서울지역 남녀 대학생의 한식 선호도 조사 (II) - 부식을 중심으로 - (Survey on Korean Food Preference of College Students in Seoul - Focused on Side Dishes -)

  • 본 연구는 대학생을 대상으로 한국 음식 중 부식에 대한 선호도를 알아보기 위해 실시하였다. 연구 결과는 다음과 같다. 1. 조사대상자의 평균연령은 남학생 21.8세, 여학생 20.2세였고, BMI는 남학생 $22.6kg/m^2$ 여학생 $19.8kg/m^2$으로 남녀 모두 정상범위에 속하였다. 2. 조사대상자의 가족구성 형태, 가족 수 및 어머니의 학력과 직업은 남녀 간에 차이가 없었으나 주거형태 및 아버지의 직업과 교육수준은 남녀 간에 유의적인 차이를 보였다. 3. 국류의 선호도틀 보면 남학생은 설렁탕과 쇠고기국을 여학생은 된장국을 가장 좋아하였으며, 북어국, 설렁탕, 김치국, 쇠고기국의 선호도는 남학생이 여학생보다 유의적으로 높았다 (p<0.05). 4. 찌개류의 경우 남녀모두 김치찌개와 순두부찌개의 선호도가 가장 높았으며 청국장과 동태찌개의 선호도가 가장 낮았다 (p<0.05). 5. 조림류의 선호도는 남녀모두 장조림을 가장 좋아하였고 콩조림과 고추조림을 가장 싫어하였으며, 콩조림과 고추 조림은 여학생이 남학생보다 유의적으로 낮은 선호도를 나타내었다 (p < 0.05). 6. 볶음류의 선호도를 보면 남학생의 경우 제육볶음을 여학생의 경우 김치볶음을 가장 좋아하였으며, 멸치볶음은 남녀 모두 싫어하는 것으로 조사되었다. 또한 제육볶음의 선호도는 남녀 간에 유의적인 차이를 보였다 (p<0.05) 7. 구이류의 경우 남녀모두 갈비구이의 선호도가 가장 높았으며 더덕구이의 선호도는 가장 낮았다. 장어구이와 더덕구이는 남녀 간의 차이를 보여 남학생이 여학생보다 더 좋아하였다 (p<0.05). 8. 무침류의 경우 남녀 모두 가장 좋아하는 것은 오이무침으로, 가장 싫어하는 것은 미나리무침으로 조사되었으며 도라지무침과 미나리무침은 남녀 간에 유의적인 차이를 보여 남학생이 여학생보다 높은 선호도를 보였다 (p<0.05). 9. 김치류는 남녀모두 배추김치, 총각김치, 깍두기, 열무김치의 선호도가 7점 이상의 높은 선호도를 보였으며 갓김치와 백김치는 남학생보다 여학생이 더 낮은 선호도를 보였다 (p<0.05). 이상의 결과 남녀 간에 좋아하는 음식에 차이를 보이고 있으며 남학생보다 여학생이 더 낮은 선호도를 보였다. 특히 국이나 찌개류 및 구이류의 경우 생선을 이용한 음식보다는 육류를 이용한 음식의 선호도가 남녀 모두 높았으며 콩을 사용한 음식은 남녀 모두 기피하는 것으로 나타났다. 또한 일반적으로 자주 이용하는 음식의 경우에는 선호도가 놓았으나 이용도가 낮은 음식 즉, 갓김치나 백김치와 같은 음식은 낮은 선호도를 보였다. 또한 남학생의 경우 건강증진 식품의 하나인 장어구이의 선호도가 높은 것으로 조사되어 남녀 간에 차이를 보였다. 전반적인 음식선호도에 남녀 간에 차이를 보이고 있으므로 단체급식를 위한 식단 작성 시 이러한 차이를 고려할 필요가 있으며 대학생을 대상으로 한 영양 교육 프로그램 작성시 이러한 차이를 고려한 식생활 교정프로그램을 작성할 필요가 있다고 사료된다.

국민영양조사를 이용한 우리나라 다소비 식품의 섭취량에 관한 연구(I) -식품의 섭취량 조사 분석- (The Study on Frequently Consumed Food Items from 1993 Korean National Nutrition Survey(I) -Amounts and Frequency of Foods-)

  • The purpose of the present study is to collect information in terms of the frequency and amounts in frequently consumed foods. We conducted the secondary analysis from '93 Korean National Nutrition Survey. Mainly informations about 2-day food records were used to investigate food intakes and to compare different food patterns by area. Amounts and frequencies of food intakes are on the list by the order of contributing amounts and frequencies. Amounts of total daily intake of food per capita are 1,054g in nationwide, 1,076g in large city, 1,049g in small city, 1,017g in rural. The major foods consumed in large quantities were rice, kimchi, milk, in nationwide, large city, and small city and rice, kimchi, Korean radish in rural. The intake frequency of kimchi, rice, and basic seasonings as garlic, green onion, salts, soy sauce et al, were higher than other foods in all area. However, there are need for further researches to investigate individual dietary intake and seasonal variation of intakes. Also, food consumption patterns for different groups considering age, sex, area should be studied.

부산 지역 주부들의 시판 밑반찬 기호도 및 이용 실태 (Housewives' Preference and Consumption of Commercialized Basic Side Dishes in the Busan Area)

  • The purpose of this study was to investigate the preferences, consumption, and eating frequencies of housewives for commercialized traditional basic side dishes. The investigators visited 18 food markets and questionnaires were distributed to 464 housewives in the Busan area. The number of basic side dishes being sold at the markets were in the order of seasoned dried radish (17 markets; mk), salted garlic stalk (15 mk), braised black soy beans (14 mk), braised peppers and dried anchovies (13 mk), and braised lotus roots (12 mk). The housewives' order of preferences was for stir-fried dried anchovies, braised peppers and dried anchovies, braised seasoned beef, salted perilla leaf, and perilla leaf kimchi equal to seasoned sea lettuce, respectively. The order for eating frequency was stir-fried dried anchovies, braised peppers and dried anchovies, salted perilla leaf, and perilla leaf kimchi, respectively. Salted perilla leaf, perilla leaf kimchi, braised crab preserved in soy sauce, salted bean leaves, seasoned dried radish, and seasoned crab were either occasionally or frequently purchased by over 40% of the women. However, the reasons they did not purchase these products included: the excess use of chemical seasonings, unsanitary, unreliable cooking process, unreliable the origin, and high price, in the respective order. If the commercialized traditional basic side dishes were improved to eliminate these problems, 52.2% of the housewives would buy the products, and 65.6% anticipated increasing their use of these products in the future.

1900년대 초 외국인이 본 한국인의 식생활 (Korean Dietary Life from the View of Foreigner in the early 1900s)

  • 1900년대 초는 서양 열강들이 아시아를 향해 본격적으로 진출한 시기로 당시 한국에는 외교관, 선교사, 의사 등 다양한 직업을 가진 외국인들이 들어왔다. 한국을 찾은 1900년대 초기의 외국인들에게 한국의 식생활은 호기심과 충격의 대상이었기에 그들은 한국인의 식생활에 대한 기록을 남겼다. 외국인들은 한국을 비교적 윤택하고, 오곡이 풍성한 매력적인 국가로 보았다. 한국인들에게 주식은 쌀이고, 중요한 양식으로 김치를 먹었으며, 다양한 곡식과 채소, 그리고 비빔밥을 먹었다. 한국에는 각종 육류와 생선, 미역, 약초(인삼)가 있었다. 외국인들은 한국인들이 식탐이 있다고 하면서, 밥을 고봉으로 많이 먹는다고 하였다. 한국인의 기본 식단으로는 밥 한그릇, 국 한 그릇, 김치와 간장, 다른 찬거리들이 있으며, 푸짐하게 상을 차려낼 때는 고깃국과 함께 날생선 말린 생선 튀긴 생선 중 한 가지가 올랐다. 한국에는 장독대가 있어서 간장, 된장, 고추장, 장아찌 등을 담가먹었다. 한국인에게는 특유의 옻냄새와 김치 양념냄새가 많이 났으며, 외국인들은 그 냄새를 림버거 치즈로 비유하면서 한국을 꼬랑내, 발냄새가 나는 나라로 언급하기도 하였다. 이처럼 1900년대 초 한국에 들어온 외국인들의 기록을 통해 한국의 식생활과 한국의 모습을 객관적으로 살펴볼 수 있었다.

꿩고기 조리법의 문헌적 고찰 - 1800년 대 말~1990년대까지의 조리서들을 중심으로 - (A Literature Review on the Recipes for Pheasant - Focus on Recipe Books from 1800's to 1990's -)

  • The main purpose of this study was to survey the various kinds of recipes for pheasant found in seventeen Korean cookbooks published from the 1800's to the 1990's. There were 95 pheasant recipes found in the literature which could be classified into three major groups: cooking with moist heat, cooking with dry heat, and other. The three major groups were then broken down into thirteen smaller groups. A detailed look at the frequency of terms in each recipe shows that Gui Sanjeok (grilled Korean shish kebabs) appears 24 times, Guk Tang and Jeongol (soup and stew) 23 times, Kimchi (fermented cabbage) 11 times, Po (jerky) 9 times, Jorim (boiled in soy sauce) 7 times, Jjim (steamed) 6 times, Bokeum (stir-fried) 5 times, Twigim (deep-fried) 3 times, Buchim (fried) 2 times, Jigae jijim (stewed) 2 times, and Jang (paste), Myeon (noodles), Gooum (boiled) and Yeot (Korean hard taffy) 1 time each. The main ingredient is always the pheasant. We investigated the use of the whole pheasant cooked, how to slice and tenderize pheasant meat, use the meat only, or use only certain parts. Depending on the characteristics of cooking recipes, pheasants with thin, soft bones and organs were investigated for cooking. Substituted materials were used for a few of the vegetables, meat, and seafood in the recipes, and seem to go well together. Garnishes used included pine nut powder and fried eggs. Seasoned salt, soy sauce, pepper, sesame, sesame oil, chopped onion, garlic, and ginger were also reported to have been used.

사회변동에 따른 한국고유의 발효식품의 관리의 변화에 관한 연구 - 1960년대 이후의 문헌조사를 중심으로- (A Study on the Influence of Social Changes on the Management of Indigenous Fermented Foods in Korean Families)

  • The purpose of this study is to investigate the management of Indigenous fermented foods during the period of economic development starting from 1960 until now, and to specify their correlation, while paying special concern to the variables of social change such as the increase of people's income, ceaseless migration of population, change in the family structure, heightening up of the educational level of women and the resulting increase of chances for getting employment, all of which may affect the management of Indigenous fermerted foods in korean families. The result is as follows. Basic seasonings and dishes such as soy bean sauce, red pepper paste, pickled seafoods, and Kimchi, are inclined to be bought as readymade products or provided by relatives in case of many nuclear families rather than made at home, which is a traditional way of home life. However, Kimchi and basic sauces or redpepper paste still show high rate of being made at home. Social variables which affect such tendency are the number of family members, the age and educational level of housewife, and the type of residence.

익산시와 서울시 여고생의 식품 및 영양소 섭취 평가에 관한 연구 (A Study on the Evaluation of Food and Nutrient Intake of the High School Girls in Iksan and Seoul Cities)

  • To assess the food intake and diet quality by the interrelationship of DDS and DVS of high school girls, this dietary survey was conducted with 253 subjects living in Iksan and Seoul areas using a 24-hour recall method. The average amount of total food intake was 1,133.2 g, with 79.9% of food intake being supplied by vegetable food and 20.1% by animal food and higher in Seoul area. The food consumed most frequently was rice, green onion, garlic, soy sauce, sesame oil, onion, and Kimchi. The food consumed in the largest amounts were rice(303.3 g), milk(62.2 g), and Kimchi(53.4 g). Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When investigating the consumption pattern of major five food groups(grain, meat, dairy, fruit, vegetable groups), nobody consumed all five food groups in each meal. The groups most frequently missing were fruits and dairy products. The average number of food consumed per day was 12.1(DVS) and Iksan area scored lower(11.7) on DVS than Seoul area(12.6). The higher DDS and DVS of subjects were, the more MAR and NAR of energy, calcium, vitamin A and C increased. The number of major food groups(DDS)(p<0.01, P<0.05) and that of food items (DVS)(p<0.01) correlated positively NAR(nutrient adequacy ratio) and MAR (mean adequacy ratio) significantly.

韓·美간 농촌부엌공간에 관한 생활문화의 영향과 거주자 요구의 비교 (The Comparison between the American Life Culture and User's Needs and Korean's affecting on the Rural Kitchen Space)

  • The purpose of this study was to find out the design identity of the Korean kitchen space through out comparing life culture and user's needs of the rural kitchen space between Koreans and Americans. This research was done by the literature review and the empirical data collected through the questionnaire by mail in the state of Missouri, USA and the field survey in the province of Chonbuk, Korea. The American rural residents were 104 and the Korean were 100. The results were as follows. 1) The characteristics of the Korean rural food life were the making Kimchi, soy sauce and bean paste etc. and the preparing food for family events such as birthdays and holidays. They had need to be planned the second kitchen. 2) The characteristics were planned the Korean rural main kitchen to be equipped with another refrigerator for Kimchi, to be wider floor area and to be located near the living and the dining room. 3) The kitchen space also was not reflected on the aged's desire, but this factor will be important to be planned.

중국 연변 조선족 농업인 생활실태 조사 (A Survey on the Farmer's Life in Yanbian, China)

  • The study is designed to understand on the farmer's life in Yanbian, China. The major findings are: 1) The people in farmhouse use wood as a fuel for cooking and the method of cooking is traditional style using their iron pots. The floor heating of the house and cooking food can be carried out simultaneously. Most of the farmer use pump system. 2) Korean traditional foods should be inherited and they usually eat rice. Kimchi, Soy-sauce, and Hot-pepper paste are mostly made at home. 3) Housewives do actively participate in income management. Results indicated that overall Korean immigrants in China maintain their ethnic identity, ethnic language and culture.

한국(韓國)의 전통발효식품(傳統醱酵食品) 연구동향(硏究動向)에 관한 분석고찰(分析考察) (Analytical Survey on the Study of Traditional Fermented Food in Korea)

  • About 760 papers and patents of the traditional fermented food in Korea were collected which were published during 1917-1988, and then the papers were classified, outlined and reviewed. Study of traditional fermented food was about 10% of total study on Korean Foods, and that of alcoholic beverage was 50%, soy sauce and related product was 30% and kimchi was less than 20% of total study of traditional fermented foods. Though considerable amount of studies were accomplished before the World War II, but a few study was accomplished during the Korean war. The research activity is, hitherto, increasing gradually, but the systematic studies were rarely done. The studies to be investigated were processing quality of raw materials, classification, standardization, sensory quality of the product and so on.
