韓菓의 大量生産을 위한 연구 - 제조공정 및 기기설비류를 중심으로 - (A study on Mass Production of Korean Traditional Cookies - Manufacturing process and Machinery -)

  • The purpose of this study is to investigate the manufacturing process for mass production of korean traditional cookies to be supplied to consumers with cheap price. Selected items for mass production is Yoomilkwa such as Yackwa. Maejackwa which preferred by consumers, and Chasookwa which was presented at royal party in YiDynasity. Standard mixing ratio of food material, manufacturing process, and machinery needed in each manufacturing process were suggested by the items of korean traditional cookies. Manufactured goods which is produced in large quantities by machinery are Yackwa model I, II Maejackwa model I, II, III, and Chasookwa model I, II.

  • 자동차 제조업은 에너지 소비가 많고, 오염물질을 많이 배출하는 전통적인 제조업으로 공급망의 디지털 전환을 통해 환경성과를 향상시킬 필요가 있다. 본 연구에서는 공급망의 디지털전환, 공급망 동적 역량 및 기업 환경성과를 바탕으로 13개의 가설을 제시하였다. 중국 7개 지역 자동차 제조기업의 경영자 및 종업원을 대상으로 설문조사를 실시한 결과 공급망의 디지털 전환이 공급망 동적 역량의 영향을 받아, 자동차 제조기업의 환경성과를 향상시키는 데에 영향이 있는 것으로 나타났다.

전통 누룩으로부터 분리된 Saccharomyces cerevisiae HA3을 이용한 하향주의 제조 및 특성 (Manufacturing and Characteristics of Korean Traditional Liquor, Hahyangju Prepared by Saccharomyces cerevisiae HA3 Isolated from Traditional Nuruk)

  • 대구 무형문화재인 하향주 생산의 표준화를 위하여 전통 누룩으로부터 29균주의 효모를 분리하다. 이들을 대상으로 산 생성능을 측정한 결과, 분리된 효모들은 산 생성능이 비교적 양호 하였고 분리된 효모들을 50% glucose가 첨가된 YM broth에서도 생육이 우수하였다. 10% 에탄올 농도에서도 내성을 나타내는 HA2 HA3, HA4 균주를 대상으로 주정계를 이용하여 에탄올 생성능을 측정한 결과, 각각 10.8%, 10.45%, 10%로 단 시간에 고농도의 에탄올을 생산하였다. 분리된 효모 중 내당성, 산생성능, 에탄올 생성능, 에탄올 내성이 우수한 효모 HA3을 하향주 주조를 위한 산업적 이용 균주로 최종 선발하였고 ITS 영역 증폭을 통하여 동정한 결과, HA3은 Saccharomyces cerevisiae와 97% 상동성을 나타내어 Saccharomyces cerevisiae HA3로 명명하였다. 선발된 효모인 Saccharomyces cerevisiae HA3를 주모로 첨가하여 하향주를 제조하여 전통적 방법으로 제조되는 하향주 발효와 비교한 결과, 환원당의 함량, 아미노산함량 pH 변화는 큰 차이가 없었으나 주모 첨가는 밑술 발효시 효모의 생육이 빠르게 유도되어 상대적으로 젖산균의 증식이 억제시킴으로써 유기산 중 lactic acid의 함량 및 높은 산도를 낮출 수 있었으며, 22%로 높은 알콜 발효력을 보였다. 또한 주모를 첨가하여 제조한 하향주는 관능적 기호도 평가에서 전반적 기호도가 전통적 제조법으로 주조한 하향주 보다 우수함을 확인하였다.

  • This paper is intended to propose what manufacturing configuration (manufacturing planning and shop floor control) is suitable for the tire industry. Basically tire-manufacturing process is mixed-products, parallel-disconnected-flow-shop. Both throughput time and cycle tine are very short, the variety of tires is very high, the setup time is long, shop floor data reporting requirements is high, and there are many equipments and people working. And with no exception, tire industry also now confronts increasing requirements of delivery conformance with the above peculiar characteristics of tire manufacturing and changing market environments, this paper suggests, weekly master scheduling with no MRP is desirable and traditional kanban is right selection for shop floor control/scheduling. This paper describes why this configuration should be, using the manufacturing engineering principles and some new insights like four primitives of parallel flow shop. Generally known that shop with high parallel-product-mix and long setup time isn't good candidate for kanban. The four primitives of parallel flow shop explain why kanban is also useful scheduling technique in that environment.

강원도 전통주의 제조 특성에 관한 문헌 연구 (Study on manufacturing methods of gangwondo tranditional liquors)

  • It is important to encourage the restoration of the production of traditional Korean liquors, which is being undertaken by individuals, companies, and the government. The flavours of traditional liquors differ and depend on the environment and raw materials. This study on the traditional Gangwondo liquor is based on literature review and oral tradition. The history of and the scientific rationale behind the use of malt, which is a characteristic feature of the traditional Gangwondo liquor manufacturing process, must be systematically researched. It is important that independent two-step fermentation is used in Gangwondo, while in other regions simultaneous two-step fermentation is used. We expect that the current research on fermentation will be useful for the production of various traditional liquors. The total production of traditional liquors will need to be increased to meet the needs of the world festival, 2018 Olympic Winter Games in Pyeongchang.

방위산업의 시장구조 결정요인이 기술혁신과 시장지배에 미치는 영향 (The study of the relationship of the defense industry-specific factors effect the innovation of manufacturing technology and the market share.)

  • This study examines the relationship of the industry-specific factors that effect innovation of manufacturing technology and the market share within the defense industry. Since the establishment of the basic defense industry framework in 1973, there were numerous interactions of the industry-specific factors of the defense industry structure with the technological innovation and market organization of the defense industry. During last three decades, the domestic defense industry has achieved the considerable level but the framework of the basic system has not developed much in areas of the military science and the defense manufacturing technology. Industry-specific factors were formed in the process and appeared in a variety of behavioral characteristics as subsystems. Currently, there IS a growing trend where the management of defense industry is gradually deteriorating due to limitation of the domestic industry-specific factor (e.g. defense technologies, amount of demand, etc.). If there is a prominent imbalance of the industry-specific factors. it can trigger the potential problem of conflict, lack of cooperation and control, slowing the growth of the manufacturing technology thereby diminishing the market and deteriorating the defense supply/demand relationship. In a research conducted by Joe S. Bain, Bain analyzed the relationship of the traditional industrial organization where industry-specific factor(S) not only impacts the conductor(C). And, conductor(C) influences the shaping of the performance(P) of relationship of the traditional industrial organization. Consequently, the researcher has identified the demand monopoly, barriers to entry, and market competition with comparison of defense industry issues. These defense issues were three industry-specific factors identified, which are 1) The demand monopoly and The entry barriers to new market competition, 2) the industrial technical factor to a production technical competitiveness and a market sharing competitiveness, 3) the probability factor to revolution for military affairs(RMA) and a R&D production. According to baseline with these factors, the following research model is established from the special companies group(Group A), the systematization companies group(Group B), and the general companies group(Group 0. The hypothesis is that if there are more industry-specific factors, then there will be more relationships of defense industry relation statutes. This research is an empirical study on the relationship that the industry specific factors effects the innovation of manufacturing technology and the shaping of the market in the defense industry. Moreover, the existing models to evaluate the industry specific factors of the defense industry IS much to be desired with the controlled statistical analysis of the result. It is vital to study on current situation with suggesting alternative strategy to the efficient strategy. The descriptive analysis approach analysis is conducted with SPSSWIN to conduct reliability test, factor analysis, correlation analysis, cross-tabulation analysis, one-way ANOVA, and multiple regression analysis. However, there were some limitations of the survey such as the rigidity of concept about the technical factors and various market management factors. The wishes is that the decision-maker could be utilized these defence industrial factors to formulate efficient defence policy and strategy in the future.

  • This subject is about the study on digital contents development of traditional Korean furniture to find our traditional peculiarity that is disappearing gradually in the rapid computerization. In order to carry out this subject, we established some methodology to industrialize the culture, the style, the manufacturing process and the configuration details of traditional furniture in the form of digital contents with reference to books regarding the furniture in Chosun Dynasty and furniture collection in possession of museum, gallery, etc. This study made a database about traditional Korean furniture systematically to be used as basic materials that are available for diverse culture business as a whole with Korean identity in the future. The contents of this study are as follows: 1) Style of traditional furniture 2) Decoration of traditional furniture 3) Manufacturing process of traditional furniture 4) Configuration details of traditional furniture The contents work of traditional Korean furniture was to secure the identity of Korean furniture from the point of culture and to provide an alternative of modernization by re-illuminating the superiority of traditional furniture in discontinuation from the point of industry.

  • 식초는 신맛을 내는 역할에 집중되어 개발되고 산업화되어 발효 식초보다는 합성 식초가 발달하였다. 최근 다양한 영양성분을 함유하고 있는 발효 식초에 대한 소비자들의 관심이 발효 식초 산업의 성장을 증가시키고 있다. 미용에 관심이 많은 여성소비자들을 겨냥한 파인애플, 자몽, 알로에 등 다양한 외국산 과일을 사용하는 식초가 개발되어 판매되고 있으나, 쌀과 같은 지역 특산물을 이용하는 전통 발효 식초는 과일 식초에 비하여 성공적인 상업화가 드문 편이다. 따라서 지역에서 생산되는 다양한 농산물을 활용하여 부가가치가 높은 기능성 식초 제품을 개발하고 상업화하기 위한 보다 체계적인 기반 연구가 필요하다. 본 연구에서는 우리나라의 고문헌을 바탕으로 전통 발효 식초의 종류와 제조방법에 대해서 고찰하였다. 우리나라 고유의 전통발효 식초 제품을 개발하기 위한 연구가 필요한 것으로 사료된다.
