꿩고기 조리법의 문헌적 고찰 - 1800년 대 말~1990년대까지의 조리서들을 중심으로 - (A Literature Review on the Recipes for Pheasant - Focus on Recipe Books from 1800's to 1990's -)

  • The main purpose of this study was to survey the various kinds of recipes for pheasant found in seventeen Korean cookbooks published from the 1800's to the 1990's. There were 95 pheasant recipes found in the literature which could be classified into three major groups: cooking with moist heat, cooking with dry heat, and other. The three major groups were then broken down into thirteen smaller groups. A detailed look at the frequency of terms in each recipe shows that Gui Sanjeok (grilled Korean shish kebabs) appears 24 times, Guk Tang and Jeongol (soup and stew) 23 times, Kimchi (fermented cabbage) 11 times, Po (jerky) 9 times, Jorim (boiled in soy sauce) 7 times, Jjim (steamed) 6 times, Bokeum (stir-fried) 5 times, Twigim (deep-fried) 3 times, Buchim (fried) 2 times, Jigae jijim (stewed) 2 times, and Jang (paste), Myeon (noodles), Gooum (boiled) and Yeot (Korean hard taffy) 1 time each. The main ingredient is always the pheasant. We investigated the use of the whole pheasant cooked, how to slice and tenderize pheasant meat, use the meat only, or use only certain parts. Depending on the characteristics of cooking recipes, pheasants with thin, soft bones and organs were investigated for cooking. Substituted materials were used for a few of the vegetables, meat, and seafood in the recipes, and seem to go well together. Garnishes used included pine nut powder and fried eggs. Seasoned salt, soy sauce, pepper, sesame, sesame oil, chopped onion, garlic, and ginger were also reported to have been used.

Properties of a Bacteriocin Produced by Bacillus subtilis EMD4 Isolated from Ganjang (Soy Sauce)

  • A Bacillus species, EMD4, with strong antibacterial activity was isolated from ganjang (soy sauce) and identified as B. subtilis. B. subtilis EMD4 strongly inhibited the growth of B. cereus ATCC14579 and B. thuringiensis ATCC33679. The antibacterial activity was stable at pH 3-9 but inactive at pH 10 and above. The activity was fully retained after 15 min at 80℃ but reduced by 50% after 15 min at 90℃. The activity was completely destroyed by proteinase K and protease treatment, indicating its proteinaceous nature. The bacteriocin (BacEMD4) was partially purified from culture supernatant by ammonium sulfate precipitation, and Q-Sepharose and Sephadex G-50 column chromatographies. The specific activity was increased from 769.2 AU/mg protein to 8,347.8 AU/mg protein and the final yield was 12.6%. The size of BacEMD4 was determined to be 3.5 kDa by Tricine SDS-PAGE. The N-terminal amino acid sequence was similar with that of Subtilosin A. Nucleotide sequencing of the cloned gene confirmed that BacEMD4 was Subtilosin A. BacEMD4 showed bactericidal activity against B. cereus ATCC14579.

효소와 미생물의 복합 처리에 의한 두유박 단백질소재의 제조 (Production of a Protein Supplement from Soymilk Residues by Combined Use of Enzymes and Microorganisms)

  • 두유박의 단백질 소재화를 위하여 셀룰레이즈(cellulase), 단백질 분해효소, 코지(koji), 효모 등의 복합처리에 의한 가용화 방법이 고형분 및 단백질 회수율, 아미노산, 유기산 조성에 미치는 영향을 고찰하였다. 셀룰레이즈와 단백질 분해효소를 복합 사용하여 두유박을 가수분해하는 것이 높은 고형분 회수율(80.2%) 및 단백질회수율(83.5%)을 얻을 수 있었고, 코지와 효모로 처리할 경우 유기산의 함량을 증대시킬 수 있었으며 양조간장 특유의 맛과 향을 내는데 효과적이었다. 특히 셀룰레이즈로 처리한 가수분해물에서 유기산 함량이 높았다. 유리 아미노산 함량은 코지보다 단백질 분해효소로 분해한 경우에서 높았으며 셀룰레이즈 처리는 유리 아미노산 함량에 큰 영향을 미치지 않았다. 두유박 가수분해물에 대한 관능검사 결과 코지로 가수분해한 시료가 관능적으로 우수하였으나 전체적인 기호도는 대조구로 사용된 양조간장에 비해 낮았다.

  • 선정된 고농도 식염내성 효모의 배양적 일반조건을 검토한 결과는 다음과 같다. (1) $T_3$$T_8$는 배지의 식염농도 15%에서 그리고 $T_5\;T_9,\;T_{10}\;T_{11}$ 등은 식염 5%에서 가장잘 생육하였다. (2) $T_3$$T_5$$30^{\circ}C$에서 그러고 $T_8\;T_{10}\;T_{11}$등은 $25^{\circ}C$, $T_9$$35^{\circ}C$에서 각각 최적 배양조건이었다. (3) 이들 효모의 모두가 $58^{\circ}C$, 10분간 처리에 있어서는 생존하였으나 $60^{\circ}C$, 10분간 처리로 사멸되었다. (4) $T_3$$T_8$는 pH4.0, $T_5$는 pH6.0, 기타 $T_9,\;T_{10}\;T_{11}$ 등은 pH5.0에서 각각 최적 배양조건이었다.

Antihypertensive effect of Ganjang (traditional Korean soy sauce) on Sprague-Dawley Rats

  • BACKGROUND/OBJECTIVES: Although Korean fermented foods contain large amounts of salt, which is known to exacerbate health problems, these foods still have beneficial effects such as anti-hypertension, anti-cancer, and anti-colitis properties. We hypothesized that ganjang may have different effects on blood pressure compared to same concentrations of salt. MATERIALS/METHODS: Sprague-Dawley rats were divided into control (CT), NaCl (NC), and ganjang (GJ) groups and orally administered with 8% NaCl concentration for 9 weeks. The systolic blood pressure (SBP), serum chemistry, $Na^+$ and $K^+$ concentrations and renal gene expressions were measured. RESULTS: The SBP was significantly increased in the NC group compared to the GJ and CT groups. In addition, the $Na^+$ concentration in urine was higher in the GJ and NC groups than the CT group, but the urine volume was increased in the GJ group compared to the other groups. The serum renin levels were decreased in the GJ group compared to the CT group, while the serum aldosterone level was decreased in the GJ group relative to the NC group. The mRNA expression of the renin, angiotensin II type I receptor, and mineralocorticoid receptor were significantly lower in the GJ group compared to other groups. Furthermore, GJ group showed the lowest levels of genes for $Na^+$ transporter in kidney cortex such as $Na^+/K^+$ $ATPase{\alpha}1$ ($NKA{\alpha}1$), $Na^+/H^+$ exchanger 3 (NHE3), $Na^+/HCO_3{^-}$ co-exchanger (NBC), and carbonic anhydrases II (CAII). CONCLUSIONS: The decreased SBP in the GJ could be due to decreased renin and aldosterone levels in serum and increased urinary volume and excretion of $Na^+$ with its transporter gene alteration. Therefore, ganjang may have antihypertensive effect despite its high contents of salt.

기능성 고추드레싱의 개발 및 품질 안정성에 관한 연구 (A Study on Research & Development and Quality Stability of Functional Red Pepper Dressing)

  • 점진적으로 식품에서도 건강지향성 및 패션성을 추구하는 시대조류에 발 맞추어 과거 드레싱의 대명사로 불려오던 마요네즈가 퇴조해가면서 그 대용품의 개발이 절실히 요청되고 있다. 이에 본 연구에서는 일반적으로 조미료의 일환으로 흔히 사용되는 간장, 식초, 마늘 등 총 13종의 원료를 이용하여 고추조미유, 조미간장, 조미액, 조미유를 제조하고, 이를 혼합하여 새로운 형태의 드레싱오일을 제조하였다. 야채류, 피자류, 육류 등에 대한 관능검사 결과 특성화가 요망되었으며, 따라서, 여기에 각종 기능성 원료를 첨가한 고추 드레싱오일, 당뇨병 환자용, 성인병 환자용, 어린이용, 일식용, 일반인 대상 기능성 드레싱오일 등의 제조에 관하여 검토하였다. 뿐만 아니라 이 드레싱오일은 상층부의 기름층과 하층부의 조미간장층을 흔들어 섞어서 사용하는 특성상 중간에 미관상 좋지 않을 층이 생성되는 문제점이 발생하였다. 이는 gum류 및 유화제를 겸용하여 어느 정도 해결이 가능한 것으로 밝혀졌다.

한국인의 삭카린 섭취량 산정 (Estimation of the Total Dietary Intake of Saccharin by Korean Population)

  • 국내에서 유통되는 가공식품중 삭카린의 함량을 분석하였고, 이 자료와 삭카린 공급자료를 바탕으로 한국인의 1인당 1일 삭카린 섭취량을 추정하였다. 분석에 사용된 74개 시료중 60개에서 삭카린의 사용을 확인할 수 있었으며 검출 평균농도는 단무지 306 ppm, 스낵과자 285 ppm, 간장 153 ppm, 빙과 51 ppm, 유산균 음료 37 ppm이었다. 허용기준에 대한 초과빈도를 보면 스낵과자가 시료의 70%에서 초과하였고, 허용기준에 대한 평균농도의 비율은 2.9배에 도달했으나 기타 식품에서는 그 기준을 초과하지 아니하였다. 1985년에서 1990년에 걸친 삭카린의 1인당 1일 평균 섭취량은 소비자료에서 추정했을 경우 $7{\sim}17\;mg$, 공급 자료에서 추정했을 경우 $9{\sim}35\;mg$이었다. 이 수준은 미국, 일본의 경우보다 약간 많았으나, FAO/WHO에서 권고한 인체허용 1일 섭취량(ADI)의 $11{\sim}22%$ 수준이었다. 따라서 한국인에 대하여 삭카린의 안전성 문제는 현재와 같은 사용수준에서는 크게 걱정할 필요가 없는 것으로 판단된다.

Cook-Chill System과 Sous vide Cook-Chill System으로 생산된 메추리알 어묵조림의 저장기간에 따른 미생물적 품질 및 관능특성의 변화(2) (Changes in the Microbial Qualities and Sensory Characteristics of Boiled Quail Egg and Fish Paste in Soy Sauce as Prepared with the Cook-Chill System and Sous Vide Cook-Chill System)

  • This study was performed to provide basic data for the sous vide cook-chill(SVCC) System by comparing and evaluating food quality, according to preparation method and days of storage, of foods that were prepared by SVCC to those prepared using the cook-chill(CC) System. Boiled quail eggs and fish paste in soy sauce were prepared using CC and SVCC and their quality was evaluated at the time of preparation and by days of storage. Viable cell counts were increased to 5.65(CC) and 3.40(SVCC) LogCFU/g by 15 days(p<.0001) and increased more over time in foods prepared with CC than with SVCC. For the CC method, Coliform counts increased to 4.58 LogCFU/g by 15 days(p<.0001). With SVCC, colirorms were not detected at 0 days, but counts reached 3.70 LogCFU/g by 15 days(p<.0001). After reheating, no coliforms were detected for CC or SVCC at 0 days, however, by 15 days, coliform counts reached 3.61 and 2.52 LogCFU/g(p<.0001) for CC and SVCC, respectively. Finally, the sensory scores of SVCC were higher than those of CC.

한국재래간장 발효균 Bacillus subtilis K7 유래의 혈전용해 Protease의 정제 및 특성 (Purification and Characterization of Fibrinolytic Enzyme Produced by Bacillus subtilis K7 Isolated from Korean Traditional Soy Sauce)

  • 한국재래간장으로부터 혈전용해효소를 강하게 생산하는 균주를 선발하고 이를 Bacillus subtilis K7로 동정하였다. B. subtilis K7이 생산하는 혈전용해성 protease를 정제하여 분자량을 확인한 결과 21,500 Da이었다. 정제된 효소의 최적반응조건은 $40^{\circ}C$와 pH 9.0이었으며 pH 5.0라서 12.0까지 안정하고 $50^{\circ}C$에서 20분간 열처리한 후에도 50%이상의 효소활성을 가지며 EDTA, CDTA 및 iodoacetat에 실활하는 효소이었다. 이 효소의 fibrin에 대한 Km 값은 $1.8{\times}10^{-2}$ M이었다.

원행을묘정리의궤(園行乙卯整理儀軌) 중(中) 조리면(調理面)에서 본 반과상고(盤果床考) (A Study of Cookery of Daily Meal (Bankwa Sang: Fruit Table) in Wonheng Ulmyo Jungri Euigwae (1795))

  • To analyze dialy meal of royal meal, studied Bankwa Sang(Fruit Table) were on record Wonheng Ulmyo Jungri Euigwae (1795). Historic book 'Jungri Euigwae' described the king's visit to his father's royal tomb 'Hyun Neung Won', during the domain of Cheung Jo, the 22nd king of Choson Dynasty. The results obtained from this study areas follows. The fruit table, which similar in concept to desert in the west but quite different in service, was prepared for a guest. The table consisted of two kinds of trays, on which serveral kinds of fruit were stacked to a height of between 4 chon (4寸 : about 12 cm) and 1 chuk(1尺 : about 30.3 cm) according to Korean measurement system. The table was decorated with beautiful artificial flowers made of paper and silk. The number of sets to be arranged on the table were different according to the royal status of the eater: 12 sets-25 sets for king's mother, 7 sets-11 sets for the king. Soy sauce mixed with vinegar and pine-nu meal, mustard were ruled out from kind of sets. Kinds of dishes served with a meal generally were noodles (麵), soup (湯), fried fish (煎油花), fried meats and vegetables (花陽灸), slices of raw fish (魚膾), minced raw meat (肉膾), slices of boiled beef (片肉), stew (蒸), rice cake (餠), sweet rice dish (藥飯), patterned savory cake (茶食), fried cake made of wheat flour, honey and oil (藥果), fried glutinous rice cake (强精), various fruits preserved in honey (正果), sugar candies (各色糖), fruits (果物) honey (淸), soy sauce mixed with vinegar and pine-nut meal (醋醬), mustard (莽子).
