Thirty-eight glutinous rice varieties were classified into nine groups on the scatter diagram by the upper two principal components (56% contribution to the total information) based on eleven physicochemical characteristics including the viscograms and physical properties of cooked rice. The first principal component was the factor mainly associated with the viscogram characteristics of rice flour emulsion and the second was the factor chiefly related to the physical properties of cooked rice and water absorbability of rice grain. Indica glutinous rices were clearly distinguished from japonica ones by the first principal component score. Javanica glutinous rices were widely distributed on the intermediate zone between indica and japonica or on several japonica rice groups. Significant positive or negative correlations were found among water absorption rates of rice grain, physical properties of cooked rice, and viscogram characteristics of rice flour. Especially in japonica glutinous rices, the breakdown and setback viscosities of rice flour were closely associated with the alkali digestion value of milled rice and the stickiness of cooked rice. The frequency ratio of short glucose chains (A-chain) to intermediate glucose chains (B-chain), the ratio of B- chains to long glucose chains (C-chain) and the relative frequency of A- or B-chain fractions representing the amylopection structure of rice starch was closely associated with the breakdown and setback viscosities of rice flour.
Culture conditions and nitrogen sources were optimized for production of erythritol, a natural sweetener, by Candida magnoliae M26. The optimal culture conditions were found to be culture temperature of $28^{\circ}C$, initial pH of 7, aeration of 1 vvm and agitation speed of 500 rpm in a 2.5 1 jar-fermentor. Glucose was chosen as the best carbon cource bsed on cell growth and erythritol productivity. Kight steep water(LSW) and corn steep liquor (CSL) which are by-products in starch processing from corn were tested as a nitrogen source substitute for yeast extract. The use of either LSW or CSL did not change the fermentation performance. The experimental results using LSW and CSL showed 1.5 times higher in cell growth and almost the same value in erythritol productivity com-pared with the control fermentation using yeast extract as a nitrogen source. These results suggested that either LSW of CSL could be used as a nitrogen source in a large-scale fermentation for erythritol production.
To develop Korean-style cut noodles with enhanced protein and calcium levels, we manipulated the ratio of dried anchovy Engraulis japonicus soup base residue powder to wheat flour, using a response surface methodology based on trained panel trials to determine the optimum ratio. Texture analysis and nutritional evaluation were also performed on cut noodles containing dried anchovy soup base residue (CNAR). Higher umami taste and springiness, and lower fishy flavor were strongly correlated with overall acceptability. The optimal CNAR formulation consisted of wheat flour (96.02 g), anchovy residue powder (2.67 g), and water (50.64 mL). CNAR had lower gumminess and adhesiveness (P<0.001), but higher springiness, cohesiveness (P<0.001), and chewiness (P<0.05), than the control (original wheat flour cut noodles). The addition of anchovy soup base residue elevated protein, lipid, and ash levels relative to the control. Color values decreased with increasing residue powder content. In vitro protein and starch digestibility of CNAR were lower than in the control (P<0.001). CNAR yielded significantly higher total free amino acid content than the control (P<0.01), leading to CNAR's improved palatability. Dried anchovy soup base residue can be used in wheat flour cut noodles to improve nutrition, sensory acceptability, and profitability.
We examined the genetic variation within the species, the patterns of genetic diversty between populations, thermostability variations of enzymes and temperature tolerances of Corbicula japonica from the two main rivers In Korea. Starch gel electrophoresis was used to examine the genetic variation of 22 locl. Henting experiments of electrophoresis under the condition of 40$\pm$5$^{\circ}$ for 15$\pm$5 min disclose thermostabllity differences, called heat-sensitive and heat-resistant types, within each 디ectrophoretic allozyme. Genetic diversity at the natural species level was high (77.3%), whereas the extent of heat-treat groups was relatively low (52.6%). The genetic diversity trends to decrease from the source of two main siderable high genetic diversity compared with a mean value of C. japonica species, It is recommended that several populations of the species in Korea should be preserved.
This study evaluated the quality characteristics of semi-dried noodles prepared with various dry rice flours (0, 25, 50, 75, and 100%) in order to develop the most preferred noodle recipe and to increase rice consumption. Amylography measured the viscosity of composite dry rice flour-wheat flour and indicated that the gelatinization point and maximum viscosity decreased as the level of dry rice flour increased. Both L and a values for cooked noodle significantly increased as the dry rice flour increased; however the L value decreased for uncooked of noodles. Weight, volume and water absorption of cooked semi-dried noodles significantly decreased as the dry rice flour increased; however the turbidity of soup increased. Texture properties such as hardness, springiness, cohesiveness, and adhesiveness decreased as the level of dry rice flour increased. As the amount of rice flour added increased, large particles of gluten were reduced while smaller particles of starch increased by scanning electron microscopy (SEM). The color, taste, and overall preference of 75% noodles were the highest in the sensory characteristics. The results, showed that the addition of dry rice flour positively affects the overall sensory characteristics of semi-dried noodle with 75% representing the optimal level for addition.
Feed is single most expensive input in commercial pork production representing more than 50% of the total cost of production. The greatest proportion of this cost is associated with the energy component, thus making energy the most important dietary in terms of cost. For efficient pork production, it is imperative that diets are formulated to accurately match dietary energy supply to requirements for maintenance and productive functions. To achieve this goal, it is critical that the energy value of feeds is precisely determined and that the energy system that best meets the energy needs of a pig is used. Therefore, the present review focuses on dietary supply and needs for pigs and the available energy systems for formulating swine diets with particular emphasis on the net energy system. In addition to providing a more accurate estimate of the energy available to the animal in an ingredient and the subsequent diet, diets formulated using the this system are typically lower in crude protein, which leads to additional benefits in terms of reduced nitrogen excretion and consequent environmental pollution. Furthermore, using the net energy system may reduce diet cost as it allows for increased use of feedstuffs containing fibre in place of feedstuffs containing starch. A brief review of the use of distiller dried grains with solubles in swine diets as an energy source is included.
Germination of sweet and super sweet corn is lower than normal corn due to the higher sugar and lower starch contents of kernels. Sweet corn seeds are easily deteriorated in the field under the unfavorable condition, therefore it is important to identify the optimal harvesting time for seed production. This trial was conducted to investigate the responses of germination percentage of shrunken-2(sh2), brittle(bt), sugary(su), and sugary enhancer(se) hybrids in relation to harvesting dates. Eight hybrids of four different gene sweet corns were harvested at 15, 20, 25, 30, 35, 40, 45, and 50 days after silking(DAS). Germination test was performed using paper towel method. Mean germination percentages across eight hybrids showed the highest value at 45 DAS. There were significant differences among genes and within gene for germination. Shrunken-2 hybrid Mecca was higher than su hybrids for germination, indicating that sh2 would not be poorer than su Late harvesting beyond the optimal harvesting date might not be desirable because of more lodging and ear rots. Theoretical optimal harvesting date estimated from the regression equation was 40.9 DAS, however, practical date for harvesting would be a few days later than the estimated date if seedling vigor might be considered. Kernel dry weight per ear showed similar response to germination. Regression equation showed the highest kernel dry weight at 40.7 DAS. Significant correlations between kernel dry weight and germination were observed, impling that kernel dry matter accumulation would be an important factor for germination.

This research investigated the effects of processing conditions and natural antimicrobial materials on quality of freeze-dried, seasoned and roasted Alaska pollack (Theragra chalcogramma). The optimum dipping time and moisture contents of freeze-dried Alaska pollack were 1 sec in $1\%$ salt solution, $48.6\%$ respectively. The freeze-dried, seasoned and roasted Alaska pollack product showed high sensory value. As sterilization time increased over 30 mins in water bath at $100^{\circ}C$ the browning degree of the freeze-dried, seasoned and roasted Alaska pollack product increased. Among various antibrowning agents, $3\%$ corn starch was better in preventing browning than sporix treatment. The freeze-dried, seasoned and roasted Alaska pollack product added with lactate Ca and catechin had the antimicrobial, and the VBN contents of the product showed low level.
This study is concerned with quality and analysis of nutritive value of commercially available honey and pollen load. Of thirteen kind of commercially available honeys, acid levels were less than KP IV standard. Color reaction for ammonia, resorcine and varium chloride was negative and trace of starch and dextrine was not detected. There were no extraneous materials in honey samples. Specific gravity of sample was slightly higher than KP IV standard. Total ash lied between 0.01 and 0.15% of honey weight which was less than KP IV standard, except 0.56% of Castanea Honey. Studies on mineral compositions (AAS) for honeys and pollen loads showed that $Na^+,\;K^+,\;Ca^{2+},\;Fe^{2+}\;Cu^{2+}\;and\;CO^{2+}$ were the most commonly occuring minerals. Pollen loads showed higher levels of mineral contents than honeys. Castanea Honey revealed rich in minerals. $Cd^{2+}\;and\;Pb^{2+}$ were found relatively higher level in Robinia Honey. Reducing sugar level showed $60{\sim}70$ in honeys and $25{\sim}30$ in pollen loads. Non reducing sugar varied between 2 to 7% in pollen loads.
Sweet com seeds deteriorate faster due to low starch content than field com seeds when stored for a long tenn. This study had been conducted to observe the seed deterioration of four different sweet corns in a long tenn storage conditions in room temperature. Four kinds of sweet com genes (sh2, bt, su, and se) were harvested from 15 days to 50 days after silking with 5-day intervals. These seeds were stored in the room temperature and tested for germination percentages from 3 months to 18 months period with 3-month interval. su seeds germinated better than other types of gene. Hybrid Mecca which is sh2 gene germinated better when stored for 3 months to 18 months. For all genes, mean regression equations in relation to storage periods showed linear responses. For regression equation, the slope of sh2 gene was lower than that of su gene. The highest slope value was observed in bt gene showing faster deterioration rate. The rate at which seed deteriorates seems to be affected by the date at which it was harvested. The seeds that were harvested at the optimum time deteriorated more slowly than those which were not.
