Studies on Nutritional Components of Liver Sausage (간소시지의 영양성분에 관한 연구)

  • The purposes of this study were to investigate the applicability of pork liver in manufacturing sausages and to examine the nutritional components of liver sausages prepared. Sausages containing different proportions of pork liver were manufactured with various processes and were analysed for their nutritional value. Based on the basic recipe for manufacturing sausages, fifteen recipes were proposed with different combinations of ingredients. Sausages manufactured with different methods (sliceable, spreadable, smoked spreadable) and different proportions of liver also were evaluated. The results were obtained as follows : 1. The average contents of moisture, protein, fat, carbohydrate, fiber, ash, and energy were 62.31 %, 15.71 %, 17.12%, 3.88%, 0.24%, 1.48%, and 234.04 kcal/100 g respectively. As the percentage of liver increased, the fat content and total energy were decreased significantly. 2. As the percentage of liver in sausage increased, the content of amino acids including valine, leucine, isoleucine, threonine, lysine, phenylalanine, arginine, aspartic acid, glycine, proline, tyrosine, and cysteine was increased. However, the contents of histidine, methionine, glutamic acid, and alanine were decreased. 3. The vitamin A content of liver sausage was increased by 11 times compared with the control, however, the content of vitamin B was slightly decreased. 4. As the percentage of the liver was increased in sausage, the content of minerals such as calcium, magnesium, phosphorus, sodium, potassium, and iron were increased.

Effect of Heat-Treat Methods on the Soluble Calcium Levels in the Commercial Milk Products

  • Milk is well known to be rich in some nutrients such as protein, calcium, phosphorus, and vitamins. In particular, absorption and bioavailability of calcium receive lots of attention because calcium is very little absorbed until it is changed to the ionized form in the intestine. In this study, concentration of the soluble calcium was determined in the commercial bovine milk products, which were processed by different heat-treatment methods for pasteurization. As for general constituents, lactose, fat, protein, and mineral were almost same in the liquid milk products by different processors. Ultrafiltration of the skimmed milk caused little change in the permeate as for lactose content but both fat and protein decreased. pH values ranges from 6.57-6.62 at room temperature and slightly increase after centrifugation, 10,000 g, 10 min. Rennet-coagulation activity was the lowest in the ultra high temperature (UHT-)milk compared to the low temperature long time (LTLT-) and high temperature short time (HTST-)milk products. Each bovine milk products contains 1056.5-1111.3 mg/kg of Ca. The content of sulfhydryl group was the lowest in raw milk compared to the commercial products tested. For the skimmed milks after ultrafiltration with a membrane (Mw cut-off, 3 Kd), soluble Ca in the raw milk was highest at 450.2 mg/kg, followed by LTLT-milk 336.4-345.1 mg/kg, HTST-milk 305.5-313.3 mg/kg, UHT-milk 370.3-380.2 mg/kg in the decreasing order. After secondary ultrafiltration with a membrane (Mw cut-off, 1 kD), total calcium in raw milk had a highest of 444.2 mg/kg, and those in the market milk products. As follow: UHT-milk, 371.3 to 378.2 mg/kg; LTLT-milk, 333.3 to 342.2 mg/kg; HTST-milk 301.9 to 311.2 mg/kg in a decreasing order.

A Study on the Utilization of Trichoxanthes Kirilowii Root Starch (하늘타리(Trichoxanthes Kirilowii)의 자원화(資源化)에 관한 기초(基礎) 연구(硏究))

  • Trichoxanthes Kirilowii with high starch-content was investigated to utilize as a food source. The weight and starch content of Trichoxanthes Kirilowii roots increased rapid1y in proporion to the growth period. The seasonal variations of the starch content were $36.5{\sim}48.0%$ (dry basis) from June to December. The chemical properties of natural growth soils of Trichoxanthes Kirilowii contained more organic matter and total nitrogen content than citrus orchard soils, but less mineral; P,K,Ca and Mg. To prepare starch with the plant root, the centrifugal method(3,000 rpm, 20 min) obtained the highest yield. The industrial-scale method, was similar to the processing of sweetpotato starch (tank precipitation method), and was good in quality. The starch granules were mainly spherical with diameters ranging from $5{\sim}16{\mu}$. The density of the starch was 1.535 and amylose content was about 26.7%. The X-ray diffraction pattern showed that the granules were of the B-type. The blue value of starch, amylose and amylopectin was 0.46, 0.80 and 0.18, respectively. The starch contained 0.05% ash, 0.35% crude protein and 34 mg% phosphorus. and had an inital pasting temperature of $63.5^{\circ}C$. The color intensity of the starch which iodine gave rise to absorption maxima at 670nm. The starch paste showed high stability during cold storage at $5^{\circ}C$.

  • To find out the effect of water hyacinth(Eichhornia crassipes Solms-Laub) on the control of eutrofication and plant damage with irrigation water contamination, its ability to remove the nutrients such as nitrogen and phosphrus was studied. The overall results are summarized as follow. 1. It was possible to cultivate water hyacinth for 4 month from June to the middle of October in Suwon. 2. The number of plant was increased from 1,320 to 50,600 for 4 months, and total amounts of N, P, K removed from Seo-Ho by water hyacinth were 78.3, 64.2 and 152.4 kg/10a, respectively. 3. EC and $NH_4-N$ contents were lower at water hyacinth treatment than non-treatment and monthly variation of those contents were decreased until August. 4. With the cultivation of water hyacinth in animal waste water in vinyl plastic house, pH, EC, COD and concentrations of $NH_4-N$ and $PO_4-P$ in the water were drastically decreased. 5. Nitrogen contents absorbed from waste water existed in the order of leaf > stem > root but those of phosphorus root > stem > leaf.

Effect of Application level of Liquid Cattle Manure on the Run-Off Water and Soil Properties in Mixtures Swards (혼파초지에서 우분액비 시용수준이 유거수 및 토양특성에 미치는 영향)

  • A manure management plan is important for all daily operations. This study was conducted to investigate the effect of application level of liquid cattle manure on the soil properties and changes of BOD and COD content in run-off water at the mixtures swards of National Livestock Research Institute RDA Suweon in 1995. The experiment was arranged in a randomized block design with five treatments consisting of no fertilizer chemical fertilizer application of 40, 60 and 80MT/ha as liquid cattle manure. The quantity of run-off for a no fertilizer was the highest of 1,469.4mm but that for a application level of liquid cattle manure of 60MT/ha was the lowest of 1,278.1mm. The change of BOD in run-off for a no fertilizer was the lowest of $19.84m{\ell}/{\;}{\ell}$, but that for a application level of liquid cattle manure of 80MT/ha was the highest of $36.22m{\ell}/{\;}{\ell}$. Change of COD in run-off for a no fertilizer was the lowest of $21.28m{\ell}/{\;}{\ell}$ but that for a application level of liquid cattle manure of 80MT/ha was the highest of $37.51m{\ell}/{\;}{\ell}$. Available phosphorus and total-N content of soil chemical properties was higher at liquid cattle manure than chemical fertilizer.

Dietary Habits and Nutritional Status of Young Women according to Breakfast Frequency in Seoul (서울 거주 20대 여성의 아침식사 섭취 빈도에 따른 식습관 및 영양소 섭취상태 조사)

  • Objectives: Although breakfast is important to nutrition balance, prevention of overeating, and weight control, people in their 20s (males: 55.1%, females: 49.9%) were reported to have the highest rate of skipping breakfast in 2016 Korea Health Statistics. This study aims to examine dietary habits and nutrient intake depending on breakfast frequency among young women in Seoul. Methods: The subjects were 655 young women in Seoul from August to October 2016, and the survey was performed by using a questionnaire that included general characteristics, dietary habits, and eating behavior. Body composition was determined by bioelectric impedance analysis. Nutritional status was examined by the 24-hour recall method. Results: The participants were classified by breakfast intake frequency; '${\geq}5times/week$ (n=160)', '1-4 times/week (n=327)', and 'breakfast skipping (n=168)'. The 'breakfast skipping' group had lower frequency and regularity of meals. In addition, the 'breakfast skipping' group had a higher frequency of eating-out and late-night meals. There was no difference in total calories between the 'breakfast skipping' group and other groups, but the 'breakfast skipping' group had significantly low carbohydrate and fiber intakes. The participants showed lower intakes of calories, fiber, vitamin A, vitamin C, niacin, folic acid, calcium, potassium, and zinc in comparison with recommended intakes. Especially, the 'breakfast skipping' group had significantly lower fiber, vitamin A, vitamin C, calcium, potassium levels compared to the '${\geq}5times/week$' group. For Mean Adequacy Ratio (MAR), the 'breakfast skipping' group recorded a ratio of 0.60, which was lower than those of other groups. Index of Nutritional Quality (INQ) including fiber, vitamin C, calcium and phosphorus were significantly lower in the breakfast skipper group, compared to the breakfast eater group. Conclusions: The 'breakfast skipping' group showed low regularity of meals and a high frequency of eating-out and late-night meals. The breakfast regular eater group showed high intake of micronutrients and quality of meals was high in general. Skipping breakfast could lower nutrient intake and quality of meals, which requires attention.

Evaluation of Nitrogen and Phosphorus Balance in Green Manure-Rice Cropping Systems without Incorporation of Green Manure Crops (녹비작물 무 환원-벼 작부체계에서 질소와 인산수지 평가)

  • BACKGROUND: The nutrient balance in Korea during 1985-2006 had continually increased and maintained the highest levels among OECD countries. The use of green manure crops such as barley and hairy vetch is common practice for reducing chemical fertilizer application and maintaining soil fertility. However, green manure crops can also be used as a livestock feeding material which may reduce nutrient balance in the national scale. We calculated nitrogen and phosphate balance under green manure-rice cultivating system where all green manure was removed and used for feeding livestock. METHODS AND RESULTS: The barley and hairy vetch grown in pure stands or in mixtures with different sowing rates were tested for rice cultivation without chemical fertilization. The conventional fertilization (NPK) for rice cultivation was selected to compare nutrient balance with green manure-rice cultivation. Nitrogen and phosphate balance were calculated according to the surface balance method of the PARCOM guidelines. Total aboveground biomass of mixture (barley and hairy vetch) was higher compared to that of pure barley or hairy vetch. Among the mixture with barley and hairy vetch, the highest aboveground biomass was observed in B75H25 (barley 75%+hairy vetch 25%). The nitrogen and phosphate balance in the B75H25 mixture was-104 kg N/ha and-50.3 kg P/ha, respectively. CONCLUSION(S): The barley and hairy vetch mixture proved to be a very effective strategy for biomass production of green manure. The amount of nitrogen and phosphate fertilizer to be applied is estimated to be 104 kg N/ha and 50.3 kg P/ha in order to maintain soil fertility if all green manure and rice straw were removed from rice field for livestock feeding.

Fine Structure of Blue-green Algae, Microcystis aeruginosa Kutzing (남조(藍藻) Microcystis aeruginosa Kutzing의 미세구조(微細構造)에 관(關)한 연구(硏究))

  • In order to understand the morphological differences between two different organic loadings by its upstream, and to compare with other algal groups with references, the fine structure of blue-green algae, Microcystis aeruginosa Kitzing, taken from two branches, Tongbok and Bosung stream of Lake Chuam, Korea pennisula was examined. It showed extinct differences in most physicochemical factors between both branches, except water temperature and pH values. The concentrations of total phosphorus in Tongbok branch were twice as those of Bosung. M. aeruginosa cells were enumerated totally $1.2X10^4cells/ml$ and these individuals in branch of Tongbok were close to two times as much as Bosung. In light and electron microscopy, natural M. aeruginosa colonies formed irregular shape and non-directional array in amorphous matrix. They were consisted of many kinds of cells, youngs or olds in cell division, solitary, and various size of cells. Each cell ranged from 2.61 to $5.40{\mu}m$ in diameter, and averaged as $3.54{\pm}0.19{\mu}m$. In cytoplasm, they contained a number of inclusions in various size, shape and appearances. Among them, polyhedral bodies or carboxysomes, a structured granules, photosynthetic lamellae or thylakoids, and gas vacuoles were prominent and easy to recognize. Although it was failed to find the definable morphological variations in the ultrastructure of M. aeruginosa in terms of algal habitual environments, some useful characters were founded, outer layer of cell wall, polyhedral bodies and gas vacuoles, in blue-green algal classification and taxonomy.

Ecological Characteristics of Viola websteri Hemsley Habitats (왕제비꽃 자생지의 생태특성)

  • This study intended to investigate the environmental factors including soil and vegetation in order to understand the environmental and ecological characteristics of seven different habitats of Viola websteri. These habitats, according to investigations, are mostly located on the slope of mountains facing north at an altitude of 343 m to 991 m above sea level with angle of inclination from 1 degree to 33 degrees. The type of soil is mostly sandy loam and the average field capacity of soil is 28.97%. Their average organic matter is 16.63%, soil pH 5.62, and available phosphorus is 14.75%. A total of 133 vascular plants are identified in 18 quadrates of seven habitats. Dominant species of woody plants in seven habitats are represented as Acer pictum subsp. mono and Quercus mongolica in tree layer, and Acer pictum subsp. mono in subtree layer. Importance value of Viola websteri is 9.66%, as regards the herbaceous layer, and five highly ranked species such as Meehania urticifolia(8.53%), Pseudostellaria heterophylla(6.51%), Hylomecon vernalis(5.15%), Oxalis obtriangulata (4.52%), and Pseudostellaria davidii(4.15%) are considered to be an affinity with Viola websteri in their habitats. The degree of their average species diversity is 1.32, and that of dominance and evenness are 0.08 and 0.89, respectively. Correlation coefficients analysis based on environmental factors, vegetation and soil analysis shows that the coverage of Viola websteri is correlated with silt and sand ratio, and coverage of tree layers are correlated with species richness and altitude. Cluster analysis based on vegetation structure of each habitats are forms a three groups.

A total of 30 Holstein cows (3rd to 5th of parity) were used and assigned to two groups according This study investigated blood biochemical values between high and low yielding dairy to milk production levels at 15, 30, 60 and 90 days postpartum. Milk production of group A was less than an average of 27 kg/day and that of group B was an average of 30 kg/day. Blood samples were collected by jugular venipuncture from each cow six times at 15 days before the anticipated calving date, within 12 hours postpartum (0 days) and at 15, 30, 60 and 90 days after calving. In serum mineral concentrations, group B was consistently higher than group A in both Mg and Ca. Inorganic phosphorus concentrations showed a little fluctuation between the groups at antepartum and at postpartum, but group B was significantly higher than group A at 15 and 30 days after calving (p < 0.05). In serum biochemical values cholesterol concentrations were consistently higher in group B except at 0 days. BUN and glucose concentrations did not differ between the groups. The concentration of vitamin A of group B was significantly higher than group A at 15 days before the anticipated calving date and at 15 days postpartum (p < 0.01), but at 30, 60 and 90 days postpartum vitamin A concentration of both groups were similar. Vitamin E concentration did not differ between the groups during the experimental period. Results of this study suggest that raising the levels of Mg, Ca, Pi and vitamin A in serum would be effective in increasing milk production of low producing cows.
