Mechanical Properties and Ultrasonic Parameters of the Apple Flesh while in Storage (저장기간에 따른 사과 과육의 기계적 특성 및 초음파 파라미터)

  • The potential use of ultrasonic technique for firmness measurement of apples was evaluated. Mechanical properties(bioyield deformation, bioyield strength, rupture deformation, ultimate strength, and elastic modulus) and ultrasonic parameters (ultrasonic velocity, attenuation coefficient and the first peak frequency) of the apple flesh during the storage time were measured and analyzed. Ultrasonic parameters were determined from the measurement of ultrasonic wave transmission through the apple flesh specimen. Mechanical properties were obtained by universal testing machine. The bioyield strength, rupture strength, elastic modulus, ultrasonic velocity, and the first peak frequency of the apple flesh decreased with the storage time. The bioyield deformation, rupture deformation, and ultrasonic attenuation coefficient increased with the storage time. The correlation analysis between ultrasonic parameters and mechanical properties and the storage time was performed. The high correlations were found between the storage time and the ultrasonic parameters, and these relationships seem to be useful for determining the firmness of the apple flesh.

Quality Characteristics of Sulgitteok Added with Lotus Leaf Powder (연잎가루를 첨가한 설기떡의 품질 특성)

  • This study was conducted to investigate the quality characteristics of Sulgitteok prepared with different ratios of lotus leaf powder, over for 4 days of storage. As the amount of lotus leaf powder increased, the moisture contents of the lotus leaf Sulgitteok decreased; however, this was not consistent for all samples during storage. As the content of the lotus leaf powder increased, the L-values of the lotus leaf Sulgitteok significantly decreased, and the a- and b-values also significantly increased at day 0. The L- and a-values did not show large differences with storage. The total cell count of the lotus leaf Sulgitteok prepared with the 4% lotus leaf powder (LL4) was considerably lower than the other samples at 2 days of storage, indicating that microorganisms were inhibited by increasing amounts of lotus leaf powder. The hardness, gumminess, and chewiness of the lotus leaf Sulgitteok decreased as the amount of lotus leaf powder increased; however, they increased as storage time passed. Increasing amount of lotus leaf powder and the storage time resulted in greater reductions in adhesiveness. Springiness was not significantly different according to the amount of added lotus leaf powder or the storage time. Increasing storage time caused cohesiveness to decreased in all samples except LL2. Also, the results of the sensory evaluation showed that the LL2 lotus leaf Sulgitteok had the highest scores. In conclusion, the lotus leaf Sulgitteok prepared with the 2% lotus leaf powder (LL2) was superior.

The Effect of Medicinal Plants with Additives on Storage Characteristics of Sausage (생약성분을 첨가한 소시지의 저장성에 대한 연구)

  • This study was conducted to investigate the effects of medicinal plants with additives on storage characteristics of sausage. The water activity of the sausage with the additives tended to decrease with the storage time: the highest value was shown in the Angelica added sausage samples, in both cases added with dried powder as well as with extracted powder. The Paeonia extract powder added sausage had the lowest pH value. The herbal plant added sausages showed the lowest cooking and storage losses among all. The values of TBA (thiobarbituric acid value) and VBN (volatile basic nitrogen) increased with storage time, but the values of the sample with the extract powder additive were lower than those of the freeze-dry powder additive. Total plate counts of bacteria increased with storage time fur all samples, but those for the samples with Pueraria, Platycodon, Angelica, Bupleurum and Paeonia additives exhibited lower values than the control. From the above results, the sausages with medicinal plant additives showed the superior storage safety and quality characteristics.

Changes in Qaulity Characteristics of Makgeolli during Storage Time (일부 시판 생막걸리 제품의 저장기간에 따른 품질 특성 변화)

  • This study was conducted to investigate the physicochemical and sensory changes of 6 kinds of commercial Makgeolli (A, B, C, D, E, and F) during storage at $4{\pm}1^{\circ}C$ for 30 days. The initial pH was 3.50~4.23, but it increased to 3.65~4.37 by the end of the storage period (p<0.05) There were no significant differences in titratable acidity between the beginning and end of the storage period. The reducing sugar content of A and B increased, whereas C, D, E, and F decreased with increasing storage time. A decrease in lightness (L values) was observed in all samples with increasing storage time (p<0.05). The alcohol content increased from beginning values of 5.90~6.10% to ending values of 6.30~7.35% at the end of storage, of which sample B exhibited the highest value. A sensory evaluation test revealed that the overall acceptability of samples A, B, D, and E were still within acceptable limits, but samples C and F showed undesirable changes during 30 days of storage at $4^{\circ}C$.

Quality Characteristics of Peeled-Chestnuts Based on the Degree of Gelatinization during Storage (박피 밤의 저장 조건에 따른 품질 변화 분석)

  • Peeled chestnuts were stored at different temperatures($-10^{\circ}C$ and $-20^{\circ}C$) and after blanching at $90^{\circ}C$ for different lengths of time(0, 10, and 20 min) for 6 months. After the storage period, the texture, color, DSC and sensory characteristics were analyzed. Hardness, fracturability and chewiness increased with storage time, whereas springiness and cohesiveness decreased. Additionally, the L* decreased and a* and b* increased with storage time. Analysis of the DSC revealed that the peak of the retro gradation was approximately $46{\sim}60^{\circ}C$ and enthalpy for the peak increased with storage time. Additionally, the increment of enthalpy for samples stored at $-20^{\circ}C$ and blanched was lower than that of samples stored at $-10^{\circ}C$ and non-blanched samples. The sensory evaluation scores were also higher for samples stored at $-20^{\circ}C$ and blanched samples than for those stored at $10^{\circ}C$ and non-blanched samples.

A Study on the Shelf-life of Sausages in Refrigerated Storage (냉동 온도에서 소시지의 저장 수명에 관한 연구)

  • Quality changes of sausages in refrierated storage for 60 days were investigated. Nine types of sausages produced in Korea were stored at 4$^{\circ}C$(3~5$^{\circ}C$), and then chemical, microbiological, and sensory characteristics were evaluated on every 10 days. The proximate analysis showed considerable variation in fat (23.97%, 17.10~30.20%) with less variation in moisture (51.96%, 48.10~56.30%) and protein (12.96%, 11.40~13.95%), pH value decreased over time averaging from 6.31 to 6.22 with no significant difference. Water activity was consistent over refrigerated storage averaging 0.95. Volatile basic nitrogen (VBN) values were still within 20 mg% though VBN for all types significantly increased over time (p<0.05). Thiobarbituric acid (TBA) values were well below 1.0 though TBA showed significant differences among storage periods (p<0.05). Standard plate counts (SPCs) significantly increased during storage (p<0.05) while coliform group was not counted in all cases. SPCs reached 104 CFU/g in two types after 50 days' storage and were below 105 CFU/g in all types after 60 days' storage. Instrumental texture analysis showed that springiness, adhesiveness, and hardness signficantly decreased over time (p<0.05) while no change was observed in external color. significantly decreased over time the 60-day storage period (p<0.05) while cohesiveness, chewiness and gumminess did not change. Lightness, redness and yellowness of the internal Hunter color significantly decreased over time (p<0.05) while no change was observed in external color. Sensory profile showed that flavor, taste, texture and overall acceptable after 60 days' storage at 4$^{\circ}C$. However, the shelf-life of the samples should be decided in the consideration of the growth rate other spoilage flora coupled with the bacterial growth after 50 days' storage.

  • MEMS-based storage is being developed as a new storage media. Due to its attractive features such as high-bandwidth, low-power consumption, high-density, and low cost, MEMS storage is anticipated to be used for a wide range of applications from storage for small handhold devices to high capacity mass storage servers. However, MEMS storage has vastly different physical characteristics compared to a traditional disk. First, MEMS storage has thousands of heads that can be activated simultaneously. Second, the media of MEMS storage is a square structure which is different from the platter structure of disks. This paper presents a new request scheduling algorithm for MEMS storage that makes use of the aforementioned characteristics. This new algorithm considers the parallelism of MEMS storage as well as the seek time of requests on the two dimensional square structure. We then extend this algorithm to consider the aging factor so that starvation resistance is improved. Simulation studies show that the proposed algorithms improve the performance of MEMS storage by up to 39.2% in terms of the average response time and 62.4% in terms of starvation resistance compared to the widely acknowledged SPTF (Shortest Positioning Time First) algorithm.

Changes in Chemical Compositions of Fruit-Vegetable Mixed Juice Sterilized at Various Conditions During Storage (살균조건에 따른 과채혼합주스의 저장 중 성분변화)

  • The purpore of this study was to elucidate the nutritional significance of the fruit-vegetable mixed juice during storage and distribution by examining the chemical composition of the mixed Juice for storage. The fruit-vegetable mixed Juices were sueriliged at 95$^{\circ}C$ for 30, 70, 100 seconds and the results of the changes in vitamin C contents, colors, total carotenoid contents, total aerobic counts and sensory evaluation of the mixed Juice were as follows: Vitamin C contents were drastically decreased at 7 day's storage and were not significantly different between the mixed Juices at p< 0.05 level after 7 day's storage. The longer the sterilization time and storage period of the mixed Juice was the higher changes in color was. The color changes in the sterilized samples were higher in order of 100, 70 and 30 seconds. Total carotenoid contents were slightly decreased according to storage period but were not affected by sterilization time. Total aerobic counts were 1.1 $\times$ 101 cfu/ml before sterilization, but it was negative after sterilization at 95t regardless of sterilization time. Sensory qualities such as color, flavor, taste and total acceptability of the mixed juice tended to be decreased by the Increased storage period and sterilization time. Especially, the sterilized sample for 100 seconds showed lots of changes In color.

Texture Profile Analysis of Acorn Flour Gels (도토리묵의 물리적 특성)

  • The textural properties of acorn flour gels were investigated with the variations in the concentraction, storage time and storage temperature by the use of Instron Universal Testing Machine. The experimental design was $3^3$ factorial experiment. TPA curves of acorn flour gels showed two sharp peaks in the first bite and no negative peak. The hardness and brittleness of acorn flour gels were very significantly affected by concentration, storage time and storage temperature. For the height difference between first peak and second peals, the main effects for concentration and storage temperature were very significant and the main effect for storage time was not negligible. For bend, the effect of concentration was more significant than the effect of storage temperature, and storage time effect was negligible. Springiness was affected only by the concentration.

The Correlation Between Quality Changes and Skin Thickness of the Stored Citrus Fruit (저장감귤에서의 과피 두께와 품질변화간의 상관관계)

  • The storage time of citrus fruit at two different storage temperatures was predicted by quality changes such as weight loss, %Brix and skin thickness. The less weight loss of citrus fruits during storage at $3^{\circ}C$ was observed, compared to those stored at $25^{\circ}C$, whereas %Brix of citrus fruits increased slightly without any difference between storage temperatures. Skin thickness of fruit, represented by pixel, also changed more rapidly at the higher storage temperature. Above parameters with a storage time followed the 0 order reaction pattern. The relationship of skin thickness and storage time of the citrus fruit were resolved to a simple linear equation, and storage time could be predicted using this equation.
