Retail Distribution Temperature and Quality Status of Fried-Frozen Korean Meat Ball Products (조리냉동 완자제품의 유통온도 및 품질 현황)

  • In order to investigate the quality status of fried-frozen Korean meat ball products during retail distribution, VBN value, TBA value, pH and metmyoglobin ratio were determined for 117 samples collected in Seoul area during the period of May to September, 1995. Most samples maintained relatively good quality, but one sample of a company showed $32.5mg%$ of VBN value and 0.65mg/kg of TBA value which indicate the early stage of spoilage. Correlation coefficient between metmyoglobin ratio and TBA value was highly significant. Samples closer to shelf-life limit tended to show higher VBN value, TBA value, metmyoglobin ratio and pH. Out of the surveyed samples, 35% were on retail shelves of temperature above $-14^{\circ}C$, while only 18% were being sold at temperature below $-18^{\circ}C$. It is concluded that prepared frozen foods should be stored at the recommended temperature of $-18^{\circ}C$.

  • Effects of irradiation on physical and chemical properties of chicken were investigated. Chicken was irradiated at dose levels of 0, 0.5, 1, 3 and 5 kGy using Co60 source. Irradiation increased drip loss and TBA value. Irradiation decreased L value, and increased a value and b value, indicating that irradiation made chicken darker, more reddish and more yellowish. Irradiation induced the degradation in salt-soluble protein, not water-soluble protein. Any differences in color, odor and tenderness between irradiated and non-irradiated chicken were not perceived by sensory panels.

Antioxidant Activity of Medicinal Plant Extracts Used as Folk Remedies by Diabetic Patients

  • The aim of this study was to investigate the antioxidant effect of medicinal plants used by diabetic patients. Fourteen medicinal plants were selected and antioxidant activity such as 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, inhibition effect of linoleic acid autoxidation and low density lipoprotein (LDL) oxidation, thiobarbituric acid (TBA) value were measured. The Cornus officinalis had DPPH radical scavenging activity of 84.79%, which was higher than the 78.79% for $\alpha$-tocopherol. Rosa rugosa Thunberg, Pueraria thundergiana Bentham, Artemisia princeps var. orientalis and Sasamorpha purpurascens Nakai also had high values. Extracts with higher DPPH radical scavenging activities had higher total phenol concentrations, and positive correlations between these parameters were found. Inhibitory activities of linoleic acid autoxidation, LDL oxidation and TBA value, used as indices of oxidative stress, were observed in most of the selected medicinal plants. The highest inhibitory activity for TBA value was observed in the extract of Pueraria thundergiana Bentham. Rosa rugosa Thunberg (75.50 %), Sasamorpha purpurascens Nakai (74.00 %), and Cornus officinalis (73.00 %) all had high antioxidant activity against linoleic acid autoxidation, similar to that of $\alpha$-tocopherol. The same 3 plants also had high in inhibitory activity against LDL oxidation. Therefore, we demonstrated that medicinal plants used as folk remedy by diabetic patients had antioxidant activity. Especially, Rosa rugosa Thunberg, Cornus officinalis, Pueraria thundergiana Bentham, Arlemisia princeps var. orientalis, and Sasamorpha purpurascens Nakai had high phenol concentrations which resulted in high values for DPPH radical scavenging. These same plants exhibited high values for inhibitory activities for TBA value, linoleic acid autoxidation and LDL oxidation, indices associated with lipid peroxidation.

Effect of Silicone Oil on Properties of Cooking Oils for Pork Cutlet Frying (돼지고기 튀김조리시(調理時) Silicone oil 첨가(添加)가 튀김기름의 성질(性質)에 미치는 영향(影響))

  • In this study, silicone oil was added into soybean oil in order to investigate its effect on acid value (AV), carbonyl value (COV), TBA value, fatty acid composition and color intensity of soybean oil during frying at $170^{\circ}C$. It was found that the AV, COV and TBA value were significantly decreased as the concentration of silicone oil increased from 0 to 5 ppm in soybean oil after frying for 7 hours. The color intensity was also decreased by 26% of color of 7 hours-heated soybean oil without silicone oil addition. Little changes in fatty arid composition was measured between the samples after 7 hours frying. From the overall result of this study, addition of silicone oil by 1 ppm was recommended for effective reduction of rancidity development of soybean oil ing frying.

Development of a Direct Evaluation Method to Measure the Rancidity of Yeonhaeju Soybean (Bazaz) Powders during Storage via the Fluorescence Spectrum Test (Fluorescence spectrum test를 이용한 연해주 대두(Bazaz) 분말의 저장 중 산패도 측정법 개발)

  • The rancidity of soybean (Glycine max L.) from Yeonhaeju, called "Bazaz", in powder forms was evaluated through a fluorescence spectrum test (FST). The results from the FST were validated by comparing the TBA and acid values. Soybean powders were stored in 25, and $90^{\circ}C$ for 20 days. The maximum excitation and maximum emission of fluorescent compounds generated from the soybean powder during storage were observed at the 360 nm and 430-440 nm wavelengths, respectively. The mean particle size of soybean powder was maintained at $40{\mu}m$ to avoid the dependence of the reaction area during measurement. According to the FST results, lipid oxidation did not actively progress during storage at $25^{\circ}C$. The fluorescence intensity (FI) from FST on the first day of storage was not significantly different from that on the last day of storage (day 20; p < 0.05), but the FI dramatically increased at $90^{\circ}C$. A smooth increase was observed in the initial stage; then, after 11 days of storage, the FI value increased by nearly 100% compared to that on the first day. The FI values were compared with TBA and acid values that were measured under the same storage conditions. All the values at $25^{\circ}C$ showed similar patterns during storage, but at $90^{\circ}C$, the FI and acid values showed similar patterns but the TBA decreased after reaching the maximum values on storage day 12. The results demonstrated that FST may be useful for measuring the rancidity of the powder form of soybean because it does not require extraction to measure the rancidity.

Potential Detection and Quality Properties of ${\gamma}-Irradiated$ Corn Starch of Korean and Chinese Origins by Viscosity Measurement during Storage (저장 기간 중 감마선 조사 옥수수 전분의 검지를 위한 점도 측정법의 적용과 품질특성)

  • Physicochemical changes in corn starch caused by irradiation were investigated, and irradiated samples were identified. Viscosity, TBA value, Hunter color, and total viable count were measured after irradiation of corn starch. Corn starches from Korea and China were irradiated at 0, 2.5, 5, 7.5, 10, and 15 kGy using a $Co^{60}$ irradiator and stored for 9 months at $0^{\circ}C$ and $20^{\circ}C$. Viscosity and specific parameter values decreased in all samples with increasing irradiation dosage at 50 rpm, showing a dose-dependent relationship $(above\;R^2=0.80)$ between non-irradiated and irradiated samples during storage. These results suggest that detection of irradiated corn starches is possible using viscometric method during storage. Total viable count, TBA value, and Hunter color were determined as supplemental indices for measuring viscosities of samples. Total viable count and TBA values showed dose-dependent relationship $(2.5{\sim}15 kGy)$. Differences in viscosity and total viable count, and TBA values among non-irradiated samples showed little changes with the lapse of post-irradiation time, but were still distinguishable for more than 6 months at $0^{\circ}C$ and $20^{\circ}C$ for corn starches from korea and China.

Synergistic Effect of Rhus javanica Linne Ethanol Extract Containing Several Synergist (항산화 효과가 있는 붉나무 추출물의 몇가지 synergist 첨가 효과)

  • Antioxidative effects of crude ethanol extract of the Rhus javanica L. and its fractionates with various synergists on the oxidation of palm oil, lard and soybean oil were compared with induction period(IP) using a Rancimat test. Addition of 200 ppm of the crude extract with phosphoric acid to palm oil extended IP 2.89 times as much as that of control and ethyl acetate fractionate extended IP 4.18 times at the same condition. To lard, 600 ppm of chloroform fraction with 200 ppm of ${\delta}-Tocopherol$ extended IP 13.42 times as much as that of control. 200 ppm of each fraction with various synergists were added to palm oil and lard, and oxidative stability of the oils were monitored by measuring POV, AV, and TBA value. The POV of palm oil containing 200 ppm of ethyl acetate and chloroform fraction with 200 ppm of phosphoric acid after 27 days storage at $60^{\circ}C$ were 8.9 meq/kg and 9.4 meq/kg respectively while the POV of control was 98.3 meq/kg at the same condition. AV and TBA value were also lower than that of control. The POV value of lard containing same amount of ethyl acetate and chloroform fraction with ${\delta}-Tocopherol$ after 12 day storage at $60^{\circ}C$ were 20.0meq/kg and 10.7 meq/kg respectively while the POV of control was 161.1 meq/kg at the same condition. AV and TBA value were also lower than that of control.

Studies on Physico-chemical Properties of Spreadable Liver Sausage during Storage Period (저장기간에 따른 퍼짐형 간 소시지의 이화학적 특성에 관한 연구)

  • This study was carried out to evaluate the physicochemical properties of spreadable liver sausage manufactured from ostrich and pork during storage. It was found that the changes in pH of all treatments increased significantly over 7 d, but did not show significant difference in the remaining periods. L-value deceased with liver sausage containing ostrich liver and ostrich meat, but others showed only slight increase during storage periods. Although a-value of liver sausage containing pork meat was higher than that containing ostrich meat over 7 d of storage; after this period the trend of a-value was inverse. However, b-value in all treatments did not show significant difference during storage periods. The initial average TBA-value of all products was below 0.1 mg/kg. However, TBA-value increased to about 0.63 mg/kg, and 0.77 mg/kg at 7 and 21 d, respectively. Hardness of liver sausage containing ostrich meat and pork liver was higher than that containing pork meat and ostrich liver. Cohesiveness and elasticity did not show significant changes during storage periods.

Effects of Various Kinds of Salt on the Quality and Storage Characteristics of Tteokgalbi

  • This study was carried out to evaluate the effects of various kinds of salt on the quality and storage characteristics of tteokgalbi. The tteokgalbi was prepared using four types of salt: 1.5% purified salt (control, C), 1.5% five-year-old solar salt (FS), 1.5% Topan solar salt (TS), and 1.5% French Gu$\acute{e}$rande solar salt (GS). The moisture, crude lipid, crude ash, crude protein and calorie contents, water holding capacity, and cooking loss were not significantly different between control and all other treatments. As for the textural characteristics, the use of GS increased the hardness of the tteokgalbi. According to the sensory evaluation, the use of TS had the best score in springiness. Tteokgalbi made with TS and GS had the two highest scores in flavor and total acceptability. During 15 d of storage, the contents of 2-thiobarbituric acid (TBA) value, volatile basic nitrogen (VBN) and the total microbial counts increased, while the pH decreased. The TBA values of the tteokgalbi containing TS and GS were lower than that of C. Lightness (L) and yellowness (b) values decreased during storage, but redness (a) displayed no significant difference during storage. Overall, the best results, in terms of TBA value and sensory attributes, were obtained for the tteokgalbi containing TS and GS.

Functional Properties and Antioxidant Effects of Solanum nigrum-Ethanol Extract (까마중-에탄올 추출물의 기능적 특성과 항산화 효과)

  • Functional properties of Solanium nigrum-ethanol extract were investigated, nitrite scavenging ability(NSA) and antioxidant activities based on thiobarbituric acid(TBA) value were measured. The contents of potassium in fruit and root, calcium in leaf were the highest mineral components in each parts of Solanium nigrum. Total aromatics contents(TAC) was order of fruit>root>leaf, total flavonoid contents(TFC) in leaf was 6 and 10 times, total phenolic compounds contents(TPC) in leaf was 15 and 30 times of those in fruit and root, respectively, and TFC was high with TPC increase. NSA of leaf-ethanol extract was 61.9% on pH 1.2, 53.5% on pH 3.0, 54.8% on pH 4.0 and 14.3% on pH 6.0, where as NSA of root and fruit-ethanol were considerably low to 3.5~7.9% over pH 1.2~6.0. TBA value of soybean oil with the dosage of leaf-extract showed few differences from control within 3 days, but it fairly decreased with considerable antioxidant effect to 47.6% of the control in 8 days.
