Blanched 섬초(시금치) 분말을 첨가한 식빵의 품질 특성 (Quality Characteristics of White Bread Mixed with Blanched Seomcho (Spinacia oleracea L.) Powder)

  • This research is about the quality characteristics of white bread mixed with varying ratios of Seomcho powder, such as 1%, 3%, 5%, and 7% (Spinacia oleracea L.). The pH level of dough decreased as more Seomcho powder (Spinacia oleracea L.) was added, and 7% addition recorded the lowest pH. The fermentation power of dough expansion decreased as the additional ratio increased in both the first and second proofing, and it was negatively correlated to the fermentation time factor. The moisture content of bread decreased as the addition ratio increased. The bread volume became smaller as the addition ratio increased, but it correlated negatively with its specific volume. The color of the crumb, the lightness and redness decreased in comparison to the control, but the yellowness increased. The total amino acid contents increased as the addition ratio increased, and glutamic acid was positively correlated to the additional ratio. The total free amino acids increased as the additional ratio increased, but cysteine levels were high at 5% and 7% additional ratio. The textural characteristics of the bread, springiness and cohesiveness were lower than the control, but gumminess, brittleness, and hardness were higher than the control. The adhesiveness was realized at 7% additional ratio.

  • The purpose of this study was to investigate the quality characteristics of bread made with 1%, 3%, 5%, and 7% of Bigeumdo Seomcho powder (Spinacia oleracea L.). The pH of dough and bread decreased as the amount of addition increased; 7% indicated the lowest. The moisture level correlated negatively with the powder addition, but the difference was not statistically meaningful (p<0.05). As the amount of addition was increased, the intensity of color increased but the volume decreased. The brightness and redness of the bread decreased as the amount of addition increased. The volume, specific volume, and baking loss rate correlated negatively with the powder addition. Regarding springiness, cohesiveness, and gumminess, the experiment group was higher than the control group and they lowered as the addition amount increased. The brittleness showed positive correlation with the addition amount. Out of the amino acids of bread, glutamic acid showed the highest value as the amount of addition was increased. Overall, it is possible to produce bakery bread using functional ingredients.

실험적(實驗的) 당뇨병(糖尿病)에 대(對)한 옥천산(玉泉散) 및 파채자의 효과(效果) (Effects of Okchunsan and Spinacia oleracea L.(Semen) on streptozotoicin-induced Diabetic Rats)

  • In order to investigate the effects of Okchunsan (Sample A), Gamiokchunsan (Sample B) and Spinacia oleracea L. (semen: Sample C) on streptozotocin-induced diabetic rats, the experimal study was performed on the levels of glucose, insulin, total cholesterol, triglyceride, total protein, albumin, blood urea nitrogen (BUN), electrolytes $(Na^+,\;Ka^+,\;Cl^-)$, GOT and GPT in serum, hemoglobin, hematocrit, urine volume, glucose and protein in urine, body weight, liver and kidney weight. The results were obtained as follows: 1. Serum glucose levels were significantly decreased in Sample A. B and C group and serum insulin levels were increaseclin Sample A and B group. 2. Serum total cholesterol levels were recovered as the normal value in Sample A, B and C group and serum triglyceride levels were decreased in Sample A and C group. 3. Serum total protein levels were increased in Sample C group, BUN levels were decreased in Sample A and C group. 4. Serum $Na^+\;and\;Cl^-$ levels were increased, $K^+$ levels were decreased in Sample A, B and C group. 5. Serum GOT and GPT levels were remarkedly decreased in Sample A, B and C group. 6. Urine volume, urine glucose and protein levels were decreased in Sample A, B and C levles. 7. Body Weight showed a tendancy of increasing in Sample A, B and C group. 8. Levels of serum albumin, hemoglobin, nematocrit, liver and Kidney weight were not significantly changed. According to above results, Okchunsan, Gamiokchunsan and spinacia oleracea L. (Semen) were expected to be applied to the treatment of diabetes mellitus and its complications.

퇴비로부터 분리된 Burkholderia cepacia No.15-2의 특성과 항균 효과 (Characteristics and Antimicrobial Effects of Novel Burkholderia cepacia No. 15-2 Isolated from Compost)

  • 길항미생물을 이용한 항곰팡이성 퇴비의 개발을 목적으로 공시 식물로써 Spinacia oleracea L과 식물 병원균 Rhizoctonia solani Kuhn O-28을 모델로 사용하여 수행 되었다. 다양한 음식쓰레기를 일년동안 숙성시킨 퇴비로부터 80 균주를 분리하였고, 그 중 No.15-2 균주가 R. solani Kuhn O-28에 대해 가장 높은 항곰팡이 활성을 보였다. 16S rDNA sequencing과 primer pair PCR에 의해 표현형과 분류학적으로 거의 독성이 없는 것으로 밝혀진 Burkholderia cepacia genomoval V로 분류되었다. 이 B. cepacia No. 15-2가 퇴비화 중에 우점하였으며 그 균수는 15일 동안 거의 $10^{13}$ cfu/g을 유지하였다. S. oleracea L을 배양 했을 경우 R. solani Kuhn O-28에 의한 발병율은 B. cepacia No.15-2를 첨가함으로써 40% 감소하였다. 결론적으로 B. cepacia No.15-2는 다양한 식물의 곰팡이 유래의 병을 방제하는 데 이용 가능할 것으로 사료된다.

셀레늄 강화 시금치의 항산화 활성 (Antioxidant Activities of Selenium-Treated Spinacia oleracea L.)

  • 본 연구에서는 셀레늄 강화 시금치의 항산화 활성을 측정하여 무처리군와 비교하여 증가된 항산화 활성을 관찰하고자 하였다. 0.10, 0.25, 0.50, 0.75, 1.00 mg/mL의 농도를 이용하여 무처리 시금치와 셀레늄 강화 시금치의 항산화 활성을 in vitro 실험을 통해 관찰하였다. 셀레늄 함량은 무처리 시금치의 경우 $61.19{\pm}2.35mg/kg$, 셀레늄 강화시금치의 경우 $239.0{\pm}3.73mg/kg$으로 셀레늄 강화시금치에서 약 3.9배 증가되었다. DPPH radical 소거능은 무처리 시금치에 비해 셀레늄 강화 시금치가 모든 농도에서 약 11~12% 유의적으로 증가하는 경향을 보였다. ABTS radical 소거능은 0.10 mg/mL의 낮은 농도에서 무처리 시금치에 비해 셀레늄 강화시금치에서 22.9%의 높은 증가율을 나타냈으며, 셀레늄 강화 시금치의 경우 무처리 시금치에 비해 유의적으로 높은 소거 능력이 나타났다. NO radical 소거능 또한 같은 농도에서 비교했을 때 셀레늄 강화 시금치의 경우 무처리 시금치에 비해 유의적으로 높은 소거 능력을 보여주었으며, 활성 산소 종 및 유리기에 전자를 공여하는 환원력에서도 무처리 시금치에 비해 셀레늄 강화 시금치에서 더 높은 활성이 나타났다. 이러한 결과는 시금치에 함유된 여러 항산화성분과 더불어 강화 처리로 인해 증가된 셀레늄이 효과적으로 여러 활성산소종의 소거에 관여하여 항산화능의 상승효과에 관여하였다고 사료되어진다.

  • 짙은 연색의 모자익병징을 나타내는 이병 시금치를 채집하여 Broad bean wilt virus(BBWV)를 분리동정 하였다. 분리된 Broad bean wilt virus (BBWV)를 지표식물에 즙액접종한 결과, 명아주(Chenopodium amaranticolor), 명아주(Chenopodium quinoa) ,잠두(Vicia faba)에서는 접종엽에 국부병반이 나타났고 접종상엽에서는 모자익(전신감염)병징이 나타났으며 꽈리(Physalis floridana), 시금치, 담배 (W.B), 담배 (Nicotiana glutinosa)에는 모자익 병징이 나타났다. 이병시금치로부터 분리한 병원바이러스와 BBWV의 항혈청을 한천내확산법(Agar gel-diffusion test)으로 반응시킨 결과 양성 반응이 나타났다. 이병엽을 Dip법으로 시료를 제작하여 전자현미경에서 검경한 결과 구형의 입자가 관찰되었으며 직경은 25nm이었다. 시금치 재배포장에서 BBWV의 발생분포는 수원, 안양, 대구 진주 등 거의 전국적으로 발생하였다.

  • Objectives: The objective of this study was to teach patients clinically useful external application of acne. Methods: We investigated the effects and manufacturing methods of the medical herbs published in the woman's monthly magazines according to "Zhong-Yao-Da-Ci-Dian(中藥大辭典)". Results: We investigated that Saururus chinensis Baill.(三白草), Houttuynia cordata Thunb.(魚腥草), Coix lachrymajobi L.(薏苡仁) were discovered 3 times, Brassica oleracea L.(甘藍), Raphanus sativus L.(래복), Daucus carota L. var. Sativa DC.(홍래복), Oryza sativa L.(米皮糠), Spinacia oleracea L.(파래), Cucumis sativus L.(黃爪) 2 times, and Glycyrrhiza uralensis Fisch.(甘草), Gallus gallus domesticus Braisson.(?子白), Aloe vera L.(노회), Phascolus radiatus L.(綠豆), Prunus persica Batsch.(桃葉), Lycopersicon esculentum Mill.(番茄), Taraxacum mongolicum Hand.-Mazz.(蒲公英), Prunus armeniaca L.(杏仁), Musa paradisiaca L. var. Sapientum O. ktze.(香蕉) and Malus pumila Mill.(평과) were discovered once in woman's monthly magazine during last two years. According to the effects, we classificated four groups which were defervescence(淸熱), subsidence of edema(消腫), pyorrhea(排膿) and gloss(滋潤) group. 엽록체내 Protoporphyrin IX(PPIX) 생합성계에서 S-23142의 작용기구 (Action Mechanism of S-23142 on the PPIX Biosynthesis System of Spinacia oleracea L. Chloroplast)

  • In vitro 조건에서 protoporphyrin IX(PPIX) 생합성에 미치는 제초제 S-23142와 acifluorfen의 영향을 알아보고자 시금치잎에서 엽록체내의 stroma와 membrane을 분리, 분획하고 형 광검출기가 장착된 역상HPLC를 이용하여 생합성된 PPIX 함량용 분석한 결과는 다음과 같다. 1. PPIX의 생합성이 이루어지는 부위는 엽록체 내의 stroma분획이었고 이는 모두 ALA(${\delta}$-aminolevulinic acid)에 의한 반응산물이었다. 2. PPIX의 생합성에 관련된 in vitro실험은 stroma분획을 이용하는 것이 가장 효율적이었다. 3. In vitro계에서 S-23142와 acifluorfen은 동일하게 PPIX의 생합성을 억제하였으며, 그 작용부위는 엽록체내의 stroma일 것으로 판단되었다.

Effects of Ozone on Crops and Protective Effects of Ethylenediurea as an Anti-Oxidant

  • Phytotoxic effects of ozone and ethylenediurea (EDU) on soybean (Glycine max) and spinach (Spinacia oleracea) were observed by using open-top field chamber system (OTC). Gas exchange rates (photosynthesis. stomatal conductance and transpiration rates) of soybean plants were decreased by 20% to 30% by ambient ozone and resulted in 30% reduction of seed yields. In OTC. ambient ozone and 0.12 $\mu$l/l $O_3$ decreased gas exchange rates of spinach by 25% to 40% and by 50%. respectively. The protective effect of EDU against ozone induced injury was obtained at 100 mg/l on soybean. and at 250 mg/l on spinach, respectively. The excessive application of EDU. however. inhibited photosynthesis. transpiration. and stomatal conductance without any specific visible damage.

Are antioxidants induced by UV-B exposure in a leaf of spinach transported into another leaf\ulcorner

  • Seedlings of spinach (Spinacia oleracea L. "King of Denmark" and "Minsterland") were grown with or without supplemental UV-B under field conditions for five or nine days when their fifth or sixth leaves were expanding. Except two leaves which were just expanded and expanding, all other leaves of each seedling were removed before tested. One of these two leaves was exposed to UV-B irradiation and the other leaf was covered with lumiror film (no transmission below 320 nm) to prevent it from UV-B exposure. l,l-diphenyl-2-picrylhydrazyl scavenging activities (antioxidative activity) in leaves without covers were increased according to UV-B doses they were exposed to. And removal of UV-B exposure with lumiror decreased foliage antioxidative activities. This increase or decrease of activities in leaves did not dependent on the UV-B doses their paired leaves were exposed to in both two cultivars. The results demonstrated that spinach foliage antioxidants induced by UV-B exposure were not transported into another leaf.
