Alcohol Consumption and Drink-Related Behavior of Male University Students in Daegu: A Comparison of 1999 and 2009 (대구지역 남자 대학생의 음주 실태와 음주 행동에 관한 연구: 1999년과 2009년 비교)

  • This study was conducted to investigate the changes in alcohol consumption of male university students in Daegu, Korea and their drink-related behavior. The study focused on these changes over a decade using self-administered questionnaire surveys and health examinations that were carried out at a university campus in 1999 and in 2009. In both years more than 85% of students responded that they drank alcohol. However, significant increases in the frequency and amount of alcohol consumption were found (p<.001). The main influence on students' drinking behavior was friends/peers in both years. The most frequently preferred alcohol of respondents was so-ju (a traditional Korean liquor) in both years. However, the most frequently preferred type of food to accompany drinking had significantly changed (p<.01). Other changes including the increase of drinking speed and smoking during drinking were found to have significantly changed (p<.05) while significant difference regarding the decrease in food intake during drinking was not found. No significant difference in the amount of alcohol consumed was noted between underage drinkers and drinkers of above the legal drinking age. Heavy drinkers in the 2009 population had significantly higher systolic blood pressure than non-drinkers and moderate drinkers (p<.01). This study also indicates that there may be a rise in heavy drinking and/or binge drinking among drinkers including underage students. The results of this study suggest that alcohol-blood pressure associations are considered to be of concern even in young adults. This study also suggests the need for special alcohol prevention programs or campaigns to intervene in the behavior of students.

Anti-inflammatory and antioxidant effects of umbelliferone in chronic alcohol-fed rats

  • BACKGROUND/OBJECTIVES: Inflammation is associated with various types of acute and chronic alcohol liver diseases. In this study, we examined whether umbelliferone (7-hydroxycoumarin, UF) ameliorates chronic alcohol-induced liver damage by modulating inflammatory response and the antioxidant system. METHODS: Rats were fed a Liber-Decarli liquid diet containing 5% alcohol with or without UF (0.05 g/L) for 8 weeks, while normal rats received an isocaloric carbohydrate liquid diet. RESULTS: Chronic alcohol intake significantly increased serum tumor necrosis factor-${\alpha}$ (TNF-${\alpha}$) and interleukin 6 levels and decreased interleukin 10 level; however, UF supplementation reversed the cytokines related to liver damage. UF significantly suppressed hepatic lipopolysaccharide binding protein, toll-like receptor 4 (TLR4), nuclear factor kappa B, and TNF-${\alpha}$ gene expression increases in response to chronic alcohol intake. Masson's trichrome staining revealed that UF improved mild hepatic fibrosis caused by alcohol, and UF also significantly increased the mRNA expressions and activities of superoxide dismutase and catalase in liver, and thus, decreased lipid peroxide and mitochondrial hydrogen peroxide levels. CONCLUSIONS: The findings of this study indicate that UF protects against alcohol-induced liver damage by inhibiting the TLR4 signaling pathway and activating the antioxidant system.

The Contents of Free Sugar and Alcohol in Traditional Soy Sauce Prepared from Meju under Different Formations (형상이 다른 메주로 제조한 재래식 간장 중의 유리당과 알코올 함량)

  • The Kinds of soy sauce were prepared using the brick type of conventional meju(A), the brick type of meju of Aspergillus oryzae(B), and the grain type of meju of Aspergillus oryzae(C). Free sugar and alcohol were analyzed in accordance to aging time of those products. Galactose, glucose, arabinose, xylose, and mannose were detected in all kinds of soy sauce. In soy sauce 4 galactose, glucose, arabinose, and xylose were shown in the order of content. The content of galactose in soy sauce A and soy sauce C were shown higher than that in soy sauce B alt during the time. The content of glucose was highest among that of all kinds of free sugars at the beginning of preparation, but the content of glucose was lower than that of arabinose and xylose after 60 days. The contents order of total free sugar was soy sauce C > soy sauce B > soy sauce A. The content of ethyl alcohol was shown 6.23∼19.10mg%, and that of isobutyl alcohol was 8.70∼ 169.03 ppm in all soy sauces, but those of soy sauce C was higher than those of other soy sauces.

In vitro antifilarial potential of the leaves and stem extract of Pluchea lanceolata on the cattle filarial parasite Setaria cervi

  • The effect of alcohol and aqueous extracts of the leaves and stem of Pluchea lanceolata on the spontaneous movements of both the whole worm and the nerve muscle preparation of Setaria cervi, and on the survival of microfilariae in vitro was studied. Alcohol and aqueous extracts of the leaves and stem of P. lanceolata caused the inhibition of spontaneous movements of the whole worm and the nerve muscle preparation of S. cervi, characterized by short lasting small increase in tone and amplitude of contractions followed by paralysis. The concentrations required to inhibit the movements of whole worm and nerve muscle preparations for alcohol extract were 200 and $25\;{\mu}g/ml$, and for aqueous extract were 250 and $100\;{\mu}g/ml$, respectively, suggesting a cuticular permeability barrier. Both the extracts (alcohol and aqueous) caused death of microfilariae in vitro, $LC_{50}$ and $LC_{90}$ being 12 and 18 ng/ml for alcohol extract and 25 and 40 ng/ml for aqueous extract, respectively.

Antioxidant activity of water and alcohol extracts of Thuja orientalis leaves

  • Water and alcohol extracts were prepared from dried and powdered leaves of Thuja orientalis (T. orientalis). The reducing power, total phenolic content, the 1,1-diphenyl-2-picrylhydrazyl scavenging activity, inhibitory effect on Fe (II)-EDTA-$H_{2}O_{2}$ (Fenton reaction system) induced DNA damage and inhibitory effect on human red blood cell (RBC) hemolysis were evaluated in the present study. At a concentration of 200 mg, water and alcohol extracts of T. orientalis inhibited the hydrolysis of DNA by 72.859% and 65.312%, respectively. Water and alcohol extracts of T. orientalis also inhibited 2,2'-Azobis(2-amidinopropane) dihydrochloride induced RBC hemolysis to the extent of 69.30% and 54.55%, respectively. The reducing power and antioxidative activity of water extract was found to be more than that of alcohol extract. This is attributable to the presence of higher amount of phenolic compounds in water extract. The present results indicate that the T. orientalis extracts are rich sources of natural antioxidants and can protect DNA and human red blood cells against free radical induced oxidative damage.

(-) Epigallocatechin gallate restores ethanol-induced alterations in hepatic detoxification system and prevents apoptosis

  • The present study was designed to estimate the protective effect of (-) epigallocatechin gallate (EGCG) on ethanol-induced liver injury in rats. Chronic ethanol administration (6 g/kg/day ${\times}$ 60 days) caused liver damage that was manifested by the elevation of markers of liver dysfunction - aspartate aminotransferase, alanine aminotransferase, alkaline phosphatase, lactate dehydrogenase, bilirubin and ${\gamma}$-glutamyl transferase in plasma and reduction in liver glycogen. The activities of alcohol metabolizing enzymes such as alcohol dehydrogenase and aldehyde dehydrogenase were found to be altered in alcohol-treated group. Ethanol administration resulted in the induction of cytochrome p450 and cytochrome-$b_{5}$ activities and reduction of cytochrome-c reductase and glutathione-S-transferase, a phase II drug metabolizing enzyme. Further, ethanol reduced the viability of isolated hepatocytes (ex vivo) as assessed by trypan blue exclusion test and induced hepatocyte apoptosis as assessed by propidium iodide staining. Treatment of alcoholic rats with EGCG restored the levels of markers of liver injury and mitigated the alterations in alcohol metabolizing and drug metabolizing enzymes and cyt-c-reductase. Increased hepatocyte viability and reduced apoptotic nuclei were observed in alcohol + EGCG-treated rats. These findings suggest that EGCG acts as a hepatoprotective agent against alcoholic liver injury.

Development of Multilayer Perceptron Model for the Prediction of Alcohol Concentration of Makgeolli

  • Purpose: Makgeolli is a traditional alcoholic beverage made from rice with a fermentation starter called "nuruk." The concentration of alcohol in makgeolli depends on the temperature of the fermentation tank. It is important to monitor the alcohol concentration to manage the makgeolli production process. Methods: Data were collected from 84 makgeolli fermentation tanks over a year period. Independent variables included the temperatures of the tanks and the room where the tanks were located, as well as the quantity, acidity, and water concentration of the source. Software for the multilayer perceptron model (MLP) was written in Python using the Scikit-learn library. Results: Many models were created for which the optimization converged within 100 iterations, and their coefficients of determination $R^2$ were considerably high. The coefficient of determination $R^2$ of the best model with the training set and the test set were 0.94 and 0.93, respectively. The fact that the difference between them was very small indicated that the model was not overfitted. The maximum and minimum error was approximately 2% and the total MSE was 0.078%. Conclusions: The MLP model could help predict the alcohol concentration and to control the production process of makgeolli. In future research, the optimization of the production process will be studied based on the model.

  • Several interesting aromas could be produced from the cultures of Saccharomyces cerevisiae depending on the amino acids used as sole nitrogen source. The yeast produced a fusel oil odor in leucine-medium, an aroma of traditional Korean rice wine in aspartic acid-medium and a floral note in phenylalanine-medium, respectively, Ethanol, iso-amyl alcohol, iso-butanol and n-propanol were found as major volatile con stituents in all the above three cultures. In addition to these compounds, phenethyl alcohol was present as major volatiles both in the aroma concentrates of the phenyl alanine and aspartic acid cultures, and phenethyl acetate only in the phenylalanine culture.

The Quality Comparison of Grape Vinegar by Two Stages Fermentation with Traditional Grape Vinegar (2단계 발효에 의한 포도식초와 재래식 포도식초의 품질 비교)

  • 편이었다. 미량성분으로는 K이 다량으로 존재하였고, 2단계 발효로 제조된 포도식초는 포도양파식초 보다K, Na, Cu함량이 높게 나타났다. ^x Grape vinegar (A) and grape onion vinegar(B) added (3% of onion juice) were produced through two stages of fermentation(alcohol fermentation and acetic acid fermentation) to increase the grape's use. Grape wine which contained 5.6% alcohol was produced on the 3rd day of first stage. Then through the second stages, grape vinegar, of which total acidity was 5.37% was produced. The quality of (A) and ( B) which was produced through the two stages of fermentation was compared with the traditional grape vinegar (C, D) in the market. The content of sugar in (D) was a little higher such as 5.4 $^{\circ}$Brix than others. That of (A) and (B) was 5.13, 4.98 $^{\circ}$Brix respectively. The content of remaining alcohol in (C) was high such as 0.23% comparatively. But there was no remaining alcohol in (A) and (B). The content of acetic acid was 4.3~5.3% as a major organic acid of vinegars. The content of tartaric acid was 340.0 in (A), 315.7 in (B), 322.6 in (C) and 391.7mg% in (D). The content of lactic acid was distinctly high such as 277.4mg% in (D) There were differences such as 9.2~15.5mg% in the content of total free amino acids among grape vinegars. (D) contained 15.5mg% of total free amino acid and (B) also highly such as 12.0mg%. Potassium was high in grape vinegars. The content of potassium, sodium and copper was higher in (A) than (B).

Optimization for the Fermentation Condition of Persimmon Vinegar using Response Surface Methodology (반응표면분석에 의한 감식초 제조조건의 최적화)

  • To utilize astringent persimmon (Diospyros kaki, T.) effectively, response surface methodology (RSM) was applied to optimize and monitor the vinegar fermentation conditions by two stage fermentation. In the first stage, the fermentation conditions for maximum alcohol content was $20.51\;^{\circ}brix$ in sugar concentration of astringent persimmon, 139.52 rpm in agitation rate, and 94.88 hr in fermentation time. When sugar concentration of astringent persimmon was $14\;^{\circ}brix$, maximum alcohol content predicted by response surface methodology was 7.1% at agitation rate of 40 rpm and fermentation time of 120 hr. In the second stage, the fermentation conditions for maximum acidity was 224.40 rpm in agitation rate, 176.07 hr in fermentation time. Alcohol content and acidity predicted at the optimum conditions were similar to experimental values.
