Physicochemical Properties of Starches in Japonica Rices of Differenct Amylose Content (아밀로스 함량이 다른 자포니카 벼 품종의 전분 특성)

  • This study was performed to find out starch properties of rice grains in three varieties with different amylose content, Ilpumbyeo (non-waxy), Goami2 (high amylose), and Hwasunchalbyeo (waxy rice). There was no difference among physico-chemical characteristics of rice grains, but Goami 2 showed $2{\sim}3$ folds higher crude fat (1.36%) than Ilpumbyeo. Pasting properties of RVA showed the highest values of maximum viscosity, breakdown, and final viscosity in Ilpumbyeo. A similar chain length distribution of amylopectin was found in Ilpumbyeo and Hwasunchalbyeo, indicating that DP 12 had the highest distribution. Goami 2 had the highest distribution in DP 14, and showed the lower percent (14.1%) than other rice cultivars. Thermal properties of DSC showed that the values of Tc and Tp of Hwasunchalbyeo were similar to Ilpumbyeo, whereas a slightly higher Tc was observed. The absorbtion enthalpy was also the highest (11.1 mJ/mg) in Hwasunchalbyeo. Goami 2 showed higher To, but the lowest enthalpy (6.52 mJ/mg) compared to Ilpumbyeo (7.92 mJ/mg). Retrogradation properties, which were measured with the gelatinized rice sample used for DSC, and stored in $4^{\circ}C$ during 6 days, indicated that retrogradation absorbtion peak was the first peak at $52.6{\sim}55.2^{\circ}C$, and the second peak above $95^{\circ}C$. Retrogradation enthalpy of Goami 2 was the highest value (5.12 mJ/mg).

  • Acorn wine was manufactured experimentally with koji inoculated the strain producing acorn tannin hydrolyzing enzyme in order to apply fungal tannase to food processing. Starch value of several Korean acorns was found to be 72.84 and the acorns were worthy of use as a carbohydrate food. Mixed koji was prepared by combination of rice and acorn powder at a ratio of 50to 50 and inoculation of Aspergillus oryzae producing amylase and Aspergillus sp. AN-11 producing tannase into the mixture in order to hydrolyze efficiently acorn tannin inhibiting alcohol fermentation in the medium, and then the mixed koji was used as a suitable koji to manufacture acorn wine. Acorn wine brewed with medium of the acorn powder treated with water and cooked and the mixed koji prepared was superior about two times to that brewed with medium of untreated acorn powder and general koji with respect to the rate of alcohol production and sugar fermentation during the 1st and 2nd brewing.

Quality Characteristics of Yukwa (Popped Rice Snack) made by Different Varieties of Rice (쌀 품종별 유과제조 특성)

  • Yukwa (one of most popular Korean traditional popped rice snacks) was made by four different varieties of rice, Shinsun (Japonica) and Hangang $(Japonica{\times}Indica)$ which are waxy rice and Dongjin (Japonica) and Samgang $(Japonica{\times}Indica)$ which are non waxy rice, for their quality by total expansion volume, hardness and brittleness. It was notified that hydration rate of waxy and non waxy rice for preparation of Yukwa were different by 30% and 42% in moisture content respectively soaked at $12^{\circ}C$ for 12 hours and the gelatinization temperature of their starch was $64.5-67.5^{\circ}C$ with no big difference by varieties. The quality of Yukwa was deeply related with amylose contents ranging from 18.5% of non waxy rice to 2-3% of waxy rice. Superior quality (p<0.05) was got from waxy rice. Lactic acid bacterial fermentation didn't improve the quality, and soybean and rice bran oil can be used for popping in even value.

The Effects of Liquid Waste from Methane Fermentation on Botanical Composition , Dry Matter Production and Nutrient Quality of Pasture Mixtures (혼파초지에서 메탄발효폐액의 시용이 식생구성 , 수량 및 목초품질에 미치는 영향)

  • The experiment was carried out to determine the optimum application rate of liquid waste from methane fermentation (LW) and its effect on botanical composition, dry matter yields and nutrient quality of pasture mixtures. Experimental fields was designed as a randomized block treated with NPK chemical fertilizer (NPK = 28-20-24 kg/lOa), NPK + Water 28 ton, 112 NPK + LW 28 ton, 112 NPK + LW 42 ton, LW 28 ton, LW 42 ton and LW 56 ton/lOa at Livestock Experiment Station in Suweon, 1985. The results obtained are summarized as follows: 1. Vegetation of introduced pastures, both in grasses and legumes, was markedly increased in the plots treated with methane-liquid waste. However, heavy application of liquid waste tended to increase of native weeds such as Polygronum spp., Rumex spp. and Lactuca spp. 2. Crude protein contents was increased in the plants applied with liquid waste, but NFE was decreased compared with those of chemical fertilizer applied. The concentrations of crude fat and crude fibre were, however less affected by the fertilizer resource. Among cell-wall constituents, cellulose content was decreased as the liquid waste application rate increased, while hemicellulose showed a negative association. 3. Productivity of the pasture was increased as the liquid waste application rate increased. The highest dry matter yields was obtained in the plot treated with LW 42 ton/lOa by 71 1 kg/lOa, which shows about 71% increments compared with those of chemical fertilizer treated. Net energy yields, both in starch value and NEL, were also markedly increased under liquid waste application. As a results, the optimum application rate of methane-liquid waste was found to be 42 ton in 10 a.

  • The relative retrogradation of Jeungpyun investigated with different milling methods of rice flour. The relative retrogradation of Jeungpyun was reduced in order that of W-C, W-P, D-M, D-J in DSC(Differential Scanning Calorimetry) method while W-C, D-M, D-J, W-P in Diastase method. In wet milling method, the relative retrogradation of Jeungpyun by pin mill (W-P) was lower than Jeungpyun by colloid mill (W-C). In dry milling method, the relative retrogration of Jeungpyun by jet mill (D-J) was lower than Jeungpyun by micro mill(D-M). The relative retrogradation of Jeungpyun by DSC method was similar to the diastase method. The relative retrogradation of Jeungpyun was decreased with decreasing particle size and setback value for amylogram and increasing damaged starch.

Effect of Moisture Content of Paddy on Properties of Rice Flour (벼의 수분함량이 쌀가루 특성에 미치는 영향)

  • Properties of dry milled rice flours made of paddy with different moisture content (12.6, 18.4 and 24.4%) were compared with those of wet milled rice flour. Among dry milled rice flour, the higher moisture content of paddy the finer particle size and the more distinct shape of starch were observed. As the moisture content of paddy increased, L (lightness) value and water absorption index of rice flour were increased, while setback in amylogram and water soluble index were decreased. Lower gel consistency and gel strength were found in dry milled rice flours than in wet milled rice flour, while no significant difference was found among dry milled rice flours. Enthalpy for melting crystalline of retrograded gels was higher in dry milled rice flours made of paddy with 24.4% moisture content than in other dry milled rice flours. Wet milled rice flour had lower retrogradation enthalphy than dry milled rice flours.

The Effects of CO2 Injection and Barrel Temperatures on the Physiochemical and Antioxidant Properties of Extruded Cereals

  • The effects of $CO_2$ injection and barrel temperatures on the physiochemical and antioxidant properties of extruded cereals (sorghum, barley, oats, and millet) were studied. Extrusion was carried out using a twin-screw extruder at different barrel temperatures (80, 110, and $140^{\circ}C$), $CO_2$ injection (0 and 500 mL/min), screw speed of 200 rpm, and moisture content of 25%. Extrusion significantly increased the total flavonoid content (TFC) of extruded oats, and ${\beta}$-glucan and protein digestibility (PD) of extruded barley and oats. In contrast, there were significant reductions in 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, PD of extruded sorghum and millet, as well as resistant starch (RS) of extruded sorghum and barley, and total phenolic content (TPC) of all extrudates, except extruded millet. At a barrel temperature of $140^{\circ}C$, TPC in extruded barley was significantly increased, and there was also an increase in DPPH and PD in extruded millet with or without $CO_2$ injection. In contrast, at a barrel temperature of $140^{\circ}C$, the TPC of extruded sorghum decreased, TFC of extruded oats decreased, and at a barrel temperature of $110^{\circ}C$, PD of extruded sorghum without $CO_2$ decreased. Some physical properties [expansion ratio (ER), specific length, piece density, color, and water absorption index] of the extrudates were significantly affected by the increase in barrel temperature. The $CO_2$ injection significantly affected some physical properties (ER, specific length, piece density, water solubility index, and water absorption index), TPC, DPPH, ${\beta}$-glucan, and PD. In conclusion, extruded barley and millet had higher potential for making value added cereal-based foods than the other cereals.

An Aspect of Occurrence and Chemical Properties of Grey Leaf Tobacco (Type III) (연초 III형 Grey엽의 발생양상과 화학성분 특성)

  • The occurrence and chemical properties of grey tobacco leaves (Type III) found in 1995 crop of flue-cured tobacco cultivated in paddy field were investigated to compare with those of normal leaves. Cured leaves of NC82 were separated by visual characters into 3 classes of slight, fair and severe symptoms of grey leaf by the percentage of grey parts to whole leaf area. Number of samples classified with discoloring portion was the order of greyish brown > reddish brown > greyish yellow, respectively. Grey leaves of this type were mostly found among the leaves harvested from upper stalk position, and it was estimated that growth rate of upper leaves also influenced on the occurrence of grey leaves. Grey leaves showed remarkably lower b* and L* values than those of normal leaves, while a* value was mostly higher in grey leaves. These tendencies in chromatic aberration showed more remarkable difference in the degree of grey symptoms. Chemical analyses of grey leaf samples indicated that they contained less total nitrogen and nicotine, and more total sugar and starch than those of normal leaves. In chemical traits, these tendencies were accordance with the degree of grey symptoms, and within the same leaf, grey parts were decreased in total nitrogen and ether extract content compared with those of normal parts, but there was no difference in nicotine and Cl contents. Quality Characteristics of Soy Sauce Braised Shiraegi with Baknig Powder (베이킹파우더 첨가 시래기 간장조림의 품질특성)

  • This study tried to develop Siraegi by boiling it down in soy seasoning sauce with excellent sensory attributes and evaluate the quality characteristics in order to enhance the value of traditional agricultural products, dried radish leaves. Sugar content of the seasoning sauce were finally established at 30% (w/v) compared with the starch syrup, which was added to the sauce through sensory evaluation among four groups, 0%, 30%, 60% and 100%. The texture (breaking strength) of Siraegi which was boiled for 30 minutes in water with baking powder was reduced by showing softening effect ranging from 7.6% to 42.1% as the amount of added baking powder was increased. The color of braised Siraegi produced with prepared a seasoning sauce and different content of baking powder, the brightness significantly decreased with an increase of baking powder. The reduction effects of breaking strength ranged from 25.6% to 43.9%, resulting a significant difference. The pH of braised Siraegi with a seasoning sauce significantly increased from 5.71 to 6.04 as the amount of added baking powder was increased, while its acidity was decreased. Sensory evaluation showed significant values for hardness and toughness as the values dropped when compared with the control (p<0.001), and overall acceptability of the group with adding 0.2% baking powder was best (p<0.001). In conclusion, baking powder could be considered as softening agent shorting the cooking time and improvement of the acceptability. Furthermore, it was expected that the newly developed soy sauce barised Siraegi using the dried radish leaves would be successfully utilized by side dishes in the food preparation industry.

Densified Fuels from Poplars (포플러로부터 고밀화연료의 제조)

  • Recently, densified fuels from biomass are widely used North America and Europe as a regenerable and clean bioenergy. Compaction of sawdust of poplars(Populus tomentiglandulosa and Populus davidiana) with starch glue for densified fuel were studied. Calorific and elemental analysis were carried out to assess these species as fuel. Hot-press process was used and compaction was performed under temperatures from 120 to $160^{\circ}C$ and at pressure of 50kgf/$cm^2$ for prescribed time. Densified fuels were evaluated by its specific gravities, compressive strengths and fines. In the case of with-glue system, when the press temperature is $160^{\circ}C$ and press time is above 7.5 minutes, densified fuels with fines less than 5% can be produced. On the contrary, in the case of without-glue system, densified fuels with fines less than 5% can be produced by controlling the press conditions and the moisture content of sawdust.
