Studies on the Nonvolatile Organic Acids in Kimchis fermented at Different Temperatures (숙성온도(熟成溫度)에 따른 김치의 비휘발성(非揮發性) 유기산(有機酸)에 관(關)한 연구(硏究))

  • Nonvolatile organic acids were determined in raw Chinese cabbage, Kimchis fermented at $6^{\circ}{\sim}7^{\circ}C$ and at $22^{\circ}{\sim}23^{\circ}C$. Total acids were isolated by ion-exchange chromatography and quantitative determination of individual acids was performed by silicic acid partition column chromatography. Acids were identified qualitatively by paper chromatography. Palatability of Kimchis was evaluated by nine pannels. Results were as follows: Maleic, fumaric, lactic, succinic, malonic, oxalic, glycolic, malic, citric, tartaric, sulphuric and phosphoric acid were found in raw Chinese cabbage. Kimchis fermented at $6^{\circ}{\sim}7^{\circ}C$, and at $22^{\circ}{\sim}23^{\circ}C$. In raw Chinese cabbage, most of organic acids were in salt form and malic acid was highest in amount. In Kimchi fermented at $6^{\circ}{\sim}7^{\circ}C$, the amount of lactic acid and succinic acid was higher than that in Kimchi fermented at $22^{\circ}{\sim}23^{\circ}C$, and, tartaric, oxalic, malic, malonic, maleic, glycolic and fumaric acids were less than those in Kimchi fermented at $22^{\circ}{\sim}23^{\circ}C$. Kimchi fermented at $6^{\circ}{\sim}7^{\circ}C$ had a more flavorous sour taste than Kimchi fermented at $22^{\circ}{\sim}23^{\circ}C$. It is assumed that large amount of lactic acid and succinic acid in Kimchi fermented st $6^{\circ}{\sim}7^{\circ}C$ have a connection with flavorous sour taste.

Physicochemical and Sensory Characteristics of Kakdugi Added with Xanthan Gum during Fermentation (Xanthan Gum첨가 깍두기의 이화학적.관능적 특성)

  • Effect of different levels (0 ,0.05, 0.15, 0.25%) of xanthan gum on kakdugi fermentation was investigated by analyzing physicochemical and sensory characteristics during fermentation at 2$0^{\circ}C$. During fermentation, pH was maintained higher, and total acidity and number of lactic acid bacteria, maintained lower in xanthan gum groups, especially in 0.05% addition group than control. Free sugar amount were higher in xanthan gun groups than control, and glucose and fructose which were the major free sugars, decreased rapidly during fermentation, whereas mannitol increased in all samples, especially in xanthan gum groups. Liquid content of kakdugi was smaller in 0.05% xanthan gum group than control. Viscosity of kakdugi liquid decreased rapidly whereas initial viscosity was maintained in xanthan gum groups. Hardness decreased during fermentation, but at the 7th day of fermentation was higher in 0.05% xanthan gum group than control. The result of sensory evaluation shows that there were no significant difference in sour odor, moldy, sour taste and savory taste among samples. Starch taste was higher in 0.15% or 0.25% xanthan gum, but there is no difference in 0.05% group, compared to control. Overall preference until the 5th day of fermentation, xanthan gum group was not significantly different from that of control but at the 7th day of fermentation, 0.05% addition group was significantly higher than control.

Eating Habits and Workout patterns of some College Students (일부 대학생의 식생활 및 운동 양상)

  • From March 10 to April 3, 1999. questionnaires were sent to 157 students at an university located in Hongsong. South Choongchung Province in order to find out their eating habits and exercise patterns. The analysis of the questionnaires collected reveals the followings. 1. Eating Habits 1) 76 out of total 157 respondents (48.4%) said that they skipped breakfast. The significant difference was shown in the frequency of breakfast eating based on respondents' sex. Male students had higher rate of going without breakfast (73.92%) than their female counterparts (28.41%). 2) Most respondents finished eating their meals within 20 minutes. with 58.5% spending 10 to 20 minutes. followed by 28.0% taking less than 10 minutes. 3) With respect to the frequency of eating snacks. 1 to 2 times per day came on top with 63.7%. Significant difference was shown based on sex. with male students having more frequent snacks than female students. 40.1% of those surveyed said they ate snacks because they were either bored or hungry, respectively, 67.5% took snacks after school followed by 23.6% who had snacks after dinner. 4) Concerning the frequency of taking food. 1 to 2 times per week recorded the highest mark for beta-carotine. fruits. fish. beans. milk. seaweeds and fries. As for vegetables. 6 to 7 times a week received the highest points. Males showed significantly higher frequency of taking fruits than females. while the opposite was true for beans. 5) More than 50% of the respondents chose rice and fruits as the food they could eat really well. All those surveyed ate fruits and vegetables. More than 10% of students said they did not eat donut. chocolate. candies. fries. coke and clear carbonated beverage. milk. ham and sausage. The food that revealed significant difference based on sex included ramyon, coke and clear carbonated beverages, ham and sausage, yogurt and milk, with males showing greater preference than their female counterparts. 6) The most preferred by respondents was spicy taste (49.04%), followed by sour (36.31%), sweet (25.48%), and salty tastes(21.1%). Those surveyed shunned sweet taste the most (21.02%), followed by sour (14.65%), spicy (8.92%), salty (5.10%) tastes. 2. Workout Patterns 1) 14.01% of the respondents said they took exercise. Based on sex, males showed significantly higher rate of 21.74% than 7.95% of females. Those who took exercise did so mostly three times a week. With regard to the time spent on workout. 'within 2 hours' received the highest points. Soccer was found to be the most popular sport among the respondents. The above analysis demonstrated that the students surveyed selected relatively sound answers in the categories of the food preference and taste. However. some skipped breakfast and liked eating snacks. and most did not take exercise, which may raise health problems including the weight increase. Therefore, ways should be devised to tackle such problems to ensure healthy lives.

Sensory and Anti-oxidative Properties of the Spice Combinations as Salty Taste Substitute (짠맛 대체용 향신료조합물의 관능특성 및 항산화 특성)

  • The spice combinations for substitute of salty taste were developed for reducing sodium intakes in home cooking. The seventeen materials, which have been known as remedy effects for hypertension, were collected and blended based on descriptive sensory evaluation and principal component analysis. Four types of spice combinations such as nutty, umami and salty, hot and sour, and multi attribute were developed as substitutes of salty taste. The developed spice combinations were applied to mackerel meat instead of salt. Consumer acceptance of mackerel meat with spice combinations was analyzed using hedonic nine point scale by 54 panelists. As the sensory evaluation results, the consumer acceptance value of the spice combinations for substitute of salty taste with hot and sour attribute was the highest value as 6.4, whereas that of the salt was 3.1. Also, the fish and rancid flavor were the lower values in the salt free spice blends than those of salt. The spice combinations for substitute of salty taste 5% and NaCl 1%, as a control, were spread on mackerel meat and incubated at $30^{\circ}C$ for 0, 24, and 48 hours. The TBA values of the spice combinations for substitute of salty taste were shown as a half and/or one third values of salt. As the result, the spice combinations for substitute of salty taste with reducing undesirable flavor could be used in home cooking instead of salt.

Changes in Sensory Characteristics and Chemical Constituents of Raw Ginseng Roots Individually Packaged in a Soft Film During Storage (연포장재 필름으로 개별포장한 수삼의 저장 중 관능특성 및 화학성분 변화)

  • The changes in sensory characteristics, physical and chemical properties of raw ginseng (4-year-root, 50 g/root) were investigated when they were packaged individually in a soft film bag (ONY/LDPE/L-LDPE ; 200$\times$300 ㎜, 90 ㎛) and stored at 25$\^{C}$ for twenty days. Seventy-five percentages of sixty raw ginseng samples were adulterated and the most phenomenon of adulterating the raw ginseng was softening. Softened ginsengs were softer and stickier and they had stronger pungent and sour odors, stronger sour and sweet tastes than normal ginseng but had weaker ginseng and fresh odors. In addition, softened ginsengs exhibited lower hardness and pH, lower contents of diol-type ginsenosides, lower ratios of unsaturated fatty acids to saturated fatty acids and higher contents of water-soluble pectins than normal ginseng while contents of moisture, crude protein, ether-soluble materials and crude ash of the softened ginsengs were similar to those of normal ginseng.

Effects of Xylitol and Grapefruit Seed Extract on Sensory Value and Fermentation of Baechu Kimchi (자일리톨과 자몽씨추출물이 배추김치의 관능성과 발효숙성에 미치는 영향)

  • Application of xylitol (Xyl) and grapefruit seed extract (GSE) to improve the quality and preservation of baechu kimchi was attempted. Xylitol and grapefruit seed extract at various combinatory concentrations were added into baechu kimchi and fermented for 25 days at $10^{\circ}C$. Assay was performed on sensory value, acidity, and bacterial growth. Addition of 0.1% GSE and 2% Xyl showed the highest score in the overall acceptability, sour taste, and texture. Score of intensity characteristics in smell and sour taste were the highest in the control and that of texture the highest in 0.1% GSE plus 2% Xyl treatment. The pH decreased, and titratable acidity, and growth of total viable cells and lactic acid bacteria were remarkably retarded in 0.1% GSE plus 2% Xyl group compared to the control. Results showed that application of 2% Xyl plus 0.1% GSE to the kimchi fermentation enhanced sensory value of the fermented product and extended the storage period by about twofold.

  • At the book I of "The Golden Mirror of Medicine[醫宗金鑑] The Elimination and Supplement about Famous Prescription Comments[刪補名醫方論]", 22 prescriptions are recorded. At the first part of the book, it mainly described about the prescriptions of invigorating Gi[補氣], which is followed by the prescriptions on enriching blood and nourishing vital essence fluid[補陰血], and the prescriptions on strengthening Gihyeol[補氣血] and tranquilization[安神] are described at the last part of the book. At the current review, the 8 prescriptions of strengthening Gihyeol[補氣血] and tranquilization[安神] of the last part of the book I will be translated, and compared with the similar related comments in the book of "The Famous Prescription Comments on Ancient and Modern Times[古今名醫方論]" to review about the characteristics of formula, prescriptions notes and the relationship of these contents. In terms of formula, the order of prescriptions to strengthen Gihyeol[補氣血] could be listed from the indirectly strengthening prescriptions to the directly strengthening prescriptions. In addition, the list of prescriptions will be sequenced by following the order of weak strengthening prescriptions to the strong strengthening prescriptions. The order of tranquilization prescription must be ordered for the symptoms showing mild psychological symptoms to severe symptoms in terms of severity of symptom, and will be ordered from the prescriptions highly dependent on invigorating Gi[補氣] to the prescriptionless dependent on invigorating Gi[補氣]. In the way of controlling Premier Fire[相火], these prescriptions are ordered from the prescriptions that use indirect methods to the prescriptions that use direct methods Characteristics of the prescription notes could be mentioned that the herbs of invigorating Gi(補氣) is pivotal in strengthening Gihyeol[補氣血] and the sour flavor and pungent flavor acted as negative and positive[陰陽的] when sour flavor and pungent flavor are used to enrich liver, and that sweet flavor could easily indigested to cause abdominal distension. When comparing with the content of "The Famous Prescription Comments on Ancient and Modern Times[古今名醫方論]", it mostly adopted the content as it is, but differentiation of the formula and addition of 2 new prescriptions with their explanation in the middle of the book could be considered to be creative aspect that helped the convenience of readers.

Physicochemical and sensory characteristics of commercial RTD cold brew coffees (RTD (Ready-to-drink) 콜드브루커피의 이화학 및 감각특성 분석)

  • The sensory characteristics of eight commercial ready-to-drink (RTD) cold brew coffees were compared by descriptive analysis. The cold brew coffee samples were analyzed for hunter color values, brown color, turbidity, pH, titratable acidity, soluble solids, total phenolic content, and chlorogenic acid content. Three appearances, nine aroma, five flavor/taste, and four texture/mouth-feel related sensory attributes were evaluated by a panel of nine judges. The results of three-way analysis of variance of descriptive data showed that all sensory attributes except "fruit" aroma, "dark chocolate" aroma, "bitter" aroma, and "sweet" taste had significant differences among the samples (p<0.05). Based on the principal component analysis (PCA) of the descriptive data, the samples were primarily separated by first and second principal components, which accounted for 81.78% of the total variance among the samples with high intensities of "nutty aroma", "grain aroma", and "grain taste" versus "earth aroma", "sour aroma", "sour taste", "astringent", "smoothness", and "residual". In the correlation analysis of sensory terms and physicochemical parameters, titratable acidity and soluble solids showed significant positive correlations with earth aroma and smoothness characteristics.

  • The acidity of soy curd fermented by lactic acid bacteria is a major factor degrading the sensory properties of soy curd. For preparation of soy curd with low sour taste, lactic acid bacteria were separated from kimchi. The lactic acid bacteria which showed yellow-clear zone around the colonies on BCP plate and formed soy curd with low level of acidity were selected. The selected strain was analyzed by 16S rDNA sequence and named as Pediococcus inopinatus Y2. The maximum viable cell number of the soy curd fermented by P. inopinatus Y2 was obtained at 10.73 log CFU/mL at $25^{\circ}C$ for 24 h of fermentation. By the results of panel test, the overall sensory quality of the soy curd produced by P. inopinatus Y2 was higher than that of Leuconostoc mesenteroides No. 4395 and Lactobacillus sakei strain No. 383.

  • 장내 균총 개선을 위하여 조합시킨 prebiotics와 probiotics는 최고의 건강 증진을 제공할 잠재성을 갖지만, 알맞은 균주선발이 필수적이다. 기능성 식품시장은 연간 15∼20% 성장하고 있고, 그 산업은 33백만 달러의 값어치가 있다(Hilliam, 2000). 기능성 식품은 nutraceuticals, designer foods, medicinal foods, therapeutic foods,superfoods, foodiceuticals와 medifoods로 알려져 있고 그 정의는 전통적인 영양소개념을 넘어선 건강증진 성분을 함유한 식품이라고 할 수 있다(Berner와 O'Donnell,1998). 식품은 phytochemicals, bioactive peptides, $\omega$-3 불포화 지방산, 그리고probiotics 또는 기능성을 갖게 되는 prebiotics의 부가에 의하여 변형될 수 있다(Berner와 O'Donnell, 1998)(표 1). 장관에서 살수 없는 균을 함유한 요구르트의 경우와 같은 다양한 발효 낙농식품 제조에 젖산균을 사용한 이래, 오늘날에는 발효식품에Lactobacillus acidophilus와 bifidobacteria 같은 probiotic 균을 사용하는 경향이다. Probiotic 식품은 살아 있는 미생물을 함유한 식품이고, 그 미생물은 충분한 양이살아 있는 상태로 장 속에 공급되었을 때에 미생물 균총을 개선하여 소비자 건강을 증진시키는 것이라고 할 수 있다(Fuller, 1992). 전통적으로, probiotics는 요구르트와 기타 발효식품에 사용되어 왔지만, 최근에는 드링크, 알약형, 캡슐형, 동결건조물과 같은 형태로도 공급되고 있다. 오늘날, 전세계에 sour cream, buttermilk, 요구르트, 분유와 frozen desserts 같은 식품에 bifidus acidophilus를 함유한 제품이 70개를 넘고 있으며, 일본에서만도 probiotic 미생물을 함유한 형태의 우유제품이 53종류 이상 개발되어 있다. Probiotics는 유럽에서도 매우 인기가 있지만, 주로 요구르트에 한정되어 사용되고 있다(Hilliam, 2000).
