The experiment was conducted to determine if seed size and seed coat color of soybean might be effective in water uptake and cotyledon damage after imbibition, and hypocotyl elongation. Eight soybean cultivars were separated into two classes of large and small seed based on seed weight, and each class included two cultivars with yellow and black seed color, respectively. Small seed size group was superior in water uptake by seed for 24 hour in imbibition at $25^{\circ}C$ , but its differences decreased as soaking time increased. Small seed cultivars germinated faster and had better germination rate than large ones. However, cultivars with black seed coat showed more slow water uptake at initial time and faster germination than yellow seed, but in 24 hour after imbibition, cultivars with black seed coat had higher water uptake rate than yellow seeds. Small seed cultivar group showed no cotyledon damage in imbibition for 24 hour while large seed cultivars were damaged 78% of cotyledon, and black seed showed low cotyledon damage compared to yellow seed. Hypocotyl length was shorter in large seed rather than in small seed, but hypocotyl thickness in large seed was more thick than in small seed. In correlation coefficients, seed coat rate, embryo rate exhibited significantly negative association with seed weight, and the correlation of seed weight with water uptake in 3 hour after soaking was significantly negative, but in 24 hour showed positive correlation.
This study was conducted to investigate microbial distribution in the processing steps and to estimate quality index and shelf life of packaged Tofu (soybean curd). Sanitation and safety of Tofu were analysed in aspects of total viable counts (TVCs) and coliforms. Organoleptic deterioration was observed from some packaged Tofu when their TVCs were over $10^6\;CFU/g$. The controlled simply packaged Tofu and sterilized Tofu with TVCs of under $10^5\;CFU/g$ were 32.0% and 86.9% of the total samples, respectively. Also, the controlled simply packaged Tofu and sterilized Tofu with negative coliforms were 12.0% and 83.7% of the total samples, respectively. TVCs and coliforms increased in some processing steps, which include washing and soaking of raw soybeans, and formation and 1st cooling of packaged Tofu. Increases of TVCs and coliforms in the washing and soaking step were due to contamination from the soaking tank and airborne bacteria, whereas increases of TVCs and coliforms in the grinding step were due to contaminations from the grinder, line and reserving tank. TVCs and coliforms increased in the formation and 1st cooling step of packaged Tofu due to contaminations from filter wools, trays, employee's hands, cooling water, formed products and filter wools.

Stem blight symptom of soybean was severely developed in 2016 in Hwaseong and Yeoncheon. During the seedling period, the damping-off of seedlings and the brown or black spots of cotyledons were observed. After August, the leaves began to be yellowed, and partially browned areas on leaves began to develop. After September, microsclerotia began to form even on the surface of the stems that had exhibited water-soaking symptom. After mid-October of the harvest season, the epidermis of the stem was peeled off, resulting in the formation of a large number of microsclerotia in the cortex. The pathogens isolated from these symptoms were the best in mycelial growth at 32-35℃, and the formation of microsclerotia was the most at 20-28℃. The pathogen was identified as Macrophomina phaseolina through the morphological characteristics of the pathogen and the sequencing of the internal transcribed spacer region gene. In addition, when inoculated with a soybean stem using toothpicks cultured with the pathogen, the same symptoms as seen on the soybean field occurred. When the pathogen was re-isolated at the lesion site, the same pathogen was isolated and identified as Macrophomina phaseolina. Based on the results, the disease is reported as soybean charcoal rot.
1. IAA showed no significant growth of root primordia and then lateral root emerged at 2 days after IAA treatment. BA treatment, however, strongly inhibited the formation of root primordia and a few lateral roots, if any, emerged about 5 days after treatment. 2. Treatment of BA and Indol-B on the water retaining ability sampled 1, 3, 5 days after chemical treatment was apparent on the soybean sprouts sampled 5 days after treatment while the difference among the treatments was negligible when sampled 1 and 3 days after treatment. 3. BA stimulated ABA content in the hypocotyl while inhibited ABA content in the root of soybean sprouts. ABA may relate with water retaining ability. 4. Soaking the soybean seeds to several seed disinfectant chemical solution had no effect on the growth and elongation of soybean sprouts. 5. It can be recommended that container of soybean sprouts should be shut tight during growing period except irrigation because the ethylene accumulation in the container may stimulate hypocotyl swelling and inhibit length of soybean sprouts.

The purpose of this study was to compare the of ash and minerals contents in different types of soybeans (Baektae, Seoritae, Heuk Tae and Seomoktae) with different cooking methods. Raw, boiled and pan-fried soybean samples were prepared by the Rural Development Administration. Samples were digested by using a microwave and analyzed using ICP-OES and ICP-MS for determining the ash and minerals contents. Ash content in four raw soybeans ranged from 5.07 to 5.59 g/100g. There was no significant difference in the ash contents in raw and pan-fried soybeans (p>0.05). However, the ash content of boiled soybeans was 9 to 14% lower than that of raw soybeans (p<0.05). The minerals contents of Baektae and Seomoktae were high and the major minerals of various soybeans were K, P, Mg, and Ca, which accounted for ash 60.80-65.61%, 20.73-24.26%, 6.90-8.46% and 5.79-8.60%, respectively. The mineral contents of soybeans were significantly different depending on the type of cultivar (p<0.05), but the tendency was not constant. Because the process of soaking and boiling of soybeans made the soluble minerals elute, the ash and mineral contents were reduced. This study on functional properties of chokongs produced with black soybeans and three kinds of commercial vinegars was performed to establish the basal preparation condition for chokong. When chokongs were prepared with different vinegars for different soaking times, total phenolic compounds increased significantly and total flavonoids showed a trend of small increasing after 4 days of pickling. The electron donating ability, nitrate scavening ability and antioxidant capacity for chokongs tended to increase along with pickling of black soybeans. Also the values were overall high in 70% ethanolic extracts compared to water extracts for each chokong. When the chokongs were produced by pickling in 7 days, the electron donating ability, nitrate scavening ability and antioxidant capacity were higher in chokongs prepared with persimmon vinegar.
Three Korean soybean varieties, Dawon, Taekwang, and Myeongiju-namul were investigated for changes in isoflavone and oligosaccharides contents, and dry weight during germination. Soybeans were soaked for 10 hr in water, followed by 8 days germination at $20^{\circ}C$ under dark condition, Highest isoflavone content measured was Myeongju-namul (1.228 mg/g), followed by Taekwang (0.671 mg/g) and Dawon (0.661 mg/g). Total isoflavone content generally increased during initial germination and decreased thereafter. Maximal increase in isoflavone was 20-50%, particularly in aglycone type such as daidzein and genistein. Raffinose and stachyose contents decreased rapidly during germination, while that of sucrose showed relatively slow decrease. Dry weights of soybeans steadly decreased.
Soaking of soybeans and the subsequent effect on cooking kinetics were investigated by the means of puncture test and shear press with Instron universal testing machine. Soaked soybeans were water cooked at temperatures of $90{\sim}135^{\circ}C$ adjusted with oil bath. Instron puncture force of 0.15kg and shear force of 1.2kg/g-soybean were appeared as the eating soft texture by sensory evaluation. Softening activation energies of yellow soybeans for puncture and shear force were 14,540cal/g-mole and 21,374cal/g-mole. z-values were calculated as $42.1^{\circ}C$ and $37.4^{\circ}C$, respectively.
Changes in chemical components of small black bean chungkugjang(SBBC) added with kiwi and radish as foodstuffs to repress off-odor and enhance the quality of SBBC suring fermentation were investigated. Optimal pretreatment conditions of small black bean suitable to the fermentation of chungkugjang were 3 hrs of soaking time 1.5 times of ratio of water to black bean. 1.0 atm of high pressure, 20 min of heating time, cutting and crushing of heat-treated black bean. Moisture content of SBBC was remarkably lower than that of soybean chungkugjang(SBC) as control. Crude protein of SBBC was in the range 23.37∼25.71% and higher than that of SBC, Crude lipid of SBBC was lower than that of SBC. Crude lipid of SBBC added with kiwi and radish paste was decreased than that of SBBC without two foodstuffs. pH of SBBC were rapidly increased to 24 hrs of fermentation and gradually increased thereafter. Total acidity was shown to be reversely decreased as compared to pH tendency. Reducing sugar was increased to 24 hrs of fermentation and then decreased. In SBBC and SBC, potassium was the most abundant followed by phosphorus, magnesium and calcium.
The solid and protein yields and extraction properties of color pigments were compared for 7 varieties of soybeans during soaking in water at $4-100^{\circ}C$. The varieties investigated were Paldal, Danyeob, Jangbaek, Baegun, Jangyeob and 2 cultivars of Local 1 and Local 2. The Hunter values showed that Jangbaek was the highest in 'L' value while other varieties except Local 1 and Local 2 were comparatively high in 'L' value. Local 1 and Local 2 were low in 'b' value. The yields of solid and protein during water extraction showed that most of solids and proteins were recovered with three consecutive extractions. The cumulated yields were 73.2 % for solid and 83.2 % for protein. Extraction of color pigments of seed coats in $4-100^{\circ}C$ water showed that the extraction rate was very much dependent on extraction time and temperature. A linear relationship of A=aT+b was obtained for equilibrated absorbance(A) and extraction temperature(T). The activation energy calculated from initial extraction rate of cole. pigments and temperature had two different values of low($4-60^{\circ}C$) and high($60-100^{\circ}C$) temperature range.
