A Study on Soybean Curds Prepared with Various Coagulants -Mineral Contents in Various Stages of Soaking Time- (명종 응고제를 사용한 두부의 침수시간에 따른 무형성분의 변화 (II))

  • Three kinds of soybean curd were prepared with three coagulants such as calcium chloride, magnesium chloride and glucono delta lactone. The mineral contents of the three soybean curds were analyzed before soaking and after various lengths of soaking(1/2 hour, 1 hour, 2 hours, and 2 hours(water changed after 1/2 hour)). Results therefrom were as follows: 1. Before the three soybean cured were soaked, their moisture contents were 79-83g/%. The ash contents were 5.04g% in the soybean curd made with CaCl_{2}4.42g/% in the soybean curd prepared with MgCl_{2} and 3.86g/% in the soybean curd coagulated by glucono delta lactone. an analysis of calcium, magnesium and phosphorous contents showed that each element had a greater concentration in the soybean curds made with divalent mineral salts than in the soybean curd made with acid. 2. Changes taking place in the mineral contents of the soybean curds according to different soaking times were examined. The mineral contents tended to decease in process of soaking time. The soybean curds showed the highest rate of mineral dissolution after one hour of soaking, and then they tended to reabsorb minerals. When the soybean curds were soaked I freshly changed water for one hour and 30 minutes, their mineral contents indicated a greater diminishing trend but no significant difference was noticed among the different kinds of soybean curd. In case coagulant has been used excessively, it is necessary to soak the bean curds for about one hour to get the coagulant dissolved.

Water Uptake and Germination of Soybean Seed as Affected by Soaking Condition (침지조건에 따른 콩 종실의 수분흡수율 및 발아특성)

  • Varietal difference in seed shape and size, water absorption rate, and soybean sprouts was compared. In general, soybean seeds of yellow seed-coat and spherical shape with 100 seeds of 9.0$\pm$2g were evaluated as the best ones; Pungsannamulkong out of tested varieties was considered to be the best one in these respect. Varietal difference in water absorption yale depending on the soaking duration and temperature was recognized; Jungeri and Jillin 3 showed higher water absorption rate at higher temperature but it was completely vice versa for Pungsannamulkong. It took about 15 hours(soaking at 2$0^{\circ}C$) for seed shape of size to grow to 10mm in length. Maximum enlargement in thickness of soybean seeds was made right after the completion of repeated soaking-drying treatment but three hours and nine hours soaking were needed for one time-soaking and non-soaking treatment, respectively. Varietal difference in germination rate was recognized between one hour's soaking at 2$0^{\circ}C$ and two hour's soaking at 15$^{\circ}C$ The growth rate for Jillin 3 was excellent at all soaking methods and temperatures while three hours of soaking was the best for Jungeril and Pungsannamulkong, regardless of soaking temperatures. The growth of hypocotyl length showed somewhat faster in repeated soaking-drying than one time-soaking and non-soaking while the increase of hypocotyl thicknes was better in one-time soaking than repeated soaking-drying.

Effects of Alkali Treatment of Soybean on the Qualty of Soybean Milk (대두(大豆)의 Alkali 처리가 두유의 품질에 미치는 영향)

  • This experiment was carried out to obtain the basic data for removal the astringency and off-flavor in soybean milk, by means of soaking of soybean in NaOH and $NaHCO_3$ solutions. The changes of phenolic compounds in soybean during soaking were investigated with HPLC and also the changes of flavor and sensority of soybean milk, prepared from soaked soybean were studied. Phenolic compounds of soybean were identified as chlorogenic, p-hydroxybenzoic, p-coumaric, ferulic and gentisic acid and, chlorogenic acid content was greater than the others. The chlorogenic acid of soybean was mainly neutral type and the other compounds were almost acidic type. Up to 85% of the chlorogenic acid was removed by soaking of soybean in 0.1% of NaOH solution for 8 hrs. Phenolic compounds of soybean was almost removed by soaking in 0.1% of NaOH solution at $90^{\circ}C$ for 1 hr. Chemical composition of soybean milks prepared from soaking of soybean in water, 0.1% NaOH and 0.5% $NaHCO_3$ solution were similar. Hexanol content of beany flavor in soybean milk was increased by soaking of soybean in NaOH solution, where as hexanal, propanal, pentanal contents were removed up to 60%. Color of soybean prepared from soaking of soybean in NaOH solution at high temperature were deep yellow but were high whiteness in soybean milk prepared from soaking of soybean in water at low temperature. Sensority of soybean milk prepared from soaking of soybean in 0.1% of NaOH solution at $90^{\circ}C$ for 1 hr was more favorable than the others.

Effects of Gamma-Irradiation on the Water Absorption Property of Black Soybeans (감마선 조사가 검정콩의 수분흡수 특성에 미치는 영향)

  • Effects of gamma irradiation(2.5∼20kGy) on water absorption property was studied for a local variety of black soybeans. In water absorption patterns of black soybeans, the time to reach a fixed moisture content was reduced depending on the increment of water soaking temperature and irradiation dose. Irradiation at 2.5∼10kGy resulted in the reduction of soaking time of black soybeans by about 1∼3 hours and the increase of hydration capacity by 10∼20%, respectively, compared to the nonirradiated control black soybean. The water uptake rate constant of the irradiated black soybean difinitely increased with the increase of dose levels and water soaking temperature. The activation energy for water absorption and z-value were lower in the irradiated black soybeans than in the nonirradiated control black soybean. The efficacy of water absorption property in the irradiated black soybeans was also recognized after one year of storage at room temperature.

Effect of Pre-Germination by Treatment of Soaking on Germination of Soybean (콩의 발아 전 침종처리가 발아에 미치는 영향)

  • This study was carried out to investigate the effect of pre-germination soaking on germination in 90 Korean soybean varieties and identification of protein in seeds of 7 soybean varieties. The results obtained that germination rate of soybean seeds was decreased as amount of soaking water and soaking duration in number of days. Difference in germination rate of soybean seeds was significant at three days soaking with water volume of 90 ml. Water absorption of seeds was rapidly increased during the first 6 hours, followed by slow increase until 24 hours and then decreased 24 to 48 hours after soaking soybean varieties for bean sprout soaked the lowest amount of water, while soybean varieties for cooking with rice showed the lowest seed water content. Dissolved oxygen (DO) in soaking water was rapidly decreased during the first 3 hours after soaking, and then slowly decreased. Soybean varieties for vegetable and early maturity showed the lowest DO during early soaking periods, but showed higher DO after 24 hours than other groups of soybean varieties. Electrical conductivity and Total Dissolved Solid (TDS) were increased as number of soaking days increased. Soybean varieties for vegetable and early maturity showed the highest electrical conductivity and TDS, followed by those for sauce and paste or cooking with rice, while showed the lowest electrical conductivity and TDS, varieties for bean sprout. Among 90 Korean soybean varieties, varieties which showed the highest germination rate were Jangsu-kong for sauce and paste, Sobaegnamul-kong for bean sprout, Seonheuk-kong for cooking with rice, Seunnokkong for vegetable and early maturity. On the ather hand varieties which showed the lowest germination rate were Iksan and Songhak-kong for sauce and paste, Pangsa-kong for bean sprout, Jinyeul-kong for cooking with rice, Sinlok-kong for vegetable and early maturity. Germination rates of soybean seeds were higher when electrical conductivity, TDS and water absorption of seeds were lower. There were negative correlations between electrical conductivity, TDS and water absorption of seeds and germination rate, while there were positive correlations among electrical conductivity, TDS and soybean seed weight.

Changes in Quality of Soybean Sprouts Grown by Ozone Water Treatment during Storage (오존수로 재배한 콩나물의 저장 중 품질변화)

  • This study was conducted to investigate the changes in quality of soybean sprouts grown by ozone treatment during storage. Soybean spouts were cultivated under conditions of ozone water watering after soaking in water (W/W), watering after soaking in ozone water (O/W), ozone water watering after soaking in water (W/O) and ozone water watering after soaking in ozone water (O/O). The ozone concentration in soaking of soybean and watering of soybean sprouts was 0.3 ppm, respectively. No significant difference in shelf-life between W/W soybean sprouts and ozone treated samples showed. But shelf-life of soybean sprouts stored in 0.01 ㎜ polyethylene film at 10$\^{C}$ and 20$\^{C}$ prolonged 4 and 2 days, respectively. The slow growth of total microbe in the ozone treated samples stored at 10$\^{C}$ was observed, whereas that of products at 20$\^{C}$ showed rapid growth during storage. However, no great difference occurred among samples in the changes of moisture, vitamin C and chlorophyll content during storage. Higher hardness of soybean spouts stored at 10$\^{C}$ and 20$\^{C}$ was kept in the O/W and W/O products. Color, flavor and overall acceptability evaluated by sensory teat during storage had higher scores in O/W products as compared to the other samples.

Effects of a Soaking-Fermentation-Drying Process on the Isoflavone and ${\gamma}$-Aminobutyric acid Contents of Soybean

  • In our study, lactic acid bacteria (LAB)-fermented whey solutions were applied in the soybean soaking process to minimize bacterial contamination and to enrich the biologically functional components of isoflavone and $\gamma$-aminobutyric acid (GABA). Among the 11 LAB tested, Bifidobacteria infantis and a mixed culture (Lactobacillus acidophilus, Bifidobacteria lactis, and Streptococcus thermophilus; ABT-3) displaying the greatest $\beta$-glucosidase activity were selected to produce improved biologically functional soybean preparations. In the soybean soaking processing (without water spraying), the LAB-cultured 10% whey solution was used to soak and to ferment the soybeans and the fermented soybeans were finally dried by heat-blowing at $55^{\circ}C$. The processing conditions used in this study demonstrated that the final soybean product had a reduced contamination by aerobic and coliform bacteria, compared to raw soybeans, likely due to the decrease in pH during LAB fermentation. The aglycone content of the isoflavone increased up to 44.6 mg per 100 g of dried soybean by the processing method, or approximately 8-9 times as much as their initial content. The GABA contents in the processed samples increased as the processing time of soaking-fermentation proceeded as well. The soybean sample that fermented by ABT-3 culture for 24 hr showed the greatest increase in GABA content (23.95 to 97.79 mg/100 g), probably as a result of the activity of glutamate decarboxylases (GAD) released from the soybean or produced by LAB during the soaking process.

  • For the purpose of enhanceing soybean-sprouts quality, the optimum conditions for ozone treatment of soybean during soaking before cultivation at 18~2$0^{\circ}C$ were evaluated with ozone concentration, treatment time and treatment frequency by response surface methodology. Germination rates of cleaned soybean by ozone water in the conditions of solubilized-ozone concentrations of 0.15 to 0.35ppm, ozone-treatment frequency of 1.5 to 2.3 times and ozone-treatment time of 30 to 36min. increased 18.8 to 24.0% for the control products. And, length of hypocotyl in conditions of 0.12 to 0.33ppm, 1.7 to 2.7 times and 45 to 90min. were also increased by 69.36 to 79.40%. On the other hand, weight of roots with ozone treatment were decreased in the conditions of solubilized ozone concentrations of 0.1 to 0.2ppm and ozone-treatment time of 30 to 57min. But, ozone-treatment frequency did not affected root growth. Putrefaction rates of the control were 5 to 15%, but those of ozone-treated samples during cultivation did not show. The overall optimum conditions for above 16% germination rates, above 9% hypocotyl yields compared to the control samples and below 98% of the control root weight were solubilized-ozone concentrations of 0.25 to 0.30ppm, ozone-treatment time of 43 to 49min. and ozone-treatment frequency of one time.

Effect of Ozone Water on Pesticide-Residual Contents of Soybean Sprouts during Cultivation (콩나물 재배중 잔류농약 함량에 미치는 오존수 처리 효과)

  • This study was conducted to investigate the effect of ozone treatment on the growth and pesticide-residual contents of soybean sprouts during cultivation. Total weight and length of the soybean sprouts treated by 0.3 ppm ozone water for 30min during soaking of soybean increased 27% and 19% higher than those of control group, respectively. But 27% of root weight decreased. No major differences in growth state were observed between the treatments during soaking and watering with ozone water, and watering with ozone water. Pesticide residues in soybeans treated with carbendazim, captain, diazinon, fenthim, dichlorvos and chlorpyrifos ranged from 4.75 to 8.35 ppm. The pesticides in soybean sprouts by the treatment of soaking and watering with water for 5 days, those by 0.3 ppm ozone-water watering, and those by soaking and watering with 0.3 ppm ozone water were destroyed to $85{\sim}99$, $89{\sim}100$ and $94{\sim}100%$, respectively. The order of degradation ratio in the pesticides was captan>dichlorvos>fenthion>carbendazin>diazinon>chlorpyrifos.

Development of Instant Soybean Soup for Soybean Noodles Using the Yellow and Black Soybean (노란콩과 검정콩을 이용한 콩국수용 즉석 콩스프의 개발)

  • This study was carried out to investigate the optimal process conditions of instant soybean soup for the soybean noodles. The process of soybean soup was in the other or soaking, cooking, peeling, drying, milling and packaging. The optimal conditions of soaking process obtained at 25$\^{C}$ for 4hrs, and the protein content of yellow and black soybean after soaking treatment were 21.97% and 19.58%, respectively. As the increasing of cooking time, the moisture content was not changed, and optimal cooking condition through the sensory evaluation was obtained at 100$\^{C}$ and 15min. The protein contents of cooked yellow and black soybean dried by hot-air and far infrared-ray were 43.40∼44.18% and 44.59∼51.36%, respectively. From the results of sensory evaluation, the yellow and black soybean dried with far infrared-ray at 45$\^{C}$ for 5hrs were excellent, and the difference between the marketed soybean soup and instant soybean soup produced by this experimental process for soybean noodles was not exist. The optimal concentration of instant soybean soup for soybean noodles was determined to be 50g of soybean powder with 1L water.
