The Purpose of this study was to investigate the food preferences of college students of Korea. The survey was conducted on november, 1981 through the questionnaires. The subjects were 1184 male and 1241 female students of 9 universities. The results obtained were summarized as follows : 1) Preferences of staple foods : Cooked rice was preferred most by the subjects. Male liked rice more than female, whereas female liked bread and noodle more than male. Among the different kinds of rice, bread, and noodles, the following food items were favored by the subjects. (plain rice, red bean rice and soybean rice ; salad bread and vegetable bread ; Nangmyun and Bibim Kooksu). The foods not preferred were barley rice, instant noodle and soybean milk noodle. 2) Preference of side - dishes : Among the kinds of side - dishes by different preparation methods, stews were the most favored and the next favored were soups by the subiecls whereas female showed lower preference of soups than male subjects Most disliked kinds of side-dishes were changachi and moochim. For example, side-dishes which showed higher preference in each preparation method were stew (Kimchi stew and Soybean paste stew), soup (Beef soup and Seaweed soup), kimchi (Korean cabbage Kimchi), Bockeum (Sauted beef and Sauted Kimchil, cheon(Beef Cheon, fish Cheon), Kui(broiled saury and broiled yellow tail runner), Chorim(braised cuttle fish and braised fish cake), Namul(sliced radish, cucumber, and spinachi), and Changachi (dried radish). The side-dishes which showed lower preference were Alaskan pollack soup, soybean curd residue stew, cabbage Kimchi, liver Cheon, sauted liver, hairtail Chorim, radish rootNamul, and dried radish root Changachi. 3) Preferences of snacks. Fruits apple, peach, pear) were the most preferred snacks by the subjects. Male preferred ginsang tea whereas famale preferred coffee. Both bate and female subjects showed higher preference of milk and lower preference of sweets. 4) Preference of one-dish meals : No one dish meal were disliked by the subjects. Male liked Bockeum-Bab more than female, and female liked Mandukuk more than male subjects.

Oxidative stress derived from excess reactive oxygen species (ROS) is a major damaging factor for plants exposed to environmental stresses. Sweetpotato [Ipomoea batatas (L.) Lam] has a relatively broad adaptability to harsh environmental conditions compared to other staple crops. In this study, to select stress-tolerant sweetpotato cultivars for sources of molecular breeding on marginal lands, we evaluated the ion leakage values in 10 different cultivars after treatment of methyl viologen (MV), an ROS-generating nonselective herbicide, to leaf discs. DPPH radical scavenging activity and the contents of total phenolics were also investigated. The ion leakage of each cultivar showed a diverse value, which is well correlated with DPPH radical scavenging activity of each cultivar. DPPH radical scavenging activity also showed a high corelation with the contents of total phenolic contents. Three cultivars of Yanshu 8, Shinhwangmi and Shinzami showed high antioxidant activity. Our results suggest that a simple and efficient DPPH radical scavenging activity would be a suitable method to select potential cultivars with enhanced tolerance to multiple environmental stress.
Numerous seagrass habitat restoration projects have been attempted recently due to the remarkable decline in seagrass coverage. Seagrass transplants tend to adapt to a new environment after experiencing transplanting stress during the early stages of transplantation. Once acclimated, the transplants grow into healthy seagrass beds via vegetative propagation. The establishment and growth dynamics of transplanted seagrasses in bays and coasts are widely reported, but few studies have been conducted on estuaries in Korea. We transplanted Zostera marina in November 2007 and November 2008 in the Nakdong estuary using the staple method, and monitored the survival, adaptation, and growth dynamics of the transplants as well as environmental factors every month for 1 year. Both transplants adapted well to the new environment without initial losses and showed rapid productivity during early summer. However, density of transplants increased 320% in 1 year from the previous year's transplants but that decreased to 59% during the following year. This significant reduction in density in the second year may have been caused by exposure to low salinity (10 psu) for 3 weeks during the unusually long monsoon season. While the survival and growth dynamics of seagrass transplants planted in bays and coasts are mainly controlled by underwater photon flux density and water temperature, salinity was the critical factor for those planted in Nakdong estuary.

The purpose of this study is to investigate the relative influence of diet and physical activity on obesity. The subjects were 155 adults aged 35-52 years from 24 neighborhood committees in 4 urban districts of Beijing (male : 78, female : 77). They were divided into normal weight, overweight and obese groups according to their BMI. The general information of the subjects was collected by interview-administered questionnaire. Dietary intake was obtained by three-day(two weekdays and one weekend day) food weighted method, physical activity was assessed by a validated combination of data obtained from activity monitors, bicycling information and activity records. There were no significant differences of age, gender, height, educational, family economic level, smoking and drinking between different groups. The proportion of flour intake was higher in obese group compared to normal weight and overweight groups, and that of vegetables is lower in obese group. The physical activity (PAL) was not significantly different between two groups of the normal, overweight and obese groups. After the adjustment for confounding factors using logistic regression model, we found that the proportion of flour intake was positively associated with obesity, while the proportion of vegetable intake was inversely associated with obesity. It is concluded that dietary patterns were associated with obesity and diets composed of more vegetables and less staple combined with physical activities could contribute to obesity prevention.
In countries that consumes rice as a main staple, rice hulls are natural resources composed of a large amount of organic compounds and high uniformity in size. Rice hulls are expanded to get rid of a defect in untreated rice hulls and to be used as a hydroponic substrate. Research on rice hulls is continuing for the agricultural application. This research was conducted to stabilize rhizosphere pH of the expanded rice hull substrates because of high pH caused by repeated use in ERH(expanded ride hull) substrates and without increasing the cost of developing new substrates. Sphagnum peatmoss (pH 3.0-4.0) wee mixed with the expanded rice hull substrate in the ratio of 10% (v/v), and this ratio kept the pH range of 6.0 to 6.5 in the root area of tomato plants during growth and at the time of harvest of tomato fruits. Also absorbtion of nutrients was highly increased. The yield increased from 1,051 to 1,266 kg per tomato plant which were harvested by two clusters.
The texture describing terms used for the Korean staple foods, cooked rice, noodles and Kimchi, were surveryed by questionnaire. A total of 154 kinds of terms were collected from 68 answers, in which 95 words were found with definite textural meaning in Korean dictionaries. The terms were classified according to their physical properties by Szczesniak's method. The important textural properties of different types of Korean foods were pointed out by the frequency of mentioning and by the preference expressions. The representative Korean words expressing each textural property of different types of food were selected. The important textural properties for Korean were hardness, brittle-gumminess, chewiness, springiness, adhesiveness, particle size and shape, moisture content and fat content of cooked rice, chewiness, hardness, springiness, and particle size and shape of noodles, and hardness, brittle-gumminess, chewiness, springiness and particle shape and orientation of Kimchi.

Eightly nine common Korean foods were analyzed by the enzymatic-gravimetric method developed by Prosky et al. and adopted by AOAC to determine total dietary fiber(TDF) content. The average TDF content of the foods analyzed was 4.78${\pm}$3.55% for cereal and grain products, 2.56${\pm}$1.65% for potatoes and starches, 1.94${\pm}$0.77% for sugar and sweets, 10.81${\pm}$6.57% for pulse and pulse products, 9.70${\pm}$5.92% for nuts and seeds, 15..38${\pm}$15.76% for seasonings, and 4.98${\pm}$4.35% for beverages. The foods containing the highest TDF values in the food groups were whole grain barley(17.88%) in cereals, yellow soybean(21.05%) in pulses, black sesame(21.34%) in nuts and seeds, and red pepper powder(39.37%) in seasonings except San Cho powder(52.43%). TDF content of rice, the main staple food of Korea, was 2.75% for brown rice and 0.96% for well-milled rice. The TDF value of the foods analyzed ranged from 0.12 to 23.4 times that fo crude fiber reported in the Korean food composition tables. When we consider dietary fiber contents of foods and food consumption patterns together, it is recommended to consume brown rice instead of well-milled rice and increase the consumption of minor cereals and pulses to raise dietary fiber intake.

Hypertension and obesity are important modifiable risk factors for cardiovascular disease, the leading cause of death in Korea. Therefore, we assessed the association between dietary pattern and obesity in hypertensive patients to formulate health promotion strategies for the older population. Dietary information was collected from hypertensive patients visiting community health education and information center by using 24 hour recall method. The 2005 DRIs for Koreans was used to evaluate the dietary adequacy. When subjects were categorized by body mass index (BMI) as normal, overweight and obese, no significant difference in energy intake was found among groups. Dietary intakes of folate, and vitamin C in obese hypertensive patients were significantly lower than in normal weight patients (p < 0.05). When we compare the nutritional status by waist circumferences, dietary intakes of zinc, vitamin A, thiamin, vitamin C and folate were significantly lower in the obese group. Vegetable intake was significantly lower in the obese group according to BMI as well as waist circumference. Energy intake from carbohydrate was significantly higher in obese hypertensive patients (p < 0.05). Obese hypertensive patients had a higher risk of nutritional inadequacy compared to normal weight patients. Our results indicated the need for developing interventions that encourage greater consumption of vegetables while cutting down salt intake with wise selection of staple foods, for obese hypertensive patients.

This study was conducted to investigate the eating patterns of Korean men by analyzing the relation among their socio-demographic characteristics, value toward food and nutrition, and eating behavior. Nine hundred twenty nine Korean men were selected by the stratified random sampling method. The socio-demographic characteristics of the subjects had a significant influence on their value toward food and nutrition. After in their sixties had meals for physiological needs rather than for nutrition or preference. Highly educated people, professional workers, office workers and people in the higher incomes, placed a higher value toward food and nutrition. In addition, rural inhabitants had a significantly lower value toward food and nutrition. They mainly ate to satisfy their hunger. The subjects' eating behavior had a significant difference according to their socio-demographic characteristics. The aged and the less educated valued breakfast the most, and showed a preference for rice as the staple food. The rate of skipping meals for this group was low. The higher their income, their eating behavior score was equally high, while the primary industrial workers and rural inhabitants had a low eating behavior score. Value toward food and nutrition had a significant influence on eating behavior. Those that placed a high value toward food and nutrition showed a marked tendency to choose bread or noodles rather than rice. In addition, those who placed a high value on food and nutrition skipped fewer meals and had a higher eating behavior score.

Rice is an important staple in the world. And drought is one of the important constraints that negatively affect yield loss and grain quality of rice. CRISPR/Cas9 is a new breeding strategy that can improve the characteristics of rice quickly and accurately. CRISPR/Cas9 is a novel approach that can reliably harvest rice yields in response to a rapidly changing climate. In addition, there is no externally inserted DNA left in genome-editing rice, and it is receiving attention as being able to take responsibility for future food because its characteristics are continuously improved. In the future, high levels of drought resistant in water-constrained environments will be required, which will reduce yield loss. OsSAP was genome-editing with CRISPR/Cas9 in rice. A different line number was assigned to each panicle, and the generation advanced by applying the ear-to-row method. Genome-editing rice has improved drought resistance in drought conditions. Also, in genome-editing rice, the target sequence was homozygous in the 0 generation, and the coefficient of variation of heading date, number of tiller, and 1,000-grain weight was very small in 2 generation. In the era of rapidly changing climate change, CRISPR/Cas9 presents a new breeding strategy that can rapidly and accurately improve agronomic traits of major food crops as well as rice. CRISPR/Cas9 is applied together with traditional breeding to develop into a new breeding strategy, it is suggested that food can be obtained stably in response to climate change.
