톳(Hizikia fusiformis) 분말을 첨가한 양갱의 이화학적 품질특성 및 항산화 효과 (Physicochemical Properties and Antioxidant Activity of Yanggaeng Containing Hizikia fusiformis Powder)

  • The seaweed Hizikia fusiformis is rich in protein, carbohydrates, vitamins, and minerals. We investigated the physicochemical properties and antioxidant activities of yanggaeng made with agar, sugar, honey, oligosaccharide, cooked white bean paste, and different amounts (0, 1, 2, 3, 4, and 5%) of H. fusiformis powder. The proximate composition, pH, sugar content, color, texture, antioxidant activity, and sensory properties of the yanggaeng were investigated. The moisture and sugar contents of the yanggaeng did not change despite increasing the amount of H. fusiformis. The pH decreased with increasing H. fusiformis. The lightness decreased significantly, whereas the redness and yellowness increased with increasing amounts of H. fusiformis. In the texture profile analysis, the hardness, gumminess, and chewiness decreased with increasing H. fusiformis content. The antioxidant activity of the yanggaeng increased with the concentration of the H. fusiformis powder. The yanggaeng containing 2% H. fusiformis had the highest overall sensory acceptance score. The addition of H. fusiformis to yanggaeng appears to improve its quality and antioxidant activity.

  • This study investigated the physicochemical properties and antioxidant activities of yanggaeng prepared from agar, sugar, honey, oligosaccharide, cooked white bean paste, and different amounts (0, 0.5, 1.0, 1.5, 2.0, and 2.5%) of Pyropia yezoensis powder. The moisture, pH, sugar content, color, texture, antioxidant activity, and sensory properties of yanggaeng were investigated. The moisture content of yanggaeng did not change despite the increasing amount of P. yezoensis. The pH and sugar content decreased with increasing P. yezoensis concentration. The lightness decreased significantly, whereas the redness and yellowness increased with increasing amounts of P. yezoensis. Regarding texture profile analysis, the hardness, gumminess, chewiness, and cohesiveness decreased with increasing P. yezoensis content. The antioxidant activity of yanggaeng increased with increasing concentrations of P. yezoensis powder. Yanggaeng containing 2.5% P. yezoensis had the highest overall sensory acceptance score. Therefore, the addition of P. yezoensis to yanggaeng appears to improve its quality and antioxidant activity.

  • This paper reported research results to develop an algorithm of on-lin evaluation of surface profiles and roughness generated by turning. The developed module consisted of computer simulation of surface profiles using mechanism of cutting mark formation and cutting vibrations, and online measurement of cutting vibrations. The relative cutting vibrations between tool and worpkiece were measured through an inductance pickup at the rate of one sample per rotation of the workpiece. The sampling process was monitored using an encoder to avoid conceling out the phase lag between waves. The digital cutting signals from the Analog-to-Digital converter were transferred to the simulation module of surface profile where the surface profiles were generated. The developed algorithm or surface generation in a hard turning was analyzed through computer simulations to consider the stochastic and dynamic nature of cutting process. Cutting tests were performed using AISI 304 Stainless Steel and carbide inserts in practical range of cutting conditions. Experimental results showed good correlation between the surface profiles and roughness obtained using the developed algorithm and the surface texture measured using a surface profilemeter. The research provided the feasibility to monitor surface characteristics during tribelogical tests considering wear effect on surface texture in machining.

현미의 첨가량에 따른 약편의 품질특성 (Quality Characteristics of Yakpyun by Adding Brown Rice)

  • This study was performed to investigate the quality characteristics of Yakpyun with added brown rice. The Yakpyun was prepared with polished rice, brown rice, Jujube paste, Makkolli, sugar and salt. The Yakpyun was made with various levels (0, 20, 40, 60 or 80%) of added brown rice. After making the Yakpyun, it was examined for the effect of adding brown rice on quality characteristics using scanning electron microscopy (SEM), a mechanical test, and a sensory evaluation. The moisture contents of Yakpyun tended to decrease with increasing amounts of added brown rice, but no significant differences were observed. As the content of brown rice increased, the lightness (L) decreased and redness (a) and yellowness (b) increased. In a texture profile analysis, hardness decreased with increasing brown rice content from the moment of production to 3 days of storage. When more brown rice was added, rough surfaces were found more often under SEM, and large holes were evident between granules. The results of the sensory evaluation showed that overall acceptability was the highest for Yakpyun containing 40% added brown rice.

동결건조 감귤 분말을 첨가한 양갱의 품질특성 (Quality Characteristics of Yanggaeng Supplemented with Freeze-dried Citrus Mandarin Powder)

  • This study assessed the quality characteristics of Yanggaeng prepared with different ratios of Citrus mandarin powder: 0, 2, 4, and 6%. The moisture content was lowest in the controls, while there were no significant differences among the groups supplemented with Citrus mandarin powder. The pH significantly decreased as the amount of Citrus mandarin powder increased. The lightness (L), redness (a), and yellowness (b) were lower in control groups compared to Citrus mandarin powder groups. Texture profile analysis showed that the hardness of the Citrus mandarin powder groups were lower than the control (which was the highest). The total polyphenol and flavonoid content and DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity increased as the amount of Citrus mandarin powder increased. The result of a sensory evaluation test revealed no significant differences between the controls and groups with 2% Citrus mandarin powder added in color, smell, taste, texture, and overall acceptability.

상수리 쿠키의 항산화활성 및 품질특성 (Antioxidant Activity and Quality Characteristics of Acorn (Quercus autissima carruther) Cookies)

  • This study was conducted to investigate the effects of acorn ($Quercus$ autissima carruther) powder on the antioxidant activity and quality characteristics of cookies. Cookies were prepared with different amounts of acorn powder (at ratios of 0, 0.5, 1, 3 and 5% to total flour quantity). Antioxidant activity was estimated based on DPPH free radical scavenging activity and total phenol content in acorn powder and cookies. To analyze quality characteristics, bulk density, pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. Loss rate, a values, total polyphenol contents and DPPH free radical scavenging activity of cookies significantly increased with increasing acorn powder content (p<0.01), whereas pH of the dough, L values and b values of the cookies significantly decreased with increasing acorn powder content (p<0.01). The results of sensory evaluation (appearance, taste, flavor, texture and overall preference) demonstrate that the 3% acorn cookie group showed the highest degree of preference among all items of added acorn powder. From these results, we suggest that acorn is a good ingredient for increasing the consumer acceptability and functionality of cookies.

밀쌀 품종별 도정 및 퍼핑 조건의 최적화 (Optimization of Milling and Puffing Conditions of the Varieties of Wheats)

  • Process optimization of milling and puffing condition of the typical varieties of wheat such as HRS, ASW, and SW were studied. Distibution of optimal milling size of 8 mesh-on was more than 90% after milling of three wheats. That of HRS was the highest, 78%, and that of SW and ASW were pretty high, above 75%. Moisture content of three wheats was between 10∼12%, and protein content which are important for texture profile and puffing was 12.68%, 13.59%, and 11.82% for SW, HRS, and ASW, respectively. Puffing was optimal of 7 kg/$\textrm{cm}^2$ heating pressure for SW, and 5 kg/$\textrm{cm}^2$ lot HRS and ASW when the puffing process was pursued at 14.5 ∼15.0 kg/$\textrm{cm}^2$ steam pressure. Moisture content decreased from 11∼l3% to 5.6∼6.0% after puffing. Bulk density of SW, HRS, and ASW was 0.0441, 0.0523, and 0.0460, respectively. Size distribution of HRS was 82.4% after Puffing. Press strength of HRS was high, 51.0%, and texture of HRS was crispy.

대추가루 첨가 비율에 따른 약편의 품질 특성 (Quality Characteristics of Yakpyun by the Addition of Jujube Powder)

  • This study investigated yakpyun processing using jujube powder. The yakpyun was prepared with rice, jujube powder, makkolli, sugar, and salt. The yakpyun is made with various amounts (0, 2, 4, 6, 8%) of jujube powder. The effect of adding jujube powder on the quality characteristics of yakpyun were examined through SEM, mechanical tests, and sensory evaluation. The moisture contents of yakpyun were significantly reduced with increasing amounts of jujube powder. As the content of jujube powder increased, the lightness (L) decreased while redness (a) and yellowness (b) increased significantly (p<0.05). In texture profile analysis, hardness increased with increasing jujube powder content from initial production to three days of storage. In the structure of yakpyun examined through SEM, when more jujube powder was added, rougher surfaces were found more often (bigger holes between granules). The results of the sensory evaluation showed that the highest scores for overall acceptability were highest scores for yakpyun containing 6% level jujube powder. In conclusion, an addition of 6% jujube powder was optimal.

수분 첨가량에 따른 절편의 노화도에 관한 연구 (Retrogradation Characteristics of Jeolpyon Prepared by Different Moisture Addition)

  • 수분의 첨가수준을 달리하여 제조한 절편의 저장기간에 따른 노화특성 및 품질특성을 평가하였다. 색도는 저장기간에 따른 시료간의 유의적인 차이를 보였는데, 수분첨가량이 감소함에 따라 저장기간에 따른 수분의 손실로 황색도는 증가하고 명도는 감소하였다. 물성특성치는 저장기간이 증가함에 따라 그 값이 증가하여 떡이 단단해 졌는데, 35∼45%의 수분첨가구가 저장 72시간째까지 일정한 값을 나타내어 물성적으로 가장 안정하였다. 저장기간에 따른 노화속도는 35% 수분 첨가구는 노화가 다른 시험구에 비해서 가장 천천히 진행되는 것으로 나타났다. 관능검사 결과 35∼45% 수분첨가구를 가장 선호하였다. 노화속도가 느린 35% 수분첨가구가 관능적으로도 우수하여 본 실험에서 가장 알맞은 수분첨가량으로 설정할 수 있었다.

현미밥의 식미 향상을 위한 곡류 혼합비의 최적화 (Optimization of Cooked Brown Rice by Controlling the Ratio of Grain Cereal Blends to Improve Palatability)

  • The objective of this study was to determine the optimal conditions for preparation of cooked brown rice by blending brown rice, white rice and glutinous rice to improve the palatability. Formulations composed of brown rice (10~100%), white rice (0~90%) and glutinous rice (0~90%) were generated from an extreme-vertices of mixture experimental design, which showed ten experimental points for brown rice, with white rice and glutinous rice as the independent variables. The sensory evaluation, color, and texture profile analysis (TPA) of cooked brown rice and pasting characteristics of blending cereals flour were measured as response variables. Regression analysis showed that all responsible variables fit linear, quadratic or special cubic models (p<0.1), except for the cohesiveness of TPA. The goals of optimization of the blending ratio of brown rice, white rice and glutinous rice were given as appearance, flavor, texture and overall acceptability (lower: 5.50, target: 6.62). The optimal conditions were determined to be 34.55% brown rice, 42.71% white rice and 22.74% glutinous rice.
