The Study on Frequently Consumed Food Items from 1993 Korean National Nutrition Survey(II) -Amounts and Frequency of Dishes Intakes- (국민영양조사를 이용한 우리나라 다소비 식품의 섭취량에 관한 연구(II) -음식의 섭취량 조사 분석-)

  • The purpose of the present study is to collect information in terms of the frequency and amounts in frequently consumed dishes. We conducted the secondary analysis from '93 Korean National Survey. Mainly informations about 2-day food records were used to investigate dish intakes and to compare different food patterns by area. Amounts of total daily intakes of dishes per capita are 1,741.46g in nationwide, 1,722.03g in large city, 1,712.46g in small city, 1,808.73g in rural. The dish consumed in largest quantities per capita per day is the rice which amounts is 481.67g, 27.66% of total intake. Fruits and cabbage were consumed in large quantities too. Kimchi made of cabbage have the highest number of frequencies. Number of frequencies in rice, fruits, and milk showed high, too. Dish groups are classified by the cooking method. Some dishes in several dish groups have small number of frequencies and small amount of quantities. Some dishes in the top list are not included in the 30 dishes list. There should be some studies about validity and reliability of the dish list, using individual dietary assessment methods.

A Study of Perception and Consumption Behavior of Consumers with regards to Local Food and Eco-friendly Food (로컬푸드와 친환경식품에 대한 인식과 소비행태에 대한 연구)

  • The purpose of this study was to conduct an empirical survey on consumer perception and consumption behavior in relation to local food and eco-friendly food. The survey was conducted using 266 consumers who have heard about or purchased local foods and eco-friendly foods centering on Seoul and Gyeonggi-do, and statistical analysis was carried out using SPSS (Version 23.0) to generate descriptive statistical values such as frequency and percentage and implement a Chi-square test. The results showed that consumers purchased local food in large shopping malls, supermarkets, and local food stores, whereas eco-friendly food were usually bought in large shopping malls, supermarkets, and eco-friendly food specialty stores. For local food, consumers bought fruits the most, followed by vegetables, whereas for eco-friendly food, consumers purchased vegetables the most, followed by fruits. The top reason for purchasing local food was its "fresh and high quality," whereas the top reason for buying eco-friendly food was "safety from pesticides and additives." According to results of the Chi-square test, women, unmarried people and younger people turned out to have more experiences in purchasing local foods and eco-friendly foods compared to men, married people and older people, respectively. Although local and eco-friendly food were completely different concepts, results of the study show that consumers were not able to make a clear distinction between the two. Consumer education, therefore, should involve defining the two types of food and spreading awareness on local and organic food to help them made the right choices when buying food.

Effect of Pinching Times on Growth and Yield of Okra (Abelmoschus esculentus L.) in Rain Shielding Vinyl Houses (비가림 재배 시 오크라의 적심처리 시기가 생육 및 수량에 미치는 영향)

  • The experiment was carried out to examine the effect of pinching time on growth and marketable yield of okra in rain shielding vinyl houses. Okra (Abelmoschus esculentus L., 'Green sod') seedling was transplanted in May, 2013. Pinching times of okra were in each 30th, 45th, 60th day after transplanting of okra. Shoot branch and top fresh weight were significantly different between each pinching times. Top fresh weight were highest at 60th day pinching time after transplanting investigated, and were lowest at 30th day pinching time after transplanting. There was no significant difference in plant height and stem length among pinching times. According to pinching times, marketable yield and number of okra fruits were varied. Marketable yields were highest at 60th day after transplanting, whereas were lowest at 30th day after transplanting. Mineral concentrations of okra fruits were not significantly different among pinching times. Therefore pinching times 60th day after transplanting was effective to increase yield of okra fruit in rain shielding vinyl houses.

Developing Dish-based Food Frequency Questionnaire for the Epidemiology Study of Hypertension Among Korean (고혈압 역학연구를 위한 음식중심 식품섭취빈도 조사표 개발: 2001년 국민건강영양조사 자료 이용)

  • The purpose of the present study was aimed to identify dish items applicable in developing dish?based food frequency questionnaire (DFFQ) for a hypertension study of Koreans. The 24-hour recall data of 4,401 subjects aged $20{\sim}65$ years from the 2001 Korean National Health and Nutrition Examination Survey were used for the analysis. Logistic regression model was used to identify the nutrient related with hypertension. Energy, fiber, sodium, calcium, carotene, vitamin B1 and vitamin C were associated with hypertension. Selection the top 30 dish items for these seven nutrients was performed based on their degree of contribution in supplying nutrients in terms of the cumulative percent contribution (cPC), as well as on their degree of explanation for between?person variation, in terms of the cumulative regression coefficient (cMRC). Rice supplied 43% of total energy consumption. Korean cabbage and radish kimchi were two major sources of sodium and it also covered the 27% of between person variation of sodium intake. Soybean paste soup and single item of orange?colored fruits supplied 43% of total vitamin C intake for Koreans and it covered the almost 79% of between person variation among the Korean population. Korean cabbage kimchi was the major source of fiber, calcium, sodium, carotene, and vitamin C for Koreans. In summary, the top 30 selected dish items supplying the 78% to 89% of the 7 nutrients. Those items also covered the 79% to 94% of between person variation of the 7 nutrients consumption. Therefore, the selected 30 dish items in each categories of nutrient could be applicable in developing dish based food frequency questionnaire for hypertension study.

  • This study examined the relationship between chlorophyll(Chl) and ascorbic acid(ASA) as an index of freshness for vegetables, when the general consumers purchase several kinds of vegetables at the market. The leaves and fruits of several types of vegetables were divided into top, middle, and basal sections. Chl was determined by a spectrophotometer, and ASA was analyzed by high-performance liquid chromatography. For the vegetable sections, we found that Chl and ASA levels were highest in the top sections, followed by the middle, and were lowest in the basal portions. For the relationship between Chl and ASA in vegetables, there were seven classifications including high Chl(above 80mg/100g of fresh weight) and high ASA(above 80 mg/100 g of fresh weight) for mallow, and kail; the second group had high Chl and low ASA(below 80 mg), such as in spinach, burdock, and perilla leaves; the third group contained medium Chl($40{\sim}80mg$) and medium ASA($40{\sim}80mg$) levels, such as for gonddalbee, angelica, pumpkin leaf and coriander; the fourth group had medium Chl and low ASA levels, as in crown daisy and lettuce; the fifth group contained low Chl(below 40 mg) and high ASA, such as in hot peppers and parsley; the sixth group had low Chl and medium ASA levels, and included broccoli, pak choi, and sweet peppers; finally the seventh group contained low Chl and low ASA levels, as in dropwort, young radishes, shallots, cucumbers and swiss chard.

Identification of College Students' Food Safety Awareness and Perceived Barriers to Proper Food Handling Practices

  • The purpose of this study was to investigate culinary arts and hospitality students' food safety practice behaviors, intentions, attitudes, and barriers to food safety compliance. This descriptive study used the self-report questionnaire. The convenience sample was composed of 266 college students majoring in culinary arts and hospitality. The students indicated that they never or rarely use a thermometer to determine if meats have been adequately cooked. Examples of positive food handling behaviors were hand washing, sanitation of fruits and vegetables, discarding of food past its expiration date, counter top sanitation, and proper food storage. Students strongly agreed it is their responsibility to practice food safety and to educate their employees about food safety. The primary barrier to proper food safety as ranked by student respondents is the misunderstanding about food labeling. Previous food safety education and internship experience appeared to improve the student respondents' perceived attitudes toward following the principles of food safety practices (p < 0.05), although behaviors and intentions to use the correct food safety practices were not affected. The findings of this study suggest that programs should consider integrating information and experiential learning opportunities in their courses that would be enhance student understanding about food safety. The outcomes of this study can be applied to develop food safety education materials and programs for culinary arts and hospitality students.

Improved Deep Residual Network for Apple Leaf Disease Identification

  • Plant disease is one of the most irritating problems for agriculture growers. Thus, timely detection of plant diseases is of high importance to practical value, and corresponding measures can be taken at the early stage of plant diseases. Therefore, numerous researchers have made unremitting efforts in plant disease identification. However, this problem was not solved effectively until the development of artificial intelligence and big data technologies, especially the wide application of deep learning models in different fields. Since the symptoms of plant diseases mainly appear visually on leaves, computer vision and machine learning technologies are effective and rapid methods for identifying various kinds of plant diseases. As one of the fruits with the highest nutritional value, apple production directly affects the quality of life, and it is important to prevent disease intrusion in advance for yield and taste. In this study, an improved deep residual network is proposed for apple leaf disease identification in a novel way, a global residual connection is added to the original residual network, and the local residual connection architecture is optimized. Including that 1,977 apple leaf disease images with three categories that are collected in this study, experimental results show that the proposed method has achieved 98.74% top-1 accuracy on the test set, outperforming the existing state-of-the-art models in apple leaf disease identification tasks, and proving the effectiveness of the proposed method.

Survey on Pesticide Usage in Fruit Crops for the Development of Pesticide Use Indicator (농약사용 지표개발을 위한 과수용 농약사용량 조사분석)

  • Pesticide actual usage in fruit crop cultivation was surveyed, and usage trends of individual pesticides were evaluated to provide data for the development of indicators of environmental impact. The amount of pesticide used for fruit crops indicated the order of fungicide>insecticide>herbicide unlike the case of paddy rice. The fungicide rate of total usage was 72% in apple cultivation. Top ranking fungicides used on fruits were Mancozeb, Propineb, Thiophanate-methyl and the main insecticides were Mancozeb, Propineb, Thiophanate-methyl. The usuage by formulation types showed the order of WP>EC>SL>SC>SP>WG. Pesticide usage (a.i.) per hectare by different fruits was citrus 48.6kg, apple 27.1kg, pear 18.6kg, persimmon 17.5kg, peach 11.3kg and grape 9.2kg. Comparison of pesticide usage (a.i.,kg/ha) in some fruit crops between Korea and USA indicated that more pesticides were used for citrus, pear and peach in USA than Korea while more pesticides were used in Korea than USA for apple.

  • The present study investigated Bul-Chun-Wi Sacrificial Ritual (sacrificial service which has been handed down from generation to generation to worship the family ancestors in the period of $1400{\sim}1800$) and foods for the sacrificial service among fourteen head families in Andong area. The findings are as follows; 1. In Bul-Chun-Wi Sacrificial Rituals, family shrine has been maintained in good shape, and the table, dishes, and foods used in the rituals have not been changed so much until these days. 2. While vegetable soup is widely used as soup, one family uses the seaweed soup, the other soup mixed with meat, fish, and vegetable. Specially soybean-powdered soup, which is the distinguishable food in Andong area, has been used. 3. As a basic Ddock, mainly Si-Ru-Ddock(a steamed rice cake), piled up to 13-15 stacks, is used. Additional 7-9 kinds of Ddock are placed on top of the basic Ddock. 4. For grilled-meat food(Geuck), eight families use the raw meat, and one family uses the half-cooked meat. Recently, five families have used the cooked meat. Mostly used ones are meat-Geuck, fish-Geuck, chicken-Geuck, and the Geuck are not served one by one. Instead the Geuck are stacked in one dish designed for Geuck in order of meats from poultry, animal, fish, and shell. As the sub-dishes for rice, raw and cooked Geuck are used. 5. The number of stew (Tang) are 3 to 6 and 5 stews is the most popular. Commonly used stews are meat stew, fish stew, chicken stew, vegetable stew, blood stew, and organs stew. For the vegetable stew, buckwheat gel can be used. 6. As the fruit, chinese date, pear, nut and dried persimmons are the basic ones. The even number of 6 or 8 colorful fruits are used, while the odd number of 7 or 9 colorful fruits are used in three head families. 7. As Sik-Hae which is a drink and made from fermented rice, rice Sik-Hae or fish Sik-Hae has been necessarily used. 8. As raw meat dish, the liver of cow or meat is used. As a wrapping materials, the reticulum of a ruminant, green seaweed or thinly fried egg can be used.

Internal Dynamics of Wetland Specialist, Population of Lychnis wilfordii (Regel) Maxim. (습지 전문종인 제비동자꽃(Lychnis wilfordii (Regel) Maxim.) 개체군의 내적동태)

  • Lychnis wilfordii (Regel) Maxim. is one of the wetland specialists mainly distributed in peatlands at high latitudes. In Korea, it is isolated in two regions. This study investigated habitats, growth traits, and self-compatibility of L. wilfordii and assessed the internal dynamics of its population persistence. Its population has remained stable in the Yongneup Wetland Protected Area (YWPA). There was a clear difference in vegetation environment between YWPA and the distribution area in Daegwallyeong (DWL), Pyeongchang-gun. It has self-compatibility while pollinators facilitate its seed production. It produces a large number of hibernacles and bears the maximum number of branches and fruits in soil with rich organic contents. However, it grows and bears fruits even under the condition of low organic contents. In YWPA, L. wilfordii is not distributed in high moor but widely distributed in low moor where tussocks by Carex thunbergii var. appendiculata are developed. It is mainly distributed on the top of tussocks also. Therefore, it is judged that the formation, growth, and extinction of tussocks by C. thunbergii var. appendiculata is closely related to the establishment, growth, and extinction of plants distributed in this space. It is assessed that the current YWPA has well-developed tussocks in which L. wilfordii is widely distributed, and extinction and re-establishment progress well. Accordingly, the L. wilfordii population is expected to be sustainable in the long term given if its current ecological process is maintained well.
