traditional dietary life', and 'Life of consideration and thanks'. Low-carbon green life practice was 'Low-carbon green life', and health-related dietary habits were categorized into four sub-factors: 'Vegetables-oriented traditional dietary habits', 'Balanced dietary habits', 'Life practice for health', and 'Various cereals intake'. Green dietary life recognition showed a significantly positive relationship with all sub-factors of health-related dietary habits (p<0.05), whereas 'Eco-friendly traditional dietary life' had no significant effect on 'Balanced dietary habits'. Low-carbon green life practice showed a significantly positive relationship with all sub-factors of health-related dietary habits (p<0.01). Students who received green growth education showed significantly higher health-related dietary habits than those who did not (p<0.01). Girls showed significantly higher green dietary life recognitions and low-carbon green life practice than boys (p<0.01). Therefore, more green dietary life and low-carbon green life education programs targeting students are need. Voluntary activities, along with green dietary life and low-carbon green life education will help students improve their health-related dietary habits.
본 연구는 식품첨가물공전, 식품공전 및 Codex 에서의 첨가물관리현황을 비교 분석하여 첨가물공전 체계의 개선방향을 제시함으로서 국제적으로 조화가능한 과학적 및 체계적 기준 규격을 수립할 수 있도록 하기위해 착수되었다. 그 결과를 요약하면 국내에서의 식품의 분류 및 명칭을 Codex 식품분류체계와 비교, 검토한 후 우리나라 전통식품의 첨가물 사용과 관련하여 Codex 식품분류에 포함될 수 있도록 모색하였다. 식품공전에 있는 식품들을 검색한 결과 한과류, 엿류, 두부류와 묵류, 식용유지류, 다류, 조미식품, 김치전임식품, 인삼 및 홍삼제품의 8개 식품군에 속하는 식품들의 분류, 정의, 명칭, 첨가물 사용여부를 감안하여 Codex 기준과 조화시키기 위한 개별적인 개선방안을 제시하였다.
The changes in ingredients, seasonings and cooking methods of Japchae in Korean cook books published from the 1600s to the 1960s were investigated in this study. Japchae was a royal dish enjoyed by Kwanhaegun of Joseon Dynasty and interesting historical story is contained in it. Kwanghaegun Ilgi in 1608 showed that Japchae was Kwanghaegun's favorite dish. Therefore, it has been thought that Japchae was created in the 17th century. Wonhaengeulmyojeongrieugye in 1796 described bellflower Japchae and mungbean sprout Japchae. The traditional Japchae was made without glass noodle called dangmyeon. Eumsikdimibang in 1670 first introduced traditional Japchae, which was made with 20 different ingredients and then served with topping sauce made of pheasant broth, strained soybean paste and wheat flour. Japchae in Kyugonyoram(1896) was prepared by mixing mungbean sprout, watercress, gonjasoni, tripe and yukhwe with mustard. The current style Japchae with glass noodle first appeared in the 1920s and became popular in the 1950s because the traditional Japchae was described in cook books until the 1940s. There were two ways of preparing current style Japchae. Yijogungjeongyoritonggo in 1957 described Japchae was made by mixing the boiled glass noodle with other ingredients and seasonings together. On the other hand, Japchae in Urinaraeumsikmandeuneunbeob(1960) was prepared by seasoning first with other ingredients, and then mixing boiled glass noodle. A variety of ingredients - vegetables, mushrooms, meat, fish, pheasant, beef tong, sea cucumber, gonjasoni and pear - has been used to prepare Japchae. Japchae has been seasoned with ginger, soy sauce, black pepper, sesame salt, sesame oil, oil, leek, garlic, salt, sugar, vinegar and mustard. Egg strips, pine nut, thin strips of Shiitake and stone mushroom, red pepper threads, Chinese pepper(cheoncho), black pepper and ginger were used for garnishing.
In order to improve the quality of traditionally sun-dried red peppers and to increase the efficiency of drying performance, three types of solar dryers were designed and built, and drying performance of the solar dryers was compared to traditional sun drying. Results obtained from the experiment are summarized as fallows: 1. The air temperature and relative humidity profiles over a 8-hour period measured at the specified locations in the drying chamber of solar dryers appeared to have large variation in each dryer. The rate of drying increased with the temperature rise in the drying chamber of the solar dryer. 2. In general. drying with solar dryers proceeded faster than traditional sun drying. With A'-type of solar dryer developed in the second experiment it was possible to dry red peppers in seven days from an initial moisture content of 80% to safe storage conditions. The drying time with the A'-type solar drier was 50% shorter compared to traditional sun drying. 3. Red peppers appeared to have an increasing or constant-rate drying period until the weight of the product was reduced to about one half the initial weight, followed by a falling-rate drying period. When the dried red peppers were exposed to the atmospere during the night, the moisture content increased as much as 6%, which is much higher than for the grains. 4. It was suggested from the experiment that either a heat storage system or a supplemental heating system in the solar dryer was desirable for more efficient drying operation. 5. It was shown that the solar dryer developed in this study may be suitable for drying other vegetables and fishes, and also offered additional advantages of saving in drying time, maintaining sanitation and minimizing contamination by dust, insects and unfavorable weather condition.
