세포벽분해효소의 처리에 따른 감과실의 세포벽 유리 다당류의 변화 (Changes on the Components of Free Polysaccharide from Cell Wall of Persimmon Fruit by Treatments of Cell Wall Degrading Enzymes)

  • This paper was carried out to investigate changes in chromatograms of polysacctatides and soluble pectins on Sephadex G-50 and non-cellulosic neutral sugars of polysaccharides isolated from cell wall of persimmon fruits treated with polygalacturonase and $\beta$-galactosidase in vitro. The chromatogram pattern of soluble pectins extracted from cell wall treated with $\beta$-galactosidase on Sephacryl S-500 column were similar to those of untreatment, but contents of soluble pectins treated with $\beta$-galactosidase were different from those of untreatment. The patterns of chromatograms In soluble pectins extracted from cell wall treated with polygalacturonase were more complex and lower molecular polymer than those of other cell wall-degrading enzyme treatments. Non-cellulosic neutral sugar of polysaccharides in fraction I of soluble material treated with polygalacturonase was rhamnose, those in fraction II were similar to those in fraction III and contents of arabinose, xylose and glucose were higher than contents of other non-cellulosic neutral sugars. Non-cellulosic neutral sugars of polysaccharides in fraction I in soluble material by $\beta$-galactosidase treatment were rhamnose, arabinose, galactose and mannose. Content of glucose of polysaccharides in fraction II was higher than that in fraction I . Non-cellulosic neutral sugars treated with mixed enzyme were rhamnose, fucose, arabinose, xylose, mannose, galactose and glucose. Compositions of non-cellulosic neutral sugars of polysaccharides in fraction I were similar to those in fraction II and III.

Effect of Foliar Treatment of KCl on Chlorophyll, Total Sugars, Soluble Protein, In Vivo Nitrate Reductase Activity and Leaf Yield in Mulberry (Morus alba L. CV.S1)

  • Foliar treatment with different concentrations of potassium chloride (KCl) to mulberry plants resulted in higher level of total chlorophyll, total sugars, soluble protein, in vivo nitrate reductase activity (NRA), net photosynthetic rate (NPR), pWUE and leaf yield. Optimal concentration was found to be 10.0 mM KCl with limited irrigation provided in the mulberry plantation planted in 90 ${times}$ 90 cm spacing. The deleterious effect of soil moisture stress condition has been found to be overcome by KCl foliar spray twice at 15 days interval. Regression and correlation coefficients were analyzed, and a strong positive correlation was found between chlorophyll and total sugars, soluble protein and in vivo nitrate reductase activity, leaf dry weight and net photosynthetic rate and pWUE and net photosynthetic rate.

Sugars, Soluble Solids, and Flavor of Sweet, Super Sweet, and Waxy Corns during Grain Filling

  • In order to determine the optimum harvest time of vegetable corns, the changes in sugars, soluble solids, and flavor of kernels of sweet (cv. ‘Golden Cross Bantam 70’), super sweet (cv. ‘Cocktail E-51’), and waxy corns (cv. ‘Chalok 2’) were observed at different ripening stages. Sucrose was a major sugar in the sweet and super sweet corns and the content increased from 15 to 21 and 27 days after silking (DAS), respectively and then decreased. Glucose and fructose contents of sweet and super sweet corns tended to decrease with kernel maturity. Total sugar content of the sweet corn analyzed by the anthrone method increased rapidly from 15 to 21 DAS, while that of the super sweet and the waxy corns increased slowly up to 24 and 26 DAS, respectively and decreased thereafter. The content of soluble solids in sweet corn was much higher than that of super sweet corn. Starch content of the sweet corn increased slowly from 15 to 33 DAS, while that of the super sweet corn increased a little rapidly from 15 to 21 DAS and then leveled off to 33 DAS. Starch content of the waxy corn increased continuously from 21 to 38 DAS. There was a positive correlation between the sum of individual sugars (sucrose, glucose, and fructose) and soluble solids in both sweet and super sweet corns, while the content of soluble solids was not related to the sum of individual sugars or total sugars. The flavor rate of sweet and super sweet corns maintained high between 21 and 27 DAS and that of waxy corn decreased from 24 to 33 DAS. The optimum harvest time for sweet, super sweet, and waxy corns was thought to be 21 to 24 DAS considering sugar and starch contents, flavor, and marketing.

수삼물추출물의 갈변반응중 아미노산과 당류변화 (Changes in Free Amino Acids and Sugars in Water-soluble Extracts of Fresh Ginseng during Browning Reaction)

  • An aqueous extract s of fresh ginseng roots was heated at loot for 64 hrs. and the changes of color intensity, pH and the amount of free sugars and amino acids during the various intervals of the heating time were investigated. Color intensity and absorbance of the solution at 490nm were increased in proportion to the length of the heating time. Most of brown pigments produced during the treatment were water soluble, and pH 5.1 at initial stage of the solution, was slightly decreased at the final stages of the reaction. Sucrose, glucose and fructose were major free sugars in ginseng roots, and the amounts of sucrose was over 90 % of total free sugars. Sucrose. was largely decreased approximately 50%, by 64 hrs of the treatment, whereas sharp increase in the amount of glucose and fructose was observed during the reaction in the solution. The observed increase in reducing sugars, glucose and fructose was presumed due to hydrolysis of sucrose. Evidently, glucose and fructose were not important factor to control the browning reaction of the solution. Most of free amino acids and peptides except alanine and isoleucine especially arginine, serine and threonine, were sharply decreased up to 40 : 50% of the original concentration within 2 hrs. Accordingly, the content of free amino acids and peptides seems to be extremely important factor to control the browning reaction in ginseng. A free amino acid, presumed to be nor-leucine, was found in fresh ginseng root on the basis of re mention on liquid chromatography. Kinetic analysis of the browning reaction indicated a pseudo second order with respect to amino acid concentration at the initial stage.

  • 감압 저장 중 tomato과실에서 일어나는 당전환의 일부를 조사 하고자 저장기간을 통하여 탄수화물의 성분과 그들에 관련된 효소활성 변화를 조사한 결과는 다음과 같다. tomato 과실에 함유되어 있는 soluble sugar의 대부분은 fructose glucose이며 소량의 sucrose와 maltose가 존재하였다. 이들의 저장 중 변화를 살펴보면 fructose는 저장전반에 걸쳐 증가하는 경향이었고, glucose는 저장초기에 증가하다가 저장말기에 약간 감소하였으며 sucrose는 저장시일이 경과함에 따라 급격히 감소하는 경향이었다. 당전환에 중요한 역할을 하는 ${\alpha}-amylase$와 in-vertase의 활성은 climacteric onset 시기에 급격히 증가하였으며 이로 인하여 이 시기에 total soluble sugar는 급격히 증가하는 반면 기질인 starch와 sucrose는 현저히 감소하는 경향이었다. 이러한 경향은 압력에 의한 영향보다 온도에 따른 영향이 더 크게 나타났다.

한국산 마의 당질 분석 (Carbohydrates Analyses of Korean Yam(Dioscorea) Tubers)

  • 한국산 마의 주요 품종인 D. batatas, D. aimadoimo 및 D. japonica 등 3가지 품종의 일반성분을 분석하여 비교하였고 각 시료들을 동결건조하여 분말로 만든 다음 분획하여 HPLC에 의한 탄수화물의 조성과 함량, DNS법에 의한 환원당을 정량하였다. 탄수화물 중 유리당을 구성하는 주된 조성은 fructose, glucose, sucrose 및 maltose 등이었고 이 중 D. batatas에서는 glucose와 sucrose, D. aimadoimo와 D. japonica에서는 fructose와 sucrose가 가장 많은 부분을 차지하고 있었다. 총당은 주로 mannose와 glucose로 구성 되었고 3가지 품종 모두 mannose가 80% 이상으로, 이는 마가 감자나 고구마보다 끈끈한 점질물로 알려진 mannan이 많기 때문인 것으로 생각된다. Soluble fraction과 전체 마에서의 환원당 정량결과 soluble fraction에서 당함량은 D. aimadoimo가 가장 많았고, insoluble fraction에서 당함량은 D. japonica가 가장 많았다.

무지개 당근의 carotenoid와 당 함량 분석 (Analysis of carotenoids and soluble sugars in the Rainbow carrots)

  • Coloring agents in food materials plays important roles in the development of attractive products as well as in the functionality of food such as antioxidant or vitamin supplementation. Carrot has been used as an orange coloring agent in the decoration of food but also a major source of vitamin A complex. Though orange has been considered a typical color of carrot, the Rainbow carrot has been developed recently, which exhibit the various colors such as red, pale yellow, purple, orange or their mixtures. After categorization onto 8 groups by their colors, vitamin A complex (${\beta}$-carotene, lycopene and lutein) and soluble sugars (glucose, fructose, and sucrose) have been analyzed in carrots. The ${\beta}$-carotene was abundant in the groups of orange (Group-O) or groups with the orange color (group-OP, and group-YOP). The content of lycopene content was exclusively high in the red color carrot (group-R). The highest lutein contents were observed from the yellow-purple (group-YP) group. Meanwhile, little amounts of lycopene and ${\beta}$-carotene were observed in yellow-purple (group-YP) nor yellow (group-Y) on yellow (group-Y). Among the reducing sugars in 'rainbow carrots', the amount of sucrose was two times higher than those of fructose and glucose. However, the content of glucose, fructose and sucrose as well as the total reducing sugars did not differ between color groups suggesting little variations on their tastes.

단옥수수의 성숙정도에 따른 당함량, 가용성 고형물 및 맛의 변화 (Sugars, Soluble Solids and Flavor as Influenced by Maturity of Sweet Corn)

  • 우리나라 사람들의 기호에 알맞는 단옥수수의 수확적기를 구명하기 위하여 3개 보통단옥수수 품종(Great Bell, 단옥 001, Golden Cross Bantam)과 초당옥수수 1개 품종(Crisp Super Sweet 720)을 공시하여 1985년과 1986년에 걸쳐 시험하였다. 시료를 출사 후 15일부터 27일 혹은 33일까지 3일간격으르 심취하여 성숙과정에 따른 종실의 발달, 당, 가용성 고형물, 맞 등의 변화와 이들 상호간의 관계를 조사하여 수확적기를 결정하였으며 그 결과를 요약하면 다음과 같다. 1. 보통단옥수수인 Golden Cross Bantam은 출수후 15일부터 33일까지 입중. 종실건물비율, 전분함량이 계속 증가하였으나 초당옥수수인 Crigp Su-per Sweet 720은 출사 후 27일 이후에는 이들의 증가가 완만하였고 전분축적도 Golden Cross Bant-am보다 훨씬 적었다. 2. 가용성 고형물은 3개 보통단옥수수 품종은 출사 후 27일 혹은 33일까지 증가하였으나 Crisp Super Sweat 720은 24일까지 증가한 후 30일 까지는 같은 수준으로 유지한 후 감소하였다. 수확기의 가용성 고형물은 보통단옥수수 품종이 Criap Super Sweat 720 보다 훨씬 높았다. 3. 종실의 sucrose, fructose. glucose 함양은 3개 보통단옥수수 품종에서는 출사 후 15일에 1∼2%로서 비슷하였으나 그 후 fructose와 glucose는 감소하고, sucrose는 출사 21∼24일까지 증가한 후 감소하여 전당함양은 출사 후 15∼21 일까지는 높게 유지된 후 급격히 감소하였다. 초당옥수수에서는 sucrose, fructose, glucose 모두 출사 후 24 일까지 증가한 후 감소하였다. 따라서 수확기의 주된 당성분은 Sucrose이었으며 최고전당함양은 보통옥수수보다 2∼3배 높았다. 4. 맛을 기준으로 한 수확적기는 출사 후 27일이었다. 가변성 고형물과 맛과는 같은 품종에서는 정의 상관이 있었으나 전당함량과 맛과는 관계가 없거나 부의 상관이 있었다. 전당함양과 가용성 고형물과는 관계가 없거나 부의 상관이 있었다.

추출조건이 홍삼엑기스의 당과 유리당의 조성에 미치는 영향 (Effect of Extracting Conditions on Some Factors Affecting the Sugar Composition of Red Ginseng Extract)

  • The quality of concentrated red ginseng extract, which was prepared from Korean red ginseng tails, was studied with respect to the changes in the ethanol concentration in the range of 0-90% and temperature of 70-10$0^{\circ}C$ during 1-5 times of extraction. Each extraction time was taken 8 hours at given temperature. The ratio of free sugars to total sugar changed significantly with the number of extraction and ethanol concentrations. An increase in reducing sugar and free sugars and a decrease in extracted soluble starch were fond as ethanol concentration increased. Extraction temperature was found little effect on extractability of sugars and their ratios. Analysis of free sugars in red ginseng extract identified 6 frdd sugars such as rhamnose, xylose, fructose, glucose, sucrose and maltose, including sucrose to be major.

당의 종류 및 가열방법에 따른 당침밤 제품의 품질 변화 (The Changes in Quality of Sugars Chestnuts by Sugars and Heating Methods)

  • The effects of sugars and heating methods on the sugar infilteration, hardness, color and organoleptic characteristics were investigated for quality improvement of sugared chestnuts. Among the tested sugars, isomaltooligosugar was the most effective on the rate of sugar infilteration. High temperature increased the rate of sugar infilteration during sugaring process, but color and flavor were deteriorated at 9$0^{\circ}C$. The most suitable temperature for sugaring process was 7$0^{\circ}C$. The product sugared with fructooligosugar recoreded the highest score in hardness, odor and preference than any other sugars tested and increased the rate of sugar infilteration when mixed with sugar at same amount. The changes of soluble solids in chestnuts boiled with microwave oven were ranged from 18。Brix to 32。Brix, while chestnuts heated in general were from 18。Brix to 28。Brix. Chestnuts boiled with microwave heating were sugared rapidly. The hardness of boiled and sugared chestnuts was lower when treated with microwave than with general heating. Hunter's L and b value of sugared chestnut treated with microwave decreased during processing but a value somewhat increased.
