Rheological, Physical and Sensory Evaluation of Low-Fat Cupuassu Goat Milk Yogurts Supplemented with Fat Replacer

  • The use of skim milk is a strategy to increase goat milk yogurt acceptability. However, it can negatively affect yogurt rheology because fat plays a vital role in dairy structural integrity. Thus, this study aimed to investigate the effects of fat replacers on the rheological, physical, and sensory parameters of low-fat cupuassu goat milk yogurts during refrigerated storage (28 days). Five goat milk yogurts formulations were carried out: whole yogurt (WY), skim yogurt (SY), skim yogurt with inulin (SIY), skim yogurt with maltodextrin (SMY), and skim yogurt with whey protein (SWY). Treatments were subjected to bacterial counts, chemical composition, pH, water holding capacity, instrumental color and texture, rheological and sensory analyses. All samples showed reducing pH values, water holding capacity, and L* and b* value during storage. Regarding texture, the firmness and consistency decreased during storage. On the other hand, the viscosity index significantly increased during refrigerated storage time. Moreover, all treatments exhibited viscoelastic behaviour. In addition, SIY and SMY showed the highest apparent viscosity. Furthermore, SIY, SMY, and SWY formulations exhibited positive sensory scores for appearance, color, aroma, texture, and viscosity. However, the overall acceptability and purchase intention did not differ statistically between WY and the fat-replacement treatments (SIY, SMY, and SWY). These results indicate that fat substitutes improved the quality of skimmed formulations. Thus, inulin and maltodextrin have the potential as functional fat replaces to produce low-fat goat milk yogurts.

산지개발의 공간분포와 산림훼손 (Forest Degradation and Spatial Distribution of Forest Land Development)

  • Development activities in forest areas are analysed based on degree of slope, altitude, land cover, and prefectures in order to improve the capacity of existing regulations of 'feasibility of forest land conversion' and 'assessment of forest land characteristics' in this research. 959 land based developments between year 2007 and 2013 have been analysed. A development site includes over 50% of forest is categorized as a forest type, degree of slope is steeper than $8.5^{\circ}$ as mountain type, and a development included in the both categories as combined type. Distribution characteristics of the above three types are analysed by development categories and regions adopting Relative Mountain Development Index(RMDI). In results, 44.94% of total development activities have been carried out in Gyeongsang Do in order of urban development, industrial complex, sports facilities, and soil and stone collection quarrying. Developments less than $0.3km^2$ which are exempt from the feasibility of forest land conversion regulation consist 86 cases of forest type, 78 cases in mountain type, and 78 cases in combined type. SAI by slope range showed the highest value of 1.55 in less than $5^{\circ}$ and the lowest value of 0.69 between $20^{\circ}-25^{\circ}$. RMDI value in Gyeongsang Do where mountain ratio is 67.05% appeared 1.17, which is 5 times more than Gangwon Do where mountain area ratio is 81.30%, and 2 times more than Chungchung Do where mountain area ratio is 51.24%. Development activities in forestland in Korea showed unequal distributions and 26% of those developments were not subjected to the feasibility of forest land conversion regulation.

삼중자망에 의한 해역별 어획량 및 어획성능 비교 (An analysis on catch and fishing power of trammel nets by fishing ground)

  • For an effective management of fisheries resources, we need fisheries informations necessary for the establishment of reasonable fishing effort and TAC distribution. We carried out fishing research using trammel nets in the coastal sea of Susan-port(Yangyang, Gangwondo, Korea) and Hupo-port(Uljin, Gyeongbukdo, Korea) and analyzed fishing power variation of the fishing gear in terms of species composition, condition and so on for both sites. A total of 29 species were caught with most dominant species of Hippoglossoides dubius followed by Pseudopleuronectes herzensteini, Lophius litulon and Alcichthys elongatus in Susan. The total number of species caught in Hupo was 37 species with most dominant species of Todarodes pacifius followed by Lophius litulon, Hexagrammos agrammus and Pseudopleuronectes herzensteini. CPUE of Susan fishing area per trammel net was 12.74 fish and 2.00kg on average, while it was 6.80 fish and 2.27kg on average for Hupo. The fishing power index for both sites was 1, placing the two fishing grounds in a same level.

Investigating the supporting effect of rock bolts in varying anchoring methods in a tunnel

  • Pre-tensioned rock bolts can be classified into fully anchored, lengthening anchored and point anchored bolts based on the bond length of the resin or cement mortar inside the borehole. Bolts in varying anchoring methods may significantly affect the supporting effect of surrounding rock around a tunnel. However, thus far, the theoretical basis of selecting a proper anchoring method has not been thoroughly investigated. Based on this problem, 16 schemes were designed while incorporating the effects of anchoring length, pretension, bolt length, and spacing, and a systematic numerical experiment was performed in this paper. The distribution characteristics of the stress field in the surrounding rock, which corresponded to various anchoring scenarios, were obtained. Furthermore, an analytical approach for computing the active and passive strengthening index of the anchored surrounding rock is presented. A new fully anchoring method with pretension and matching technology are also provided. Then, an isolated loading model of the anchored surrounding rock was constructed. The physical simulation test for the bearing capacity of the model was performed with three schemes. Finally, the strengthening mechanism of varying anchoring methods was validated. The research findings in this paper may provide theoretical guidelines for the design and construction of bolting support in tunnels.

생물다양성 증진을 위한 유휴농경지의 습지 복원 적지선정에 관한 연구 - 군포시 반월천 유역 사례로 - (Wetland Restoration Site Selection for Promoting Biodiversity in Abandoned Rice Paddy Fields - Focusing on Gounpo Ban-wol Stream Watershed -)

  • The increase of rice productivity, the decrease of rice demand, aging farmers, and the market-opening of rice along with the domestic and international conditions changes have been led to the increase of the abandoned rice paddy fields. Such abandoned rice paddy fields have been left in many areas and most of them have become wetlands. The purpose of this study is methodology of selection to the wetland for development in the abandoned rice paddy fields along with surroundings. The selection of habitat suitability index assessment study to conservation and restoration was done through hydrology, wild animals habitation, wetland vegetation, outside disturbance, and natural purification capacity assessment. In addition, the same method was applied to assessment items and standards for both the restoration site selection and the type of restoration. Both assessment items and standards were applied to the sites, drawn on the maps, and overlayer for the comprehensive map, and then the wetland suitability index was applied to the suitable site. The development technique was applied to 10 sites near the Banwol Stream watershed in Gunpo, Gyeonggi province. The selection of conservation, restoration, and the optimal sites can lead to not only the biodiveristy increase in agricultural or semi natural areas but also to the establishment of ecological networks in national level.

농업용 저수지의 농업가뭄에 대한 기후변화 잠재영향 평가 (Assessing the Potential Impact of Climate Change on Irrigation by Reservoir)

  • In order to assess the impact of climate change on irrigation reservoirs, climate exposure (EI), sensitivity (SI), and potential impact (PI) were evaluated for 1,651 reservoirs nationwide. Climate exposure and sensitivity by each reservoir were calculated using data collected from 2011 to 2020 for seven proxy variables (e.g. annual rainfall) and six proxy variables (e.g. irrigation days), respectively. The potential impact was calculated as the weighted sum of climate exposure and sensitivity, and was classified into four levels: 'Low (PI<0.4)', 'Medium (PI<0.6)', 'High (PI<0.8)', and 'Critical (PI≥0.8)'. The result showed that both the climate exposure index and the sensitivity index were on average high in Daegu and Gyeongbuk with high temperature and low rainfall. About 79.8% of irrigation reservoirs in Daegu, Gyeongbuk, and Ulsan with high climate exposure and sensitivity resulted in a 'High' level of potential impact. On the contrary, 64.5% of the study reservoirs in Gyeongnam and Gangwon showed 'Low' in potential impact. In further studies, it is required to reorganize the proxy variables and the weights in accordance with practical alternatives for improving adaptive capacity to drought, and it is expected to contribute to establishing a framework for vulnerability assessment of an irrigation reservoir.

미시역학적 파손 기준을 이용한 탄소섬유/에폭시 복합재 링크의 안전성 평가 (Safety Evaluation of Carbon Fiber/Epoxy Composite Link Using Micromechanics of Failure Criterion)

  • 본 연구에서는 경량화를 위해 금속 링크를 탄소섬유/에폭시 복합재 링크로 대체하고자 파손 기준을 이용하여 복합재 링크가 주어진 하중 조건을 견딜 수 있는지를 평가하였다. 복합재의 파손 양상을 예측하기 위해 MMF 기준을 이용하였고, 기계적 시험을 수행하여 MMF의 기준 강도 파라미터를 구하였다. 연구결과 링크의 구멍 주위에서 응력집중이 발생하였고, 특히 굽힘 하중을 받을 때 링크 끝단과 구멍 주위에서 취약함이 드러났다. 파손 지수로부터 파손 양상을 예측하였고 매트릭스 인장 파손이 링크 끝단에서, 그리고 구멍 주위에서는 섬유의 압축 파손이 예측되었다. 본 연구를 통해 확보된 방법과 결과는 경량화를 위해 금속 부품을 탄소섬유/에폭시 복합재로 대체할 때 특정 하중 조건 하에서 복합재의 안전성을 평가하는 유용한 지침으로 활용할 수 있을 것이다.

콩섬유 복합분을 첨가한 스펀지 케이크의 품질 특성 (Quality Characteristics of Sponge Cake Supplemented with Soy Fiber Flour)

  • 밀가루에 콩섬유 FIBRIM(R)1450을 4-24%까지 첨가한 결과 콩섬유의 첨가량이 증가할수록 스펀지 케이크의 부피와 비용적은 유의적으로 감소하였다. 단백질 함량과 보수율은 반죽의 비중 및 스펀지 케이크의 비용적과는 각각 부의 상관이 있었으나, Mixograph 특성과 케이크의 비용적 사이에는 상관관계가 존재하지 않았다. 스펀지 케이크의 symmetry index와 uniformity index는 콩섬유의 첨가량에 상관없이 일정한 값을 나타내었다 케이크 크러스트와 크럼의 L값은 콩섬유의 첨가량이 증가할수록 감소하는 경향을 보였으나 a값과 b값은 큰 차이를 나타내지 않았다. 스펀지 케이크의 경도, 검성과 씹힘성은 콩섬유의 첨가량이 증가함에 따라 약간 증가하는 경향을 나타내었다. 스펀지 케이크의 경도, 탄성, 검성 및 씹힘성은 단백질 함량, 침전가, 보수율 및 알칼리수 흡수율과는 정의 상관이 있는 반면, Pelshenke값과는 부의 상관을 나타내었다. 콩섬유를 첨가한 복합분의 스펀지 케이크 관능검사 결과, 외부 색깔, 기공, 조직감, 내부 색깔, 향기 등은 콩섬유의 첨가에 통계적으로 유의적인 영향을 받지 않았으나 맛과 전체적인 기호도는 콩섬유를 20% 이상 첨가하였을 때 약간 저하됨을 알 수 있었다.

가염량이 다른 난황의 냉동저장 중 물성 및 마요네즈 제조적성 변화 (Changes in Physical Properties of Salted Egg Yolks as Affected by Salt Content During Frozen Storage and Their Effects)

  • 상업적인 가염난황의 식염 첨가량에 따른 냉동저장 중 물성 및 마요네즈 제조적성을 비교하기 위하여 난황(refractive index 43)에 7%, 10%, 13%의 식염을 첨가하여 이들을 $-15^{\circ}C$$-25^{\circ}C$에서 6개월간 냉동저장하면서 난황 자체 및 이들 난황으로 제조한 마요네즈의 물성변화를 측정하였다. 냉동저장 기간이 증가함에 따라 가염난황의 점도는 점차 증가하며 식염함량이 높을수록, $-15^{\circ}C$ 보다는 $-25^{\circ}C$에 저장시 점도 증가가 심하였으며, 난황의 유화력은 점차 감소하였다. 7%, 가염난황의 경우, $-25^{\circ}C$에서 4개월 이상 저장시 유화력의 현저한 감소를 나타내었다. 가염난황의 냉동저장시 미생물 수는 감소하였으며, 가염량에 따른 차이는 없었다. 난황의 냉동저장 기간이 증가함에 따라 이들 난황으로 제조한 마요네즈의 점도는 높아졌으며, 식염함량이 높을수록, $-15^{\circ}C$ 보다는 $-25^{\circ}C$에 저장한 난황으로 제조한 마요네즈의 점도가 높게 나타났다. 마요네즈의 입경은 마요네즈 제조에 사용된 가염난황의 식염함량이 높고, 냉동저장 기간이 오랜 것일수록, $-15^{\circ}C$ 보다는 $-25^{\circ}C$에서 저장한 것일수록 작아졌으며, 마요네즈 제조 직후 약간의 미생물이 발견되었으나 $30^{\circ}C$에서 1개월 보존 후 심사에서는 음성을 나타내었다.

  • RI 42, 43, 44, 45로 조정한 난황을 10% 가염처리 하여 이들을 $-15^{\circ}C$$-25^{\circ}C$에서 6개월간 냉동저장하며 점도, 유화력 변화를 측정하였다. 또, 이들 난황으로 마요네즈를 제조하여 점도, 입경, 유화 안정성을 측정하였다. 냉동저장 기간이 길수록 가염 난황의 점도는 점차 증가하였으며, 난백 혼입이 적을수록(RI가 클수록), $-15^{\circ}C$보다는 $-25^{\circ}C$에서 저장한 것이 저장중의 점도 증가가 큰 것으로 나타났으며, 유화력은 점차 감소하는 경향을 나타내었다. 난황의 법동저장 중, 이들 난황으로 제조한 마요네즈에 있어서 입경은 냉동저장 기간이 증가함에 따라 점차 작아졌으며, 점도는 저장기간 2개월까지는 감소하나 그 이후 증가하였다. 난백 혼입이 적을수록, $-15^{\circ}C$보다는 $-25^{\circ}C$에서 저장한 난황으로 만든 마요네즈가 입경이 더 작으며 점도는 높은 것으로 나타났다. 유화 안정성은 난황의 냉동저장 3-4개월까지 감소하여, 그 이후 증가하는 경향이었으며, RI 및 저장온도에 따른 차이는 인정되지 않았다.
