백련초 추출물 첨가 김치의 관능적 특성 및 휘발성 성분에 대한 연구 (Study on Sensory Properties and Volatile Flavor Compounds of Kimchi Added with Backryeoncho (Opuntia ficus-indica var. saboten) Extracts)

  • This principal objective of this study was to evaluate the sensory properties and flavor compounds of Kimchi prepared with different levels (0.0%, 0.4%, 0.8%, and 1.2%) of Backryeoncho extracts (BE). At high levels of BE, Kimchi showed increased level of crispness and flavor, and also jeotgal odor decreased in the sensory evaluation. Addition of 0.8 % BE resulted in the highest scores for color, taste, and overall acceptance of Kimchi. Therefore, addition of 0.8 % BE appears to be an acceptable approach to enhance the quality of Kimchi without reducing acceptability. As a result of flavor compound analysis, a total of 24 volatile flavor compound, including 11 S-containing compounds, 6 terpenes, 1 acid, 1 ester, 1 alcohol, 2 miscellaneous compounds, 2 thiocyanates, etc., were detected by GC/MS. The major volatile compounds were s-containing compounds and terpene hydrocarbon, and especially terpene of sabinene was newly detected in Kimchi with added BE. Levels of 2-vinyl-[4H]-1,3-dithin derived from garlic flavor as a sulfide-containing compound along with diallyl trisulfide derived from green onion flavor were reduced in Kimchi with added 0.8% BE. Most sulfide-containing compounds were reduced in Kimchi with added BE, whereas most terpenes detected in control Kimchi were not detected.

  • Capsaicin is hot taste ingredient of chili pepper and was isolated in 1876 and in 1919 its structure is sympathized compound. induces pain and when persistently dosed. the fact will bring insensible condition to other chemical and mechanical thermal stimulation by incapacitating sensory neuron is known. The analgesic effect by desensitization of such capsaicin is differ from the mechanism by analgesic action by opiate receptor of the existing analgesia or by prostaglandin mediation and the efficacy was known as similar with morphine. 차 향기의 생성 메커니즘 (Formation Mechanism of Aroma Compound during Tea Manufacturing Process)

  • Tea is an aqueous infusion of dried leaves of the plant Camellia sinensis L. and is the second most widely consumed beverage around the world after water. Aroma compounds of tea differ largely depending on the manufacturing process, even from the same categories of different origins. The flavor of tea can be divided into two categories: taste (non-volatile compounds) and aroma (volatile compounds). In the present study, we review the formation mechanism of main aromas generated from carotenoids, lipids, glycosides as precursors, and Maillard reaction during the tea manufacturing process, with biological and chemical mechanisms.

  • "Astragalus Membranaceus Bunge", which is a medical herb, grows wild in Manchuria and Korea, is cultivated today in Korea. Any literature about the organic components of "Astragalus Membranaceus Bunge" has been extracted with methanol referring to a literature of "Panax Ginseng C.A. Meyer" and two kinds of colorless crystals were obtained. After recrystallization in absolute alcohol, the melting point has been measured. The one kind was $181-182^{\circ}C$ and the others, $184-186{\circ}C$ respectively. It does not contain nitrogen, sulfur and halogen. By Liebermann's reaction, the one kind was not a carbohydrate but might be a Saponin. Through paper chromatography, taste, melting point, spectrophotometry, and elemental analysis, it was concluded that the other was Sucrose. It has been notified that the compound can be crystallized at the proper temperature, purity, and concentration of the solution and also solvent system.

Gamakamide-E, a Strongly Bitter Tasting Cyclic Peptide with a Hydantoin Structure from Cultured Oysters Crassostrea gigas

  • A new cyclic peptide (six-membered amino acid), gamakamide-E (L-Leu-L-Met (SO)-L-Me-Phe-L-Leu-D-Lys-L-Phe), was isolated as a strongly bitter tasting compound from cultured oysters, Crassostrea gigas. The molecular formula of $C_{43}H_{61}N_7O_8S$ was deduced from high resolution fast atom bombardment mass spectrometry (HR FAB-MS) ($[M+H]^+$ m/z 836.4356 ${\Delta}$= -2.4 mmu). Its unique structure including a hydantoin structure was firstly elucidated by nuclear magnetic resonance (NMR) analysis. Stereochemistries of constituent amino acids were determined by chiral high performanced liquid chromatography analysis of natural and synthesized peptides.

  • Capsaicin(8-methyl-N-vanillyl-6-nonenamide: CAP) known well as a major compound of not taste in hot pepper, was investigated for the inhibition effect on in vitro nitrosation. CAP(100$\mu$mol) inhibited the formation of N-nitrosoproline(NPRO) and N-nitrosothioproline(NTPRO) by 56% and 26%, respectively. Vanillyl alcohol inhibited the nitrosation of proline by a concentration-dependent manner, and vanillic acid and vanillin were less effective in blocking the nitrosation of proline compared to CAP and anillyl alcohol. The inhibitory effect of NPRO formation by CAP was evaluated to similar with alpha-tocopherol, and vanillyl alcohol was more effective than alpha-tocopherol in blocking the nitrosation of proline. Our results suggested that CAP and its metabolites such as vanillyl alcohol could inhibit endogenous nitrosation in hydrophobic biological environment.

정어리 초절임제품의 가공 (Processing of vinegar pickled sardine)

  • 우리나라 사람들의 기호에 맞으면서 저장성이 있는 정어리 조미가공품의 제조를 위하여 초절임 중 품질변화에 대하여 실험하였다. Dressed한 정어리를 포화식염수에 염지한 결과 48시간까지는 수분함량의 경우 감소하였고, 염도, 휘발성염기질소함량 및 조직감의 경우 증가하였으나, 그 이상의 시간에는 거의 변화가 없었다. 정어리 초절임중에는 수분 및 회분은 거의 변화가 없었고, pH는 상당히 감소하였다. 가공 중 생균수는 감소하였고, histamine함량은 변화가 없어 식품위생적으로 안전하다고 판단되었다. TBA값, 과산화물값 및 지방산조성의 결과로 볼 때 염지한 정어리를 항산화제가 함유되어져 있는 조미액에 초절임하여 제조하는 경우 가공 중 지질산패가 상당히 억제되었다. 정어리 초절임제품의 맛성분은 함량으로 미루어 보아 신맛의 유기산과 histidine, lysine, glutamic acid 및 arginine과 같은 유리아미노산 그리고 IMP와 같은 핵산관련물질이 맛의 주체를 이루고, 총 creatinine, betaine 및 TMAO 등이 보조적으로 맛에 관여하였다.

단백질 분해효소 종류에 따른 콩 가수분해물의 특성 (Characteristics of Soybean Hydrolysates Prepared with Various Protease)

  • 콩 가수분해물의 기능성 강화를 위하여 콩분말 및 SPI에 4종의 protease를 처리하여 가수분해물의 특성을 조사하였다. 수율은 protease(B)를 처리하였을 때 콩분말에서 43.2%, SPI에서 61.6%로 가장 높게 나타났다. 용해도와 총페놀성 물질은 protease(B)와 (C)처리구에서 크게 증가하였으며, 칼슘내인성은 protease(B)를 처리하였을 때 향상되었다. 콩분말에서 콩 특유의 비린내는 protease처리로 감소하였으나 콩분말과 SPI 모두 protease 처리로 쓴맛이 강해졌으며 protease의 종류에 따른 차이는 확인되지 않았다. 가수분해물의 수율을 비롯한 이화학적 특성을 감안할 때, protease (B)가 가수분해물 제조에 적합하였으며, 가수분해물의 활용 형태에 따라 관능적 특성의 보완이 요구되었다.

균주를 접종하여 제조한 청태전 차의 관능적 특성과 생리활성 효과 (Sensuous Characteristics and Physiological Activity of Cheongtaejeon Tea Produced with the Inoculation of Microbial Strains)

  • This study was conducted to restore our traditional Cheongtaejeon tea and to develop the special products. We inoculated Cheongtaejeon tea with lactobacilli (Lactobacillus plantarum CHO 25) and the mixed microbial strains (L. plantarum CHO 25 + Saccharomyces cerevisiae + Bacillus amyloliquefaciens CHO 104). We also examined the sensuous characteristics and physiological activity of Cheongtaejeon tea which was produced by the inoculation of microbial strains. The external appearance of Cheongtaejeon teas were not significant among the teas which were produced with or without the inoculation of L. plantarum CHO 25 and the mixed microbial strains. The taste of the tea increased most in Cheongtaejeon tea which was produced without the inoculation of microbial strains. The taste and liking of Cheongtaejeon tea which was inoculated with Aspergillus oryzae and Aspergillus niger decreased significantly, and it was not suitable to drink. Total phenolics compound contents, total flavonoid contents and DPPH ($\alpha,\alpha$-diphenyl-$\beta$-picryl-hydrazyl) radical scavenging activity of Cheongtaejeon tea extracts increased much more in the order of that produced with the inoculation of L. plantarum CHO 25, control and that with the mixed microbial strains. However, nitrite radical scavenging activity in 1,000 mg/L Cheongtaejeon tea hot water extracts were in the order of the control (94.4%), the inoculation of L. plantarum CHO 25 (93.6%) and the mixed microbial strains (91.1%). Overall results indicated that the sensuous characteristics increased most in Cheongtaejeon tea which was produced without the inoculation of microbial strains, and those physiological activities in tea with the inoculation of L. plantarum CHO 25.

진주조개(Pinctada fucata) 추출물의 가공 및 품질특성 (Processing and Characteristics of Pearl Oyster (Pinctada fucata) Extracts)

  • This study examined the effective utilization of pearl processing by-products. Three extracts of hot-water extract (WE), hydro-cooked extract (HE), and two-step enzymatic hydrolysate (EH) were prepared from pearl oyster muscle, and their characteristics were examined. The moisture, crude protein, volatile basic nitrogen (VBN), and amino-N contents were 97.5-98.0%, 0.5-1.3%, 2.1-4.9 g/100 mL, and 35.0-74.5 g/100 mL, respectively. EH had the lowest VBN and highest amino-N contents. In addition, EH had the highest yields. In terms of its functional properties, EH inhibited angiotensin-I converting enzyme ($IC_{50}$, 1.39 mg/mL) more strongly than the other extracts ($IC_{50}$, 4.17-7.95 mg/mL). The free amino acid contents of WE, HE, and EH were 661, 470 and 1,150 mg/100 mL, respectively. Major amino acids were taurine and glutamic acid. Major inorganic ions were Na, Mg, and Ca. Contents of taste compounds, such as free amino acids, inorganic ions, and quaternary ammonium bases, differed significantly according to the extract methods. Based on the results of chemical experiments and sensory evaluation, the quality of EH was superior to the other extracts, and EH is suitable for use in natural flavoring materials.
