Quality Changes of Kochujang Made of Rice Flour and Rice Starch Syrup During Aging (쌀가루와 쌀물엿 고추장의 숙성중 품질 변화)

  • To evaluate the quality difference between rice starch syrup Kochujang (RSSK) and rice flour Kochujang(RFK), moisture content, pH, titrable acidity, reducing sugar, amino nitrogen and color were measured for 90 days. Moisture content was no great difference between samples and was slowly increased during aging. pH of RSSK was 6.03 and that of RFK was 5.94 after mashing. And it was slowly decreased during aging. Titrable acidity was increased with no great difference between RSSK and RFK. Reducing sugar content of RSSK and RFK was 17.0% and 5.8% after mashing respectively. Reducing sugar content was increased till 40 days, but was decreased thereafter. Amino nitrogen content of RSSK was 123.6 mg% and that of RFK was 93.0 mg% after 20 day aging. Lightness of RSSK was higher than that of RFK, but redness was similar between RSSK and RFK.

A Study on Improvement of Oriental Drugs Preparation by Enzyme (효소(酵素)를 이용한 한약(韓藥) 전탕법(煎蕩法)의 개선(改善)에 관한 연구(硏究))

  • This study was conducted to improve preparations of oriental drugs by enzyme. Total sugar, reduced sugar, hydrolysis rate, and amylose content were compared in Korean yam starch and some oriental drugs treated different enzyme levels and treatment times. The results were as follows. Reduced sugar and hydrolysis rate by enzyme of yam starch were significantly increased according to increments of enzyme level and treatment time. Amylose content in yam starch was significantly decreased to increment of enzyme level and treatment time. Total sugar content in some oriental drugs of Sangmaeksan, Yukmigiwhang, Yukshinsan, Manbungsarungsan, and Sanyaksogalum were 46.08, 44.87, 11.15, 10.67, and $6.l6mg/m{\ell}$, respectively. There was no significant difference in hydrolysis rate by enzyme of Sangmaeksan, Yukmigiwhang, Manbungsarungsan. However, hydrolysis rates of Yukshinsan and Sanyaksogalum were significantly highest in 0.2% enzyme and 0.5% enzyme groups, respectively.

Sugar and starch in leaf-sheaths and internode of Jinheung and IR667 rice under various ripening environments (진흥(振興)과 IR 667의 엽초(葉鞘) 및 절간(節間)의 당(糖) 및 전분함량(澱粉含量)과 등숙환경(登熟環境))

  • According to the content of sugar and starch of each positional leaf sheath and internode at heading and 4 weeks after it using IR667-Suwon 214 (high yielding var. having tropical Indica parantage) and Jinheung (local leading var. temperate Japonica) rice grown in various cultivation seasons the suitability of grouping into the high sugar type (sugar>starch), sugar, tendency (increasing tendency in sugar content), high starh type (starch>sugar) and starch tendency (increasing tendency in starch) in carbohydrate metabolism was reexamined as follows. 1. Sugar tendency appeared strongly in IR667 than Jinheung, internode than leaf sheath, late season cultivation than early season, 4 weeks after than heading and high temperature than low temperature. Thus at heading, leaf sheath and internode of Jinheung in early and late season cultivation were high starch type, and lower internode in early season cultiattion and leaf sheath and internode in late season for IR667 were high sugar type. In very late season all internodes of both varieties except 1st internode of Jinheung at heading were high starch type. At four week after heading all leaf sheaths except 1st and 4th one of Jinheung and all internodes were high sugar type. High sugar type was intensified 4 weeks after heading in leaf sheaths than in internodes of IR667 in early season and of both varieties in late season. 2. The upper three leaf sheaths and internodes seem to work in the same way for carbohydrate translocation. Among them upper ones showed sugar tendency at heading and starch tendency 4 weeks after heading and it was clear in Jinheung. 3. The later the cultivation season, the higher the carbohydrate content (sugar+starch), and such tendency was clear 4 weeks after heading and in IR667, suggesting teanslocation inhibition by low temperature. 4. Grain filling rate (weight increase per day) was more rapid in early season cultivation and IR667 took shorter days to reach maximum rate. 5. The later the cultivation season, the greater the percent contribution of carbohydrate before heading to yield and it was always greater in IR667, a leaf sheath type. 6. Sugar and starch ratio appears to be determined principally by metabolic characteristics of variety according to growth process and secondly but considerably by environmental factors.

Application of Response Surface Analysis for Predicting Moisture Content of Binary Mixture (다중 회귀분석에 의한 이상혼합물(二相混合物)의 수분함량 예측)

  • The water sorption isotherms of binary mixtures, prepared by corn starch and isolated soybean protein (ISP) or casein, were measured and analyzed. Simple equations to predict moisture content from knowledge of composition and water activity of the mixture were derived by applying Response Surface Analysis. Comparison between predicted and experimental moisture content for 13 combinations of corn starch-lSP mixture at the range of $a_w$ 0.25-0.87 resulted in a maximum error of only 6.06% and an absolute mean error of 2.60%, and for the mixture of corn starch-casein the error was -4.39% and 2.12%, respectively. The agreement between experimental and predicted water sorption isotherms was shown to be 'highly acceptable' for the binary mixtures of 50% corn starch-50% ISP and 50% corn starch -50% casein.

Biodegradation Characteristics of Starch-Filled Waterborne Acrylate Film (전분을 충전한 수성 아크릴레이트 필름의 생분해 특성)

  • The starch-filled waterborne acrylate (SWAC) films were prepared. The structures and properties of SWAC films were investigated by infrared spectroscopy, thermogravimetric analysis, and strength test. The biode­gradability of SWAC film was also studied by determination of reduced sugar products after enzymatic hydrolysis. The surface morphology of the SWAC film was investigated by scanning electron microscopy (SEM). The results showed that the tensile strength and elongation of SWAC film decreased with the increase of starch content. The SWAC film showed significantly higher water absorbed content than waterbonre acrylate film. The biodegradability of SWAC film increased as the content of starch increased. The biodegradation of starch in SWAC film by ${\alpha}-amylase\;was\;about\;77{\%}$ of that of pure starch.

Changes of Seed Chemical Component during Grain Filling in Job′s Tears (율무의 등숙에 따른 종실 성분함량 변화)

  • The reports on the chemical composition of developing job's tears seeds is very insufficient by this time. The purpose of this study was to obtain the fundamental information on chemical component of the developing job's tears seed, including starch, sugar, oil, protein, fatty acid, Alkali Digestibility Value(ADV), 100-grain weight. Two job's tears varieties in different by maturity types were analyzed for those components from 10 days after heading to maturity, with 5-day intervals. Total sugar content in seeds followed a pattern of linear increase after heading, but it started to decreased around 15 days after heading. On the other hand, starch content continued to increased until maturity and the highest increasing occurred between 15 and 20 days after heading. The protein content of seeds was decreased, while oil content was increased through the ripening process. Starch content showed a positive correlation with 100-grain weight, ADV, oil and germination percent, but it had negative correlation between total sugar and protein contents in ripening process. Maximum starch content, 100 grain weight, and germination percent obtained by quadratic equation were attained 38 to 43 days after heading. So that the physiological maturity of job's tears seeds was considered to be 40 days after heading.

Effects of Leaf and Pod Removal on Assimilate Translocation in Soybean Plants (적엽 및 제협처리가 콩의 동화물질 전류에 미치는 영향)

  • Effects of leaf and pod removal on changes in dry weight and on the contents of soluble sugar, starch, protein and oil in leaves and seeds of soybean [Glycine max(L.) Merr.] cultivar ‘Hwangkeumkong’ were measured at the research farm of Korea University in 1992. The upper 40% and lower 60% of leaves and pods were subjected to treatments at the growth stage of beginning pod(R3). Upper leaf-lower pod removal showed the highest leaf and the lowest seed dry weights. Soluble sugar content was no different among treatments in leaves and seeds. The highest starch content was found in leaves of upper leaf-lower pod removal. Protein content was higher in lower leaves than upper leaves and the lowest in seeds of lower leaf-upper pod removal which had the highest oil content in leaves and seeds. These results apparently indicated that photoassimilates were mobilized from upper leaves to lower seeds, and protein sources were moved from lower to upper parts but weak in remobilization from leaves for the long distance translocation during the reproductive growth period.

Chemical Composition of Seed in Medicinal Soybean Collected in Korea

  • Production of medicinal soybean [Glycine max (L.) Merrill], characterized with black seed, white stripe at hilum border, yellow cotyledon and small seed, is increasing with increasing consumption. The objective of this study was to investigate the chemical composition of medicinal soybean seed and to provide basic information, for the characterization of these soybeans among genetic resources. Forty-four lines of medicinal soybeans collected from Korea and two control cultivars, 'Hwangkeumkong' (Yellow seed coat) and 'Geomjeongkong l' (Black seed coat) were planted at the Research Farm of the College of Natural Resources, Korea University, located at Namyangju City on May 25, 1996. Seeds of these lines were harvested at full maturity and analyzed for protein, oil, sugar, starch and mineral contents. Mean protein and oil content of the medicinal line seeds were 42.6 and 16.1%, respectively, and those of the control cultivars were in the middle range for protein and oil content. However, sugar and starch content of the medicinal line seeds appeared to be in the lower range of the distributions compared to the control cultivars and were 10.0 and 1.68%, respectively. Mean P, K, Ca, and Mg contents of the seeds of medicinal soybean lines were 15.9, 21.5, 3.11, and 2.81 mg/g, respectively, indicating that these lines had higher P, K, and Mg and lower Ca contents when compared to the control cultivars. Mean Na and Fe contents were 671 and 224 mg/kg, respectively, showing lower Na and similar Fe contents. The observed results provided that chemical compositions of medicinal soybean were, on average, different from those of the general soybean cultivars.

Sensory and textural characteristics of Chicksulgi using varied levels of arrowroot starch and different types of sweeteners (칡전분을 첨가한 칡설기의 재료배합비에 따른 관능적.텍스쳐 특성)

  • The objective of this study was to invesitigate the sensory and quality characteristics of Chicksulgi containing different ratios of ingredients such as arrowroot starch (10%, 20%, and 30%), sugar, honey, oligo-saccharide and water, by sensory evaluation and mechanical examination. The results of sensory evaluation showed that Chicksulgi containing 10% arrowroot starch had higher scores in overall acceptability, color and flavor preference. In the textural analysis of Chicksulgi, the springiness, cohesiveness, adhesiveness were the highest in the samples with 10% arrowroot starch, and the chewiness, gumminess, and hardness were the highest in the 30%-added samples. The hunter's color L value of Chicksulgi was decreased by the increase of arrowroot starch. The more arrowroot starch was added, the redness of Chicksulgi were increased, and yellowness of Chicksulgi were decreased. The moisture content of Chicksulgi was higher in the samples with 10% arrowroot starch than those with 30%.

Carbohydrate Characteristics and Storage Stability of Korean Confections Kangjeong and Dashik (강정과 다식의 탄수화물(炭水化物) 특성(特性) 및 저장성(貯藏性))

  • The carbohydrate characteristics and storability of two Korean traditional confections Seban-kangjeong (a Korean fried waxy-rice cookie) and starch-dashik (a Korean pressed starch cookie) were studied as compared with two Western confections fried cookie and biscuit. Seban-kangjeong showed lower contents of starch and sucrose and higher content of reducing sugar whereas starch-dashik showed higher contents of starch and sucrose and lower content of reducing sugar. Moisture content was higher in Korean confections than in Western confections. The degree of gelatinization was higher in Seban-kangjeong and fried cookie which were made through a frying process. Moisture adsorption isotherms were constructed for the four products. In storage test for 6 months under different temperature and humidity conditions, the relative humidity maintaining the initial moisture content of products was 68% for Seban-kangjeong and starch-dashik and 20% for fried cookie and biscuit. The ratio of retrogradation in storage was 15% in Seban-kangjeong, 20% in starchdashik and 28% in fried cookie and biscuit, showing the lowest progress in freezer storage.
