Changes of Soluble Solid Content in Red Pepper by Different Extraction Conditions (추출 조건에 따른 고추 수용액의 가용성 성분의 변화)

  • The soluble solid of red pepper was extracted by water in order to investigate changes of soluble solid content by different extraction temperature $(4{\sim}90^{\circ}C)$ and time $(1/2{\sim}3\;hrs)$, and the contents of carotenoid, capsaicinoids, free sugar, organic acid, free amino acid in soluble solid were measured. Most of soluble solid in red pepper was extracted within the first 2 hrs and $93{\sim}98%$ of total soluble solid was extracted during the first 30 min. The contents of carotenoid increased by increasing extraction time and temperature, but decreased by increasing extraction time at $60^{\circ}C$ and $90^{\circ}C$. ${\beta}$-carotene content was sharply decreased after 2 hrs at $90^{\circ}C$. The content of capsaicinoid was sharply increased between 1 hr and 2 hr. Fructose and glucose in red pepper were extracted in the range of $83.8%{\sim}96.4%$ and the contents of free sugar gradually increased by increasing extraction time and temperature. The content of organic acid was gradually increased by increasing extraction time and temperature and the greatest amount of organic acid was extracted during the first 30 min of extraction time. The content of free amino acid was decreased by increasing extraction temperature.

  • In Order to study antioxidative action of water soluble fractions which had been steamed according to time as 15, 30, 60 and 120 minutes, they were compared through the inhibitory effect of lipoperoxide formation by TBA, peroxide value and induction time for the first period of lipoperoxide formation. Results are obtained as follows: 1. In vivo experiment with TBA value, water soluble fractions showed aninhibitory effect of lipoperoxide formation. 2. Comparing with the inhibitory effect of lipoperoxide formation with TBA value in vivo, water soluble fractions which had been steamed for 30 and 60 minutes and those from fresh garlic proved effective in the blood by intraperitoneal administration. But in the liver all of water soluble fractions showed distinctive effect as in the case of fresh garlic. 3. Effect of water soluble fractions which had been steamed for 15, 30 and 60 minutes showed a distinctive effect, water soluble fraction which had been steamed for 120 minutes and that from fresh garlic also showed effective in the blood as compared with control. 4. In oral administration, water soluble fraction of fresh garlic was the most effective in the liver. 5. In vitro experiment with peroxide value, water soluble fractions which had been steamed for 60 and 120 minutes were effective, all of water soluble fractions from steamed garlic were more effective than fresh garlic. 6. In Examining the induction time for the first period of lipoperoxide formation in vitro, water soluble fractions steamed for 30, 60 and 120 minutes were effective. Other fractions were also more effective than control.

Effects of UV Absorber and HALS(Hindered Amine Light Stabilizer) Addition in Water-soluble Acrylic Resin on Discoloration of Larix leptolepis (S. et Z.) Gordon (수용성(水溶性) 아크릴 수지(樹脂)의 자외선(紫外線) 흡수제(吸收劑)와 HALS 첨가(添加)가 일본잎갈나무의 변색(變色)에 미치는 영향(影響))

  • UV transmission spectra of water-soluble acrylic resin films containing hydroxybenzophenolic, hydroxyphenylbenzotriazolic UV absorber and HALS(hindered amine light stabilizer) were investigated by exposure time(before exposure weathered for 160 and 320hours) in QUV Weather-Ometer. Also the YID(yellowness index difference), LID(lightness index difference) and CD(color difference) of dried water-soluble acrylic resin films and the coated woods of Larix leptolepis were analyzed by addition level of UV absorber(0, 1, 2 and 3%) and HALS(0, 0.5, 1 and 1.5%) and by exposure time in QUV Weather-Ometer. They showed no significant effects on UV transmission spectra of dried water-soluble acrylic resin films in the range of 300 to 400nm irrespective of exposure time. However, UV transmission decreased as increase of exposure time. UV transmission spectra were lower in dried water-soluble acrylic resin films containing hydroxybenzophenolic UV absorber and HALS than in these containing hydroxyphenylbenzotriazolic UV absorber and HALS in the range of 350 to 400nm. The least YID, LID and CD in the coated woods of Larix leptolepis appeared at the addition level of 3%, based on non-volatile content, in hydroxybenzophenolic and hydroxyphenylbenzotriazolic UV absorber, and of 1.5% in HALS to water-soluble acrylic resin.

Effects of Heat Treatment on the Dietary Fiber Contents of Soybean sprout and Spinach (가열처리에 의한 콩나물과 시금치의 식이섬유 함량변화)

  • The dietary fiber contents of soybean sprout and spinach were changed by heat treatment. Before heat treatment, soybean sprout and spinach had larger amount of insoluble dietary fiber than soluble, and similar proportions of insoluble v/s soluble dietary fibers. After heat treatment, the value of insoluble dietary fiber of soybean sprout and spinach was increased significantly, except for microwave heating short time treatment. It is believed that the increment of insoluble dietary fiber is due to Maillard reaction products and resistant starch after heat treatment. The change of soluble dietary fiber contents of soybean sprout and spinach were not consistent in heat treatment. It is supposed that some soluble dietary fiber was destroyed by heat treatment, and some insoluble dietary fiber was hydrolysed or destroyed to be soluble. Total dietary fiber of soybean sprout and spinach was significantly incereased by all heat treatment, except for microwave heating short time of spinach.

  • Real-time and quantitative measurement of the chemical composition in ambient aerosols represents one of the most challenging problems in the field of atmospheric chemistry. In the present study, time resolved application by Aerosol-into-Mist System (AIMS) following by total organic carbon analyzer (TOC) has been developed. The unique aspect of the combination of these two techniques is to provide quantifiable water soluble organic carbon (WSOC) information of particle-phase organic compounds on timescales of minutes. We also demonstrated that the application of the AIMS method is not limited to water-soluble organic carbon but inorganic ion compounds. By correlating the volume concentrations by optical particle sizer (OPS), water soluble organic carbon can be highly related to the secondary organic products. AIMS-TOC method can be potentially applied to probe the formation and evolution mechanism of a variety of SOA behaviors in ambient air.

Microencapsulation of Water-Soluble Isoflavone and Physico-Chemical Property in Milk

  • This study was carried out to investigate the addition of water-soluble isoflavone into milk by means of microencapsulation technique. The yield of microencapsulation, sensory attributes, and capsule stability of water-soluble isoflavone microcapsules in milk were measured. Coating materials used was polyglycerol monostearate (PGMS), and core material was water-soluble isoflavone. The encapsulation yield of water-soluble isoflavone with PGMS was 67.2% when the ratio of coating material to core material was 15 : 1. The rate of water-soluble isoflavone release from capsules was 18, 19, and 25% when stored at 4,20, and $30^{\circ}C$ for 12 days in milk, respectively. In sensory evaluation, beany flavor and color of microencapsuled water-soluble isoflavone added milk were significantly different from uncapsuled water-soluble isoflavone added milk, however, bitterness was not significantly different. In vitro study, micro-capsules of water-soluble isoflavone in simulated gastric fluid with the range of 3 to 6 pHs were released 3.0∼15.0%, however, the capsules in simulated intestinal fluid with pH 7 were released 95.7% for 40 min incubation time. In conclusion, this study provided that PGMS as coating materials was suitable for the microencapsulation of water-soluble isoflavone, and the capsule containing milk was almost not affected with sensory attribute.

Immobilization Imparts Stability to Watermelon Urease to Work in Water Miscible Organic Media

  • The behaviour of alginate immobilized and soluble watermelon (Citrullus vulgaris) urease in water miscible organic solvents like, acetonitrile, dimethylformamide (DMF), ethanol, methanol, and propanol is described. The organic solvents exhibited a concentration dependent inhibitory effect on both the immobilized and the soluble urease in the presence of urea. Pretreatment of soluble enzyme preparations with organic solvents in the absence of substrate for 10 min at $30^{\circ}C$ led to rapid loss in the activity, while similar pretreatment of immobilized urease with 50% (v/v) of ethanol, propanol, and acetonitrile was ineffective. Time-dependent inactivation of immobilized urease, both in the presence and in the absence of urea, revealed stability for longer duration of time even at very high concentration of organic solvents. The soluble enzyme, on the other hand, was rapidly inactivated even at fairly lower concentrations. The results suggest that the immobilization of watermelon urease in calcium alginate make it suitable for its application in organic media. The observations are discussed.

  • An investigation was performed to reveal the removal rates of organic constituents of the litters in a Phragmithea longivalvis grassland in a Delta of the Nakdong River, The removal rates of the inorganic and organic materials are determined by the mathematical models. The removal rates and time required to decay up to a percentage of each organic constituent were calculated using these new models. The removal rates of cold water soluble fractions, other carbohydrates, hot water soluble fractions, cellulose, crude fat, lignin and crude protein were 2.67, 1.39, 1.25, 1.02, 0.92, 0.49 and 0.47, respectively, The periods required to reach half time to the steady state of the removal and accumulation for cold water soluble fractions, other carbohydrates, hot water soluble fractions, cellulose, crude fat, lignin and crude protein of the litter were 0.26, 0.50, 0.55, 0.68, 0.75, 1.41 and 1.48 years, respectively.

Sugars, Soluble Solids, and Flavor of Sweet, Super Sweet, and Waxy Corns during Grain Filling

  • In order to determine the optimum harvest time of vegetable corns, the changes in sugars, soluble solids, and flavor of kernels of sweet (cv. ‘Golden Cross Bantam 70’), super sweet (cv. ‘Cocktail E-51’), and waxy corns (cv. ‘Chalok 2’) were observed at different ripening stages. Sucrose was a major sugar in the sweet and super sweet corns and the content increased from 15 to 21 and 27 days after silking (DAS), respectively and then decreased. Glucose and fructose contents of sweet and super sweet corns tended to decrease with kernel maturity. Total sugar content of the sweet corn analyzed by the anthrone method increased rapidly from 15 to 21 DAS, while that of the super sweet and the waxy corns increased slowly up to 24 and 26 DAS, respectively and decreased thereafter. The content of soluble solids in sweet corn was much higher than that of super sweet corn. Starch content of the sweet corn increased slowly from 15 to 33 DAS, while that of the super sweet corn increased a little rapidly from 15 to 21 DAS and then leveled off to 33 DAS. Starch content of the waxy corn increased continuously from 21 to 38 DAS. There was a positive correlation between the sum of individual sugars (sucrose, glucose, and fructose) and soluble solids in both sweet and super sweet corns, while the content of soluble solids was not related to the sum of individual sugars or total sugars. The flavor rate of sweet and super sweet corns maintained high between 21 and 27 DAS and that of waxy corn decreased from 24 to 33 DAS. The optimum harvest time for sweet, super sweet, and waxy corns was thought to be 21 to 24 DAS considering sugar and starch contents, flavor, and marketing.

Extraction Characteristics of Soluble Solid from Rumex crispus(Curled Dock) Roots (소리쟁이(Rumex crispus) 뿌리로부터 가용성 고형분의 추출특성)

  • In this study, the extraction characteristics of soluble solid from Rumex crispus(Curled dock) was studied from the investigation of the effects of experimental conditions on extraction rate; extraction ratio, composition of extractants, extraction time and pH of extractant, etc. The proximate composition of Rumex crispus was 2.58% crude lipid, 5.59% crude protein, 7.39% crude ash, 6.13% moisture and 78.31% carbohydrate, respectively. Turbidity of extract by distilled water was higher and increased with extraction time and extraction temperature, where as the turbidity didn't increase by ethanol and methanol in 20 folds of extraction ratio. Turbidity was inversely proportional to the extraction ratio for the three extractants at 25$^{\circ}C$ and 1 hour extraction. But turbidity of extract was highest by composition of 50% methanol-water extractant than any other compositions of extractants. Eighteen and fifteen free aminoacids were detected in extracts with distilled water, methanol and ethanol extractant, respectively, and it's contents were order of glutamic acid>proline>aminobutyric acid>alanine. The extraction rate of soluble solid from Rumex crispus was order of distilled water>methanol>ethanol within experimental extraction ratio. In extraction with distilled water, the contents of soluble solid was inversely proportional to the pH of extractant.
