늙은 호박의 혼합비율을 달리하여 제조한 호박양갱의 품질 특성 (Quality Characteristics of Yanggeng Prepared by Different Ratio of Pumpkin)

  • 늙은 호박을 이용하여 기능성 있는 양갱을 제조하기 위하여 호박 페이스트와 한천, 설탕, 물엿, 소금을 이용하여 호박양갱을 제조하여 일반성분, 색도, texture 측정 및 관능평가를 실시한 결과는 다음과 같다. 호박양갱의 색도 측정에서 A제품의 경우 B와 C제품에 비하여 면도가 유의하게 낮았으며, 적색도는 A제품이 다른 제품에 비하여 유의하게 높았고, 다음으로 C제품, B제품의 순이었다. 황색도는 A제품이 B와 C제품에 비하여 유의하게 낮았으나, B와 C 제품간에는 차이가 나타나지 않았다. 호박양갱의 물성 측정에서 견고성(hardness), 응집성(cohesiveness)과 탄성(springiness)은 A제품이 가장 높았으며, 다음으로 C와 B제품 순으로 나타났다. 검성(gumminess)은 C제품이 가장 높았고 다음으로 A제품, B제품 순이었다. 호박양갱의 씹힘성(chewiness)은 A와 C제품이 B제품에 비하여 유의하게 높게 나타났으며, B제품이 가장 낮았다. 부서짐성(fractureness)은 A제품이 가장 높았으며, 다음으로 B와 C의 순이었고 제품간에 유의적인 차이를 보였다. 부착성(adhesiveness)은 C제품이 가장 높았으며, 다음으로 A제품, B제품의 순이었고, 세 가지 제품 사이에 유의적인 차이를 나타냈다. 탄력성(elasticity)은 C, B, A제품 순으로 나타났으며 세 가지 제품간에 유의적인 차이를 나타냈다. 호박양갱의 관능평가에서 색의 경우 B제품의 점수가 가장 높았고, 다음으로 C제품, 그리고 A제품의 점수가 가장 낮게 나타났으며, 세 가지 제품간에 유의적인 차이를 나타냈다. 맛의 경우 B제품의 점수가 가장 높았고, 다음으로 C제품, A제품의 순이었다. 견고성은 A, B, C제품의 순이었으며, 그 중 A제품이 두 제품에 비하여 유의하게 높았다. 부착성은 B제품이 가장 높았으며, 다음으로 C제품, A제품의 순이었다. 전반적인 기호성에서는 A와 C제품에 비하여 B제품의 점수가 유의적으로 높게 나타났다.

통밀가루 첨가량에 따른 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk with Whole Wheat Flour)

  • 식이섬유가 풍부한 WWF를 우리 전통 음식인 설기떡에 첨가하여 수분함량, 색, 기계적 조직감 특성, 노화도, 관능적 특성 등 품질 특성을 규명하였으며, 품질과 영양적 가치를 고려한 적절한 첨가 수준을 찾고자 하였다. 시료들 간 유의적인 수분 함량의 차이는 없었으며, 색도 중 L(명도)값은 WWF의 첨가량이 증가할수록 감소하는 값을 나타내었다. TPA 검사에서 hardness는 제조 직후 시료들 간 유의적인 차이가 없었으나, 저장 후에는 WWF의 함량이 많아질수록 그 값이 유의적으로 감소하여, WWF의 첨가가 설기떡의 노화 지연에 효과가 있음을 알 수 있었다. 또한 저장 기간 중 WWF 첨가량이 증가할수록 springiness와 chewiness가 대조군에 비해 낮은 값을 나타내었다. 그 밖의 조직감 특성은 시료 간 유의적인 차이를 보이지 않았다. Avrami 방정식의 시간상수(1/k)값은 WWF 함량이 증가할수록 증가하여 WWF의 노화지연 효과를 확인하였다. 관능적 품질특성은 맛과 향, 조직감에서 5% 대체군이 전반적으로 높게 평가되었으며 전반적인 기호도까지 고려하면 5% WWF 대체가 맛과 향 및 조직감에 긍정적인 영향을 미칠 수 있음을 알 수 있었다.

Surimi Quality from Mechanically Deboned Chicken Meat as Affected by Washing Cycle, Salt Concentration, Heating Temperature and Rate

  • The effects of salt concentration and heating conditions on the thermal gelation properties of surimi produced from mechanically deboned chicken meat (MDCM) were investigated. Chicken surimi was manufactured by washing (MDCM: 0.5% NaCl=1:4), standing, straining and centrifuging. The fat, water-soluble protein and heme pigment in the MDCM were removed by increasing washing cycles. The compressive force of the chicken surimi increased as the concentration of salt was increased from 0% to 5%. Total gel strength of the surimi measured by texture profile analysis showed a maximum in the range 3-5% NaCl. Microstructural analysis showed that the unfolding network structure of the surimi gel began to appear at NaCl concentrations>2%. The optimum heating condition for gelation was $90^{\circ}C$ for 40 min as this resulted in maximum values for measures of gel strength including compressive force, hardness, fracturability, adhesiveness, springiness, gumminess, chewiness and resilience. Chicken surimi gel formed by cooking at a heating rate of $1^{\circ}C/min$ to $90^{\circ}C$ showed better a texture than gels produced at $1.85^{\circ}C/min$. Our result show that a lower rate of heating improves chicken surimi gelation.

현미밥의 식미 향상을 위한 곡류 혼합비의 최적화 (Optimization of Cooked Brown Rice by Controlling the Ratio of Grain Cereal Blends to Improve Palatability)

  • The objective of this study was to determine the optimal conditions for preparation of cooked brown rice by blending brown rice, white rice and glutinous rice to improve the palatability. Formulations composed of brown rice (10~100%), white rice (0~90%) and glutinous rice (0~90%) were generated from an extreme-vertices of mixture experimental design, which showed ten experimental points for brown rice, with white rice and glutinous rice as the independent variables. The sensory evaluation, color, and texture profile analysis (TPA) of cooked brown rice and pasting characteristics of blending cereals flour were measured as response variables. Regression analysis showed that all responsible variables fit linear, quadratic or special cubic models (p<0.1), except for the cohesiveness of TPA. The goals of optimization of the blending ratio of brown rice, white rice and glutinous rice were given as appearance, flavor, texture and overall acceptability (lower: 5.50, target: 6.62). The optimal conditions were determined to be 34.55% brown rice, 42.71% white rice and 22.74% glutinous rice.

A Conjoint Analysis of Consumer Preferences for Traditional Cheeses in Turkey : A Case Study on Tulum Cheese

  • In this study, consumer preferences toward traditional cheeses were investigated with Tulum cheese sample which is one of the traditional cheeses of Turkey. Type of milk used for Tulum cheese making was identified as the most important factor, followed by Tulum cheese's texture, price, salinity, fat content, origin and flavour. The ideal Tulum cheese profile for the overall consumers was made with cow milk, a hard texture, a price of 20 TL per kg, a low salt cheese, a full fat cheese, the regional cheese which belongs to Izmir region and a mild-flavoured cheese.A cluster analysis revealed there were two clusters with different ideal product profiles. Cluster 1's ideal Tulum cheese comprised a soft texture, a mild-flavoured cheese, a cheese made with cow milk, a full fat cheese, a low salt cheese, the regional cheese which belongs to Izmir region and a price of 10 TL per kg. Cluster 2 differed from cluster 1 in that its ideal Tulum cheese was a hard textured cheese and priced at 20 TL per kg. The consumers in cluster 2 were less price sensitive than those in cluster 1. In addition to, the consumers in both segments are ready to pay extra money for regional Tulum cheese versus non-regional Tulum cheese. We found that the older ones were more willing to pay as compared to younger individuals. Young people are critical target consumers for Tulum cheese marketers. The findings on cluster 1's ideal Tulum cheese of this study could therefore provide guidance to marketing managers.

Physiochemical Analysis, Antioxidant Effects, and Sensory Characteristics of Quark Cheese Supplemented with Ginseng Extract

  • The objective of this study was to evaluate physicochemical and sensory properties, the texture profile, and antioxidant activity of ginseng extract-supplemented quark cheese as a new cheese product intended to improve public health. After addition of less than 1.0% ginseng extract, the moisture content of quark significantly decreased, while fat and protein levels increased, although microbial counts and lactose and ash contents were not affected significantly (p<0.05). In terms of color, $L^*$ values decreased significantly with increasing concentration of ginseng extract, while $a^*$ values increased significantly (p<0.05). The results of texture profiling showed that cohesiveness and springiness were unaffected, whereas hardness, gumminess, and chewiness increased significantly. The 2,2'-azino-bis-3-ethylbenzothiazoline-6-sulphonic acid (ABTS) radical-scavenging activities of the cheese fortified with 0%, 0.5%, or 1.0% of the ginseng extract were $4.22%{\pm}0.12%$, $20.14%{\pm}1.34%$, and $56.32%{\pm}1.54%$, respectively. The results of sensory analysis indicated that bitterness, ginseng odor, and aftertaste significantly improved with increasing concentration of ginseng extract (p<0.05). However, there was no significant difference in the overall quality attributes of quark cheese between the no-supplement control and samples with less than 0.5% of the ginseng extract (p>0.05), suggesting that these products could help to promote public health as functional foods.

Petrographic Study of Mn-bearing Gondite (Birimian) of Téra Area in the Leo-Man Shield (West African Craton) in Niger.

  • The Téra manganese deposit represents the most significant manganese mineralization discovered in Niger up today. The main host rocks of this ore are gondites, which are a garnet and quartz rich metamorphic rocks. The supergene weathering developed an alteration profile on these gondites. This study aims to identify the mineralogical composition of gondites and associated rocks, in order to highlight the origine of rocks and the manganese enrichment. The methodological approach adopted involved a field study followed by polarizing microscopic analysis using transmitted and reflected lights. Additionally, quantitative X-ray diffraction (XRD) analysis was performed to assess the manganese ore minerals present in the gondite and associated rocks, including mica schists, amphibolites, and quartzites. The petrographic study revealed a paragenesis characterized by the presence of kyanite, staurolites, garnets and plagioclases that are generally poikiloblasts with quartz and opaque minerals inclusions, emphasizing the internal schistosity which is planar, helicitic or microfolded. These features indicate a prograde metamorphism until high-pressure amphibolite facies conditions. These conditions are followed by greenschist facies conditions marked by calcite, epidote, muscovite, chlorite and muscovite assemblage which emphasizes the vertical tectonics. Depending on the alteration process, the manganese ore exhibit a granular texture at the bottom of the gondite hills, transitioning to a colloform texture towards the top, passing through the epigenization and replacement texture. The XRD analysis further revealed that the studied rocks originated from a volcano-sedimentary complex, characterized by alternating marly, arenaceous and pelitic sequences associated with submarine exhalations.

녹차분말 첨가가 쌀밥의 항산화 활성 및 물성에 미치는 영향 (Effects of Green Tea Powder Addition on Antioxidant Activities and Texture Properties of Cooked Rice)

  • 본 연구는 소비자가 추구하는 기능성 식품의 다양한 개발을 위해 녹차를 쌀밥에 접목시킴으로써 녹차의 생리활성이 부여된 기능성 쌀밥의 개발 가능성 검토를 위해 실시하였다. 녹차분말을 첨가한 쌀밥의 항산화 활성과 생리활성 물질의 변화 및 물성 변화를 알아보기 위해 취반 시 사용되는 물에 녹차분말을 1, 2, 3%로 첨가하여 취반하였다. 이후 제조된 밥은 동결건조 후 메탄올 추출물을 이용하여 항산화 성분 및 항산화 활성을 분석하였다. 또한, 취반 후 물성을 측정하여 그 변화를 알아보았다. 취반 후 녹차분말의 함량이 증가할수록 폴리페놀과 플라보노이드의 함량이 농도 의존적으로 증가하는 경향을 보였다. 쌀밥의 항산화 활성은 첨가한 녹차분말의 농도에 의존적으로 ABTS 및 DPPH 라디칼 제거능력이 증가하는 경향을 보였으며 환원력 및 지질과산화억제 효과에서도 첨가된 녹차분말에 의존적으로 활성이 증가하였다. 반면 녹차분말을 첨가한 쌀밥의 물성을 측정한 결과 녹차를 첨가하였을 때 경도가 증가하는 경향을 보였으나 유의적인 차이를 보이지 않았다. 이 연구 결과를 통해 녹차분말을 첨가하여 취반할 경우 식감을 유지하면서 녹차의 생리활성 물질도 부여할 수 있어 기능성 쌀 가공식품으로서의 적극적인 활용이 가능할 것으로 생각된다.

Chemical and Textural Properties in Commercial Fermented Soybean Curds of Sufu

  • A survey aiming to find out the chemical and textural properties of commercial fermented soy bean curd called sufu was conducted. Sixteen brands of plain sufu produced in the Northern or the Southern part of China were collected and examined for their crude protein, crude fat, texture profiles, free amino acids, and free fatty acid contents. Twenty-one free amino acids were extracted and derivatized using a commercial kit followed by separation and analyzed by the gas chromatography-mass spectrometry (GC-MS). Similarly, ten free fatty acids were extracted using alumina, eluted, separated and analyzed. The content ranges of crude fat and protein were 22~36% and 31~38%, respectively. In texture profile analysis, ranges of the texture parameters were 131~493 g (hardness), 0.4~0.5 (cohesiveness), -137 to -50 gs (adhesiveness), 0.6~1 (springiness), 47~220 g (gumminess) and 32~177 g (chewiness). Twenty-one different free amino acids, especially alanine, glycine, $\alpha$-aminobutyric acid, valine, leucine, allo-isoleucine, aspartic acid, glutamic acid and lysine in large amount, as well as ten fatty acids in total, notably linoleic acid (9-octadecanoic acid), oleic acid (9,12-octadecadienoic acid), linolenic acid (9,12,15-octadecadienoic acid), hexadecanoic acid and octadecanoic acid were found. This information provides important quality reference ranges for product developers and manufacturers to optimize and produce the plain sufu.

Effects of duck fat and κ-carrageenan as replacements for beef fat and pork backfat in frankfurters

  • Objective: Frankfurters are emulsion-type sausages that are widely consumed worldwide. However, some concerns regarding negative health effects have been raised because of the high fat content and the type of fat. This study aimed to evaluate the effects of duck fat and κ-carrageenan as replacements for beef fat and pork backfat in frankfurters. Methods: The different formulations for the frankfurters were as follows: 20% beef fat (BF), 20% pork backfat (PBF), 20% duck fat (DF), 20% soybean oil (SO), 20% duck fat/1% κ-carrageenan (DFC), and 20% soybean oil/1% κ-carrageenan (SOC). Physicochemical (fatty acid profile, color, rheological properties, cooking loss, water holding capacity, emulsion stability, and texture profile analysis), oxidative stability and sensory properties of frankfurters were evaluated. Results: Duck fat and κ-carrageenan improved rheological properties of meat batter, and physicochemical properties (emulsion stability, cooking loss, and hardness) of frankfurters. Moreover, duck fat added-frankfurters (DF and DFC) had higher oxidative stability than that of soybean-added frankfurters (SO and SOC) during refrigerated storage for 28 days. In sensory evaluation, flavor, texture, and overall acceptability of DFC were acceptable to untrained panelists. Conclusion: Our data suggest that duck fat and κ-carrageenan can replace beef fat and pork backfat in frankfurters. Duck fat and κ-carrageenan contributed to improve the physicochemical properties and oxidative stability while maintaining sensory properties. Therefore, the use of duck fat and κ-carrageenan may be a suitable alternative for replacing beef fat or pork backfat in frankfurters.
