  • As a method of utilization of sardine, sardinops melanosticta, proper processing conditions for a low salt fermented sardine were investigated. And changes of chemical components during fermentation and the effects of additives to improve the quality of the product were also discussed. A low salt fermented sardine was prepared with 8 or $10\%$ of salt and various contents of additives such as lactic acid, sorbitol, glycerin and ethanol as preservatives and flavor enhancers, and fermented for 80 days at $29\pm3^{\circ}C$. Judging from the changes in pH, amino-nitrogen and volatile basic nitrogen during fermentation of low salted sardine and the organoleptic evaluation on their flavor, the products of sardine meat containing 8 or $10\%$ of table salt, $0.5\%$ of lactic acid, $6\%$ of sorbitol and $6\%$ of ethanol as additives were most desirable when fermented for 60 days.

  • Purpose: This is a project report of the development of consecutive clinical nursing practicum modules using simulation encompassing the essentials of nursing over 4 years of university level education. Methods: The project was conducted from May to December in 2011 in a college of nursing in Seoul, Korea. Six nursing faculty members from different major subjects at the university participated in the project. The theoretical framework was sought in the first phase, resulting in utilizing Neuman's Systems Model. The principles of developing the contents of and the links between the modules were set up in the second phase, presented as complexity, diversity, and comprehensiveness. The details in the individual module were fleshed out in the third phase. Results: Eight clinical nursing modules using simulation were developed and presented in a table in detail. The complexity, diversity, and comprehensiveness of each module increased in depth and breadth in a consecutive order. Conclusion: It is hoped that this module is a decent curricular exemplar demonstrating comprehensive nursing practice education using a simulation technique.

  • Objectives The purpose of this study is to examine the characteristics of the experience prescription in 『Donguisusebowon(東醫壽世保元)』. Methods We examined the examples of the experience prescription in the pathology of 『Donguisusebowon』. Afterward, we considered the characteristics about the experience prescription of Junggyeong Jang and the Next Generation Doctors in 『Donguisusebowon』. Results and Conclusion 1. The Junggyeong Jang's experience prescription isn't modified despite the fact that it doesn't fit the constitutional disease and pharmacology, and many experience prescriptions are mentioned to in the pathology of 『Donguisusebowon』. But the Next Generation Doctors's experience prescription is modified, and a considerable number of experience prescriptions are not mentioned to in the pathology of 『Donguisusebowon』. 2. Jema Lee cited all of the Junggyeong Jang's experience prescription except Daesiho-tang(大柴胡湯) as an explanation for the constitutional disease, and cited a prescription that could not be used for the constitutional disease. And the pathological symptom of the Junggyeong Jang's experience prescription was used to establish the system of the Sasang Constitutional Medicine, so the Junggyeong Jang's experience prescription wasn't modifed. 3. Jema Lee cited a prescription that could be used for the constitutional disease. And the pharmacology of the Next Generation Doctors's experience prescription was used to establish the system of the Sasang Constitutional Medicine, so the Next Generation Doctors's experience prescription was modifed. 4. Jema Lee established the Sasang Constitutional Medicine based on the Existing Medicine. It was appeared in composition and name about the table of contents of the experience prescription in 『Donguisusebowon』.

A Literature Review on the Origin of Dipsaci Radix and Phlomidis Radix (천속단(川續斷)과 한속단(韓續斷)의 기원에 관한 문헌 고찰)

  • Objectives : This study aimed to review the change in the origin of Sokdan(續斷) by diachronically analyzing literature data from Korea and China. Methods : Literature records describing the origin(synonyms, location of production, description) of Sokdan were collected, records were divided into periods. The main contents were included in the results, and original texts were edited and summarized in the table. Results : Sokdan, whose leaves resemble Jeoma(苧麻)(SJ), was first recorded in 《Xinxiubencao(新修本草)》, and described in detail in 《Bencaotujing(本草圖經)》 during the Tang and Song dynasties in China. In modern times, SJ was assumed to be genus Phlomoides or Lamium; however, records of the plant have decreased. Finally, SJ was not included in the 《Pharmacopoeia of the People's Republic of China》 as Sokdan. However, 《Diannanbencao(滇南本草)》, 《Diannanbencaotushuo(滇南本草圖說)》, 《Zhiwumingshitukao(植物名實圖考)》 described Sokdan of dian(滇). It was assumed genus Dipsacus. From the 1950s onwards, Sokdan is described in the literature as a member of the genus Dipsacus. In korea, SJ was recorded in 《Hyangyakjipseongbang(鄕藥集成方)》 and 《Dongeuibogam(東醫寶鑑)》 during the Joseon dynasty. In modern times, the genera Phlomoides and Lamium were mostly recorded as the origin of Sokdan. Conclusions : Several species have been described as Sokdan over the years in China, but since the 1950s, the genus Dipsacus was noted as the origin of Sokdan. In Korea, SJ was used in the past, thus Sokdan was recorded as P. umbrosa in 《The Korean Herbal Pharmacopoeia(KHP)·1985》. However, 《KHP·1998》 referred to P. umbrosa as Hansokdan and D. asperoides as Sokdan.

  • In this study, we attempted to elucidate the cultural characteristics of Korean food based on a traditional understanding on the Korean novel. To achieve this, food characteristics related to 'rites of passage' were analyzed in the representative Korean literary work "Hon-bool", which describes the life of a first-son's wife every three generations in the going to ruin but historic 'Lee's family of Maean district' family and the life of the common 'Geomeong-gul' people who lived with farming on the Lee's land at Namwon of Junbook province in the 1930~1940s, during the Japanese Colonial rule. Every nation possesses rites of passage at important points in life, such as at birth, age of majority, wedding and death. Korean culture, in particular, has several memorial rites relating to birth, death and passage into the afterlife in which special foods are prepared. In this manner, ceremonial foods represent the Korean peoples' traditional vision of the universe and life. The book "Hon-bool" describes these traditions. Especially, the book describes the table-settings related to the main character's childbirth, first birthday, wedding and death. Therefore "Hon-bool" represents a living history of Korean traditional food and the work of storytelling through the traditional understanding is expected that perform an important role in making of cultural contents of Korean foods.

  • Objectives to study definition and treatment of dizziness in the books of Cold damage which are classified as symptoms of all time. Methods 1. Quote provisions related to dizziness in "Sanghanlon(傷寒論)" 2. Among the books of Cold damage which are classified as symptoms, select 19 literatures on dizziness with table of contents and collect data and categorize in two perspectives on theories and disease pattern. 3. Compare and draw a chart all data collected in above methods. Results & Conclusions 1. In the books on Cold damage, dizziness is expressed in 2 ways such as head dizziness(頭眩) and fainting(鬱冒). fainting is much more several symptoms than head dizziness and it is the difference that it has mental confusion. 2. The cause of head dizziness after promoting sweating, vomiting and purgation is that source qi(元氣) of upper energizer(上焦) is deficiency, and cause of head dizziness before using method of treatment is wind(風), heat(熱), phlegm(痰), blood deficiency(血虛) and etc. 3. Main cause of fainting is that deficiency is getting severe so that cold invades, and symptoms are blood deficiency, after giving birth and excess pattern of fire and heat. 4. Remedies for head dizziness are using Yeonggyechulgam-tang(苓桂朮甘湯), jinmu-tang(眞武湯), sosiho-tang(小柴胡湯), sagunja-tang(四君子湯), samul-tang(四物湯) and etc. 5. Insamsambaek-tang (人蔘三白湯) and Sayeok-tang(四逆湯) are used for deficiency pattern of fainting, and Dojeok-san(導赤散), Daeseunggi-tang(大承氣湯), and Hwangryeonhaedok-tang(黃連解毒湯) are used for excess pattern(實證).

The Energy Flow and Mineral Cycles in a Zoysia japonica and a Miseanthus sinensis Ecosystem on Mt. Kwanak 5. The Cycles of Potassium (관악산의 잔디와 억새 생태계에 있어서 에너지의 흐름과 무기물의 순환 5.칼륨의 순환)

  • To elucidate the mineral cycles of potassium in a dynamic grassland ecosystem in a steady state condition, this investigation was cunducted along the northwest side on Mt. Kwanak. The exper-imental results may he summarized on communities of Z. japonica and M. sinensis as follows. As compared with some pronerties of the surface soils among two semi-natural grasslands, the levels of exchangeahle potassium were high in M. sinensis and low in Z. japonica. Contents of potassium for the litters of Z. japonica and M. sinensis were 1.69% and 2.51%, re-spectively. The annual production of potassium was 1.32 g /m$m^2$ in the Z. japonica grassland and 3. 08 g /m$m^2$in the M. sinensis grassland. For a case of steady production and release, the ratio of annual min- eral production to the amount accumulated on top of the mineral soil in a steady state provides estimates of the release constant k. The models of the release, accumulation and annual cycle of potassium in a grassland ecosystem are determined by the equation (1) to (3), respectively (Table 3). Since it requires a period of about each 0.693 /r, 3 /r and 5 /r years for the release and accumu-lation of 50, 95 and 99% of its steady-state level, the estimates for potassium in a dynamic grass-land ecosystem of Mt. Kwanak were 1.5, 6.6 and 11.0 years in the Z. japonica grassland, and were 2.7, 11.9 and 19.8 years in the M. sinensis grassland. The amounts of annual cycles for potassium in a grassland ecosystem under the steady-state conditions were 1.32 g /m$^2$ in the Z. japonica grassland and 3.08 g /$m^2$ in the M. sinensis grassland.   • The Ministry of Education have had us practice the performance test as a substitute proposal, however, all the more for the idealistic purport, our education front does not have such a sufficient condition as to practice the performance test for many classes and miscellaneous duties and over-populated class, and that practice has been enforced so abruptly without any drastic preparation and has caused much confusion from the beginning of that enforcement. Thus, these problematic concerns are remained as the tasks of the teachers to be solved by themselves in the front of education, and herein I came to do this research. The followings are the conclusions that I got as the results of the research (1) Performance test style should be applied in consideration of the students' achievement level and the gap of the teachers' recognition; descriptive test, portfolio assignment and formative test styles were proper for the students lacking basic study ability. (2) Descriptive test should have its beginning with the question items to which students can write the problem solving procedure logically rather than those to evaluate the creation ability and thinking ability: and putting down specifically the assessment standard could prevent students' confusion and scheme the impartiality of the assessment. (3) Portfolio assignment evaluation should be given with as interesting and suitable amounts as possible so that the students can do by themselves. (4) Utilizing the performance test table enabled easy management of documentary evidence. And it is needless to say that the success of the performance test should have preceding conditions like the teachers' understanding and their positive participation. Therefore, I'd like to give suggestions herein like the followings; (1) The performance test should not always be made into grades, and there is a need to develop the test gradually in the condition that the education surroundings permit by checking time, frequency, ratio and contents of the test while practicing the multiple choice writing test. (2) As long as the performance test has the aims of improving the studying and learning activities, any performance test only for the sake of making numerals with the thought that assessment is the disposal of the grades should be avoided, and the change of the lecturing styles and development of various assessing types and studying materials should be endeavored to confirm with the aims.

The Research for Relationships between Concentration of Indoor Radon and Distribution of Soil Geological Map using GIS : Based on the Hwacheon and Jangsu Areas (지리정보시스템(GIS)을 이용한 토양지질도 분포와 실내라돈 상관성 연구 : 화천 및 장수의 사례를 근거로)

  • Objectives: This study examines the relationships between indoor radon concentrations and distribution from soil geological mapping in the Hwacheon and Jangsu areas. Methods: GIS and a pivot table were used for inquiries about indoor radon contents, soil characteristics, and geological differences. Results: The Hwacheon area was characterized by the presence of normal and reverse faults as a passage of runoff for radon, sufficient occurrences of minerals containing uranium within granite as a radon source, a high concentration of radon within the granite area and clear differences of radon concentrations between granitic and metamorphic areas. The Jangsu area was characterized by the presence of normal faults, wide distributions of alluvium, and ambiguities on radon concentrations indoors among areas of geological differences. Considering the granite area and alluvium surrounded with granite areas, the characteristics of radon concentrations within soils and indoors in the Jangsu area are similar to those of the Hwacheon area. High concentrations are found with entisol and inceptisol in the Hawcheon area, but with entisol, inceptisol, and ultisol in the Jangsu area. High radon concentrations are found in sandy loam and/or loam. High concentrations are found in recently constructed or brick buildings, but low concentrations in traditional or prefabricated houses showing a high possibility of outward flow. Conclusions: The overall results suggest that radon concentrations in the Hwacheon and Jangsu area are dominantly influenced by geological characteristics with additional artificial influences.

  • Effect of Menu Calorie Labels on Menu Sales and Consumer's Recognition at a Korean Restaurant in a Hotel The role of calorie information is to help consumers make healthier food choices. However, calorie information is generally unavailable in restaurants. Even in high-end hotel restaurants, which try to provide high quality foods and service, calorie labeling is not mandatory. Therefore, the purpose of this study was to evaluate the effect of calorie labeling on menu sales and consumer's recognition at a Korean restaurant in Kangwonland hotel. The calorie contents of 10 dishes sold in the restaurant were calculated using the food composition table. After making a new menu plate displaying calorie information, the new menu plate and old menu plate were provided every other week for 4 weeks. When we compared the sales between the periods of calorie labeled and calorie unlabeled, sales of 4 items among the 5 food items providing less than 1000 kcal, increased, however the 3 items among the menu providing more than 1000 kcal decreased. As the survey results of total 405 consumers (male n = 232, female n = 173) showed the new menu plate, 68.2% of subjects recognized calorie labeling on the menu plate. Among the subjects who recognized calorie labeling, 58.3% answered that calorie information affected their food choices. And most of them answered that they chose lower calorie foods based on the information provided. The results suggest that displaying calorie information on the menu plate at a Korean restaurant was effective in changing consumer's food choices.
